Turkey and Bell Pepper Stir-Fry

March 26, 2024

If you’re looking for a fast, flavorful, and nutritious meal, this turkey and bell pepper stir-fry is a weeknight hero. Made with lean ground turkey and crisp bell peppers, it’s a light yet satisfying dish that comes together in under 30 minutes.

Stir-frying is a fantastic way to cook because it locks in flavor and keeps veggies vibrant and slightly crisp. Turkey, especially the lean variety, absorbs seasoning beautifully while offering a healthy alternative to beef or pork. Paired with the natural sweetness and crunch of bell peppers, this combination delivers a perfect balance of taste and texture.

To start, heat a bit of oil in a wok or large skillet. Add ground turkey and break it apart as it cooks. Once browned, add garlic, ginger, and your favorite stir-fry sauce. A simple mix of soy sauce, rice vinegar, a dash of honey, and a splash of sesame oil adds great flavor. You can spice things up with chili flakes or sriracha if you like some heat.

Next, toss in sliced bell peppers – red, yellow, or green, and stir-fry until just tender but still colorful and slightly crisp. The key is not to overcook them so they retain their texture and bright color. You can also throw in onions, snap peas, or broccoli if you want more variety.

Serve this stir-fry over steamed rice, quinoa, or noodles for a complete meal. If you’re going low-carb, try it over cauliflower rice or on its own. Garnish with chopped green onions, sesame seeds, or a drizzle of lime juice to bring it all together.

This turkey and bell pepper stir-fry is not only quick and easy, but it’s also endlessly customizable and great for meal prep. It stores well in the fridge and reheats beautifully, making it a smart choice for healthy lunches or dinners throughout the week.
