If youâre looking to shake up your breakfast routine, bacon and corn breakfast tacos are the perfect way to start the day with bold flavor and comforting textures. These tacos bring together crispy bacon, sweet corn, fluffy scrambled eggs, and gooey melted cheese all wrapped in a warm tortilla and they come together in minutes.
The combination of salty, smoky bacon with the natural sweetness of corn is incredibly satisfying. Whether you’re using fresh corn off the cob, frozen kernels, or even canned corn in a pinch, this ingredient adds a juicy pop that pairs perfectly with rich, savory bacon.
Scrambled eggs provide the base of the filling, offering a soft contrast to the crispiness of the bacon. Add in some shredded cheddar, Monterey Jack, or even crumbled queso fresco to take it up a notch. A sprinkle of fresh herbs like chives or cilantro can brighten things up and add a pop of color.
The beauty of these breakfast tacos lies in their versatility. You can use flour or corn tortillas, toast them lightly for extra texture, or keep them soft and pliable for easy folding. Want to add more heat? Toss in some jalapeños or a dash of hot sauce. Craving creaminess? A dollop of avocado or a drizzle of sour cream does the trick.
These tacos are great for busy mornings because everything cooks up quickly in one pan, especially if you prep the bacon in advance. They also make a fun brunch option, set up a DIY taco bar with different toppings like salsa, chopped tomatoes, or sautéed peppers so everyone can build their own version.
Whether youâre cooking for yourself or feeding a crowd, bacon and corn breakfast tacos are an easy way to bring flavor and fun to the table. Theyâre simple, satisfying, and just the kind of breakfast that will keep you coming back for more.

Ingredients
- 6 slices bacon
- 1 cup corn thawed, frozen
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 4 eggs large,
- 4 flour tortillas small
- 1/2 cup shredded cheddar cheese
- 1 avocado sliced
- cilantro for garnish
Instructions
- Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and chop it into small pieces.
- In the same skillet, add the corn and cook for 3-4 minutes, or until lightly browned. Season with salt, black pepper, paprika, and garlic powder.
- Push the corn to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
- Warm the flour tortillas in a separate skillet or in the microwave.
- To assemble the tacos, divide the scrambled eggs, bacon, corn, shredded cheddar cheese, avocado slices, and cilantro among the tortillas.
- Serve immediately and enjoy!
Pretty tasty, but my eggs got a bit overcooked while I was messing with the skillet. Next time Iâll keep them on lower heat or pull sooner. Still worth making again.
This recipe is very good. Very simple too. Makes me feel fancy.
I was skeptical about corn + eggs + bacon in a tortilla, but it came together surprisingly well. The seasoning is on point. I would maybe use less salt next time since my bacon was already salty.
Totally get the skepticism đ but I love when breakfast tacos surprise you like that. Iâve made similar mixes and yeahâif the baconâs salty, the 1/2 tsp salt might be too much. Next time Iâd cut it down or taste the corn after seasoning. Great tip!
I followed it mostly, but I used smoked paprika instead of regular and it came out great. Corn browned nicely and the seasoning was on point.
5 stars all the way! But what is paprika? Is it the same as chili powder? Help me, lol!
Why would you put corn in a taco? That just seems wrong… Can’t say I liked this recipe.
Oh my gosh, I can taste how good this is!! I added some hot sauce too. Yum!
Bacon + eggs = YUM! But why do we need corn?
These were AMAZING! The bacon and corn combo is genius! đ€€
Bacon and corn? Sounds weird tbh. May try it but dunno if I will like it. đ€
I totally agree! The flavors just meld so well together. This is definitely going into my regular breakfast rotation! đ
Not bad, but I think it could use some hot sauce for a kick. I like my tacos spicy!
I totally agree! A little hot sauce would make these tacos pop! đ¶ïž
But wouldn’t that make it too spicy for breakfast? I like them mild myself.
Soo easy to make! My kids loved it, even if they donât like cilantro. Will definitely keep this in our breakfast rotation!
I used tortillas that were too big, the tacos fell apart. Might wanna stick with smaller ones.
Totally agree! Smaller tortillas really help keep everything together. I love these tacos! đ
I dunno, I’ve used big tortillas before and it was fine. Maybe you just didn’t wrap ’em right? đ€
Bacon and corn tacos⊠sounds good but Iâm skeptical. If the eggs overcook, it gets rubbery fast. I think Iâll try it once I can follow the steps better.
I get the skepticism đ but the trick is keeping the eggs just âset.â I usually pull them when theyâre still a little glossyâthen they donât get rubbery. The corn with those spices is surprisingly good in tacos.
Not sure⊠bacon and corn tacos feel kinda weird to me. Like do you put the corn in raw? And 3-4 min seems too short. Also I always mess up eggs, so mine probably turn into sadness lol.
TOO much bacon for me. Can’t taste anything else. đ„đ”
I was skeptical at first, but these actually turned out really good! Just needed a bit more salt for my taste.
I don’t really like corn in my breakfast, but I tried this and it was okay. Still prefer plain eggs tho.
These were shockingly goodâcrispy bacon + sweet corn is such a solid combo. I added a little hot sauce and the whole thing tasted like a brunch taco shop.
I think I cooked it too long, the eggs got all dry. Oops!
I donât like avocados. Can I use something else?
I made these for my kids and they devoured them! Will make again for sure.
Um… can I use leftover rice instead of corn? Sounds better to me, right?
Using leftover rice instead of corn? Sounds wild but why not, I guess? Just make sure it tastes good. đ€·ââïž
Not sure about flour tortillas with bacon and corn⊠feels more like a burrito situation? Still, I guess melted cheddar and eggs can make anything work. The ingredients are pretty standard though.
I don’t know, my eggs ended up scrambled on the floor instead of the skillet… I need a new method.
I used lettuce instead of tortillas because Iâm on a diet. It still worked. Might try with tortillas next.
So good!! I didnât have cheese, but it was still great! Just a little spicy, loved it!
These sound dangerously good for a week-day breakfast. Crispy bacon + a little char on the corn is such a combo. Iâd add some hot sauce, but the base recipe looks spot on.
Bacon and corn? Sounds weird together. I don’t know about this…
Okay but⊠4 tortillas for 4 eggs seems kinda off? I ended up with extra egg and barely enough tortillas. Still tasted good though, just adjust proportions.
Not sure about the tortillasâflour felt kinda heavy for breakfast tacos. The filling was tasty, but I think Iâd try corn tortillas next time. Also, my eggs stuck a little in the skillet.
Yum!!!11! I made these for breakfast and my husband and kids all loved them too. Good job!
I donât see how corn belongs in breakfast tacos… kind of weird if ya ask me.
Cilantro ruins everything. đ€ź
Recipe was easy to follow, but my eggs got scrambled too much lol. Still tasted good.
These tacos changed my life! I made them for breakfast and now I want them every day!
I’m so glad you loved them! They’re my go-to breakfast now too. Have you tried adding hot sauce? It’s amazing!
Lol, I forgot to buy eggs so I just used beans instead. Still kinda worked, but I don’t know if that counts as the same recipe…
I followed it mostly, but my eggs stuck in the skillet and the scramble came out kinda rubbery. Not sure if my heat was too high. Flavor was still there!
These tacos are dangerously good. The corn gets a nice little char and the paprika/garlic really wakes everything up. I added a little hot sauce and it was perfect.
I don’t like corn in tacos, it just feels weird. I might try this without it.
These tacos are the best breakfast ever! So easy and delicious.
These tacos are AMAZING! The bacon adds such a nice flavor. Will make again!
I accidently added way too much paprika. Tastes a little spicy! Be careful with your spices, people!
Ate it, was ok I guess. Didn’t blow my mind, but not bad either.
How do you âlightly brownâ corn in just 3-4 minutes? Mine stayed kinda wet and pale. Maybe my pan was too crowded or the corn was still too cold. Flavor was okay though.
Pretty solid recipe, easy too. My only tweak: I cooked the corn a bit longer so it got more caramelized, and I used mozzarella instead of cheddar. Still ate them all way too fast đ
Totally agreeâcaramelized corn makes these next-level. Iâve swapped cheeses too (mozz works great!) and wow, once you start eating you canât slow down đ Thanks for sharing your tweaks!
Pretty solid breakfast idea. I followed it mostly, but I might add a little hot sauce next time. Also, I donât know why, but my tortillas dried out in the panâmicrowaving them like you said would help.
Made something similar and it was pretty tasty, but I usually cook the corn a bit longer so it gets more color. Also, 1/4 tsp paprika feels smallâthough maybe thatâs just my spice tolerance.
Tacos for breakfast? Sounds weird but they taste great. I’m sold! đź
Tacos in the mornin? I dunno, seems odd. But I’m curious. Maybe I’ll give it a shot. đ€
Breakfast tacos are the best! I’ve tried them with different fillings, but bacon and corn? Genius! đ
These tacos are amazing! I made them for my family and they all loved it! Definitely a 5-star recipe!
1/2 cup cheese? Seems low. Also 6 slices bacon for 4 tortillas is kinda suspicious unless you like bacon like crazy. I mean it was good but I added more cheese and bacon anyway.
Totally get what you meanâ1/2 cup cheese for 4 tacos can feel a little stingy. I like mine pretty cheesy too, so âadded moreâ is the right move. Also yeah, 6 slices bacon for 4 tortillas is definitely bacon-forward đ
Really solid quick breakfast. I used pre-cooked bacon once and it still worked, but I think fresh bacon makes a bigger difference. Next time Iâll do a few more minutes for extra browning on the corn.
These were honestly dangerously good. Crispy bacon + the lightly browned corn is such a great combo, and the paprika/garlic really pops. I added a little hot sauce and it was perfect for breakfast.
Dangerously good is right đ I did something similar but used smoked paprika and added a pinch of cumin. Also my eggs kinda overcooked on the first try, but the taco still slapped.
Yessss! Crispy bacon with those lightly browned corn bits is exactly the move. Iâm making these again this weekâhot sauce is a perfect call.
So quick and easy to make! I love breakfast tacos. Will definitely make again.
Short, sweet, and simple. Exactly how I like my breakfast! Bravo!
My kids loved these! So easy to make and they gobbled them up. Will make again for sure.
I dunno about the flour tortillasâI feel like corn tortillas wouldâve been better. Flavor was good though, and the cheddar melted well. Would recommend, just tweak the tortilla.
Bacon and corn? Total waste of a breakfast! Just stick with sausage. đ
Okay, but is it really breakfast if thereâs no pancakes? Iâm just sayinâ…
Pancakes are great and all, but these tacos sound amazing! Give them a try! đźđ
I dunno, breakfast tacos can be just as good. But I get it, pancake lover here too. đ
These tacos are AMAZING! I added some hot sauce and it took it to the next level. Will make again!
Bacon is life! I can’t wait to try these for breakfast! đ
Yesss! Bacon makes everything better! đ„
Meh, could use more seasoning. Also cilantro taste is hit or miss for me, so I skipped it and it was fine. Maybe add onions?
Not bad, but mine came out kind of dry. I think I overcooked the eggs or didnât warm the tortillas long enough. Flavor was okay thoughâpaprika and garlic powder are doing work.
These are amazing! I didn’t think bacon and corn would go together but wow!
Meh⊠I didnât feel like it needed the tortillas at all, kinda tasted like breakfast scramble. Also my corn burned even though I swear I set it to medium. Might try again with different heat.
Corn burning is usually heat too high or skillet too hot. Iâd try a lower temp and stir more oftenâalso thawed vs frozen can change timing. The tortillas are totally optional though, but thatâs part of why I like it.
I get what you meanâours were more like a scrambled-egg plate than âtaco vibes.â Next time Iâm thinking smaller scramble + warmer tortillas so it holds together better.
Bacon and eggs are classic, but corn? Nah, Iâll shut my mouth. Not for me!
5 stars for sure! We added hot sauce, sooo good!
These are dangerously good. The corn getting a little browned + crispy bacon is such a nice combo, and the avocado makes it feel really complete. I used regular grocery frozen corn and it still worked great.
Mmm that sounds dangerously goodâbrowned corn + crispy bacon is the move. I love how the avocado rounds it out. Might have to try it with my frozen corn too!
Bacon makes everything better! But why corn? Seems odd.
These tacos r super yummy but I think there should be more bacon. Like who doesnât want extra bacon?
Not gonna lie I was skeptical about corn + bacon in the morning, but wow. The combo is salty/sweet and the cheddar pulls it together. Will make again.
My corn stuck to the pan a little and I had to keep scraping. Also I didnât have cilantro so I used parsley… still ate them all đ
I was skeptical at first, but the bacon and corn combo is surprisingly good! Just don’t forget the avocado.
Tacos were alright but took a long time to make, not sure if I want to try again.
I tried it once with frozen corn and didnât get any real browningâmight be my pan heat. Still, the flavor was good. Iâll probably increase the time and use medium-high next time.
Looks great but my eggs always stick when I scramble in the skillet đ guess I need nonstick spray.
