Baked Salmon with Ratatouille

March 13, 2024

If you’re craving a light yet flavorful dinner that feels both elegant and effortless, this baked salmon with ratatouille might be just what you need. It’s a beautiful combination of tender salmon fillets and a rustic, oven-roasted French vegetable medley, all cooked on a single sheet pan for ultimate ease.

Ratatouille is a classic Provençal dish made with zucchini, eggplant, tomatoes, bell peppers, and onions, all seasoned with herbs like thyme, rosemary, and basil. It’s colorful, nutritious, and incredibly aromatic as it bakes. The vegetables become soft and caramelized, developing a rich flavor that pairs perfectly with the mild, buttery taste of salmon.

To make this dish, begin by chopping the vegetables into bite-sized pieces and tossing them with olive oil, garlic, salt, pepper, and dried herbs. Spread them out on a baking tray and roast them until they start to soften. Then, nestle the salmon fillets among the veggies, season the fish with lemon juice and a little more olive oil, and return everything to the oven until the salmon is flaky and cooked through.

The result is a satisfying, one-pan meal that tastes like summer in every bite. The ratatouille serves as both a side dish and a sauce, soaking up the salmon’s juices as it cooks. For extra freshness, sprinkle chopped basil or parsley over the top before serving.

This recipe is naturally gluten-free and low in carbs, making it a great option for health-conscious eaters. You can also prepare the ratatouille in advance, then simply reheat it and add fresh salmon when you’re ready to serve dinner.

Whether you’re hosting a casual dinner or just trying to eat more vegetables during the week, baked salmon with ratatouille is a winning combination. It’s simple, nourishing, and packed with Mediterranean flavor, a true weeknight hero that’s both elegant and unfussy.

Was expecting it to taste better tbh. The seasoning could have been stronger. Maybe more garlic?

    1. 4 stars
I totally agree! A bit more garlic would have made it pop. Maybe some lemon zest too?

I thought it was fine. Not everything has to be super strong in flavor. Maybe you’re just not used to this dish?

  2. User avatar Captain Ginyu says:

umm… ratatouille is for stew not for putting on fish? also 2 tomatoes only feels like not enough. Mine was kinda bland. Sorry.

    1. 4 stars
Ratatouille on fish is weird? I tried it anyway and it was actually really good. For the blandness: salt it more, and don’t skip oregano/thyme—also check your tomatoes. Some are just… meh.

    2. User avatar Falmer Shaman says:

      4 stars
I kinda get what you mean about ratatouille being more “stew-ish,” but this works as a topping too. The oven time basically cooks it into a saucy veggie layer. I do agree 2 tomatoes can be a little light though—next time maybe add more or a splash of broth/wine.

This recipe is fantastic! The flavors are amazing, and the salmon came out perfectly. Will definitely make it again!

  4. 3 stars
I followed it pretty exactly and it was… okay. The ratatouille felt a little bland until I added extra salt. Maybe my oregano was old?

  5. User avatar arlen.stark66 says:

    3 stars
I don’t know about the ratatouille on salmon… Seems a bit weird to me. Maybe just bake the salmon by itself?

  6. User avatar eldridge.block says:

    3 stars
I accidentally burned the salmon 😩 Guess I should pay more attention. Still tasted good tho.

  7. 2 stars
I tried making this and it was kinda bland… Maybe I didn’t season it right? I dunno.

  8. User avatar Lord Jabu-Jabu says:

I’m not convinced ratatouille belongs on fish… but my husband ate two servings so I guess I was wrong 😂. The flavors do blend well. Maybe I’ll add a squeeze of lemon next time.

    1. User avatar steve_maga says:

      5 stars
Honestly I was skeptical too, but the ratatouille’s sweetness + tomato acidity really works with salmon. Lemon next time sounds perfect!

  9. User avatar Hasimir Fenring says:

    3 stars
This tasted great but I messed up the timing. I added the tomatoes too early and they got kinda mushy. Still edible, just not pretty.

  10. 1 star
Salmon is fish, right? Why do we bake it? Isn’t fresh better?

  11. User avatar Mariano Klein says:

    5 stars
Really yummy! I used every veggie I had in the fridge. Can’t go wrong with colors and tastes!

  12. User avatar marti.kerluke30 says:

    4 stars
So easy! I made this for dinner and it was a hit with the family. The only thing I’d change is maybe add some cheese on top.

  13. 2 stars
I’m not a chef like u guys, but I tried it and it was okay. My husband said it tasted a bit bland tho.

  14. 4 stars
Yummy! I added some spinach for extra greens and it turned out great! Definitely making again.

  15. 4 stars
Pretty good, though 375°F felt a bit low for my oven. I had to bake closer to 30 minutes before the salmon was fully cooked through.

  16. User avatar monica.runolfsdottir1965 says:

    5 stars
Rarely could I say, but this is a winner! The flavors melded perfectly. My kids actually ate the veggies! 🤯

    1. 5 stars
That’s awesome to hear! I love when kids eat their veggies. What a great way to sneak in nutrition! 🙌

    2. User avatar Pasta Fasta says:

      3 stars
Sounds good, but my kids wouldn’t touch that! Salmon and ratatouille? They’d rather have pizza. LOL!

  17. User avatar ALTplusF4 says:

    3 stars
I’m allergic to tomatoes 🙁 what can I use instead??

    1. 5 stars
You can use roasted red peppers or zucchini instead! They’ll give you that nice flavor 👍.

    2. User avatar frankie.bogan64 says:

      2 stars
Maybe just leave out the tomatoes? I don’t think it matters much lol.

  18. User avatar wellRespected says:

The timing is a little off—20 minutes wasn’t enough for my thick fillets, I needed ~30. Otherwise, really solid combo.

    1. User avatar david.lehner1974 says:

      3 stars
Idk, mine always takes 20 and gets dry if i overcook it 😅 maybe your fillets were like… super thick? Either way the ratatouille combo sounds tasty.

    2. 5 stars
Good call. I also think thicker salmon needs extra time—30 mins sounds about right depending on the fillet. Glad the flavors still worked out for you!

  19. 5 stars
Super easy and looks fancy for guests. I served it with crusty bread to mop up the sauce—highly recommend.

  20. User avatar Lily Livard says:

    5 stars
This was soooo delicious! I added some cheese on top and it was divine. Will definitely make again!

  21. 3 stars
Could’ve used more seasoning for my taste. Like, the thyme/oregano were fine, but I wanted a bigger punch—maybe extra garlic or some chili flakes.

  22. User avatar dayna.tromp66 says:

    4 stars
So easy and quick! My kids loved it, and I didn’t have to spend hours in the kitchen. Thanks for sharing!

  24. User avatar woodrow.roberts says:

Salmon with a bunch of veggies? Sounds weird, but you know what? It was good. Will make it again, even tho my husband dont like veggies. LOL

  25. User avatar hayden.roberts18 says:

    3 stars
I’m not sure about cooking the ratatouille in a skillet first then baking. Feels like extra steps, but it did work.

  26. User avatar mario.wilkinson36 says:

    5 stars
I can’t believe how easy this was! My kids loved it, too!

    1. 5 stars
That’s awesome! I’m so glad your kids enjoyed it too! It’s such a great meal for the whole family.

    2. User avatar rocco.johnston60 says:

      2 stars
Really? I thought salmon was too fishy. Is ratatouille really that good with it? Not sure about this one.

  28. User avatar reed.quigley says:

    2 stars
Love salmon but… ratatouille on top?? This sounds kinda weird, not gonna lie. Still, I might try it once.

    1. User avatar keven.nienow says:

      3 stars
Ratatouille on salmon sounds like something my aunt would do… and maybe it’s good? I’d worry it’ll get soggy, and 25 minutes might overcook the fish. I’d try shorter bake time next time though.

    2. 5 stars
Okay but the flavors actually make sense—ratatouille is basically a veggie stew vibe, and salmon loves that herby, tomato-y topping. I’m intrigued!

  29. User avatar carroll.will1970 says:

    5 stars
The flavor combo is on point. I was worried the salmon would get dry at 20–25 min, but it stayed moist. Used fresh oregano and it smelled amazing.

  30. 3 stars
I don’t like eggplant, can I use something else instead?

  31. User avatar wes.herzog1 says:

    4 stars
My kids hated the bell pepper chunks so I chopped everything really small. They ended up eating it anyway. So… win? 😅

  32. User avatar rickiestmorty says:

    4 stars
So simple, yet so fancy! Made it for a dinner party and everyone loved it. Thanks for sharing!

  33. 2 stars
Eh, didn’t impress me. My salmon turned out dry. 🙁

    1. 4 stars
Sorry to hear that! Maybe try cooking it for less time next time? Salmon can dry out quickly if overcooked. Hope it turns out better next time!

  34. User avatar Forest Minish says:

    5 stars
Made this last night and it was genuinely delicious. The ratatouille juices soak into the salmon—so good. I added a squeeze of lemon at the end and it really brightened everything.

  35. User avatar dayle.reichert says:

    5 stars
Made this last night—super cozy and the ratatouille flavors are legit. I roasted the veggies a little longer than 10 min and it came out even better. Would absolutely do again!

  36. User avatar erasmo.mccullough9 says:

    5 stars
This recipe was a hit at dinner! The salmon was perfectly cooked.

  37. User avatar warren.schneider61 says:

    3 stars
Not bad, but my salmon ended up a bit dry. Maybe I cooked it too long?

  38. User avatar robena.nikolaus80 says:

    5 stars
Salmon and veggies, what more do you need? This is something my grandma would make!

    1. User avatar lucienne.parker says:

      5 stars
This recipe sounds delish! Just like when I was a kid! Can’t wait to try it!

    2. User avatar granville.gutmann says:

      2 stars
Salmon with veggies? Seems a bit boring to me. I prefer mine with a lot more spices.

  39. User avatar Majin Vegeta says:

    5 stars
This recipe is absolutely delicious! I love how the flavors blend together. My family couldn’t get enough! 🍽️

  40. User avatar robert.reynolds1999 says:

    5 stars
This was surprisingly flavorful—like a fancy dinner without too much effort. The ratatouille topping turned out perfect on the salmon.

  41. User avatar armand.ondricka says:

    5 stars
5 stars!! The ratatouille on salmon is such a smart combo. Also parchment paper saved me from sticking chaos 😅

    1. User avatar pamila.effertz14 says:

      3 stars
Hmm I tried ratatouille on salmon once and it was kinda soggy. Do you cover it while baking or keep it uncovered? Also 20-25 min feels long for me.

    2. User avatar manuel.frami67 says:

      5 stars
Yes!! Parchment paper is the MVP 😅 I’m stealing that idea for my next bake.

  42. User avatar rachel.romaguera7 says:

    4 stars
I had no thyme, used sage instead. Still turned out great! Just a little different.

  43. 1 star
I don’t like salmon. This recipe was not good. Can’t recommend it.

  44. User avatar santo.parisian81 says:

    4 stars
Yummm! Loved it! I added some mozzarella on top, got cheesy vibes!

  45. 2 stars
Wait, what’s the point of baking the salmon when you can just grill it? Seems like an extra step that’s not needed.

    1. User avatar romaine.leuschke15 says:

      4 stars
Grilling is great, but baking really helps to keep the salmon moist and lets the flavors of the ratatouille meld together. Give it a try, you might be surprised!

  46. 3 stars
Not a fan of cooking salmon, but this made it easy. I just wish it had a better sauce or something. Might try adding lemon next time.

  47. 4 stars
Pretty good, but 20-25 minutes felt a little long for my fillets. Next time I’ll check around 15-18 min. Still tasted great with the oregano + tomatoes.

  48. User avatar basementDweller says:

    4 stars
Delicious! But I would suggest cutting the garlic down a bit.

  49. User avatar omar.fay1976 says:

    4 stars
I was skeptical about baking salmon with all that veg, but wow. The veggies stayed flavorful and the salmon was flaky. Next time I’ll add a squeeze of lemon on top.

    1. User avatar Siona Atreides says:

      3 stars
Wait… I cooked mine and the veggies came out kinda mushy. Maybe I chopped them too small? Also I used fresh oregano and added it earlier and it was fine, but I don’t think 20-25 min is long enough for me.

    2. User avatar alfredo.langworth94 says:

      5 stars
I’m totally with you—I was thinking “salmon + tons of veg” sounds risky, but it turned out so juicy. Lemon sounds like a great upgrade too!

  50. User avatar carlos.hill says:

    3 stars
easy recipe, but I forgot to set the timer and overcooked the salmon! Next time I won’t get distracted.

  51. User avatar oPandariaNo says:

    1 star
Nah, I prefer my salmon with lemon. This didn’t do it for me. Too many veggies.

    1. User avatar andy.considine1979 says:

      4 stars
I totally get it! Lemon is classic with salmon. But veggies can add a nice twist! Maybe try cooking them a different way next time?

  52. User avatar yolando.pfannerstill97 says:

    2 stars
Boring! Salmon sounds good but ratatouille? No thanks. I’m more into steak. 😏

  53. 3 stars
I’m not a fan of salmon but gave it a shot. Besides the fishy taste, the ratatouille was pretty good. Not sure if I’ll make it again tho.

  54. 3 stars
Followed it exactly and it turned out okay, not amazing. Veggies were a bit watery for me—maybe my tomatoes were too juicy. Flavor was solid though.

  55. User avatar Jitan Sa'mi says:

    5 stars
My kid ate it all (shocking). Next time I’ll chop the veg smaller so it cooks faster. Simple and colorful.

  56. User avatar graciela.murphy31 says:

    3 stars
Kinda bland for me. I think 1 tsp oregano might be too mild—maybe I’m heavy handed with seasoning? The salmon stayed moist.

    1. User avatar Miss Joan Hackett says:

      3 stars
Maybe you’re not heavy handed—maybe the recipe is under-seasoned. I made it once and it tasted kinda like “healthy air.” Try more salt AND oregano, and don’t forget the pepper in the veg—mine needed like extra garlic too.

    2. User avatar Spriggan Earth Mother says:

      5 stars
Glad the salmon stayed moist! I think 1 tsp oregano is definitely mild depending on the brand. Next time try 1.5–2 tsp and taste the ratatouille before baking.

  57. User avatar olen.halvorson1978 says:

    2 stars
Meh. Too many veggies for me. I think i would rather just roast them and not bake the salmon on top.

    1. 3 stars
Wait… you can bake it on top but also roast the veggies? 😂 I feel like the veggies will dry out if they’re not sauteed. But if you add some olive oil + cover loosely with foil, it might work. Let me know!

    2. User avatar liberal.hero says:

      4 stars
Honestly, I get you—ratatouille can be a lot. Roasting the veggies separately and then just serving salmon alongside sounds way easier. Temps/timing might change a bit though—still, great idea!

  58. 5 stars
I followed it mostly, but I used fresh thyme and added a pinch of chili flakes. Way better than I expected, 10/10 will make again.

    1. User avatar nakesha.effertz40 says:

      3 stars
I dunno, chili flakes feels like it would overpower the whole ratatouille vibe. But if it worked for you, cool. Did you still use the dried oregano or swap that too?

    2. User avatar ArabianNights says:

      5 stars
Fresh thyme is a great call! And the chili flakes probably added a nice little kick with all those veggie flavors. Glad it turned out better than you expected—10/10 sounds earned!

  59. User avatar hiram.koss says:

    4 stars
Good idea, but my veggies took closer to 15 minutes to get tender. Still tasty though—next time I’ll spread everything more evenly.

  60. User avatar Captain Ginyu says:

    2 stars
375°F is too low IMO. I baked mine at 425 and the salmon dried out 😭. Don’t make my mistake—stick to their temp.

    1. User avatar liberal.hero says:

      4 stars
Hmmm I followed the 375 exactly and mine was juicy. Maybe your fillets were thinner? 20-25 min can still overcook if they’re small.

    2. User avatar smartestRedditor says:

      5 stars
I get you 😭 375°F sounds low for salmon. I’ve had it dry out before too. I’ll try bumping the temp next time, but I’ll also keep an eye on the time.

  61. User avatar Coleman Turcotte says:

    4 stars
I used crushed tomatoes instead of diced and it turned into more of a stew—still yummy. I think it’ll work either way depending on how thick you want it.

  62. User avatar Cammar Pilru says:

    5 stars
This combo is surprisingly comforting—ratatouille on salmon sounds fancy but it actually makes everything taste bright. Followed the timing and the veggies were tender like they promised. Would make again for sure!

  63. User avatar odelia.wolf says:

    2 stars
Honestly? It’s a lot of chopping. I like quick meals, so this felt like a project. Flavor was okay but I don’t think I’ll repeat.

  64. User avatar hilario.bartell80 says:

    4 stars
Tasty idea, but my veggies didn’t get tender in just 8–10 minutes—needed closer to 15. Still turned out great though. Next time I’ll chop a bit smaller.

  65. User avatar Falmer Shadowmaster says:

    3 stars
Not sure about baking at 375°F with salmon and all those veggies stacked together. Mine came out a bit watery, like the tomatoes released too much liquid. Tasted good, just not as thick.

  66. User avatar angelique.wolf2025 says:

    5 stars
5 stars but only if you don’t overcook the salmon. I checked at 18 minutes and it was perfect. Oven temps vary, yknow.

    1. User avatar Chasity Kassulke says:

      5 stars
5 stars from me too—ratatouille over salmon is such a solid combo. I’m with you on the doneness though; I pulled mine at 18-20 min and it stayed juicy. Oven temps really do lie 😅

    2. 3 stars
I don’t know… 20-25 minutes at 375°F felt like a lot for 2 fillets. Mine came out a little dry and the veggies were mushy (maybe I diced too small). Still tasty, just next time I’ll check way earlier.
