Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 8 oz mushrooms sliced
  • onion small, diced
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • Salt and pepper to taste
  • 4 eggs large,
  • parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add turkey to skillet and cook until browned, breaking it up into crumbles.
  • Add mushrooms, onion, garlic, thyme, salt, and pepper to skillet. Cook until mushrooms are tender and onions are translucent.
  • Make four wells in the turkey mixture and crack an egg into each well. Cover skillet and cook until eggs are cooked to desired doneness.
  • Garnish with fresh parsley and serve hot.

    This is not breakfast-safe—medium-high with eggs will overcook them. I tried once and the yolks turned hard. Honestly I’d lower the heat or cook the eggs separately.
