Zucchini Noodles with Shrimp and Pesto

August 8, 2023

Zucchini Noodles with Shrimp and Pesto is a fresh, vibrant, and light pasta dish that combines tender shrimp with the freshness of zucchini noodles and the aromatic, herbaceous flavor of pesto. This dish offers a healthy, low-carb alternative to traditional pasta while still delivering big on flavor and texture. It’s perfect for anyone looking for a nutritious yet indulgent meal that’s both satisfying and refreshing.

The zucchini noodles, often referred to as “zoodles,” are made by spiralizing fresh zucchini into long, thin strands, creating a pasta-like texture that absorbs sauces beautifully. The zoodles are sautĂ©ed briefly to soften them while still retaining their crunch, making them a perfect base for the shrimp and pesto.

The shrimp are seasoned with a touch of garlic, salt, and pepper, then sautéed until perfectly tender and juicy. The natural sweetness of the shrimp pairs beautifully with the freshness of the zucchini noodles, creating a well-balanced seafood dish.

The pesto is the star of this dish, made with fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil. The pesto sauce brings a rich, herbaceous flavor that ties the entire dish together, coating the zucchini noodles and shrimp in a silky, flavorful sauce. The pesto adds depth and brightness, complementing the natural sweetness of the shrimp and the mild flavor of the zucchini.

To finish, a sprinkle of grated Parmesan cheese and some freshly cracked black pepper adds an extra layer of richness and flavor. You can also garnish with additional fresh basil or a squeeze of lemon juice to brighten the dish even more.

Zucchini Noodles with Shrimp and Pesto is perfect for a quick weeknight dinner or a light, healthy meal any time of year. It’s gluten-free, low-carb, and full of fresh, clean flavors that make it both satisfying and nourishing.

In summary, this dish combines the lightness of zucchini noodles with the richness of shrimp and the fresh, fragrant flavor of pesto. It’s a refreshing, healthy, and flavorful meal that offers all the deliciousness of pasta without the heaviness, making it a perfect choice for anyone looking for a lighter, healthier take on a classic seafood pasta.

Made this tonight—super quick and honestly restaurant vibes. The shrimp were perfectly tender and the pesto made it taste way richer than I expected.

Totally agree—those shrimp cook so fast! I always worry about overcooking but 2-3 minutes per side has been spot on for me.

Restaurant vibes? Maybe lol. I tried it but my zucchini noodles went kinda watery—next time I’ll salt them a bit and squeeze. Still tasty though.

lol shrimp + pesto? sounds weird but ok

  3. User avatar marilyn.larson20 says:

    2 stars
I followed it exactly and it turned out bland. Maybe my pesto was mild? Salt/pepper to taste didn’t fix it enough for me.

  4. User avatar Restless Draugr says:

Low-carb win! Served it with a side salad and it felt like a whole meal. Would add parmesan next time.

  5. 1 star
Noodles from zukini? Nah, why would you even try this? Just eat normal pasta!

    1. User avatar felicidad.luettgen says:

      4 stars
I get where you’re coming from, but this is actually a great low-carb alternative! 🍝

    2. User avatar lindsay.bartell says:

Zucchini noodles are gross! Just stick to real pasta, it tastes better.

  6. User avatar dallas.boyer72 says:

    4 stars
Good idea with zucchini noodles, but mine got a little watery after cooking too long. Next time I’ll cook the noodles just until glossy and not extra. Still tasty though!

    1. 5 stars
Yes!! Overcooking zucchini noodles is totally what makes them watery. “Just until glossy” is the move—I’ll add that to my timing too. Glad it was still tasty 😊

    2. User avatar erwin.vandervort37 says:

      4 stars
Mine too, I cooked like 10 minutes once and it turned into soup kinda lol. Next time I’ll try cooking shorter like you said. Pesto helps it taste good even if it gets a bit wet.

  7. User avatar norene.towne73 says:

    3 stars
Mine got watery 😅 I think I didn’t dry the zucchini enough before cooking. Flavor is still great with the pesto, but texture wasn’t as nice.

  8. User avatar suspiciousCommentator says:

Honestly this sounds like dieting food. Like, where’s the sauce? The noodles were meh until I added extra pesto and pepper.

    1. 3 stars
Honestly I thought it was bland too—my zucchini noodles needed more pesto and a little lemon. I added crushed red pepper and it tasted way better. Next time I’ll do the same.

    2. User avatar kristal.gleichner says:

      4 stars
I get what you mean about “dieting food,” but the shrimp + pesto definitely bring the flavor. The sauce is basically the pesto coating everything—especially if you let it toss for a bit.

  9. 5 stars
5 stars! Perfect for my keto diet! Was super quick to make!

  10. 4 stars
Super easy recipe! But I add like a ton more garlic. Yummm đŸ€€. If you love garlic, you gotta try that!

  11. User avatar Dremora Lord says:

I don’t have a spiralizer. Can I just cut the zucchini with a knife? Help!

  12. User avatar jefferson.nolan2025 says:

I don’t get why people love pesto so much, but ok this was actually pretty good. The shrimp + pesto combo is legit.

    1. User avatar odis.pollich2021 says:

      3 stars
Pesto is great but I think you might wanna add garlic and lemon juice. Also shrimp takes longer than 2-3 minutes per side
unless they’re tiny. Either way sounds tasty.

    2. User avatar Gregg Mills says:

      4 stars
Right?! I’m usually not a pesto person either, but the shrimp makes it taste way less “herby soap” lol. The timing matters too—zucchini noodles can go mushy fast.

  13. User avatar ferdinand.dibbert1992 says:

    4 stars
I added garlic and some cherry tomatoes. It was a hit!

    1. 2 stars
Garlic is good, but cherry tomatoes? I don’t know, seems like a weird combo for shrimp and pesto.

    2. User avatar sammy.rolfson says:

      5 stars
That sounds delicious! Garlic and cherry tomatoes would add great flavor! I should try that next time.

  14. User avatar Lanell Mueller says:

Zucchini Noodles + Shrimp = yum! I make this ALL the time! 🙂

  15. User avatar Super Saiyan Vegeta says:

Zoodles are weird. Why wouldn’t you just use regular noodles?

  16. User avatar tyrone.stroman1989 says:

    2 stars
Zucchini noodles? Sounds weird. I didn’t even know you could spiralize a vegetable. I just used regular pasta and tossed some shrimp on it. #NotForMe

  17. User avatar alpha.kilback14 says:

    3 stars
Could you use any other kind of sauce instead of pesto? I can’t find any right now.

  18. 4 stars
I swear, zucchini noodles are the best! I didn’t even miss real pasta!!

    1. User avatar kandis.hayes says:

    2. User avatar marva.bradtke75 says:

Really? I just can’t get over the texture. It feels too weird for me. I’ll stick with real pasta.

  19. User avatar marlyn.wuckert5 says:

    2 stars
Not a fan. The zucchini was mushy and the shrimp didn’t have enough seasoning.

  20. User avatar debbra.ernser says:

Easy and quick! Definitely making this again

    1. User avatar rebecka.kemmer12 says:

I loved how simple it was! The shrimp were juicy and the pesto made it taste so fresh. Will try with different toppings next time!

  21. User avatar winford.zemlak says:

I don’t like veggies, but I tried this and was pleasantly surprised! Who knew? Zoodles, whoopee!

    1. 5 stars
Wow, I’m glad you gave it a shot! Zoodles are the best way to sneak in those veggies without even noticing. Yum!

  22. 2 stars
Um, isn’t pasta better than these zucchini things? Tried it, not for me.

  23. User avatar eric.kreiger99 says:

    4 stars
Pretty tasty, but my shrimp cooked faster than the recipe said. Next time I’ll keep a closer eye—still delicious though.

  24. User avatar phillip.kemmer52 says:

    4 stars
I followed it exactly and it was kinda bland until I added more pepper and a tiny squeeze of lemon. Then suddenly it popped.

  25. 3 stars
Shrimp turned out great! But the noodles were kinda bland, needed more flavor.

    1. User avatar Septimus says:

      4 stars
I’m glad the shrimp turned out well! Maybe try adding some garlic or parmesan to the noodles next time for extra flavor!

  26. User avatar Princess Zelda says:

    4 stars
My spiralizer keeps jamming, so I ended up doing julienne peeler slices. Still good, but the “noodles” were a little uneven. Next time I’ll take the spiralizer out of time-out.

    1. User avatar Saruman the White says:

      5 stars
Haha same here—my spiralizer jams too. The julienne peeler hack is legit though. Uneven noodles still cook fast, so you’re probably good. Next time, try slicing the zucchini a bit thicker for fewer snags.

  27. User avatar devin.okuneva95 says:

    2 stars
zucchini noodles are a fad. this recipe was ok tho. 🙂

    1. User avatar alysa.sauer2007 says:

      3 stars
I dunno, they don’t taste like real pasta. But this one was alright, I guess.

    2. User avatar winfred.runolfsdottir38 says:

      5 stars
Zucchini noodles are awesome! They bring such a fresh taste. Love this recipe!

  28. 2 stars
Ok recipe but shrimp is too expensive where I live, so I used chicken instead and it was kinda dry. Would not recommend swapping unless you adjust cook time a lot. Still, flavors were nice.

    1. User avatar carey.jenkins50 says:

      5 stars
Thanks for sharing! Yeah shrimp can be pricey. I’ve done chicken swaps before, but you’re right—2–3 minutes a side is made for shrimp, not chicken. If anyone tries it, I’d slice/thin it and pre-cook or reduce the heat so it doesn’t dry out.

  29. User avatar giuseppe.krajcik says:

    3 stars
Turned out tasty, but my zucchini noodles got a little watery after tossing. Next time I’ll salt them lightly and pat dry before cooking.

    1. User avatar albert.rolfson5 says:

      5 stars
So glad it was tasty! Yeah, zucchini can get watery if it sits too long or isn’t dried—salting and patting is a great move. I’ve also found cooking them closer to the very end helps too.

  30. User avatar lala.kris31 says:

    4 stars
Loved it! I didn’t have shrimp, so I used chicken instead. Still turned out good!

  31. User avatar leandro.green says:

    4 stars
Good idea but mine turned watery. I think I spiralized too long before cooking. Next time I’ll pat the zucchini dry and cook it less.

    1. User avatar obdulia.wunsch1963 says:

      3 stars
Mine turned out watery too and I didn’t even spiralize that long
maybe the pesto was too thin? I just kinda stirred and hoped lol. Still tasted good though, so I’d try less pesto and more heat next time.

    2. 5 stars
Oof, that makes sense—zucchini noodles can definitely get watery. Patting them dry and keeping the cook time closer to “just tender” usually helps a lot. Also, you can try cooking them in batches so they don’t steam too much.

  32. User avatar tresa.gislason says:

    5 stars
This recipe is amazing! The shrimp was perfectly cooked with the pesto. Will definitely make again!

    1. User avatar Bowerick Wowbagger says:

      5 stars
I tried this recipe last week and it was a total hit at my dinner party! Everyone loved it, thanks for sharing!

    2. 3 stars
Sounds good, but shrimp always scares me a bit. What if I overcook it?

  33. User avatar rickiestmorty says:

    5 stars
SO good! I used garlic pesto instead and it was delish! Everyone loved it.

  34. User avatar Barry Manilow says:

    3 stars
I’m skeptical about the “just tender” part 😅 I always overcook zucchini. Also, 1/4 cup pesto felt like a lot at first, but it ended up tasting great once mixed in.

    1. 5 stars
Same! “Just tender” is such a trap with zucchini 😅 I usually end up doing like 1–2 minutes max, and I stop as soon as it looks glossy. Good call on mixing the pesto in at the end though—does make a big difference.

  35. User avatar homer.kuhic3 says:

    5 stars
Made this tonight and it was crazy good. The pesto really pulls everything together—fresh, garlicky, and not heavy at all.

  36. User avatar ozzie.stiedemann71 says:

I love zucchini noodles but I always worry they’ll get watery. Still turned out great—tossing for only a couple minutes helped a lot. Will make again!

I tried making this and my zucchini noodles ended up mushy. Not sure what I did wrong…

  40. User avatar wyatt.mayer31 says:

Meh, I prefer pasta. Zucchini noodles? No thanks!

  41. User avatar roscoe.crona53 says:

I don’t get it. Pesto + shrimp sounds weird but I tried it anyway. It actually worked, but I probably won’t make it again.

  42. 3 stars
I tried this and it was okay, but I feel like the pesto was too overpowering. Maybe less pesto next time?

  43. User avatar smartestRedditor says:

    5 stars
This was super easy and delicious! My kids loved it. Will make again!

  44. 2 stars
My kid refused to eat it. Zucchini noodles gross! Will stick with normal noodles next time.

  45. 5 stars
Wow—this is now my go-to low-carb dinner. Next time I’m adding cherry tomatoes and maybe chili flakes. 10/10 would spiral again 😅

  48. User avatar mathWizard says:

    2 stars
I thought it was too oily and the shrimp were not seasoned enough.

  49. 5 stars
This recipe was amazing! The shrimp and pesto went so well together.

  50. 2 stars
I dunno, the zucchini was too squishy for me. Not a fan.

    1. 5 stars
I actually loved the zucchini! It adds a nice crunch if you don’t overcook it. Maybe try cooking it less next time?

  51. 5 stars
Made this tonight and it was so fresh and light. The shrimp cooked perfectly in just a few minutes, and the pesto really brought it together.

  52. User avatar jeffrey.hodkiewicz47 says:

    4 stars
The spiralizer tip is real—my julienne peeler was slower though. Still, the texture was nice and not mushy. Great weeknight meal.

  53. User avatar Mr. Write says:

    2 stars
I really wanted to like it, but the texture was weird. Kinda mushy! 😕

  54. 4 stars
Zucchini noodles? Really? I usually stick to real pasta, but this was surprisingly good.

  55. User avatar suspiciousCommentator says:

    2 stars
Too basic for me. Needs more spices!!

    1. User avatar MAGA2024.Trumpster says:

      3 stars
Basic? That’s the whole point! Not everything needs to be fancy. Just enjoy the fresh flavors!

    2. 4 stars
I think the simplicity is part of its charm! You could always add your favorite spices if you want more flavor. 😊

  56. 1 star
Honestly, this looks dumb. Zucchini isn’t pasta and shrimp? No thanks. 1 star.

  60. User avatar paris.goodwin says:

    2 stars
Zucchini noodles? Ehh, I’ll stick with regular pasta. This is just plants pretending to be noodles.

  61. User avatar merilyn.cummings says:

    5 stars
So easy and delicious! Never thought zucchini could taste this good! đŸŒ±

  62. User avatar sean.hudson25 says:

    3 stars
LOL I accidentally put the pesto on before cooking the shrimp. Tasted weird but still edible 🙂

  63. 2 stars
Ehhh. Zucchini noodles always get me—either they’re watery or mushy. This time mine were mushy even though I tried to time it right.

    1. 3 stars
Maybe your zucchini was too soft or watery? I think you should salt the noodles first like 10 minutes then pat dry. That takes the liquid out. Also if the shrimp released a bunch of water, it’ll make the zoodles go soggy. My noodles come out better when I cook shrimp first and then do the zucchini fast.

    2. User avatar Slartibartfast says:

      4 stars
Ugh I feel you—zoodles are super unpredictable. I’ve found the key is to use a quick high heat and not overcrowd the pan. Also, I toss them in at the end and pull them when they still feel a tiny bit firm—carryover cooking is real. Even 30 seconds too long can go mushy fast.

  64. User avatar ahmad.zulauf says:

    5 stars
Yummmmm, I used basil pesto and it was divine! 10/10 recommend, guys!

    1. User avatar terminatorXYZ says:

      5 stars
I’ve got to try that! Basil pesto sounds amazing with shrimp. Thanks for the tip!

  65. 5 stars
Yummy!!! Srsly gonna make this again! I added some garlic and lemon juice which made it even better!!

  66. 3 stars
I don’t think zucchini can replace pasta, but it was okay. Might try again.

  67. User avatar freda.schuppe84 says:

    4 stars
I’m not usually a “zoodles” person, but this was actually satisfying. Shrimp cooks fast and the texture stayed nice.

  68. User avatar vickie.schultz85 says:

    5 stars
Not gonna lie, pesto + shrimp is a weird combo to me, but it actually slaps. Would make again for a weeknight dinner.

  69. 3 stars
Good recipe but my shrimp turned out rubbery! đŸ˜© Next time I’ll be quicker with the cooking.

    1. User avatar damian.ziemann says:

      4 stars
The shrimp can definitely get rubbery if overcooked. Maybe try cooking them for just 1-2 minutes! 😊

  70. User avatar Dwarven Shpere says:

    5 stars
Loved it! The shrimp and pesto combo is to die for. Will definitely make it again!

  71. User avatar maryam.heathcote15 says:

Why do people always say 2-3 minutes “per side” like shrimp is the same size every time? Mine overcooked. Still tasty though.

  72. User avatar lamont.altenwerth36 says:

5 stars! I eat shrimp all the time but never thought of this combo. Genius!

  74. User avatar anonymous_hacker says:

Made this tonight—super quick and honestly so fresh tasting. The pesto really ties it together. I added a squeeze of lemon at the end and it was even better.

  75. 3 stars
Hmm, didn’t have shrimp so I used chicken and it turned out fine. I don’t think Zoodles is my jam tho.

    1. User avatar benito.ferry2009 says:

      4 stars
Glad you made it work with chicken! Zoodles can be tricky. Have you tried them with a different sauce?

  76. User avatar ezra.bernhard44 says:

    4 stars
Looks light but still satisfying. I was worried the zucchini would turn watery, but tossing it just until “just tender” saved it.

  77. User avatar Jule Larson says:

    5 stars
This is genius for low-carb! I subbed the pesto for a homemade basil-cashew sauce and it was delicious. Eating it felt like a cheat meal.

    1. User avatar Blue Dartwing says:

      5 stars
Totally agree—this tastes like real pasta even though it’s zucchini. The pesto makes it feel like a cheat meal for sure 😄

I was skeptical about zucchini noodles staying “just tender,” but timing worked out. Mine were a tiny bit softer than I wanted though—still tasty.

  81. 1 star
Zucchini noodles? What are we, rabbits? 😂 No thanks!

  82. User avatar shirley.berge65 says:

    5 stars
    5 stars. no notes.

    1. 4 stars
Looks good! I did it with like regular pasta once and it was
meh. With the zucchini noodles it makes sense tho. Also 2-3 minutes seems fast—mine took closer to 5 but still tasty.

    2. 5 stars
5 stars as well—super simple and the shrimp + pesto combo is perfect with the zucchini noodles. Making this again for sure.

  83. 3 stars
I used pre-made spiralized zucchini and it turned out softer than expected. Still edible, but “just tender” is the key.

    1. 5 stars
Good point—pre-made zoodles can be softer/wetter. I’ve learned to cook them fast (and don’t overdo the “2–3 minutes”). “Just tender” is exactly it!

  84. User avatar ivan.zboncak36 says:

    4 stars
I’m not much of a cook, but this was easy to follow. Thanks for sharing!

    1. User avatar jamie.okon59 says:

    2. User avatar adriane.morissette says:

      4 stars
I’m glad you found it easy! Zucchini noodles are such a healthy alternative. What do you think about the taste?

  85. 4 stars
I only had small zucchini so I used more than 2, but it still came out great. I’d recommend tasting before salting; my pesto was salty already.

    1. 5 stars
Glad it worked! I also always taste before adding salt—pesto can be super salty depending on the brand.

  86. 5 stars
This was so easy and delicious! My family loved it!

  87. User avatar waylon.hane says:

    4 stars
Pretty good, but I think 1/4 cup pesto might be a little low for my taste. I added extra and it tasted more like restaurant pesto shrimp.

  88. 5 stars
Yum! So quick to make, just what I needed after a long day! 😊

  89. User avatar lester.boyer85 says:

    1 star
Meh! Shrimp is scary, they look like bugs đŸ˜±. But my girlfriend loved it! I might just stick to cheese.

  90. User avatar guadalupe.bernier67 says:

    3 stars
Not bad. But my shrimp took longer than 2-3 mins per side—could’ve been bigger ones. Also mine got a little soggy even though I didn’t overcook.

    1. User avatar Frost Giant says:

Maybe your pesto was too watery? 😅 I usually pat the shrimp dry first and I only cook the zucchini until it’s just warm—like 60-90 seconds. If you let it simmer, it turns mushy fast.

I totally agree—timing depends a lot on the shrimp size/thickness. I’ve noticed if they’re jumbo or thawed and a bit wet, 2–3 mins can be too short. Glad you didn’t overcook, though—soggy zucchini happens if they sit too long after cooking.
