Ingredients
  

  • 500 grams turkey breast cut into cubes
  • 2 cups broccoli florets
  • 1 can coconut milk
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic and cook until softened, about 5 minutes.
  • Add the turkey cubes and cook until browned on all sides.
  • Add the curry powder, turmeric powder, salt, and pepper. Stir well to coat the turkey.
  • Pour in the coconut milk and add the broccoli florets. Stir to combine.
  • Transfer the mixture to a baking dish and cover with foil.

      Glad it was still tasty! Watery batches usually mean the turkey released extra liquid or the broccoli held onto water. Next time, try sautéing the turkey longer before the coconut milk goes in, and/or simmer uncovered for a few minutes after baking step 6 to reduce. Also make sure the broccoli isn’t super wet—pat dry if needed.

      Idk, 20 + 10 mins seems too short for me. Mine always comes out watery unless I bake it like 30–40 mins. Maybe your oven runs cooler? Or you used low-fat coconut milk? I’d just cook it longer or drain the broccoli a bit first.
