Ingredients
  

  • 1 lb flank steak
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 corn tortillas small
  • 1 cup salsa
  • 1 cup guacamole
  • 1/4 cup cilantro chopped fresh
  • 1/4 cup red onion diced
  • 1/4 cup queso fresco crumbled

Instructions
 

  • Preheat grill or stovetop grill pan over medium-high heat.
  • In a small bowl, mix together olive oil, cumin, chili powder, garlic powder, salt, and black pepper to create a marinade.
  • Rub the marinade all over the flank steak, making sure to coat both sides.
  • Grill the steak for 4-5 minutes per side, or until desired level of doneness is reached.
  • Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
  • Warm the corn tortillas on the grill or stovetop until they are pliable.
  • Assemble the tacos by placing a few slices of steak on each tortilla and topping with salsa, guacamole, chopped cilantro, diced red onion, and queso fresco.
  • Serve immediately and enjoy!

    Not gonna lie, I think flank steak needs more acid? The marinade is just spices. Still tasty, just not super tender for me.

    The seasoning is spot on and the instructions are clear. I used a grill pan and it still browned nicely. Also, warming the tortillas made them way better than microwave heat.

      Totally agree—my tacos came out the same way. I did the tortillas on a dry pan for like 30-45 seconds and it made a huge difference. Great balance of cumin/chili too.

      This was good, but 4-5 minutes per side on flank steak felt a little long for me—mine got slightly chewy. Also I microwaved the tortillas once out of laziness and yeah, not as good. Next time I’ll just do the warming step on the stove like you did.

    I’m skeptical about grilling only 4-5 minutes per side. Mine was rare-ish in the middle and I like medium. Ended up adding a couple minutes, so just keep an eye on it.

    I think 4-5 minutes per side is too vague. My grill runs hot and I ended up with medium-well. Still tasty, just not what I expected. Next time I’ll check with a thermometer.

      Yeah 4–5 mins is super grill-dependent. I’d go more by internal temp—flank cooks fast and gets tough if it overshoots.
