Zucchini Muffins

March 13, 2025

Zucchini muffins are a wonderfully moist and subtly sweet baked good that combines the goodness of fresh zucchini with the warmth of cinnamon and nutmeg. The addition of zucchini, a mild and versatile vegetable, keeps these muffins light yet packed with moisture, making them a perfect choice for breakfast, snacks, or even a quick treat for tea time. The best part? The zucchini is so finely grated that you almost forget it’s there, but it provides the perfect texture and adds a sneaky dose of nutrients.

The flavor profile of zucchini muffins is comforting and spiced, thanks to the use of cinnamon, vanilla, and a touch of nutmeg. The zucchini itself doesn’t overpower the muffin but blends seamlessly into the batter, creating a tender, almost cake-like consistency. Whether you bake them with a sprinkle of walnuts, chocolate chips, or even a swirl of cream cheese, these muffins are highly customizable to suit your taste preferences. The zucchini adds a subtle, earthy sweetness that balances perfectly with any additional flavor you choose to incorporate.

Beyond their flavor, zucchini muffins are also a great way to use up the abundance of zucchini during the summer months. It’s a fantastic way to sneak some extra vegetables into your diet, especially for kids who might not always be fans of green vegetables. Packed with fiber, vitamins, and antioxidants, zucchini offers a nutritional boost to this otherwise indulgent treat.

Zucchini muffins also make for an excellent make-ahead snack. They store well in the fridge for a few days and freeze beautifully for longer storage, making them a convenient option for busy mornings or lunchboxes. Whether you’re serving them as a snack at a gathering or enjoying them solo with a cup of coffee, zucchini muffins are a versatile and delicious option that will satisfy your sweet cravings while providing a little extra nutrition.

meh… I expected them to be fluffier. They were kinda flat. Not sure if I’ll make again.

Try adding more baking powder next time or some extra egg whites. They might puff up better! 😊

I am not a zucchini fan but my kids loved these! Guess they do taste good even if you can’t see the green stuff. 😂

These muffins are amazing! The zucchini makes them so moist. I added chocolate chips and they were even better!

  4. 3 stars
I dunno, I tried this recipe and it turned out a bit bland. Maybe I did something wrong but I think it needs more sugar or spices.

  5. User avatar andre.frami24 says:

These muffins are amazing! I swapped out the oil for applesauce and they turned out super moist. Definitely a keeper!

Hmmm, mine didn’t rise at all. Pretty flat muffins. What did I do wrong?

  7. User avatar jon.schimmel79 says:

    2 stars
Not sure I believe muffins need both baking soda AND baking powder for this—seems excessive. Mine rose a lot on top but were kind of bready.

  8. User avatar ghislaine.hessel99 says:

Made these and they burnt at 20 mins! Oven is too hot or recipe off? 🙁

Zucchini? In muffins? Sounds weird! But if you say it’s good, I might give it a try. Just not sure about that combo.

  12. User avatar angeles.feest2004 says:

Baking soda and baking powder together? Isn’t that like mixing water and fire? 🤔

  13. 4 stars
Wait—350°F for 20-25 minutes and toothpick clean… I’m always nervous about zucchini muffins underbaking. Mine were perfect at 23 minutes. Great reliable recipe.

  22. 5 stars
These muffins are seriously delicious! My kids can’t even tell there’s zucchini in them. 5 stars!

  23. User avatar ginger.homenick73 says:

    5 stars
These are life-changing muffins. The texture is like bakery style. Also, the zucchini is honestly a cheat code for moisture.

  24. User avatar Brand-shei says:

    3 stars
Muffins were fine. Just fine. Not the best I’ve had but not the worst either. Pretty average recipe.

  25. 3 stars
I don’t know, these just seemed a bit bland to me. Maybe I expected too much? I’d give it a 3.

    1. User avatar tiffany.stoltenberg35 says:

      2 stars
Bland? Really? I thought they were delicious! It might just be your taste buds. 🤷‍♂️

    2. User avatar lucius.leuschke2009 says:

      4 stars
I think they might need more spices. Maybe try adding some nutmeg or a pinch of cayenne? It could spice things up!

  26. 1 star
Zucchini? More like boring! I prefer chocolate chips. Who needs veggies in a muffin?

    1. 2 stars
Nah, I don’t think muffins should have veggies. I like my muffins sweet and chocolaty!

    2. User avatar MAGA2024.Trumpster says:

      5 stars
But zucchini makes it moist and yummy! You gotta give it a chance. 😄

  27. User avatar cyrus.sporer says:

    3 stars
I followed the recipe, but the texture felt a little dense, like I overmixed even though I tried not to. Also I used dark brown sugar instead of light and it came out slightly stronger tasting.

  28. User avatar kerri.ziemann says:

    4 stars
Simple and quick! Mine took 30 minutes to bake tho. Great recipe!

    1. User avatar mireille.hegmann says:

    2. User avatar Stacy Satterfield says:

      2 stars
Amazing? Really? I tried this recipe and it was way too sweet for me. Maybe I did it wrong…

  31. User avatar Frederic Von says:

    5 stars
Very straightforward recipe. The ratios make sense and they rise nicely. I’ll definitely be making again for brunch.

  32. User avatar dario.franecki says:

    4 stars
Pretty good, but I think they needed a tiny bit more cinnamon or maybe 5 more minutes in my oven. They were tasty though, and I’d make them again—especially for breakfast.

  33. User avatar vernon.howe2018 says:

    1 star
Zucchini? Really? Sounds weird. I might just stick to chocolate chips. 😂

    1. User avatar Forest Minish says:

      2 stars
Seriously? That’s like putting veggies in dessert. No thanks, I’ll take my chocolate chips over that any day! 🤷‍♂️

    2. 5 stars
Zucchini in muffins is actually delish! Gives them a moist texture. You should give it a try! 🍰

  34. User avatar Fenchurch says:

    2 stars
Honestly not as good as I thought. They turned out super dry. I might have overcooked them.

  35. 2 stars
Not my fave. They came out a bit soggy for me. Maybe less zucchini next time? 🤔

  36. 5 stars
Moist and flavorful! I was worried about the zucchini, but it practically disappears. Perfect with a little butter.

  37. User avatar leoma.rohan62 says:

    2 stars
These muffins are great, but why is everyone acting like they’re gourmet? They’re just muffins.

  38. User avatar devon.romaguera68 says:

    4 stars
350°F is fine, but mine took closer to 28-30 minutes. Not a big problem—just keep an eye on them. Would recommend.

  39. User avatar julian.hahn49 says:

    3 stars
Um, what happens if you forget the egg? Is it still ok? Asking for a friend…

    1. 4 stars
You can still make muffins without egg! They’ll just be a bit different in texture. Maybe try a flax egg as a substitute?

    2. User avatar mona.morissette says:

      2 stars
Idk man, sounds risky. Eggs are important for binding! Good luck to your friend, lol.

  40. User avatar clara.lind says:

    3 stars
Easy to make but a bit bland. I added some chocolate chips, which helped!

    1. User avatar Irene Quigley PhD says:

      4 stars
I find zucchini muffins sooo delicious! But chocolate chips? That’s a game changer! I’ve never thought of that. 🤔

    2. User avatar cyril.grimes says:

      2 stars
Bland? No way! Zucchini muffins have their own flavor. Maybe just try a pinch more spice next time.

  41. User avatar joe_banana says:

    2 stars
Not that great, the texture was off. Maybe it’s just me.

    1. User avatar julieta.monahan says:

      4 stars
I had the same issue! The texture was weird for me too. Maybe they just need to be baked a bit longer?

  42. User avatar lupe.turner says:

    4 stars
I was skeptical about zucchini in muffins, but they turned out surprisingly good. The cinnamon was a nice touch!

  43. User avatar alden.hintz68 says:

    4 stars
Yummy! The cinnamon really brings out the flavor, love it!

    1. 5 stars
Totally agree! The cinnamon makes all the difference! Can’t wait to make these again.

  44. User avatar carson.bauch2020 says:

    4 stars
Zucchini in muffins? Really? Never thought it could work but this is delish! I’m a convert now!

  45. User avatar janice.kihn says:

    2 stars
One star for the mess. Grating zucchini is a whole workout 😅 Still, the muffins taste good—will try again with less fuss.

  46. 5 stars
I followed the recipe exactly and they domed nicely. Sweet enough for breakfast muffins, and the texture is not gummy at all.

    1. User avatar rickiestmorty says:

      3 stars
I mean… I used the same bake time and ingredients but mine were kinda flat and a little wet in the middle. Maybe my zucchini wasn’t dry enough? Next time I’ll squeeze it more. Still, good flavor!

    2. 5 stars
Mine came out just like that too—nice domes and not gummy at all. I also squeezed the zucchini well, so I think that helped a lot. Great breakfast muffin! ☺️

  47. User avatar bryant.cronin74 says:

    2 stars
Tried this recipe but didn’t like the taste. Maybe I’m just not a zucchini fan. 😒

  48. 5 stars
I made these for my neighbor and they loved it 😊. Easy recipe, thanks!

  49. User avatar viki.schaefer says:

    5 stars
These muffins are sooo good! I didn’t even tell my kids they had zucchini in them!

  50. 4 stars
Honestly… they taste like “healthy muffins” but in a good way. My kids went back for seconds, so that’s saying something.

  51. User avatar ronni.leffler24 says:

    1 star
LOL my first batch sank in the middle… i think my baking powder was expired. Recipe seems simple tho. Will re-try with fresh leavening.

  52. 5 stars
So good!!! I eat them for breakfast and they are just perfect. 1000% recommend!

  53. User avatar bonny.mcglynn64 says:

    3 stars
Eh, they were okay. I expected more flavor. Maybe too much baking powder?

  54. User avatar rona.schowalter says:

    5 stars
Great recipe! 10/10 would bake again. 🍞

  55. User avatar sina.schumm says:

I am giving it a 1 because my muffins burnt. Opened the oven, and boom – smoke everywhere.

  56. User avatar sterling.hills says:

    4 stars
Soo easy to make! I can’t believe how simple this was. I’m gonna try with other veggies too!

  57. User avatar Demetrius Dare DDS says:

Zucchini in muffins? What a weird combo. Never thought this would work.

  58. User avatar bobby.orn1979 says:

These muffins were a hit at my house! My kids loved them and didn’t even notice the zucchini!

  59. User avatar chang.walter says:

    2 stars
I followed the recipe exact but they came out too dry. Might need to tweak it next time. 😕

  60. User avatar basementDweller says:

    2 stars
I tried these but I think I overmixed. They came out kinda dense. Not sure I’ll try again.

  61. 5 stars
Yummm! I added chocolate chips and it was divine 😍. Can’t go wrong with choclate! 😜

    1. User avatar suspiciousCommentator says:

      2 stars
I don’t get why you would ruin zucchini muffins with chocolate, that’s just wrong 😒.

    2. User avatar judy.maggio99 says:

      5 stars
Chocolate chips? That’s a game changer! I gotta try that 😍

  62. User avatar karissa.ferry2004 says:

    3 stars
My zucchini was watery even after squeezing, so the batter was thinner than expected. I let them bake longer and they firmed up, but the tops cracked a bit.

  63. User avatar lavonna.ward says:

    5 stars
I replaced the oil with applesauce and they turned out great! Super moist.

  64. User avatar latonia.ratke93 says:

    3 stars
I didn’t have brown sugar, so I used honey instead. They turned out fine! Thx for sharing.

  65. User avatar Prostetnic Vogon Jeltz says:

    4 stars
Can this be done without eggs? Just wondering if I can use a substitute.

    1. User avatar andres.turner3 says:

      5 stars
You can use applesauce or mashed bananas as an egg substitute. I’ve done it before and it works great!

  66. User avatar Falmer Shaman says:

    5 stars
I subbed olive oil for vegetable oil and added walnuts. Honestly, that twist made them taste like bakery muffins. 10/10 would bring to brunch.

  67. 1 star
Yuck! Didn’t rise at all. Followed the recipe exactly but ended up with dense little bricks. Never making again.

  68. User avatar tawanda.ledner62 says:

    2 stars
Idk, my muffins were bland. I think 1/2 cup sugar isn’t enough for me? Also I didn’t squeeze the zucchini enough, so they were wet in the middle even though the toothpick looked clean.

    1. User avatar orval.reynolds says:

      4 stars
Sorry those turned out bland! I’ve found zucchini muffins really need enough salt and vanilla—also 1/2 cup sugar can feel low if you like sweeter bakery-style muffins. Next time try a couple extra tbsp sugar or even add a pinch more cinnamon.

  69. User avatar lewis.padberg2003 says:

    4 stars
Easy recipe, not gonna lie. My muffins were slightly domed and a little crumbly, but still tasted amazing with coffee.

  70. User avatar morgan.mills64 says:

    5 stars
Easy recipe, went well with my coffee! Just the right amount of sweetness. Yum!

    1. User avatar terminatorXYZ says:

I don’t know, zucchini in muffins? That seems a bit weird to me. But hey, if you liked it…

  71. User avatar cornelius.schaefer says:

    5 stars
Made these yesterday and they turned out super moist. I squeezed the zucchini really well like the recipe says—big difference. The cinnamon vibe is nice but not overpowering. Will definitely bake again!

    1. User avatar Chaurus Hunter says:

      5 stars
Love hearing this! That zucchini squeeze-out step is *everything*—glad it made them extra moist. 😊

  72. User avatar rita.rodriguez30 says:

    4 stars
I was skeptical about zucchini in muffins but WOW! They are moist and flavorful. Thanks for sharing this recipe!

  73. User avatar Ford Prefect says:

    4 stars
Yummm, that cinnamon really made the flavor pop. Will try adding nuts next time!

  74. User avatar halflife4 says:

    3 stars
Not bad, but 20-25 minutes felt short for my oven. I had to add like 8 more minutes to get the centers done.

    1. 4 stars
Huh, I baked mine for 22 and they were fine 🤷‍♂️ Maybe your zucchini was wetter? If you don’t squeeze it enough, the centers take longer. Next time try squeezing longer or add a couple minutes and keep an eye on them.

    2. User avatar edmundo.rath says:

      5 stars
Totally agree—my oven runs hot/cool weird too. I usually do ~28 minutes and only trust the toothpick once it’s actually clean. 20–25 was definitely short for me.

  75. User avatar mathWizard says:

    4 stars
Zucchini in muffins? That’s weird. But I gave it a shot and they were surprisingly good! Who knew?

  76. User avatar oPandariaNo says:

    3 stars
I followed it pretty closely, but mine were kinda flat. Maybe my baking powder is old? Still edible though.

  77. User avatar elidia.bahringer87 says:

    3 stars
Good recipe, but I want to see nutrition facts. Are these healthy?

  78. User avatar lora.keeling says:

    2 stars
Just sick of zucchini recipes! Why do we have to put it in everything?? Pass.

  79. User avatar Devin Hartmann says:

    3 stars
Not great, not terrible. I think you could make this with carrot too, right?

    1. User avatar luz.schuster says:

      3 stars
Carrot?? I dunno, I always thought zucchini was the star of muffins. Might make it too sweet or something.

    2. User avatar Galaxia Woonbeam says:

      4 stars
I think carrot might work, but zucchini has a different texture that really makes it good. Just sayin! 😄

  80. User avatar Grandpa Gohan says:

    4 stars
Super easy recipe. I like that it’s “just combine” and no complicated steps. My only tweak: less sugar next time.

    1. 5 stars
Yes! I love the “just combine” vibe too—no drama. I also thought the sugar was a bit high, especially since zucchini is already kind of sweet. Next time I’ll try cutting both sugars down a little.

  81. User avatar mary.bartell2020 says:

    3 stars
Recipe needs more info, like how to tell if they are done. I don’t trust toothpicks.

    1. User avatar brendon.reichert says:

      5 stars
You can tell they are done when they are golden brown on top and spring back when you touch them. Toothpicks are just one method. Try the touch test!

  82. User avatar lakeesha.haley5 says:

    3 stars
I don’t know, they didn’t rise like I thought they would. Maybe I did something wrong?

  83. User avatar marion.metz44 says:

    5 stars
These muffins are amazing! I made them for my kids and they loved them. 😍

  84. User avatar rickiestmorty says:

    5 stars
These muffins are life. Seriously, like who could complain about zucchini? 🍰👍

  85. 3 stars
I think 1/3 cup oil is a lot? Mine turned out slightly greasy on day one, but after cooling they were fine. Would use a touch less oil next time.

  86. 5 stars
These came out super moist and flavorful! I squeezed the zucchini extra well like the recipe says, and the texture was perfect. The cinnamon + vanilla combo is such a winner.

    1. 5 stars
Yes!! I love that combo too—cinnamon + vanilla makes the whole batch taste extra cozy. Also good call on squeezing the zucchini; I didn’t do that once and they were kinda gummy 😅

  87. User avatar vania.strosin says:

    5 stars
Yum! I added chocolate chips and it was delish!!

    1. 5 stars
Chocolate chips in zucchini muffins? Genius! I’m trying that next time! 😍

  88. User avatar Super Saiyan Blue Goku says:

    4 stars
Zucchini in muffins? Weird. But I tried it and I’m shocked, they taste pretty good!

    1. User avatar elden.mckenzie says:

      5 stars
Zucchini really is a game changer! Who woulda thought?!

  89. User avatar Ms. Dani Ward says:

    2 stars
I used zucchini that was kinda watery and didn’t squeeze as much as the recipe says—bad idea. They were soggy and the toothpick didn’t come out clean.

  90. User avatar jamaal.wehner67 says:

    3 stars
Could use more zucchini spice or something. Like, it’s tasty but kinda plain. Maybe add nuts next time?

  91. User avatar brice.schulist30 says:

    5 stars
These muffins were a total hit with my kids! Super moist and tasty. Will make again for sure!

  92. User avatar pat.pollich20 says:

    5 stars
Muffins rocked! One cup zucch. = whole lotta yum!

    1. 5 stars
Totally agree! Zucchini makes everything better. Can’t believe how moist they turned out!

  93. User avatar rose.lind74 says:

    1 star
Zucchini? Y’all are crazy! Who puts vegetables in muffins?!

  94. User avatar laverne.herzog35 says:

    4 stars
Zucchini muffins?? Sounds weird but they actually taste great! Who knew?

  95. User avatar Princess Zelda says:

    3 stars
I dunno, something seems off with the measurements. Too much sugar? Can barely taste the zucchini.

    1. User avatar nilda.gerlach69 says:

      3 stars
Too much sugar? Nah, it’s normal. I’ve made these before and they were delicious! You might need to adjust your taste buds or something. Lol.

    2. User avatar Future Trunks says:

      4 stars
I actually think the sugar is just fine! The zucchini muffins need a bit of sweetness to balance the veggies. Maybe you just got a batch of overly wet zucchini? That’s usually the problem.

  96. 4 stars
Pretty good, though mine came out a bit dense. I might’ve overmixed—next time I’ll stop earlier.

    1. User avatar Queen Ambi says:

      5 stars
That sounds exactly like what overmixing does—nice catch! Next time stopping as soon as it’s just combined should keep them lighter. Did you squeeze the zucchini pretty well?

  97. User avatar Boris Ondricka says:

    3 stars
Y’all, I forgot the baking powder! Mine flopped but the flavor was still ok.

  98. 4 stars
I don’t trust zucchini muffins—sounds healthy but bland. I was wrong. These actually taste like real muffins.

    1. 5 stars
Totally get that—zucchini baked stuff can sound “healthy but sad.” I agree though, when you don’t overmix and you squeeze the moisture out, it actually tastes like proper muffins.

  99. User avatar Gandalf the Grey says:

    4 stars
Pretty good, but mine stuck a little even with liners. Next time I’ll grease the tin too. Flavor is nice though—sweet enough without being candy-like.

  100. User avatar juan.tremblay says:

    5 stars
I used coconut oil instead of veg. oil and they were delicious! My kids loved them! 😋

  101. 3 stars
Half the batter stuck to the paper liners even after cooling. Next time I’ll grease the cups or use a different brand of liners.

  102. User avatar damion.bednar4 says:

    4 stars
Not bad, but I feel like 1/2 tsp baking soda + 1/2 tsp baking powder is a lot? They rose nicely, so maybe it’s fine. My kids didn’t even notice the zucchini.

  103. 2 stars
Tasty but way too sweet, I would reduce the sugar next time. Anyone else find that?

  104. User avatar pasquale.terry19 says:

    4 stars
Super easy to make! I might try adding nuts next time to give it a little crunch. Yum!

  105. User avatar clemente.hilpert says:

    4 stars
I was skeptical about zucchini in muffins but wow, so moist! Going to make again.

    1. User avatar leland.schumm32 says:

      5 stars
I’m glad you enjoyed it! Zucchini in muffins is a game changer for sure. They really do turn out super moist.

  106. 1 star
Honestly? Bland. I used fresh zucchini and didn’t overmix. Might be the cinnamon—needs more seasoning or something.

    1. User avatar larry.schumm says:

      1 star
Bland? Nah, I think you just under-seasoned them. The recipe only has 1/4 tsp salt total, and zucchini is mild. Add like 1/2 tsp salt and maybe a splash more vanilla. I also swap some sugar for honey sometimes—helps a lot.

    2. User avatar rick.runolfsdottir86 says:

      2 stars
I feel you. Cinnamon can go either way—1/2 tsp is enough to notice, but if the muffins weren’t salty enough or the zucchini was extra watery, they can taste kinda flat. Maybe try a pinch more salt or add nutmeg/vanilla extract? Also make sure to squeeze zucchini pretty well.

  107. 4 stars
Pretty tasty! I added a handful of chocolate chips because why not. Next time I’ll probably bake 2-3 minutes less since mine browned fast.

    1. User avatar maria.bergnaum says:

      5 stars
Chocolate chips is such a good call 😄 I’ve made these too and they can brown quicker depending on your oven—2-3 minutes less might be spot on!

  108. 5 stars
These are my new go-to veggie breakfast. I add chopped walnuts sometimes and it upgrades them a lot. Kid-approved too!

  109. User avatar reda.ondricka says:

    4 stars
Why 350°F? I baked at 375 for 18 minutes and they were still fine. Not sure if that ruins the science or not lol.

  110. User avatar Duncan Idaho says:

    5 stars
Yummmmm!!! 😋 Just dirrectly from the oven, it was so good! Next time I’ll try leaving out the cinnamon.

    1. 4 stars
I wouldn’t skip the cinnamon! It gives such a nice flavor. But glad you liked them!

  111. User avatar Galaxia Woonbeam says:

    4 stars
Zucchini Muffins? Sounds weird but I gave it a shot. They were surprisingly delish, even my husband liked them!

  112. User avatar hilario.brown53 says:

    2 stars
I don’t know… 1/3 cup oil feels like a lot but maybe that’s the point. Mine were kinda greasy on top, but not totally ruined.

    1. User avatar kenny.mccullough1980 says:

      4 stars
I totally get it—1/3 cup oil does sound like a lot, but zucchini muffins often need the fat so they stay moist. If yours were a little greasy on top, it might be from the zucchini being extra wet or the batter overmixed. Next time squeeze it *really* dry (like paper towel squeeze), and don’t stir after it all comes together.

    2. User avatar oPandariaNo says:

      3 stars
Greasy tops usually mean too much moisture/oil or the oven runs hot. Check your muffin tin position—center rack. Also I’d try reducing oil by like 1-2 tbsp and see, unless the recipe needs that for texture. (And make sure you fill 3/4 like it says.)

  113. 3 stars
These were okay but my friend said they tasted funny. I don’t know. 🤔

  114. User avatar kenna.gorczany53 says:

    3 stars
I followed it exactly but my muffins came out kinda dense 😕 Not sure if I overmixed or if my zucchini was too watery. Flavor still tasted good.

  115. User avatar regina.wolf99 says:

    5 stars
Made these today and they’re honestly perfect—moist, not too sweet, and the cinnamon smell is amazing. I squeezed the zucchini really well and the texture came out great.

  116. User avatar elinore.pfeffer1992 says:

    2 stars
Not my favorite—too sweet for me and I couldn’t really taste the zucchini at all. Would reduce the sugar next time.

  117. User avatar cassandra.hodkiewicz97 says:

    4 stars
Yummy! I added walnuts for extra crunch. My kids devoured them in no time!

  118. User avatar kenyatta.schuppe54 says:

    4 stars
Okay these are legit. I forgot the brown sugar at first (oops) and then I added it later—don’t ask. Still great.

  119. User avatar Rob McKenna says:

    5 stars
Just made these and they’re super moist! I squeezed the zucchini pretty well and the texture turned out perfect. Cinnamon flavor is subtle but nice.

  120. User avatar maribeth.langworth2012 says:

    3 stars
Muffins came out dry, I think I overcooked them. Next time I’ll watch the time more closely.

  121. User avatar jewel.harvey says:

    4 stars
Can confirm the ‘just combined’ step matters. I stirred for too long the first batch and it got tough. Second batch was tender. Lesson learned 😅

  122. User avatar mara.connelly12 says:

    4 stars
Not gonna lie, I was skeptical about zucchini in muffins, but this worked. I squeezed the zucchini pretty hard like it says and that helped a lot.

  123. User avatar liberal.hero says:

    3 stars
I followed it exactly and they still tasted kind of bland. The cinnamon helped, but I’d add more vanilla or maybe some nutmeg next time.

  124. User avatar layne.greenfelder2026 says:

    2 stars
lol I forgot to pack the brown sugar and didn’t squeeze the zucchini enough. Still ate them though—wouldn’t call it a disaster.

  125. 5 stars
I love that it’s not overly sweet. The cinnamon gives a nice cozy taste without tasting like dessert cupcakes.

    1. User avatar sylvester.johnston says:

      5 stars
Yes!! I also like that they taste more like a breakfast muffin than a cupcake. The cinnamon really does that cozy vibe without being too much.

    2. User avatar Princess Zelda says:

      4 stars
Hm I tried something like this and mine came out a lil too sweet. Maybe I packed the brown sugar too hard? Still good tho—zucchini muffins are my favorite.

  126. 3 stars
Used gluten-free flour and it was okay, but the lift was worse. If you sub flour, maybe adjust baking time—mine needed a few extra minutes.

  127. 3 stars
I didn’t squeeze out quite as much moisture as the recipe says and… they were a little gummy inside. Flavor is still nice though, just adjust the zucchini.

  128. User avatar luther.smith15 says:

    2 stars
Not sure why people love these so much. Mine were kinda bland even with the sugar. Maybe I didn’t pack the brown sugar right? Will try again but probably add more cinnamon.

    1. 4 stars
Hmm, I totally get that—zucchini can make them taste a bit muted if there’s too much moisture left. I usually squeeze the grated zucchini pretty aggressively (like, until it stops dripping) and then I pack the brown sugar firmly. Also, 1 tsp cinnamon is a lot of people’s sweet spot—if yours felt bland, try bumping cinnamon by another 1/2 to 1 tsp or even a pinch more salt.

  129. User avatar virgie.kertzmann39 says:

    4 stars
Pretty good! I had to bake mine closer to 28 minutes because the centers were still wet at 22. Next time I’ll grate finer for better baking.

  130. 2 stars
Zucchini in muffins? Sounds weird. I don’tlike veg in sweet things. But if u like it, go for it! 😳

    1. 4 stars
I get where you’re coming from, but the zucchini keeps them really moist! You should try it before judging! 😊

  131. 4 stars
These are delicious, but 350°F for 20 minutes felt short for my oven. I had to bake closer to 27 minutes for the toothpick to come out clean.

    1. User avatar Loonquawl and Phouchg says:

      5 stars
Glad you mentioned that! My oven runs a little cool too—mine also takes closer to 25–28 minutes. “Toothpick clean” is definitely the real timer here.

    2. User avatar everett.bailey15 says:

      4 stars
20 minutes seems too low for muffins IMO. I’d even bump to 30 and just watch the tops. Also make sure your zucchini isn’t too wet or they’ll stay gummy.

  132. User avatar joey.powlowski63 says:

    5 stars
These muffins are delicious! I added some chocolate chips, and they turned out amazing! Would definitely make again.

    1. User avatar mitchell.purdy12 says:

      2 stars
Honestly, I don’t get the hype. Muffins should be sweet! Zucchini is weird in a dessert.

    2. User avatar agripina.langworth1972 says:

      5 stars
I think adding chocolate chips is a great idea! I might try that next time. Yum!

  133. User avatar dana.collier says:

    3 stars
Not bad, but I think they need more sugar. The flavor was kinda bland IMHO. Maybe I’ll try adding nuts next time.

  134. 4 stars
Loved how easy this was. Also, I used zucchini with lots of water (oops) and they were fine—though the tops were slightly flatter. Next time I’ll squeeze more carefully.

    1. User avatar Zaphod Beeblebrox says:

      5 stars
I’m glad they still turned out even with watery zucchini! Totally makes sense about the flatter tops—more moisture can loosen the structure a bit. Your “squeeze more carefully next time” plan is spot on.

  135. User avatar tracey.harvey14 says:

    3 stars
I messed up and overmixed (I know, I know). Still tasted good, but the crumb was a bit tough. Moral: mix just until combined or else 😅

  136. 4 stars
Pretty good, but mine were a bit too sweet for my taste. Next time I’ll cut the brown sugar slightly. Texture was soft though—would be great with coffee.

  137. User avatar Justin Casey Howells says:

    3 stars
I accidentally mixed too much (oops). They ended up chewy instead of tender, but flavor was still good.

  138. User avatar casie.moen55 says:

    5 stars
Made these today—super moist and the zucchini taste is barely there. I did squeeze the zucchini extra well and they turned out great.

    1. User avatar Ford Prefect says:

      4 stars
Interesting about the zucchini taste—mine always comes through more, even if I squeeze it. Maybe I didn’t squeeze enough? Either way glad they worked for you.

    2. User avatar dong.koss62 says:

      5 stars
Yes!! I’m glad squeezing the zucchini helped—mine always depends on how much moisture is left. Super moist is the dream 😄

  139. User avatar maryanne.mckenzie43 says:

    5 stars
Super moist for zucchini muffins! I squeezed mine pretty well and they came out tender without tasting “veggie.” The cinnamon + vanilla combo is perfect.

  140. User avatar novella.kozey15 says:

    4 stars
Okay but why is there both baking soda and baking powder? I tried it anyway and they rose nicely, so I guess science works 😅

  141. User avatar Daedric Prince says:

    3 stars
Not sure about the sugar level. It’s pretty sweet for what I’d call a “muffin with veggies.” If you reduce the granulated a little, it might be more balanced.

    1. User avatar luke.gutmann1986 says:

      4 stars
Yeah I agree—mine came out pretty sweet too. Next time I’ll try cutting the granulated sugar down a bit and maybe only keep the brown for flavor.

    2. 3 stars
I think it’s fine? The zucchini has a lot of water, so sweet helps the texture? Also brown sugar is kinda like “not that sweet” lol. But if you prefer less, reduce it and let me know how it turns out!

  142. User avatar christian.sipes29 says:

    4 stars
My batter was super thick after squeezing the zucchini a lot—still baked up okay though. Also, I used whole wheat flour and it worked.

  143. User avatar millard.thiel says:

    4 stars
Pretty good, but mine didn’t brown much even after 25 minutes. They were still tasty though—kind of cakey. Next time I’ll bake a couple more minutes and maybe add a bit more cinnamon.

    1. User avatar xiao.fay1975 says:

      4 stars
Totally sounds like underbrowning. I usually give mine 2–3 extra minutes, and I also make sure the oven is fully preheated—otherwise they stay pale and a bit cakey.

  144. 5 stars
These turned out super moist! I squeezed the zucchini pretty well and they’re sweet without being too much. Cinnamon was a great touch. Will make again for sure.

  145. User avatar smartestRedditor says:

    3 stars
Not bad, but mine came out a little dense. I think I overmixed (oops) even though the recipe says not to. Flavor is good though.

  146. User avatar gary.runolfsdottir says:

    3 stars
I overmixed once (oops) and they got a bit tough. Still edible, but not fluffy. Also 350°F felt a tad low—mine needed closer to 28 minutes.

  147. User avatar Corrupted Shade says:

    5 stars
These taste like a cozy fall snack even though it’s summer. I added a handful of chopped walnuts and it was a solid upgrade.

    1. 4 stars
I made these yesterday and they *did* feel fall-ish even in July lol. I didn’t add walnuts though, just a little extra cinnamon, and they were still good. Mine came out a tiny bit dense—maybe I squeezed the zucchini too much?

    2. 5 stars
Same! The cinnamon + zucchini combo is super cozy. I also threw in walnuts and they gave it that nice crunch—great call.

  148. User avatar lucky777 says:

    2 stars
1/2 cup oil seems like a lot to me… but yeah, they’re moist. I’ll probably cut to 1/3 cup next batch.

    1. User avatar marvis.jerde says:

      5 stars
Moist for real—though I used 1/3 cup like you plan and they were still great. Only thing: make sure you squeeze the zucchini well, otherwise it’ll feel kinda greasy no matter what.

    2. 4 stars
I had the same thought, but 1/3 cup oil still keeps them really tender. If you cut it too much they can get a little dry—maybe try 3/8 cup instead for a safer middle ground.

  149. User avatar cyrus.lowe3 says:

    3 stars
Mine tasted a bit bland until I sprinkled a little extra cinnamon on top. Next time I’ll add a pinch more salt too. Still a solid recipe.

    1. User avatar dorsey.bins1964 says:

      3 stars
Maybe the cinnamon is covering it, but bland until add cinnamon sounds like the recipe might need more salt from the start. I usually don’t measure “a pinch” tho lol—how much did you add?

    2. User avatar Daedric Prince says:

      5 stars
Glad it worked out! I’ve noticed zucchini muffins can taste a little dull without enough salt or spice—your tweak makes sense. I’ll try the extra cinnamon next time.

  150. User avatar tissues_with_issues says:

    2 stars
Way too much sugar for my taste. I’ll cut it next time (maybe half). Otherwise the flavor was nice and they smelled great in the oven.

  151. 4 stars
Zucchini in muffins sounds… kinda weird, not gonna lie 😅 But these are actually solid. I added a handful of chocolate chips and it made them 10x better.

    1. User avatar ellsworth.wolf1995 says:

      5 stars
I was skeptical too 😅 but zucchini keeps them super moist. Chocolate chips sounds like the perfect upgrade.

  152. 5 stars
Came out awesome! I added chopped walnuts and it tasted like bakery muffins. Also, 350°F seems right—didn’t burn or dry out.

  153. User avatar Spider Soldier says:

    4 stars
Pretty good overall—my muffins domed a lot and came out a little dense in the middle. I think I overmixed (oops), but the taste is great.

  154. 4 stars
I’m skeptical about 1/3 cup oil with that much zucchini, but it worked. They’re not greasy and the crumb is tender. Would bake again.

  155. User avatar ronald.langosh says:

    5 stars
These came out super moist and the cinnamon vibe is perfect. I squeezed the zucchini extra well—won’t skip that step again.

  156. 3 stars
These are decent, but I don’t love how much sugar is in them. Also, grating zucchini is annoying—my arm hurts lol. Still, they won’t go to waste.

    1. User avatar rosella.rodriguez says:

      4 stars
Totally get it—those muffins are on the sweeter side. I’ve cut the granulated sugar down a bit (like 1/3 cup instead of 1/2) and they still turn out great. Also lol re: zucchini grating… my wrist always complains.

    2. User avatar lewis.mayert24 says:

      3 stars
Sugar doesn’t sound too bad to me. Plus zucchini is watery so the sugar helps balance it? And using a food processor grater attachment makes it way easier—no arm pain.

  157. User avatar Ulysses Schmidt says:

    2 stars
1/2 cup sugar feels like a lot for zucchini. My batch turned out kinda dense and I don’t think it’s my fault… baking powder maybe expired? Anyway, flavor was okay but not wow.

  158. User avatar lesli.hayes0 says:

    5 stars
These turned out so moist and flavorful! The cinnamon + zucchini combo is a surprise hit. I baked mine 23 minutes and they were perfect—will make again for sure.

  159. User avatar Sunday Cremin Jr. says:

    5 stars
Wow. I followed exactly and got 12 muffins, fluffy and sweet. The vanilla + cinnamon combo is chef’s kiss.

  160. User avatar jeannie.beier84 says:

    5 stars
Made these today and they’re super moist! I squeezed the zucchini really well and used room-temp egg—came out perfect. Cinnamon flavor is nice, not overpowering.

    1. User avatar willie.terry says:

      5 stars
Yes!! I love hearing that the room-temp egg + squeezing the zucchini actually made a difference. I’ve had muffins get weirdly wet when I don’t squeeze enough 😅

    2. User avatar tawanda.harvey59 says:

      4 stars
Hmm, “perfect” is a strong word 😄 I made zucchini muffins once and they tasted kinda like pumpkin spice—maybe too much cinnamon? But yours sounds balanced. Might try using room-temp egg next time.

  161. 3 stars
Pretty good, but mine were a bit dense. I think I overmixed (oops). Still tasty, just not as fluffy as I hoped.

  162. User avatar Mrs. Vennie Leuschke says:

    3 stars
I overmixed a bit (oops) and mine were a little tough, but the flavor was still good. Next time I’ll be more gentle.
