Instructions
Use a spiralizer or julienne peeler to make zucchini noodles.
Heat olive oil in a large skillet over medium heat.
Add the shrimp and cook for 2-3 minutes per side until pink and cooked through.
Add the zucchini noodles to the skillet and toss to coat in the shrimp and oil.
Cook for 2-3 minutes until zucchini noodles are just tender.
Remove from heat and stir in the pesto.
Season with salt and pepper to taste.
Serve immediately.
