When you need a fast, hearty, and delicious breakfast, a bacon and egg quesadilla delivers on all fronts. Crispy on the outside, gooey and savory on the inside, it’s everything you want in a morning meal, and it comes together in just minutes.
Breakfast quesadillas are a smart twist on classic breakfast staples. Instead of serving bacon and eggs with toast on the side, you get everything wrapped up neatly in a golden tortilla. It’s perfect for eating on the go, serving to guests, or making ahead and reheating for busy mornings.
Start by crisping up some bacon until it’s golden and slightly chewy. While that’s cooking, scramble a couple of eggs, soft and fluffy is key here. Once the bacon is done, chop or crumble it and set it aside. Then warm up a tortilla in the same pan, sprinkle with shredded cheese (cheddar, Monterey Jack, or a mix), and layer on the eggs and bacon.
Fold it over and toast both sides until the cheese melts and the tortilla is golden and crisp. That’s it, breakfast is served. For extra flavor, you can toss in some sautéed onions, chopped spinach, or even a few slices of avocado before folding.
This breakfast quesadilla is endlessly customizable. Use turkey bacon or veggie bacon for a lighter option, swap in egg whites, or add hot sauce or salsa for a kick. You can even make it dairy-free with vegan cheese or try a low-carb wrap instead of a flour tortilla.
The best part? It’s all made in one pan, and cleanup is minimal. Plus, if you’re feeding a crowd, you can assemble several quesadillas at once and bake them in the oven.
Whether you’re making breakfast for yourself or a group, the bacon and egg quesadilla hits the sweet spot between convenience and comfort. It’s the kind of recipe you’ll turn to again and again — simple, satisfying, and always a hit.

Ingredients
- 4 slices bacon
- 4 eggs
- Salt and pepper black pepper, to taste
- 4 flour tortillas
- 1 cup shredded cheddar cheese
- salsa for serving
- cilantro for garnish
Instructions
- Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
- In a bowl, whisk the eggs and season with salt and black pepper.
- In the same skillet, pour the whisked eggs and cook until scrambled.
- Place a tortilla on a flat surface and sprinkle with shredded cheese. Top with half of the scrambled eggs and 2 slices of cooked bacon. Fold the tortilla in half.
- Heat a separate skillet over medium heat and add the folded tortilla. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with the remaining tortillas and filling.
- Serve the quesadillas with salsa and garnish with fresh cilantro.
Five stars!!! This is my new weekend breakfast. My kid ate it like crazy and asked for more cilantro (which I didn’t expect).
Okay, this is the best breakfast idea ever! Waffles better watch out!
Really? Quesadillas for breakfast? Seems weird, but whatever floats your boat. I prefer just eggs.
Wow, sounds delicious! Can’t wait to try it. Waffles can’t compete with this!
This is a basic breakfast, no offense. But I accually made it and it was ok.
I’m sorry you felt that way! It’s super easy and I think it tastes great! 😋
This recipe is super easy and delicious! My kids loved it.
Salt and pepper to taste is fine but I honestly added too much black pepper. Still good, just spicy!
These quesadillas were so good! Definitely a hit with my kids. 😋
Meh, too basic for my taste. I like my breakfast with more flavor. 😒
I get that! If you want more flavor, you could add some spices or even some jalapeños! 🌶️
Too basic? It’s just bacon and eggs, how complicated do you want it?? 😅
WOW this made my morning! I put salsa on mine like a pro! 🍽️
Bacon and eggs in a tortilla? Sounds… kinda gross. Why not just make a sandwich?
I think it’s actually a great idea! Tortillas are so versatile, way better than plain bread. Give it a shot!
These quesadillas are the best! So cheesy and filling. I can make them in no time!
Simple and tasty, just like my mama cooked it! But I added some spinach.
These were so good! The kids loved them for breakfast.
Glad to hear that! They’re super easy to make too. 😋
Great recipe for brunch! Everyone loved it. 🥳
I made this for brunch and it was a hit! Perfect with the salsa!
Delicious and filling! Would totally make this again!
Not bad, but 4 eggs feels like a lot for only 4 tortillas. I had some egg left over—still ate it anyway 😂
Haha I get you—4 eggs for 4 tortillas is definitely egg-heavy 😂 I usually use 2-3 eggs and it still feels rich. But if you like it that way, why not!
Idk, I think 4 eggs is spot on if you scramble them fairly thin. They’ll spread out once you’re dividing between tortillas. Leftover egg is never a problem in my house.
I’m not sure about using flour tortillas, could try corn. But okay I guess.
Yum! I can’t wait to try this with hot sauce on it! 🔥
Hot sauce sounds great! I love a little kick in the morning! 🌶️
Pretty solid recipe. Mine took a bit longer to get the tortillas golden, but the cheese melted perfectly. Next time I’ll scramble the eggs slightly thicker so they don’t spread as much.
This came out so crispy and cheesy. I added a little extra salsa and it was perfect for breakfast tacos-night vibes.
Do you have to use cheddar? I only have mozzarella. Will that work?
Nah, cheddar is the best for this. Mozzarella won’t taste right. Just get some cheddar next time!
Mozzarella can work, but it won’t be as strong in flavor as cheddar. It might get gooey though. Give it a shot!
I made these without bacon (veggie life) and they were still good.
I don’t know… bacon + eggs in a tortilla just feels like a basic breakfast mashup. Tasted ok, but I expected more wow factor. Maybe my salsa was too mild.
Totally get what you mean—bacon and eggs are delicious, but sometimes it’s “good, not wow.” If your salsa was mild, that could’ve flattened it a bit. Next time try a hotter salsa or add some diced jalapeño right into the egg.
I made it and mine came out great, but I added way more cheese and let the tortillas get darker. Also, I used less egg than the recipe says (4 eggs for 4 tortillas was too much for me). Maybe that’s why yours felt basic?
I tried it but found it too greasy. Maybe I should’ve used less bacon? 🤔
Yeah, bacon can be pretty greasy! Maybe try turkey bacon next time? It’s a bit lighter. 🥓👍
Bacon and eggs… classic! This is easy and delicious. 🙌
This recipe looks awesome! Can’t wait to try it. 🙌
I don’t have cilantro so I used parsley. Still turned out nice!
That’s great! Parsley works well too. I love that you made it your own!
I dunno, parsley isn’t the same as cilantro. But if it tasted good, that’s what matters!
Simple and filling. I used a bit more pepper and it tasted like a diner breakfast. Great for a quick weekend brunch.
Honestly? This is way better than breakfast tacos. The folding and toasting makes it feel fancy without extra effort.
U guys, is it really that good? I’m skeptical but I LOVE bacon.
This recipe is fantastic! My kids loved it. Definitely a five-star! ⭐⭐⭐⭐⭐
Wow, I never thought to make breakfast quesadillas. I used turkey bacon instead!
This came out so good. Crispy bacon + melty cheddar is a dangerous combo for a weekday breakfast. I added a little extra salsa and it was perfect.
2 out of 5. Didn’t like the texture of the tortillas. They got mushy.
I totally get it! The tortillas can be tricky, especially if they’re too thick. Maybe try a different brand next time?
OMG this is sooo good! My kids loved them! Thanks for the recipe!
I only had corn tortillas, so I tried it and… it was okay, not the same. Flour is the move if you want that golden crunch.
I’m not so sure flour is the “move” tho. Corn tortillas taste better to me and you can still crisp ’em in a dry pan, maybe just longer? Also I think cheddar gets oily if you cook too high heat…
Totally get that—corn tortillas can get a different texture. I tried switching once and it wasn’t as “crispy” either. Flour really does help with the golden crunch.
Isn’t this just a breakfast taco? I don’t get why it’s special.
It’s more about the combination and the crispy quesadilla than just a taco! Trust me, it’s delish! 😋
Easy to make, but my tortillas burnt. Gonna use a lower heat next time.
Bacon in breakfast is the best! I added some avocado too, yum! 🥑
Simple and delicious. I love quesadillas! 💖
My tortilla tore when I flipped it. I think the skillet was too hot and I rushed the cook time. Flavor still great—just needs more patience.
I messed up the first one 😅 I cooked it too long and the tortilla got hard, but the second batch was perfect. Also, paper towels are a must for draining bacon.
Haha same—first batch always betrays us 😅 Glad the second one came out perfect. And yes, paper towels are clutch for bacon. Makes a huge difference.
I don’t get why draining bacon on paper towels is necessary… I usually just let it sit in the pan. But the tortilla going hard sounds like you overcooked it in the skillet—try lower heat next time and watch it closer.
I burned one quesadilla. The second try was better. I swear time is everything with these.
Yum! Furst time I made a quesadilla n it was easy! I love cheesy stuff!
That’s awesome! Quesadillas are so versatile! You can use any filling you like. Keep experimenting!
Quick and easy, my kinda meal! I added some hot sauce for a kick!
Sounds delicious! Hot sauce is always a great idea! 🌶️
The instructions are clear, I just wish it said whether to cover the pan while scrambling so the eggs don’t dry out.
I’m skeptical about cooking eggs in the same skillet right after bacon. Wouldn’t that be greasy? It worked for me, but I had to wipe out some excess.
Yeah, I get your point—bacon grease can be super slick. I usually blot the bacon really well and wipe out most of the excess, then add a tiny bit of the leftover fat for flavor. If you leave too much, the eggs turn greasy fast.
Too greasy, my stomach hurt after eating them. 😩
Really? Who needs precise measurements for tortillas? Just grab ’em and go!
I agree! Just throw it together! Cooking’s about having fun, not being exact.
I don’t get why you’re cooking the eggs in the same skillet after bacon—won’t it taste smoky-burnt? Mine did taste a bit off, maybe I left bacon grease too long.
I must’ve messed something up. My tortillas burnt before the cheese melted.
Not enough instructions for the quesadilla folding! Took me forever!
Not sure about doing it in two skillets—felt a little extra work. But the texture was worth it. If anyone’s lazy, you can probably multitask carefully.
Eh, wasn’t that great. The eggs were kinda bland. Needs more seasoning.
Pretty good, but I think I used too much salt. Next time I’ll tone it down a bit.
Salt is important for flavor! But too much can ruin it. Maybe try herbs next time??
I’ve made this too and over-salted it once! It ruins the whole thing. Glad you’re gonna adjust next time!
The instructions are clear, and the quesadilla turned out great. Folding was easy once the cheese was evenly spread. I got crispy edges and gooey center—exactly what I wanted.
Nice! I love when it’s crispy outside and still gooey inside. The step about spreading the cheese evenly totally makes sense—will try this method.
Bacon and eggs in a tortilla? Sounds weird. Do people really eat this?
Should I add more cheese?? I might try that next time.
I followed it exactly and it was tasty, but mine got a little greasy—maybe I didn’t drain the bacon long enough. Still will make again though.
The instructions are clear and the result looked like the pictures in my head lol. Used cheddar and it actually held together nicely when I flipped it.
Five stars. I added jalapeños and it was amazing. The cilantro garnish is underrated.
I didn’t have bacon, so I used ham. Still came out great! Would recommend.
1 cup shredded cheddar was not enough for me. I added like double and it turned out better, so… do that?
This was a foodie disaster. Not worth it. 1 star.
I like the idea, but my eggs kind of dried out. Next time I’ll scramble a little less and keep the heat lower. Still tasty though!
Maybe it’s the skillet temp or you kept them cooking too long. I usually pull the eggs a little underdone, like they’ll finish when you assemble. Next time try that and it should be softer.
That totally makes sense—eggs can go dry fast once the heat’s a bit too high. Lowering the heat and scrambling for less time should fix it. Glad it was still tasty though!
10/10. Bacon, eggs, cheese—what more do you want! So easy and filling. Will absolutely add this to rotation.
Pretty good—next time I’ll scramble the eggs a touch softer because they got a little firm in my pan.
Nice! Soft scrambled eggs is the move. I usually pull them a little earlier since they keep cooking in the pan—then they stay creamy.
Firm eggs happen to me too 😅 Maybe your pan was too hot? I’d try medium-low or add a splash of milk/cream when whisking. Also, don’t cook the eggs too long before assembling.
Ok but is 4 eggs for 4 tortillas too much? I ended up with egg everywhere and had to overstuff one. Tasted good but messy breakfast.
Eh… it was fine but kinda plain for me. The eggs were tasty, but I wanted more seasoning—like cumin or chili powder. Salsa helps, but I’d boost the flavor inside.
I followed the recipe but my quesadilla fell apart. What did I do wrong? 🤔
Delicious! The bacon stayed nice and crisp, and the cheddar + eggs combo tasted super comforting. I added a little extra salsa and it really brightened everything up.
I don’t like eggs. Can I just do bacon and cheese? 😕
Kinda basic. I wanted more flavors, maybe some jalapeños? 🌶️
Not gonna lie, I messed up step 5 and burned one tortilla 😅 But the flavor was still there. My bad on the timing!
Aw no 😅 but honestly that happens—burnt spot or not, if the flavor was still good then you did the important part right!
Step 5 says 2-3 mins each side… if you burned one tortilla, maybe the pan was too hot? Also I think you should toast the tortilla first before adding eggs so it doesn’t get soggy. Just my thought.
I followed it mostly, but I used mozzarella because that’s what I had. Still good, just different. Cilantro garnish was a nice touch—would recommend.
Totally agree on the cilantro—freshens it up a lot. I’ve swapped cheeses too (pepper jack once) and it still hits. Glad it turned out good!
Mozzarella instead of cheddar… I guess that works? Cheddar melts different though, so mine would come out greasier? 😅 But cilantro on top is nice. Not sure I’d “recommend” mozzarella replacement, but glad you liked it.
Cilantro on breakfast is kinda weird to me, but I tried it and it actually worked. 5 stars.
This turned out so good—crispy bacon + melty cheddar is a perfect combo. The salsa on the side really woke everything up. Will definitely make again.
Not gonna lie, I was skeptical about scrambled eggs in a quesadilla, but wow. The cheese helps a lot. Next time I’ll use pepper jack for more kick.
Bacon + eggs + cheese is always a win. I used pepper jack instead of cheddar and wow.
Totally agree—bacon + eggs + cheese is basically unbeatable. Pepper jack is such a great swap for that extra kick!
I tried this but i used like “hot” pepper jack and it kinda overpowered the eggs for me 😅 still tasty tho. Next time i’ll mix it with regular cheddar maybe.
Pretty solid recipe. I’d just recommend cooking the eggs a bit softer so they don’t end up dry after you heat the quesadilla again.
Yum! But I think the cilantro is optional right? Not a fan of it.
