Ingredients
  

  • 1 piece pizza dough store-bought or homemade
  • 1/4 cup Tomato sauce fresh or store-bought
  • 1/2 cup mozzarella cheese shredded
  • 1 zucchini small, thinly sliced
  • 5 pieces cherry tomatoes halved
  • 1 handful Basil leaves fresh
  • 2 tbsp olive oil extra virgin
  • To taste salt
  • To taste black pepper freshly ground

Instructions
 

  • Preheat the oven to 475°F (245°C).
  • Roll out the pizza dough to your desired thickness.
  • Spread the tomato sauce evenly over the pizza dough.
  • Sprinkle shredded mozzarella cheese over the sauce.
  • Arrange the zucchini slices and cherry tomato halves on top of the cheese.
  • Drizzle with olive oil, and sprinkle with salt and black pepper.
  • Bake in the preheated oven for 10 minutes, or until the crust is golden and the cheese is bubbly.
  • Remove from the oven and top with fresh basil leaves. Serve immediately.

    This is fine, but 475°F seems kinda high for 10 minutes unless your oven runs hot. I baked mine a little longer and it finally browned. Flavor’s good though.

      I agree—475°F can vary a lot. Mine also takes like 12-15 minutes before it even starts browning, but the cheese bubbles around 10 for me. Glad the flavor came through!

      Nah 475 is perfect if you want a crisp crust. 10 min is enough for thin dough… thicker dough tho needs longer. Also I leave it on the middle rack and my oven is pretty normal.

      Maybe you baked it a little too hot/long? Idk… I just squeeze my zucchini with my hands after slicing and it usually stops the soggy. But your dough might need extra preheat too—like warm the pan/stone before putting it on. Also if your slices are thick, they’ll steam more than roast. Thin all the way!

      Ugh, that sounds familiar—zucchini is basically a water balloon. I slice it thin, then lay it on paper towels and press another paper towel on top for a few minutes. If it’s still wet, I’ll even pat twice or let it sit uncovered in the fridge for like 15 minutes. Also try salting the slices lightly for 5 minutes, then blot again before topping—less moisture = crispier crust.

    I tried it but my zucchini released a bunch of water, so the bottom crust got a bit soggy. Next time I’ll salt the zucchini slices for a few minutes first. Flavor was still good though.

      I tried it but my zucchini got kinda watery, I think I sliced too thick. Still tasted good though. Maybe bake it longer? Also I used like half the mozzarella because I was out 😅

      Nah man, pepperoni is the best! Why mess with veggies when there’s meat? Pizza should be meaty, not green!

    Really easy and fast, and it doesn’t taste “healthified” at all. I added a pinch of garlic powder because why not, and it still came out great. Would make again for sure.
