Lol I’ve had ovens do that. But also: 10 minutes might just warm it, not really “pop.” Try baking a little longer until it’s bubbling at the edges or broil for 1–2 minutes at the end (watch it). And if your sour cream was mild, that can make it taste flat even with sharp cheddar.
