Start your day right with a turkey and mushroom breakfast sauté, an easy-to-make, savory dish that’s full of protein, flavor, and nutrients. This recipe is perfect for anyone looking for a hearty breakfast that will keep them full and energized until lunchtime. Packed with lean turkey, earthy mushrooms, and fresh vegetables, this sauté is both satisfying and healthy.
The beauty of this breakfast lies in its simplicity. Ground turkey, sautéed until golden, provides a lean source of protein that’s much lighter than traditional breakfast meats like bacon or sausage. Combined with mushrooms, known for their umami flavor and health benefits, this dish offers a well-rounded, flavorful start to your day. Mushrooms also add moisture and a meaty texture that complements the turkey perfectly.
The process is quick and easy: start by cooking the turkey in a hot skillet, breaking it up into crumbles as it cooks. Once the turkey is browned and cooked through, add in the sliced mushrooms, onions, and a bit of garlic for extra depth. As the mushrooms soften, they release their natural juices, creating a savory base for the dish. Season with salt, pepper, and fresh herbs like thyme or parsley, and you’ll have a satisfying breakfast ready in no time.
This dish is incredibly versatile. If you want to add more vegetables, throw in some spinach, bell peppers, or zucchini for added nutrition and color. You can also top it with a fried or scrambled egg for extra richness or a sprinkle of cheese for a creamy finish.
Turkey and mushroom breakfast sauté is a great option for meal prep, too. You can make a large batch and store it in the fridge for a few days, ready to be reheated for a quick, healthy breakfast throughout the week.
Whether you’re looking for a low-carb option or just want to try something different for breakfast, this sauté is the perfect choice for a tasty, protein-packed start to your day.

Absolutely LOVE this recipe! Super easy to make and healthy too. Thanks for sharing!
I’m glad you enjoyed it! It’s become my go-to breakfast. Easy and tasty!
I might try it, but 4 eggs seems like too much for breakfast. Just saying.
Not bad, but I would rather have pancakes.
So easy to make! I loved how quick it was. Perfect for breakfast. 😊
Seems fancy but honestly just too much work for breakfast. Nah.
Idk? Like, is turkey really a breakfast meat? Seems weird to me.
I think turkey is great for breakfast! It’s leaner than sausage and gives you a good protein boost. Plus, this recipe sounds delicious!
Nah, turkey’s just for Thanksgiving, right? Eggs and bacon are where it’s at! Why ruin a good breakfast with turkey?
Yuck! This recipe is just bland. My kids didn’t even finish it. Maybe add some cheese next time??
Too much oil! My eggs ended up swimming. I’ll try with less oil next time. Also, who needs mushrooms anyway?
Easy and tasty! Also made it with chicken instead of turkey and still great.
It was okay, but I think it needed more flavor… maybe some cheese?
Yummy! Just what I needed this morning! Thanks for sharing!
I don’t like mushrooms, can I use peppers instead? 🤔
But aren’t mushrooms the main part of the recipe? 🤷♂️
Sure, peppers would be a great substitute! They’ll add a nice crunch. 👍
Olive oil? Is that healthy or what? I heard butter is better.
Not a fan of mushrooms. Can I swap them for something else? Or just leave them out?
I didn’t have thyme so I used basil instead! Still turned out great!
WOW! This is so delicious! I might eat the whole pan!
This is not breakfast-safe—medium-high with eggs will overcook them. I tried once and the yolks turned hard. Honestly I’d lower the heat or cook the eggs separately.
I get what you mean. I usually set mine more like medium and keep an eye on the eggs—otherwise the whites get rubbery fast.
See, I think you’re overthinking it—covering + cooking to “desired doneness” should be fine. But yeah, if you cook eggs straight on medium-high they’ll firm up too much.
Turned out good, but the eggs were hard. I prefer them runny. Next time I’ll watch them closely.
OMG, I can’t believe how good this was! I didn’t have fresh parsley, but it was still delicious. Will make again.
So glad you liked it! I once ran out of eggs and used egg whites, still turned out tasty!
Not enough seasoning! I’d add more salt next time.
Yummy! But is ground turkey really healthier? I heard it’s not always better.
This was AMAZING! I added some cheese on top and it was a hit!
This is just turkey and eggs, right? Wat? I didn’t think mushrooms go with turkey. Not my thing.
Super easy and quick! I’m not much of a cook but this was fun!
This was a hit! My kids loved it and it’s so healthy! Will definitely make again.
Really easy to make, but the turkey was a bit dry. Maybe next time I’ll add some cheese?
Adding cheese sounds like a great idea! It might help with the dryness and add some flavor too. I usually use cheddar, what do you think?
I think this is too many eggs! Maybe just one would be enoough.
This looks so good! Can’t wait to try it for brunch.
I messed it up, forgot the eggs. Oops! Still tasted good tho.
Super easy and tasty! I will make this again for sure.
I tried this but the turkey was kinda bland. Maybe needs more spices? Not sure I’d make again.
I’m glad you liked it! It really is a great breakfast option. I often add cheese on top, gives it an extra kick!
