Aubergine & Chickpea Bites are a flavorful and satisfying snack or appetizer that combine the earthy taste of aubergine (eggplant) with the protein-packed goodness of chickpeas. These bite-sized treats are perfect for serving at parties, adding to a lunchbox, or enjoying as a light meal. With a combination of spices, herbs, and a crispy coating, these bites are sure to please vegetarians and non-vegetarians alike. Plus, they are naturally gluten-free, making them a great option for those with dietary restrictions.
To make Aubergine & Chickpea Bites, start by roasting or grilling the aubergine until it’s tender and slightly charred. This step brings out the natural sweetness of the aubergine, creating a rich, savory flavor. Next, mash the chickpeas with a fork or in a food processor, leaving some texture for added bite. Combine the mashed chickpeas and aubergine with ingredients like garlic, lemon juice, cumin, and coriander to enhance the flavor. Fresh herbs like parsley or cilantro can be added for a burst of freshness.
To bind the mixture together, you can use a little flour (or chickpea flour for a gluten-free version) and egg, which helps form the dough and keep everything together. Once the mixture is well combined, shape it into small balls or patties. You can then pan-fry or bake the bites until they are golden brown and crispy on the outside, while remaining soft and tender inside.
These Aubergine & Chickpea Bites are incredibly versatile. You can serve them with a variety of dipping sauces like tahini, yogurt, or a spicy harissa sauce. They also pair well with fresh salads or can be used as a filling for pita bread for a delicious sandwich. If you want to make them even more flavorful, try adding a touch of chili flakes for a bit of heat or a spoonful of tomato paste for a richer flavor.
These bites can be made ahead of time and stored in the fridge or freezer, making them an excellent option for meal prep or last-minute gatherings. Whether served as an appetizer, snack, or main dish, Aubergine & Chickpea Bites offer a healthy and delicious option that’s packed with flavor and texture.

I’m skeptical about pulsing it into balls—mine fell apart. Still tasted good, but presentation was sad lol.
Oh no 😅 Mine did that once too—what helped me was letting the roasted aubergine cool a bit and then pulsing *less*, so it’s a chunkier mix. Also I gently press the balls so they’re packed tight. Still yummy either way though!
Hmm tasted better than I thought it would. Who knew! 🤔
I dunno, I wasn’t too impressed. The flavor was kinda bland. Maybe I did something wrong?
Yummm! Perfect for my vegan diet! I added some chili flakes for a kick. Highly recommend!
Not sure about those chickpeas, I mean, they’re okay but not everyone likes them. Anyone else struggle with that?
Sounds delicious! I’ll have to try the chili flakes addition. Thanks for sharing!
These bites are AMAZING! I made them for a party and everyone loved them. 5 stars for sure!
I was a little skeptical at first but wow, these bites are amazing! Will definitely make again.
Easy to follow, but my food processor couldn’t handle the thickness.
Sounds like you might have a weak processor. Mine handled it just fine!
I had the same issue! I ended up using a potato masher instead. It worked better for me!
Why do people like this stuff? Tastes weird to me.
I totally get it, they can be an acquired taste. Not everyone likes aubergine, I guess.
I love them! The flavors are unique and delicious. You might just need to give them another try!
Aubergine? Never heard about that before. Can you use something else? Like potato?
Very nice! But next time I will add more garlic, I love it garlicky! 🍽️
These are amazing! I made them for my friends and everyone loved them. Will definitely make again!
Meh. Like it’s okay, but no wow factor. Also, my oven runs hot so I think I overdid them a little—could be my fault.
Easy to make but could use a bit more flavor. Next time, I might add some chili flakes or maybe even cheese.
I totally agree! A little cheese would make it so much better. Or maybe some hot sauce too! Yum!
I made them for my kids, and they actually ate them! Miracle! 😄
Good, but why can’t they just be called eggplant bites? Why all this fancy language?
Not bad, but I expected more “wow” after all the chickpeas. Maybe my oven runs hot because the aubergine got too soft.
Hmm, I get what you mean. With chickpeas I’d expect more crunch too—20 minutes at 200°C can make the aubergine go super soft (especially if your oven runs hot like you said). Next time I’d roast the aubergine a bit longer or cut it slightly larger so it doesn’t melt. Also, if you want more “wow,” you could add a pinch of smoked paprika or toast the chickpeas briefly before blending. 😊
Not bad, but 200°C for only 20 minutes felt short for the aubergine cubes I had. Flavor was there, just needed longer cooking.
Tried this and it was kinda bland. Might be my salt situation? Also I think I forgot the garlic (or maybe it was the oven being too hot—who knows 😅).
Yum! I added some herbs and they came out super tasty!! 🌿
These are surprisingly tasty—kind of like a veggie falafel vibe. I added a pinch of chili flakes and they disappeared fast. Great snack!
Delicious! Too many ingredients for me tho. But I love it.
I followed the steps pretty closely, but mine came out a bit too mushy to roll nicely. Maybe my aubergine was too wet? Still tasty though.
Wait—no eggs? lol. Still, the garlic + lemon combo is 🔥. Next time I’ll add a pinch of paprika for extra warmth.
Yum! Used some chili flakes for extra kick. Everyone in my family loved them!
Hmm, I don’t know. The texture was off for me, and I think too much cumin was used. I’ll stick to my old recipe.
I used less olive oil and they turned out dry. Don’t skimp on the oil! Also, can we add cheese next time?
Definitely agree about the olive oil! It’s so important for moisture. And yes, cheese would be a tasty addition!
Not bad, but a bit bland. I think it needs more spices or something.
Took too much time to prep. I prefer quick recipes.
How many calories in these? I’m on a diet and need to know!
These were surprisingly good! My kids even liked them!
Yum! I dyall love this recipe 🙂 I added some chili flakes for an extra kick. Will do again!
Can I use other beans instead of chickpeas? Never liked them.
You could try black beans or kidney beans instead! They might change the taste a bit but could work!
Not my thing. I don’t even like chickpeas. 1 star.
These turned out way better than I expected—crispy-ish edges on the aubergine and the lemon really brightens it. Great for a quick snack!
These are dangerously snackable. I used a bit more lemon and they tasted super bright—would 100% make again for gatherings.
Ok so I used way too much garlic (oops). They were still good, but I could practically smell them from another room 😅
These are such a great snack—roasting the aubergine first really helps. I made them for game night and they disappeared fast.
Kinda skeptical about using a food processor—mine turned more like paste than chunky bites. Still tasty though, just not the texture I expected.
Ugh, I didn’t like the texture. It was too mushy for me. I prefer my snacks with a crunch.
This recipe is too complicated, what is a food processor??
I totally get what you mean! A food processor can be a bit confusing if you’ve never used one. It’s just a machine that helps chop and blend food faster. You can also mash the ingredients by hand if you want to keep it simpler!
Just google it! A food processor is a kitchen tool. But maybe try making it without one? Just mash by hand!
I don’t know… Something feels off about mixing chickpeas with aubergine. Won’t try it.
I was skeptical about aubergine, but this recipe changed my mind! So good!
I don’t know, aubergine still sounds weird to me. How can you make it into bites? 🤔
It’s amazing how aubergine can taste so good when cooked right! Glad you enjoyed it!
Omg I can’t cook at all, but this was pretty simple! My kids even liked them, shocker!
Meh, they were ok but not what I expected. Maybe it’s the cumin? Not a fan of that spice.
Cumin is amazing! You just might not like the flavor combo. Try adding more lemon or garlic!
I get that! Cumin can be pretty strong. Maybe try it without and see if you like it better?
So good! I added some chili flakes for a kick!
Ok ngl kinda good. 2/2 would snack again.
Simple ingredients but REALLY flavorful! My kids even ate them, and that’s saying something!
That’s amazing! Kids can be so picky, so it’s great they loved it! How did you serve them?
I don’t know, seems kinda bland with just those ingredients. Where’s the spice?
Too much work for little bites. Just get chips instead.
I kinda agree with you. Sometimes it’s just easier to grab chips, but these bites are worth trying! Maybe for a special occasion?
Aubergine? Isn’t that eggplant? What’s wrong with using eggplant???
These are AMAZING! I made them for a party and everyone loved them.
So glad to hear that! These bites are a hit at parties. Did you serve anything with them?
Yum! Great for a party. Got lots of compliments!
Glad you liked it! These bites are a hit at every gathering I’ve been to.
Yum! Simple and healthy. Will try with extra salt and maybe some fresh parsley on top.
These are super yummy! I made them for my kids and they loved them. 😍
Quick and easy, but I ended up with a whole mess in my kitchen. Make sure to clean as you go!
Totally agree, my kitchen looks like a war zone after I tried this! But they tasted great! 😅
I don’t know about this recipe. Aren’t chickpeas supposed to go in curry or something? This sounds weird.
Had to leave out the cumin cause I couldn’t find it. Still tasty!
Not bad, but I found the mixture a little dry after pulsing. Next time I’ll add a spoon of olive oil or a bit of tahini for moisture.
This is way to complicated! Whose gonna use a food processor? Just use a fork!
I get what you mean, but sometimes food processors make things easier, you know? Plus, you can still mash it with a fork if you want!
I followed it mostly, but I added a pinch of chili flakes and it was 🔥. Would make again for sure.
I loved these bites, perfect for my vegan party! ❤️
👌🏼 Yummy! I love chickpeas so this is a win for me!
Glad you enjoyed it! Chickpeas are the best 😍
I’d give it 5 stars if it included cooking time for forming the balls? Like do you need to chill them or bake again? Mine fell apart a bit.
Who knew chickpeas could taste this good?! 10/10 would recommend.
I made these last night and they were a hit! Everyone loved ’em. Thanks for sharing!
Pretty good idea, but my aubergine took longer than 20 minutes to get soft. Once I roasted it extra, the texture was perfect and the bites held together.
I followed the steps pretty closely, but mine came out a little dry. Next time I’ll roast the aubergine a touch less and maybe add a splash more lemon.
Wow, the texture is perfect—chunky but still holds together as bites. Great flavor balance from cumin + garlic.
Pretty easy to make but I don’t like aubergine. Made my husband eat em LOL!
That’s funny! I hate aubergine too, but I love chickpeas. Maybe I can just skip the eggplant next time!
10/10 would snack again. The kids even liked it, which is a miracle!
That’s awesome! Kids can be tough to please, but these bites sound like a win! Will definitely try it! 🌟
Really? I thought kids hate veggies. Do they even know it’s eggplant? 😂
Not bad, but I think 20 minutes for the aubergine is short—mine needed closer to 30 to get soft. Flavor was solid once it finally roasted.
I tried to “shape into balls” and it was a total mess lol. Maybe I didn’t roast enough. Flavor is good, but presentation needs work.
These are amazing! I made them for a party and they disappeared in minutes! Definitely a 5-star dish.
So good! I added some chili flakes for a kick. Will make again!
I think chickpeas and aubergine are weird together… not for me.
I actually love that combo! The flavors are amazing together. You should give it a shot!
I’m skeptical about blending roasted aubergine + chickpeas into balls without binding. Mine fell apart a little, but I ate them anyway with yogurt.
I didn’t have cumin so I swapped in smoked paprika. Turned out kinda amazing honestly—smells like roasted veggies at a street market.
My kids liked it, so that’s a win. I didn’t bother with perfectly round balls—just scooped and baked/served. Easy enough!
If you don’t like veggies, you’ll hate this recipe. Just sayin’.
Pretty good, though mine was a bit mushy after roasting and then blending. Next time I’ll roast the aubergine a few extra minutes for more texture.
Quick, easy, and delicious! Perfect for the party I hosted. Thank you for sharing this recipe!
This recipe is disgusting! Aubergine? Really? Gross. 🤢
Not as strong flavor as I hoped. Maybe more garlic next time?
Easy snack! My kids liked it even without extra sauce. 10/10 would make again.
Sounds tasty, but 200°C for only 20 min on aubergine seems kinda short? Mine usually needs longer to get soft all the way through. Still, gonna try it—could be the food processor step that fixes it.
Glad your kids liked it! We’ve found chickpeas + eggplant tastes way better than expected. Did you end up adding any extra sauce, or just lemon/garlic as-is?
My mother used to make something similar but with potatoes. Kinda miss that!
I get that! Potatoes have a comforting vibe. But these bites sound delicious too!
So much better than I expected. Who knew aubergines could taste this good? Great recipe!
I totally agree! I’ve never liked aubergines before, but this recipe changed my mind. Super tasty!
I’m not an expert, but I thought these would be more flavorful. Might add more spices next time.
I totally get that! More spices could definitely amp up the flavor. Maybe try adding smoked paprika or cayenne next time? 😊
Not bad at all, but my aubergine took way longer than 20 minutes to get soft at 200°C. I still mashed it and baked again a bit. Would make again.
I followed the recipe to a T but they just kinda fell apart. Any tips?
Maybe try adding some flour or breadcrumbs to help them hold together better. It works for me!
Very good but I think it needed more lemon. Just my thought!
These are vegan? Love that. The prep is easy and they look fancy even though it’s just a baking + blitz situation.
Kinda surprised how good it was with just cumin + lemon. The lemon really brightens it up. Will definitely make again.
Not for me, the flavors didn’t really blend well. I prefer meat snacks.
Eh, not really my thing. Couldn’t get over the texture of the aubergine.
I totally get the texture thing! Aubergine can be weird sometimes. Have you tried it in a different recipe? Maybe a stew or curry could change your mind!
Come on, it’s not that bad! Just give it another shot, maybe with more seasoning? I think you might actually like it if you give it a chance!
Simple enough, but 20 minutes for the aubergine feels a little short. Mine needed closer to 30 to get properly soft. Still good though—would make again.
Clean, simple ingredients. The cumin + lemon combo is legit. I served them with yogurt and everyone ate them immediately.
Simple and tasty! The kids even ate em! 😍
I used less garlic (only 1 clove) because my stomach is sensitive and it still tasted great. Wouldn’t change much else.
Honestly, this feels like healthy food that actually has flavor. Loved the lemon punch. Also super easy to prep!
Hmm I like the idea, but 200°C for only 20 min for the aubergine—won’t it stay kinda firm? I’d probably roast longer, unless my oven runs hot. Still sounds tasty.
Yes!! The lemon really wakes everything up. I made these and they turned out super satisfying—definitely not bland “healthy” food.
I’m not sure the food processor step works that well. I ended up with more of a paste than chunky bites, but the flavor was still great.
My food processor struggled with the chunky part and it turned more like a mash than bites. Still tasted great though—just spoonable.
Looks good, but can anyone tell me if I can freeze these?
These were so good! I had them at a party and everyone loved them. Will definitely make again! Thanks!
I’m so glad to hear that! These are a hit at gatherings for sure. Perfect combo of flavors!
They sound good, but I’m skeptical. Aubergine is kinda slimy. Did you add anything else to make it taste better?
These came out so flavorful—especially the lemon + cumin combo. I barely had to season extra. Will make again!
I used canned chickpeas (as told) and it was fine, but I think fresh would be better. The garlic and lemon might be overpowering if you’re not a garlic person.
Good to hear canned chickpeas worked! Fresh might be slightly nicer, but canned is usually more consistent and way faster. Totally agree—garlic + lemon can be punchy. I’d start with 1 clove or half the lemon juice if someone isn’t into bold flavors.
Pretty simple to make! I tried them with some tahini sauce. So good!
My oven ran hot and they browned early, so I pulled them sooner. Taste was great, but the texture was more like patties than bites.
These aubergine bites are amazing! I can’t believe how simple yet tasty they are. Will make again!
Glad you enjoyed them! They’re a hit at my parties too!
Love the idea of turning chickpeas into bites without frying. The cumin + lemon combo is chef-y and the texture is fun to eat.
I didn’t have cumin so I used paprika… still turned out great!
One word: delicious.
Thanks! 😄 These bites are seriously addictive—love the lemony, cumin kick.
I followed it pretty closely and the mixture was too wet for me at first. Next time I’ll roast the aubergine a bit longer or squeeze excess water out.
Yeah, that tracks. Aubergine can hold onto a lot of moisture even after roasting—roast a bit longer or squeeze it after cooking and it should bind way better. Good call on the next time!
I tried it and it was kinda bland for me. I ended up adding more cumin and some smoked paprika. Still, the idea is good.
Ok but where’s the binder? Mine kind of fell apart when shaping. Taste was decent though—cumin + lemon is a good combo.
These came out really tasty—nice and savory with a bright lemon kick. I mashed mine a bit more for extra cohesion and it helped the bites hold together.
