Tsukemen

April 26, 2024

When most people think of ramen, they picture a steaming bowl of noodles swimming in rich broth. But in the world of Japanese cuisine, there’s a cooler, bolder cousin to traditional ramen that’s been quietly stealing the spotlight – tsukemen.

Tsukemen, which translates to “dipping noodles,” flips the ramen experience on its head. Instead of serving the noodles in broth, they’re presented cold or room temperature, with a separate bowl of intensely flavored, concentrated dipping sauce on the side. The idea is simple yet brilliant: dip, slurp, repeat. This gives the eater full control over how much broth they enjoy with each bite, making it a more interactive, tactile experience.

The beauty of tsukemen lies in its contrasts. The noodles are thick, chewy, and often chilled, offering a satisfying bite that pairs perfectly with the hot, savory dipping broth. That broth isn’t just soup – it’s a punchy, umami-rich reduction that clings to every strand of noodle. It might be pork-based, fish-based, or even vegan, depending on where you go, but it’s always bold.

Tsukemen is especially popular in the hotter months, when a steaming bowl of ramen might feel too heavy. But for many fans, it’s more than just seasonal – it’s a whole new ramen experience. It also shows off Japan’s culinary creativity, turning a familiar comfort food into something fresh and exciting.

In Tokyo, tsukemen has built a cult following. Lines wrap around blocks for shops specializing in the dish, and each has its own signature take – from yuzu-scented broths to spicy sesame blends. Even outside Japan, tsukemen is making waves, popping up in trendy ramen bars and foodie spots around the world.

For noodle lovers looking to explore beyond the usual bowl, tsukemen offers a refreshing alternative that’s just as comforting – but with a twist. It’s not just ramen without the soup. It’s ramen reimagined.

Fish sauce in ramen broth?? That sounds like a mistake. I can’t imagine it tasting good.

  5. 4 stars
Tasty! But maybe add more ingredients next time? I like it packed with stuff!

    1. User avatar beau.bergnaum67 says:

I dunno, I think it’s good as is. Sometimes simple is better, don’t you think? Too many ingredients can ruin the flavor.

    2. User avatar Shadout Mapes says:

      5 stars
Yeah, I agree! More toppings make everything better. Chashu and eggs are great, but maybe some mushrooms or corn would be awesome too!

Wait, you made chashu? Isn’t that pretty hard? I don’t think I could do it. Good for you though!

    2. User avatar reinaldo.turner30 says:

That’s awesome to hear! I love a good chashu recipe. What did you think of the broth?

  12. User avatar terminatorXYZ says:

    5 stars
I switched out chashu for beef and it was still amazing. Highly recommend trying it!

  13. User avatar verlene.wyman says:

    3 stars
Did you really need that much chicken broth? Seems wasteful. 🤔

    1. User avatar celena.howell says:

      5 stars
I disagree, the broth adds a lot of flavor! It’s not wasteful if you’re making it right. 😋

    2. User avatar dallas.gleason82 says:

      3 stars
I dunno, seems a bit much to me. Can’t you make it with less? Just saying.

  14. User avatar liberal.hero says:

    4 stars
Dis momma’s recipe is bomb! 😂 My kids devoured it, I even doubled the chashu!

  15. User avatar brooks.jacobi25 says:

Seaweed? I thought that was for sushi only?? Weird combo lol. Didn’t like it.

  17. User avatar temple.skiles says:

    2 stars
Seems complicated. Can’t I just use instant noodles? Somebody pls help me!

  18. User avatar isobel.koelpin says:

    4 stars
Not bad, but I think I prefer my noodles with a thicker broth. It was a bit watery for my taste.

  19. User avatar josh.larson2006 says:

    4 stars
This was really easy to make! I added some extra spices, but it still turned out great. Yum!

  20. User avatar mariano.roob38 says:

    2 stars
What if I don’t have chicken broth? Can I use water instead? 🤔

  21. 4 stars
Looks tasty! But what’s the deal with the eggs? Can I use just regular hard-boiled eggs instead of soft-boiled?

    1. User avatar dan.stroman says:

      5 stars
Regular hard-boiled eggs won’t give you that creamy texture you want in the dish! Soft-boiled makes it extra special. Trust me!

    2. User avatar terminatorXYZ says:

      3 stars
I dunno, hard-boiled might be too dry? But if that’s what you got, give it a go. Who knows, maybe it’ll still taste okay. 😅

  22. User avatar benita.dietrich52 says:

    1 star
Isn’t this just ramen? I don’t get what’s so special about it.

  23. User avatar shawana.bosco says:

    5 stars
Omg, I love Tsukemen! The soft-boiled eggs were perfect. My family couldn’t get enough!

  24. User avatar reggie.volkman42 says:

    2 stars
I don’t know, seems like a lot of work for just noodles and broth. What’s the big deal?

  25. User avatar murray.reichel74 says:

    5 stars
So good! The chashu pork was super tender! Will definitely make again.

  26. User avatar vikki.turcotte69 says:

    3 stars
I think I might’ve put in too much soy sauce, it was way salty. Be careful folks!

  27. User avatar bonnie.kuhn60 says:

    3 stars
I followed the instructions but it turned out bland. Maybe I need to use more soy sauce?

  28. User avatar collin.emard8 says:

    3 stars
Noodles were sticky. Maybe I cooked them too long? Not sure.

  29. User avatar eileen.gibson53 says:

    4 stars
I made it but ended up using instant noodles and it actually turned out okay! Still tasty!

    1. User avatar norberto.lang2012 says:

      4 stars
Instant noodles? That’s creative! Glad it turned out tasty for you!😊

  30. User avatar del.hand2004 says:

    2 stars
Just okay. I mean, who needs all those ingredients? Noodles are noodles, right? 😒

  31. User avatar jefferson.flatley says:

    3 stars
I made it but somehow messed up the broth. It tasted weird. Gonna try again though!

  32. User avatar terminatorXYZ says:

    5 stars
Did you know Tsukemen means “dipping noodles” in Japanese? Gotta love it! 👍

  33. 3 stars
I tried making this and it turned out kinda bland. More spice or something would help.

  34. User avatar Draugr Overlord says:

    4 stars
    Needs more garlic. lol

  35. User avatar Eccentrica Gallumbits says:

    5 stars
Yum! My family loved it, especially the soft-boiled eggs! 🥚

  36. User avatar lorita.kertzmann73 says:

    5 stars
5 stars for the broth! I wish I knew how to make chashu like that tho.

  37. 3 stars
The instructions are pretty clear. However, where’s the actual broth measurement (like cups of water/chicken broth)? I had to guess.

  38. 2 stars
Not my favorite. I prefer my ramen served in a bowl, not separated. It’s like the noodles and soup are fighting.

    1. User avatar yong.kohler19 says:

      4 stars
I totally get you! I love having everything mixed up in my ramen too. Tsukemen just feels wrong to me.

    2. User avatar tissues_with_issues says:

      3 stars
But that’s how it’s meant to be! The dipping style is what makes it special, no? Just dip it!

  39. User avatar omar.schneider says:

    1 star
Not for me, I prefer my noodles with broth not dry…need more soup!

    1. User avatar jeana.kerluke2000 says:

      4 stars
I get what you mean! I like my ramen in a big soup too. This seems kinda dry for me 🤔.

  40. 5 stars
Delicious! Made it for dinner, everyone was happy 🙂
