Turkey and Cauliflower Bake

April 12, 2024

Looking for a hearty dinner that’s both comforting and low in carbs? This turkey and cauliflower bake delivers all the flavor of a traditional casserole without the heaviness. It’s protein-packed, veggie-loaded, and perfect for feeding the whole family or prepping meals ahead of a busy week.

The star of this dish is ground turkey, a lean, mild protein that pairs beautifully with just about any seasoning. Here, it’s sautéed with onion and garlic until browned and flavorful, then mixed with steamed cauliflower florets that soak up all the goodness. A touch of cream or Greek yogurt gives the bake just enough richness without making it overly heavy.

What really ties everything together is cheese. A generous sprinkle of shredded mozzarella or cheddar creates a golden, bubbly topping that makes this feel like comfort food, even though it’s loaded with veggies and light on carbs.

The process is simple: start by browning your turkey in a skillet with onions, garlic, and a few herbs like thyme or oregano. While that cooks, steam your cauliflower just until tender, not mushy. Combine the turkey and cauliflower in a baking dish, stir in your creamy element (plus a handful of cheese if you like it extra cheesy), then top with more cheese and bake until golden and bubbling.

This turkey and cauliflower bake is a great way to use up leftover veggies or customize based on what you have. Toss in chopped spinach, mushrooms, or even a few sun-dried tomatoes for added flavor.

It reheats well and stores in the fridge for several days, making it a solid option for meal prep. Pair it with a fresh salad for a balanced dinner or serve it solo as a satisfying one-dish meal.

Whether you’re eating low-carb, trying to add more veggies to your meals, or just love a good casserole, this turkey and cauliflower bake is a recipe you’ll want to make again and again.

Is 375°F really hot enough? I usually use 400. 🤔

    1. User avatar Davis Hammes says:

      5 stars
I think 375°F is fine! It allows the turkey to cook thoroughly without drying out. Trust the recipe! 😄

    2. 3 stars
I dunno, I’ve always done 400°F too. Seems to cook faster, but what do I know? 🤷‍♂️

  2. User avatar Eddie the Computer says:

    5 stars
yum! 10/10 will make again. but what if I use chicken instead of turkey???

  3. User avatar joe_banana says:

    2 stars
375 is fine I guess, but 30 minutes feels short for cauliflower? Mine stayed crunchy-ish. Maybe need to steam it first.

    1. User avatar Jonelle Mann says:

      5 stars
Yeah 30 min can be a little tight depending on how big your cauliflower pieces are. I usually cut mine smaller or cook it a bit longer/steam first so it’s tender.

  4. User avatar devin.halvorson says:

    5 stars
Tasty! I would suggest adding some hot sauce on top for extra kick. So good!

  5. User avatar lashawna.boehm47 says:

    2 stars
Too bland for my taste. I was expecting more flavor from it. I won’t make it again.

  6. User avatar felicita.kozey64 says:

    5 stars
This was so delicious! I loved it! The flavors were on point and the cheese melted perfectly. Will make again!

    1. User avatar walker.bednar1977 says:

      3 stars
Sounds good, but I wonder if it would taste as nice with chicken instead of turkey. Anyone tried that?

    2. User avatar Skeleton says:

      5 stars
I’m glad you enjoyed it! It’s one of my favorites too! The cheesy goodness is unbeatable.

  7. User avatar The Allitnils says:

    2 stars
The measurements are clear, but the cook time for the cauliflower felt short. Mine was a bit crunchy even after baking. Might steam it first next time.

  8. User avatar suspiciousCommentator says:

    5 stars
So easy and actually tastes great. My whole family ate it and nobody complained about the cauliflower 😅

  9. User avatar Tricia McMillan says:

    3 stars
Hmm, I thought you used chicken for this? Anyway, tasted fine but probably could use a little more flavor.

  10. User avatar simonne.bosco2010 says:

    5 stars
Made this tonight and it was super comforting. The cauliflower doesn’t get mushy, which I was worried about. The cheese topping is the star.

  11. User avatar gladys.watsica says:

    4 stars
I’m not usually a cauliflower fan, but the cheddar + parmesan combo won me over. Next time I might add a splash of hot sauce.

    1. User avatar bunny.luettgen65 says:

      3 stars
I’m skeptical. 30 minutes at 375 doesn’t sound like enough to make cauliflower tender… like it might still be crunchy. Maybe steam it first? Also I’d use mozzarella not parmesan.

    2. User avatar ArabianNights says:

      5 stars
Honestly same—cauliflower can be bland, but the cheddar/parmesan makes it feel like a real “bake.” Hot sauce is a great idea too 🌶️

  12. User avatar oPandariaNo says:

    3 stars
Not bad, but my turkey turned out a little dry. I might have overcooked it in the skillet—breaking it up helps, but watch the heat. Also, I’d add a splash of broth next time for juicier bake.

  13. User avatar Pamala Nicolas says:

    5 stars
I followed it pretty much exactly, except I used fresh garlic because I’m fancy like that 😅. Still delicious. The breadcrumb/cheese top gets a nice crust.

  14. User avatar chinchilla says:

    4 stars
Just made this and it came out great! I used ground chicken instead and it was still yummy. Def would recommend!

  15. User avatar lucius.gleason says:

    4 stars
So easy and honestly feels healthier than a traditional casserole. I used turkey breast and it was still flavorful. Would make again.

    1. 5 stars
Totally agree—this is such a lighter take than a usual casserole. I also love that the cauliflower soaks up all the flavors. Bet turkey breast makes it even better!

  16. User avatar polly.douglas says:

    2 stars
Why not just use potato lol. Still ate it though. The parmesan on top is good.

  17. 2 stars
Honestly, not that great. The cauliflower was too mushy for my taste. I don’t think I will make it again.

  18. 5 stars
Yum! Great recipe! I added some more garlic and it was super tasty! 😍

  19. User avatar ceola.romaguera says:

    5 stars
This was delicious! My whole family loved it.

  20. 2 stars
I’m skeptical about the breadcrumbs—like, do they actually crisp in 30 minutes? Mine came out a little soft. Flavor was decent though, onions/garlic saved it.

    1. User avatar manuel.ullrich72 says:

      4 stars
Yeah, the breadcrumbs are the weak spot—30 min might be enough for the cheese to melt, but not always for crisping. I’ve had better results if you use panko or add a drizzle of oil/butter on top before baking. Also make sure the baking dish isn’t too deep so the heat can hit the crumbs.

  21. User avatar basementDweller says:

    4 stars
Not gonna lie, I was skeptical about baking cauliflower with turkey, but the seasoning really pulls it together. Breadcrumbs add a nice texture. Easy weeknight meal.

  22. User avatar NAFO.SUPREMACY says:

    3 stars
Wait… 1 lb ground turkey and only 1/4 cup breadcrumbs? Mine didn’t seem like enough topping. Maybe I packed my dish too full. Still tasted good though.

    1. User avatar Natalia Harvey says:

      5 stars
Good catch! 1/4 cup breadcrumbs is definitely on the lighter side, but since there’s cheddar + Parmesan on top it should still brown a bit. If you packed it tight, the topping can feel thinner—next time you could add a little extra breadcrumbs or bake in a slightly larger dish.

  23. User avatar robbie.lang28 says:

    5 stars
Made this tonight—super comforting. The cauliflower held up nicely and the cheese/breadcrumb top is perfection. I used turkey thigh so it was a bit fattier, but still great.

    1. User avatar margarite.smith2026 says:

      5 stars
Yes! I love when the cauliflower actually stays the right texture—cheese + breadcrumbs is such a winning combo. Turkey thigh sounds delicious too.

    2. User avatar rona.smitham says:

      4 stars
Interesting—i usually do chicken, but turkey thigh might make it more rich. Did you bake it for the full 30 min or adjust? Mine can get a little dry sometimes.

  24. User avatar leland.jast18 says:

    4 stars
Pretty good! I added a splash of milk to the meat mixture because it seemed a little dry, and that helped a lot. Otherwise, solid.

  25. User avatar Pizpot Gargravarr says:

    4 stars
Not gonna lie, I was skeptical about baking cauliflower with ground turkey, but the result was actually better than expected. Pretty filling too.

  26. User avatar mercedes.considine says:

    3 stars
I think the breadcrumbs were unnecessary… mine got a little too crunchy and hard. Maybe 2 tbsp is fine but I’ll reduce next time.

    1. User avatar leandro.hudson28 says:

      4 stars
Totally get that—breadcrumbs can go from “nice crunch” to “why is this rock hard?” fast. I’d try mixing the breadcrumbs with a bit of extra cheese (or even a drizzle of olive oil) and keep an eye on it near the end. 2 tbsp sounds like the sweet spot.

  27. User avatar judson.erdman50 says:

    4 stars
Pretty good overall, but I wish the cauliflower were a bit more tender. Next time I’ll either steam it first or cook it longer in the skillet. Flavor’s solid though—nice herb vibe.

    1. User avatar Cecil Doyle says:

      5 stars
Totally agree on the cauliflower texture. I’ve noticed 5 minutes in the skillet isn’t always enough—next time I’ll steam it for like 5–8 min first, then finish in the bake so it’s fork-tender.

    2. User avatar michael.cassin says:

      3 stars
Hmm I’m not sure I’d steam it—30 minutes at 375 should soften it… unless your cauliflower was huge pieces? I cut mine pretty small and it came out tender. Flavor really is good though.

  28. 3 stars
Not bad, but bland for me. I doubled the black pepper and added garlic powder too. If you like bold flavors, don’t be shy.

  29. User avatar orval.upton says:

    3 stars
I tried it and my topping didn’t get golden, more like “melted.” Maybe my oven runs cool. Still tasted good though, so I’ll attempt again with higher rack / broil.

  30. 5 stars
I thought turkey was supposed to be unhealthy, but this didn’t feel heavy at all. Nice change!

  31. User avatar Hotblack Desiato's bodyguard says:

    5 stars
This was so tasty! I added some extra cheese and it was a hit with my family.

  32. User avatar demetrice.hauck33 says:

    2 stars
I don’t get why people put cauliflower in everything lol. But I admit the texture is actually good once baked. Mine was a little watery at the bottom, so next time I’ll squeeze moisture out of the cauliflower.

    1. User avatar lauri.klein says:

      5 stars
lol I get it—cauliflower can be weird in recipes 😂 But squeezing moisture out is such a good fix. I’ve done that too when it gets watery!

  33. User avatar karoline.predovic1990 says:

    4 stars
I was skeptical at first, but it turned out pretty good. I think I would add more spice next time.

  34. 4 stars
I liked the flavors, but 30 minutes felt a little short for my cauliflower (chopped big). Next time I’ll bake closer to 40 or cook the cauliflower a touch longer in the skillet.

  35. User avatar junior.becker says:

    3 stars
This is missing something for me—like maybe a little acidity? I added a squeeze of lemon at the end and it tasted more balanced.

  36. 1 star
I don’t understand how this is a dinner? It’s just vegetables! Where’s the beef? 🤔

    1. User avatar Charles Darwin says:

      4 stars
It’s actually got turkey in it, so it’s more than just veggies! You could always add more meat if you want. 🍗

  37. 5 stars
Yum! My kids loved it. Can’t believe they’re eating veggies!

    1. 3 stars
Really? My kids refuse to eat cauliflower. I think you must’ve used some magic or hid it well.

    2. User avatar CTRLplusW says:

      5 stars
That’s awesome! Vegetables can be so sneaky in dishes. My kids would probably taste it and just think it’s pizza or something!

  38. 2 stars
This was okay, but I think it needed more flavor. I would suggest some hot sauce for those who enjoy it spicier.

    1. User avatar humberto.mertz78 says:

      5 stars
I totally agree! A little hot sauce could really kick it up a notch. I might try that next time. Thanks for the tip!

  39. User avatar tom.gibson79 says:

    2 stars
I don’t trust turkey. It always tastes dry to me.

  40. User avatar magan.moore9 says:

    1 star
Didn’t work for me… My turkey was raw. How do you cook that right??

  41. 3 stars
Could use more seasoning. Like, the salt/pepper were fine but it tasted a bit flat until I added extra red pepper flakes. Overall okay though—husband ate seconds.

    1. User avatar wendie.schuster says:

      4 stars
Totally agree—this one can come out a little flat if you don’t bump up the spices. I usually add a bit more red pepper flakes (and sometimes a pinch of garlic powder) before baking. Glad your husband dug it though!

  42. 3 stars
Not bad, but I think the seasoning could use more black pepper or maybe more red pepper flakes. Also I’m not sure if 1 head cauliflower is really only enough for 1 lb turkey—mine seemed like a lot.

  43. User avatar basementDweller says:

    1 star
I don’t get why there’s turkey in this. Don’t you just use cauliflower?

  44. User avatar roman.rice75 says:

    5 stars
Absolutely loved this recipe! The flavors were spot on and it was super easy to make.

    1. User avatar Old Wayfarer says:

      5 stars
I totally agree! It was super tasty and didn’t take long at all. Love how easy it was to make!

  45. 4 stars
Five stars… if I could. It’s not low-effort low-cal like I promised myself though. Still, super good flavor and easy clean up.

    1. User avatar Barliman Butterbur says:

      5 stars
Lol I feel this—“low-effort” turns into “one more step” real quick. But yeah, the flavor here is legit. The cheese + breadcrumbs combo really nails the top texture.

    2. 3 stars
I tried it but mine came out kinda watery and the cauliflower didn’t soften as much as I wanted. Maybe I chopped it too big? Still tasted good though. Could use a little more seasoning too, honestly.

  46. 5 stars
This is such a comfort-food upgrade. The cauliflower texture is perfect with the cheesy top—browned bits are the best part.

  47. User avatar flora.botsford says:

    5 stars
OMG! This looks soooo good! Can’t wait to try it! 😍

  48. User avatar laverna.dubuque says:

    3 stars
The recipe was okay, but I think it needed more seasoning. I added some taco seasoning and it was better.

  49. User avatar teodoro.metz56 says:

    5 stars
Made this tonight—so good. The turkey flavor really comes through, and the cauliflower goes perfect with the cheddar topping. Would definitely make again!

  50. 2 stars
Was this supposed to taste like something? 🤔

  51. User avatar Frost Troll says:

    1 star
Really? Cheese on top? So unhealthy. I prefer just vegetables.

  52. 2 stars
This is just bland. Needs more spices! I added like 3 times more red pepper flakes.

  53. 5 stars
This is my new favorite recipe! So easy to make, and my kids loved it!

  54. 3 stars
Kinda simple recipe. I add some extra spices and a whole lotta garlic. Made a big difference for me.

  55. User avatar andra.botsford21 says:

    3 stars
So easy to make, but I’m not a fan of cauliflower. It tasted okay tho. Gonna try it with broccoli next time!

  56. 4 stars
I forgot the bread crumbs, but still turned out good. Will try again!

  57. 2 stars
Wasn’t a fan. The cauliflower was too crunchy for my taste. Maybe cook it longer next time?

  58. User avatar stuart.bradtke76 says:

    4 stars
Pretty good simple dish! I used frozen cauliflower and it worked just fine, so no need to chop!

    1. User avatar alfonzo.kub says:

      5 stars
I never thought of using frozen cauliflower! That’s clever. I’ll try that next time.

  59. User avatar NAFO.SUPREMACY says:

    4 stars
Made this for my family and they all loved it! Even my picky eater. Thank you for sharing!

    1. User avatar christiana.haley2009 says:

      5 stars
So glad to hear that! It’s always a win when picky eaters enjoy something. What did you serve it with?

    2. User avatar alla.kutch28 says:

      2 stars
I tried this but it didn’t turn out as good. The turkey was dry or somethin… Not what I expected.

  60. User avatar rich.landlord says:

    3 stars
The flavor is decent, but 30 minutes felt short for my oven—cheese melted fine though. I’d check after 30 and maybe bake 5-10 more.

  61. User avatar elida.boyer says:

    3 stars
Too many steps! I just wanted a quick meal.

    1. User avatar eddie.swaniawski1986 says:

      4 stars
I totally get it! Sometimes too many steps can be a drag. I prefer simple recipes myself. Maybe you can try just cooking the turkey and cauliflower in a pan without baking? It’s faster!

  62. 2 stars
Honestly, it was kinda bland. I expected more flavor. 🙁

  63. 5 stars
Best dinner ever! I can’t believe how easy it was to make.

  64. User avatar jackson.ziemann says:

    5 stars
This recipe is amazing! The cheese makes it so rich and delicious. I use turkey all the time for a healthier option. Five stars!

    1. User avatar eustolia.funk2021 says:

      3 stars
But is turkey really that healthy? I thought it was just as fatty as beef? 🤔

    2. 5 stars
I agree! I made it last week and my family loved it too. Turkey was a great choice! 🌟

  65. User avatar manda.nicolas56 says:

    4 stars
Pretty tasty, but I think it needed a little more time in my oven. After 30 minutes the topping was golden, yet the cauliflower felt slightly firm. Next time I’ll bake closer to 40 and maybe cover for the first half.

    1. User avatar hippopotamus says:

      5 stars
I totally agree—30 mins wasn’t enough for me either. I went closer to 40 and it came out way more tender.

  66. 2 stars
Wouldn’t “baking” for just 30 minutes cook the cauliflower enough? I tasted it and it was still firm in the middle.

  67. 5 stars
This is a great “weeknight dinner” idea. I subbed mozzarella for the cheddar and it still worked. Also, the breadcrumb layer gives nice texture.

    1. User avatar rickie.muller37 says:

      3 stars
I tried it but my cauliflower didn’t really soften after 5 minutes in the skillet… maybe my heat was too low? Still tasted good though—cheese + breadcrumbs saved it. Next time I might par-steam the florets.

    2. User avatar sandee.conroy says:

      5 stars
Love this as a weeknight meal—375°F for 30 min is right in my wheelhouse. I’ve made similar bakes but the breadcrumb topping is the detail I always forget. Thanks!

  68. 2 stars
I dunno, this seemed kinda bland to me. I added some hot sauce but still wasn’t impressed.

  69. User avatar marcel.pfannerstill says:

    5 stars
Made this tonight—so cozy. I used a bit more garlic (because… why not) and it came out super flavorful. The breadcrumbs on top were a great touch.

    1. User avatar courtney.adams65 says:

      5 stars
Yes!! The garlic bump is the move 😄 Mine came out super flavorful too, and that breadcrumb topping makes it feel like a “real” bake, not just a healthy casserole.

    2. User avatar steve.wiza25 says:

      3 stars
I made it but I think I messed up—used too much cauliflower and it stayed kind of watery after baking. Still tasted okay though. Maybe I should’ve cooked the cauliflower longer in the skillet?

  70. User avatar MAGA2024.Trumpster says:

    5 stars
Yum! This recipe is a keeper. I added extra cheese because who doesn’t love cheese?!

    1. 5 stars
Extra cheese is always a good idea! Cheese makes everything better. 😄

  71. User avatar bruce.volkman64 says:

    3 stars
I followed the steps and it smelled amazing, but mine was a bit dry after 30 min. Maybe my cauliflower was larger pieces? Still tasted okay.

  72. User avatar lashonda.herman2020 says:

    1 star
The turkey is too dry! Did I cook it too long? Idk. Mine doesn’t look like the picture.

  73. User avatar abel.sipes60 says:

    4 stars
I’m skeptical about cauliflower in a bake… but wow. The flavors from basil/oregano really pull it together. Would recommend letting it sit 5 minutes before serving so it thickens up.

  74. 4 stars
Easy and quick! I made it in under an hour. Will definitely make again!

    1. User avatar warren.rempel1993 says:

      4 stars
That sounds great! I love quick recipes. What’s your secret for making it in under an hour?

    2. 2 stars
Really? I had a hard time getting the cauliflower to cook right. Maybe I did something wrong?

  75. User avatar rosendo.haag34 says:

    3 stars
Mm, not bad but I think I’ll use ground beef next time. Just a personal taste, I guess.

    1. User avatar mathWizard says:

      2 stars
Ground beef? Ugh, no way! Turkey is the best choice, don’t change it!

    2. User avatar kendrick.pagac82 says:

      4 stars
Honestly, I think the turkey makes it healthier! Ground beef just feels heavier, you know?

  76. User avatar fletcher.moen44 says:

    5 stars
This was amazing! My family loved it and asked for seconds!

  77. 5 stars
This was easy and didn’t require a million steps. I added some chopped mushrooms and honestly it made it taste more “meaty.” Great weeknight meal.

    1. User avatar rodrick.cronin1991 says:

      5 stars
Totally agree—this is the kind of recipe that doesn’t feel like a whole production. Adding mushrooms is genius for that “meaty” vibe. Definitely trying it next week!

  78. User avatar Wispmother says:

    5 stars
Turned out delicious! I added some extra spices for a kick, and wow! 🥳

    1. User avatar louanne.jacobson48 says:

      5 stars
So glad you enjoyed it! What spices did you add? Always looking for new ways to spice things up! 🌶️

  79. 3 stars
I don’t like cauliflower, but my husband loved it. Maybe I can try with broccoli instead?

  80. User avatar steve_maga says:

    4 stars
I followed the recipe pretty closely—only swapped turkey for ground chicken. Came out great and not dry at all.
