Zuppa Toscana

August 12, 2024

Zuppa Toscana is the ultimate comfort food, a soup that’s both rich and nourishing. Known for its satisfying blend of flavors, this Italian classic combines savory sausage, tender potatoes, fresh kale, and a creamy broth. It’s the kind of dish that invites you to curl up on the couch with a warm bowl on a chilly evening or serve it at a family gathering where everyone can enjoy its rustic, hearty goodness.

The key to this soup is its broth. It starts with a flavorful base made from chicken stock, heavy cream, and garlic. The creaminess from the heavy cream makes the soup feel indulgent, but it’s balanced with a bit of heat from crushed red pepper flakes, giving it a subtle kick that keeps things interesting. This combination of creamy and spicy is what makes Zuppa Toscana so comforting and satisfying.

The potatoes are sliced thin and simmered until they’re tender, soaking up all the savory flavors of the broth. They provide the heartiness that makes this soup feel like a meal on its own. Fresh kale is added at the end, wilting into the soup to give it a burst of color and a fresh, earthy flavor. It contrasts beautifully with the richness of the cream and sausage, adding a bit of balance to the dish.

The sausage, typically a mild Italian variety, brings savory, juicy flavors to the soup. It’s usually crumbled and browned before being added to the broth, which infuses the soup with deep, flavorful meatiness.

Zuppa Toscana is a wonderfully versatile dish. You can easily adjust it based on your dietary preferences, using turkey sausage instead of pork, or substituting the cream with coconut milk for a dairy-free version. It’s also a great make-ahead dish. The flavors only get better after a day or two in the fridge, making it perfect for meal prep.

Whether you’re cooking for a crowd or enjoying it on your own, Zuppa Toscana is a warm, satisfying dish that brings comfort and joy in every spoonful.

Not bad, but I found it a little salty because my broth wasn’t as low-sodium as I thought. Taste first before dumping salt in.

    1. User avatar johnathan.bauch says:

Totally agree—this is one of those recipes where you really gotta taste as you go. I always forget different broths vary so much. Good call!

    2. User avatar bradly.koelpin24 says:

      4 stars
Idk i used regular broth and it was fine? maybe i just added less salt. But yeah taste first, otherwise it turns into salty soup fast 😅

  2. User avatar rocky.block64 says:

    5 stars
I tried it and my family loved it. Definitely a keeper!

  3. User avatar lorenzo.bosco says:

    3 stars
Not bad! I’m just surprised there’s no cheese or rosemary. Still, it’s a solid weeknight soup.

  4. 3 stars
This recipe looks good, but I don’t think kale belongs in a soup. Spinach is better.

  5. 3 stars
My grandma used to make this with different ingredients. Not sure if this is the ‘real’ Zuppa Toscana. 🤔

  6. User avatar chanda.osinski18 says:

    4 stars
Quick and easy to make. I added more garlic because I’m a garlic lover! Yum!

    1. 5 stars
Garlic makes everything better! Can’t wait to try this. Thanks for sharing!

  7. User avatar Maegan Gerhold says:

Not gonna lie, I was skeptical about adding cream at the end. Mine kinda looked a little grainy after boiling, so I think I should’ve lowered the heat before pouring it in. Tastes great even if it didn’t look perfect.

  8. 5 stars
Super easy and it tastes like it came from a restaurant. I added a little extra garlic and it was perfect. 10/10 comfort food.

    1. User avatar Miss Millard Raynor says:

      5 stars
Yes!! Zuppa Toscana is such comfort food. I’m glad the garlic boost worked—this recipe really does taste restaurant-y.

    2. User avatar leonia.rowe says:

      4 stars
I tried it last night and it was good but I think my potatoes took longer than 15 min. Also I used spicy sausage and it was a bit too salty even with low sodium broth, so next time I’ll go lighter on the salt.

  9. 3 stars
Not gonna lie, I found it a little bland. Maybe my sausage wasn’t flavorful enough. The texture was good though—creamy without being weird.

  10. 4 stars
Easy steps, not too many ingredients. My potatoes took closer to 20 minutes though. Still delicious.

  11. User avatar ralph.hilpert15 says:

    4 stars
The instructions are clear, but my potatoes took closer to 25 minutes to get tender. Still delicious though—would make again.

    1. 5 stars
Totally agree—mine usually takes a bit longer too. 25 minutes sounds about right depending on how thick the potato slices are. So glad it still turned out delicious!

  12. 5 stars
Absolutely delicious! My kids loved it. Will make again for sure.

  13. 4 stars
Does anyone know if you can use turkey sausage instead? I’m trying to be healthy.

    1. User avatar salvatore.kuhic says:

      4 stars
Yeah, turkey sausage should work just fine! It’ll be a healthier option for sure. Just adjust the seasoning since it might be milder than Italian sausage.

  14. User avatar Prostetnic Vogon Kwaltz says:

    5 stars
This tastes like Zuppa Toscana from the restaurant, honestly. I didn’t remove kale stems (oops) and it was a little chewy, but everyone ate it anyway.

  15. 3 stars
Tried this but found it too rich for my taste. Maybe it’s the cream? I prefer lighter soups.

  16. User avatar devin.baumbach33 says:

    4 stars
I wasn’t sure about the kale at first, but it really adds to the soup. My kids even ate it without complaining! Who knew greens could be tasty? 4 stars!

  17. User avatar donny.nikolaus1972 says:

    4 stars
Nothing like a good soup in winter. Used turkey sausage instead – still turned out delish!

  18. 4 stars
I like it but 3 cups potatoes feels a little heavy. Next time I’ll use slightly less and add more kale.

    1. 5 stars
Totally agree—3 cups potatoes can make it feel kinda heavy. Next time I’d do 2 cups and stretch it with extra kale or even a bit more broth. Nice tweak!

  19. User avatar isiah.romaguera2019 says:

    5 stars
This is just like the one from that restaurant on the corner!! I thought I would never get it right but you nailed it!

  20. User avatar asha.altenwerth63 says:

Made this tonight—so cozy. The sausage browning step really matters. I used half-and-half since that’s what I had and it still tasted great. 10/10 for a weeknight soup.

  21. User avatar oPandariaNo says:

    3 stars
I tried half-and-half instead of heavy cream and it was fine, just thinner. Still tasty, but I can see why people use full cream.

    1. User avatar Arnold Quigley says:

      5 stars
Good to know! I always worry half-and-half will make it taste “watery,” but thinner still sounds okay. Did you change the cooking time at all, or just swap 1:1 and go?

    2. User avatar Storm Atronach says:

      2 stars
Half-and-half fine?? I dunno, heavy cream is what makes it thick. Half-and-half is like… milk. I’d rather add a little flour or extra cream at the end. But hey, if you liked it!

  22. User avatar brinda.oconner44 says:

    5 stars
Made this tonight—so cozy. The kale stays bright and the sausage flavor really comes through. I used spicy sausage and it was perfect.

  23. 5 stars
This recipe is a lifesaver! Super easy and soooo delicious. My family loved it!

  24. 4 stars
Not gonna lie, I was skeptical about using 3 cups of potatoes—felt like too much. But it thickened nicely and made it feel restaurant-y.

    1. User avatar cornell.turcotte says:

      5 stars
Totally get that—3 cups sounded like a lot to me at first too. But once they cook down and the broth thickens, it really does come together like a restaurant bowl.

  25. 5 stars
    Soo good!

  26. User avatar joel.aufderhar says:

    4 stars
I didn’t have kale, used spinach instead. Is that ok? Still good!

  27. User avatar cornell.cormier2014 says:

    2 stars
I dunno, seems kinda bland. Needs more spices or something.

    1. 4 stars
I actually think it’s pretty good as is! But yeah, a little sprinkle of red pepper flakes could do wonders. Just my opinion!

  28. User avatar zachariah.leannon21 says:

    5 stars
This slaps. Zuppa vibes for real!

  29. 1 star
Sausage? Is that the same as hot dogs? Asking for a friend.

  30. 5 stars
Made this tonight—so cozy. The sausage + garlic combo is 🔥 and the kale actually stays vibrant. I used half-and-half like the recipe suggests and it turned out creamy without being too heavy.

    1. User avatar blake.runolfsdottir says:

      5 stars
Yes!! I love when the kale doesn’t turn sad and olive-y. Sausage + garlic really makes it pop—glad it came out creamy without being heavy. 🙌

    2. 4 stars
I made it but my potatoes took WAY longer than 10-15 min, like almost 30… might’ve been the cut size. Also I used half-and-half and it was still tasty though not super thick. Still a good comfort soup!

  31. 4 stars
Made it tonight and it turned out really good. I didn’t have kale stems removed though (oops) and it was still tasty. Next time I’ll be more careful with the prep.

  32. User avatar eleonor.runolfsson37 says:

    4 stars
Yummy! Perfect for a chilly evening. Made some garlic bread to go with it!

  33. 3 stars
Tastes good, but why so much cream? The kale should shine!

  34. 3 stars
Okay soup! It was just alright, nothing special. I don’t know if I’ll make it again. 3 stars.

    1. User avatar Gail Andrews says:

      3 stars
I totally get what you’re saying! I found it kinda bland too. Maybe try adding some spices next time?

  35. 3 stars
Why use broth when you can just use water? I think that’s silly… But it turned out good, I guess.

  36. 5 stars
Yummmm! I added some crushed red pepper for kick! Best soup ever! 😊

    1. User avatar janine.beier15 says:

      5 stars
Crushed red pepper sounds like a great idea! I love a little heat in my soup. Can’t wait to try it your way! 👍

  37. 2 stars
I think it could use some more spices. Needs a kick! Too bland for my taste.

    1. User avatar clinton.wilderman6 says:

      3 stars
Maybe you just don’t have the right palate? This soup is creamy and comforting as is!

    2. User avatar rudolph.harber says:

      5 stars
I agree! A little chili flakes or some Italian herbs can really elevate it. Just a pinch of love! 😋

  38. User avatar fidel.halvorson says:

    5 stars
This soup is absolutely amazing! I love the creamy texture. Five stars!

  39. User avatar keven.marquardt32 says:

    2 stars
Made this for dinner, but was too salty! I followed the recipe but maybe I added too much sausage. 2 stars. 😕

    1. User avatar brendon.mckenzie10 says:

      4 stars
I think adding too much sausage could definitely make it salty! Maybe try using low sodium broth next time to balance it out. Don’t give up! 😊

  40. User avatar Felipe Cummings Jr. says:

    4 stars
I subbed half-and-half and it worked fine, but the soup didn’t look as creamy as I expected. Tasted great regardless.

  41. User avatar jimmie.bailey91 says:

    3 stars
Not bad but mine came out bland. I think I under-salted. Also I added salt at the beginning and idk if that was the issue.

  42. User avatar Cammar Pilru says:

    5 stars
This soup is amazing! So hearty and flavorful. I added a bit of red pepper flakes and it was perfect.

  43. User avatar waltraud.jacobi says:

    5 stars
The texture was spot on. Also loved that you remove the kale stems—that little detail matters. Will make again.

  44. User avatar leilani.spinka says:

    5 stars
Love this soup! I made it for my friends and they thought I was a chef. Haha!

  45. User avatar Restless Draugr says:

Yum! I added some red pepper flakes for a kick! 🔥

    1. User avatar delores.macejkovic3 says:

Red pepper flakes sound great! I’m definitely trying that next time. 🌶️

    2. User avatar maple.wolff says:

      3 stars
I dunno, man. Sounds spicy for a soup, but whatever floats your boat! 🤷‍♂️

  46. User avatar Mauro Altenwerth says:

    4 stars
The flavor is great, but I might reduce the cream next time. It turned out a bit heavy for me. Still, good and filling.

  47. User avatar jamar.luettgen says:

Zuppa Toscana? More like Zuppa TOXIC! Hated it.

  48. User avatar Chaurus Hunter says:

    5 stars
Yum! Love it! My husband said it’s the best thing i’ve made in ages. I’ll be making it again for sure! 😊

  49. User avatar ArabianNights says:

    3 stars
This was kinda bland until I added extra salt at the end. After that, it was better. I’d also add more garlic next time.

  50. User avatar Sumiko Wehner says:

    4 stars
Yummy! What bread goes with this?

  51. User avatar Mervin Rohan says:

    2 stars
Meh. For a “Zuppa Toscana” vibe I expected more Tuscan stuff. It’s basically sausage potato soup, ya know?

  52. 2 stars
I tried making this but my sausage burnt. It didn’t taste good at all. Maybe I did it wrong?

    1. 4 stars
Sorry to hear that! Maybe try cooking the sausage on a lower heat next time? It can burn fast if it’s too high. Don’t give up!

    2. User avatar gabriel.herman says:

      3 stars
I think you mighta left it cooking too long. Keep an eye on it next time! The rest of the soup sounds tasty though.

  53. 3 stars
I subbed half-and-half (like suggested) and it worked, but the broth stayed a little thin for my liking. Next time I’ll use a touch less broth or simmer longer.

  54. User avatar eric.christiansen62 says:

    5 stars
The sausage part is key! I used spicy Italian sausage and it came out perfect. Also, using low-sodium broth is smart—otherwise it’s way too salty.

  55. User avatar CTRLplusW says:

    5 stars
This soup is AMAZING! So hearty and flavorful. My family loves it! Definitely a 5 from me!

    1. User avatar jerold.lubowitz1966 says:

yum!! big fan of creamy soups, so this was right up my alley!

  57. User avatar dawna.kassulke2017 says:

    3 stars
Not bad, but mine came out kinda salty. I used “regular” chicken broth by accident (lesson learned). Next time I’ll go low-sodium like the recipe says and maybe add more water/broth.

    1. 4 stars
So it wasn’t the recipe, it was your broth choice… but honestly I’d still be careful adding salt at the end. Mine never needs much, and I cook it pretty much the same. Try adding the cream first next time and then pepper only.

    2. User avatar bonita.nikolaus says:

      5 stars
Ugh, yeah that’ll do it 😅 regular broth can be *way* saltier. Next time low-sodium + adjusting with water makes total sense—good save!

  58. 5 stars
    Yum!!! 💖

  59. User avatar sang.hilpert1983 says:

    5 stars
so easy. my fam love it. i add extra kale and it was wow

    1. User avatar ray.denesik9 says:

I dunno, I’ve been to Olive Garden and this seems different to me. But I’m curious to try it!

    2. User avatar kamala.kuvalis2006 says:

Totally! I can’t get enough of this soup. It’s like a hug in a bowl!

  61. User avatar Juan Fortharoad says:

Just made this and wow. Like, wow. So creamy. Thanks for sharing!

  62. User avatar cyndi.mertz says:

    3 stars
I don’t know… it tasted okay but just not what I expected. Maybe too much kale?

    1. 4 stars
I totally get it! Kale can be super strong, maybe try spinach next time? It’s milder. 😊

  63. User avatar summer.stracke says:

    4 stars
Kale + sausage soup is basically a guaranteed win. I used mild sausage and it still tasted hearty. Wouldn’t change a thing except maybe simmer it 2 more minutes.

    1. User avatar mariann.labadie says:

      5 stars
Totally agree—this combo is comfort food perfection. I also simmer a bit longer and the potatoes + kale get so much better. Thanks for the tweak!

    2. 4 stars
i mean kale can be kinda bitter, but the sausage helps. i followed it and it was good tho… i didn’t simmer 2 more minutes. next time i will. also is 2 cups kale enough? seems small

  64. User avatar regine.klein60 says:

    4 stars
Can I use beef instead of sausage? I don’t eat pork. Hope it works!

  65. User avatar Carisa Hamill II says:

    3 stars
I used sweet Italian sausage and it threw me off a bit. Still okay, just not the classic vibe I expected.

  66. User avatar latoyia.ziemann says:

    3 stars
This is decent, but I’m not sure why it says 3 cups potatoes—mine barely felt like enough for 4 cups broth. Might’ve been my potatoes though. Flavor was good regardless.

  67. User avatar Miles Teg says:

    4 stars
Garlic quantity is perfect—wish the recipe said how much time for the onion beyond translucent though. I kinda winged it.

    1. User avatar yanira.hodkiewicz15 says:

      3 stars
Hmm translucent for onions is like… when they look clear, right? I think you’re supposed to keep cooking until they turn brown a little? I usually just do 10 min and hope. Garlic probably burns if you wait too long 😂

    2. User avatar lakenya.schimmel10 says:

      5 stars
Totally get that—when it just says “translucent,” it’s so vague. I usually do the onion about 5 minutes and the garlic another 30–60 seconds so it doesn’t get bitter. Your wing-it still sounds on track!

  68. User avatar isaac.dibbert90 says:

    1 star
I dunno… I think it’s just potato soup with sausage, right? Meh.

  69. User avatar glen.herman36 says:

    3 stars
The kale step confused me—how do you keep it from getting bitter? Mine tasted a little rough, maybe I left it simmering too long.

  70. User avatar bradford.lubowitz35 says:

    4 stars
I messed up and forgot to remove the stems from the kale… it was kinda chewy. But the flavor underneath was great, so I’d try again.

  71. User avatar sina.klein79 says:

    3 stars
My cream split a bit when I added it—probably my pot was too hot. I whisked next time off the heat and it came out smooth. Flavor is still worth it.

    1. 5 stars
Yeah—cream can totally split if the pot runs too hot. Whisking off the heat (or tempering the cream first) is the move. Glad it still tasted good!

    2. User avatar eladia.haag89 says:

      2 stars
I dunno, I always dump cream in when it’s boiling and mine’s fine 🤷‍♂️ maybe your kale was too cold? Next time try not to stir so much? Anyway good recipe!

  72. User avatar shanon.witting18 says:

    4 stars
My wife loved it, I thought it was too creamy though. Mixed feelings.

  73. User avatar Draugr Deathlord says:

    2 stars
This Zuppa Toscana was way too salty for my taste. I would cut down the broth next time.

    1. User avatar Randall Jaskolski says:

      4 stars
I totally agree! I found it a bit salty too, maybe the broth was just too much. Cutting it down sounds like a smart move!

    2. User avatar micah.robel14 says:

      2 stars
Salt? I thought it was perfect! But maybe you’re just not used to flavor. 🤷‍♂️

  74. User avatar rutha.hermann72 says:

    5 stars
This recipe is fantastic! The flavors are just right, and it’s super easy to make.

  75. 2 stars
I tried it, but it was way too salty for my taste. Didn’t turn out like I expected. 🙁

  76. User avatar dexter.hermiston1974 says:

    5 stars
Absolutely delicious! A perfect winter soup. My whole family loved it!

  77. 4 stars
I was nervous about making soup but this was really simple. I’m no cook but I did alright!

    1. User avatar carrol.heller54 says:

      5 stars
Great job! I always thought soup was hard to make, but this looks easy! Can’t wait to try it myself.

    2. User avatar halflife4 says:

      2 stars
Honestly, soup is just boiling things together, isn’t it? Don’t be too proud. Everyone can do that.

  78. User avatar Lumberjack says:

    4 stars
I didn’t have heavy cream so I used half-and-half like suggested—worked fine, just a bit thinner. Tasted good anyway.

    1. 3 stars
I never trust half-and-half in soups, lol. But if it tasted good, fair. How did it hold up the next day—still creamy or kinda watery?

    2. User avatar melvin.maggio1991 says:

      5 stars
Good to hear! Half-and-half usually works in a pinch—thin but still creamy. Next time you could simmer a minute or two longer to thicken it up a bit.

  79. 4 stars
I followed it pretty closely and it was bland until I salted more at the end. After that it improved a lot. Lesson: season confidently.

  80. User avatar gerry.pollich8 says:

    4 stars
Kinda grossed me out at first because of the cream + kale combo, but after simmering it was actually good. Weirdly comforting.

    1. User avatar Sand-Dial says:

      3 stars
Wait so you just simmer kale 5 minutes? Mine always stays kinda tough, maybe I’m cutting it wrong. Still sounds tasty tho.

    2. User avatar milo.dickens1986 says:

      5 stars
I was skeptical too—cream + kale sounds like it should be illegal 😂 But once it simmers, it totally comes together. Comfort food for sure.

This soup is amazing! Seriously, my family loved it. ❤️

I used spicy sausage and it kicked up the flavor a lot. I also added a tiny pinch of nutmeg—don’t judge—made it extra cozy.

Nutmeg? I’m skeptical lol. Zuppa Toscana is already pretty flavorful with the sausage and garlic—wouldn’t it mess with the taste? Still, if it worked for you then okay.

Love that upgrade—spicy sausage totally makes sense for more flavor. And nutmeg with soups can be surprisingly good. “Extra cozy” is exactly right 😄

Pretty solid, but I think 3 cups potatoes is a lot—mine absorbed flavor and got kinda starchy. Maybe I’ll reduce next batch.

I forgot the garlic (oops) and realized halfway through… still tasted good but not the same. Garlic really makes it. Next time I won’t multitask 😅

I think it needs something else—maybe a pinch of crushed red pepper. Without it, it’s a little “meh” to me.

meh… I think it’s fine without the red pepper tbh. Zuppa Toscana already has plenty going on with the sausage and garlic. If you add spice, don’t overdo it or it’ll taste weird with the cream.

Totally agree—zuppa can use a little kick. A pinch of crushed red pepper (or even some black pepper) makes the flavors pop way more than just salt/pepper. 👍

The directions are simple, which I love. I did half-and-half instead of cream and it still came out rich. My whole family asked for seconds.

This tastes like restaurant Zuppa Toscana! I was skeptical about how much cream but it’s balanced with the broth. I’ll probably add a pinch of red pepper flakes next time.

Yes!! That’s exactly what it is—restaurant vibes for sure. The cream-to-broth ratio is the key, and your red pepper flakes idea sounds perfect.

The garlic + onion combo smells amazing while cooking. I’m always nervous about kale, but it wasn’t bitter at all.

Made this last night—so comforting. I used spicy sausage and it really hits. The kale stayed bright too. Would absolutely make again.

I don’t usually trust recipes that say “to taste” for salt/pepper without giving amounts. I ended up guessing and it was either under-seasoned or over—idk.

Totally get that. “To taste” is annoyingly vague—especially for salt since broth is low-sodium. I usually start with like 1/2 tsp salt + lots of black pepper, then adjust after it simmers a couple minutes.

  91. 4 stars
Okay so I used beef sausage instead of Italian and it was still good… idk if that counts as cheating but wow. Will make again with the right kind though.

Really? People put sausage in soup?? That’s crazy. Eww.

I don’t get why people love this. The broth + cream combo is kinda heavy for me, and the kale feels like an afterthought.

Absolutely delicious—cozy, hearty, and the kale actually tastes like something instead of just “healthy.” I used spicy sausage and it kicked it up perfectly.

Not bad, but my potatoes took way longer than 10-15 minutes—like almost 30. Maybe my slices were too thick? Still good though.

Not my favorite. It’s like eating green leaves in broth. Kinda weird.

I actually love it! The kale adds such a nice flavor. Maybe you just need to give it another shot? 🤔

Eh. Mine turned out watery and the broth flavor felt flat. Also I used sweet Italian sausage (oops) and it threw me off.

Pretty good, but my potatoes took more like 25 minutes to get tender. Also I think the salt needs to be added a bit earlier—still tasty though!

  99. 3 stars
Potatoes are key and these were tender, but I boiled too hard and the kale got a little limp. Next time I’ll simmer more gently.
