Seafood paella is a vibrant and flavorful Spanish dish that brings together a rich variety of seafood, aromatic spices, and perfectly cooked rice. Hailing from the coastal regions of Spain, particularly the Valencia area, paella is traditionally cooked over an open flame and is a dish meant to be shared with family and friends. With its bright colors, rich flavors, and savory seafood, seafood paella has become an international favorite for special occasions or just a delicious weeknight meal.
At the heart of seafood paella is the rice. Short-grain rice, such as Bomba or Arborio, is ideal because it absorbs the flavors of the broth while maintaining a firm, tender texture. The dish is typically cooked in a wide, shallow pan, allowing the rice to cook evenly. The key to a successful paella lies in its broth, often made from fish stock and seasoned with saffron and paprika. The saffron imparts a golden hue to the rice while providing a distinctive, slightly floral flavor that’s a signature element of the dish.
The seafood is the star of the show. Common ingredients include shrimp, mussels, clams, squid, and fish, though you can use any fresh, local seafood available. The seafood is added at different stages during cooking, ensuring that everything is perfectly cooked. The seafood cooks in the flavorful broth, infusing the rice with all its juices, while the mussels and clams open to reveal tender, flavorful meat.
Paella is traditionally served family-style, with the large pan placed in the center of the table for everyone to dig in. It’s a dish that encourages sharing and conversation, making it perfect for gatherings and celebrations. Paella is often garnished with lemon wedges and fresh parsley to add a touch of brightness.
Whether enjoyed at a summer party, a special occasion, or a weekend dinner, seafood paella is a dish that’s guaranteed to impress with its depth of flavor, vibrant colors, and delightful variety of textures.

Ingredients
- 1 cup short-grain rice such as Arborio or Bomba rice
- 2 tablespoons olive oil extra virgin
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 teaspoon paprika smoked, if available
- 1/4 teaspoon saffron threads crushed
- 1 cup tomato diced
- 3 cups chicken broth or seafood broth
- 1/2 pound shrimp peeled and deveined
- 1/2 pound mussels cleaned
- 1/4 pound calamari sliced into rings
- 1/2 cup peas frozen
- 1 tablespoon parsley chopped, for garnish
- 1 lemon lemon cut into wedges, for serving
Instructions
- Heat olive oil in a large paella pan or a wide, shallow skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, smoked paprika, and saffron threads, cooking for another minute until fragrant.
- Add the diced tomatoes and cook for 3-4 minutes until they begin to break down.
- Stir in the rice, ensuring it is well coated with the tomato mixture.
- Pour in the broth and bring the mixture to a gentle boil.
- Add the shrimp, mussels, and calamari, distributing them evenly across the pan.
- Lower the heat to medium-low and let the paella cook without stirring, for about 20-25 minutes, until most of the liquid is absorbed and the rice is cooked.
- Sprinkle the peas over the top during the last 5 minutes of cooking.
- Remove the pan from the heat and cover with a clean kitchen towel. Let the paella rest for 5 minutes before serving.
- Garnish with chopped parsley and serve with lemon wedges.

Tips for the Best Seafood Paella
🔥 Use High-Quality Seafood:Choose fresh or frozen seafood like shrimp, mussels, clams, and squid for the best flavor. Avoid overcooking to keep the seafood tender and juicy. 🔥 Saffron is Key:
Saffron is the star spice in traditional paella. Soak it in a little warm water before adding it to the dish to release its vibrant color and rich flavor. 🔥 Don’t Stir After Adding Rice:
Once the rice is in the pan, resist the urge to stir. Paella gets its characteristic texture by allowing the rice to cook undisturbed, creating a crispy bottom layer called “socarrat.” 🔥 Use a Wide, Shallow Pan:
A traditional paella pan helps the rice cook evenly and gives you that beautiful crispy bottom. If you don’t have one, any wide, shallow pan will do. 🔥 Cook Over a Medium Flame:
Cook the paella over a medium flame to prevent burning the rice. It should simmer gently, allowing all the flavors to develop without overheating. 🔥 Rest Before Serving:
Once the paella is cooked, let it rest for a few minutes before serving. This helps all the flavors meld together and ensures the rice is fully cooked.

This looks amazing! I can’t wait to try this recipe this weekend. I love seafood paella!
Used a different kind of shrimp, and it still turned out awesome! Will make again!
This was a bit dry for my taste. I think it needed more broth. Also, I used regular rice, not short-grain, and it didn’t work well.
But you really used regular rice? Makes it no good for paella! Next time, stick to short-grain for better results!
I agree, it can get pretty dry if you don’t have enough broth! You should’ve tried the seafood broth, it adds so much flavor!
What’s the point of using saffron? I don’t see how it adds flavor. I’ll skip that next time.
I dunno, but saffron is really expensive! Is it really worth it? Not sure about that.
Saffron might seem unnecessary, but it gives a unique aroma! I wouldn’t skip it.
I don’t understand why everyone raves about saffron. This recipe was just fine without it!
Step 8 says don’t stir—honestly I forgot and stirred once. It still turned out tasty, just less “socarrat” vibes. I’ll be stricter next time.
Honestly same—I always end up giving it a little stir “just to check.” Still delicious though. Love that you noticed the socarrat difference and will adjust next time!
I don’t get it though… if you don’t stir, how does the rice cook evenly? Mine always sticks unless I stir a bunch. Maybe I’m using the wrong pan or broth?
I had to substitute chicken for the seafood bc I don’t like shrimp or mussels. Still turned out pretty good!
Great job adapting the recipe! I think chicken can be a nice twist. How did the flavor turn out?
Nah, seafood paella needs seafood! Chicken ain’t the same. Try it next time! 😅
Absolutely fantastic! Made it for my family and they kept asking for more! ❤️❤️
I made this too but it didn’t turn out that great. Maybe I messed up somewhere. 😕
So glad you enjoyed it! It’s a crowd-pleaser for sure! 🤩
So delicious! I added chicken too and it was even better! Highly recommend! 🐔👌
Made this for guests and it was a hit. The saffron smell is legit, and the no-stir method really helps the texture. I used regular paprika since I couldn’t find smoked—still great.
Love that you mentioned the no-stir method—so many recipes miss that part. Smoked paprika makes a huge difference, but glad regular still worked!
Not a fan of seafood, but my friends loved it. I might try with chicken instead next time.
Chicken instead of seafood? Sounds weird, but why not! Just make sure to season it well! 😅
Seafood is the best! But I guess chicken is okay if you’re not a fan. Hope it turns out good! 🙌
This was absolutely delicious! The saffron gives it a unique kick that I loved.
So easy and honestly way less intimidating than I thought. The shrimp cooked perfectly at the timing you gave.
This paella is to die for! My family loved it! 😍
Ok but… I don’t really have mussels, can I just do shrimp only? I’m trying not to waste money lol
Calamari in a paella feels kinda weird to me, like it’ll get rubbery. Mine actually turned out fine, but I’ll slice it thinner next time.
Why no chorizo? Seems like it’s missing something. 🤔
Yum! I didn’t have shrimp so I used chicken instead and it was still really good.
Why no chorizo? Also 3 cups broth seems like too much for that much rice. I feel like this is more like rice soup than paella.
Made this for dinner and it came out super flavorful—especially the saffron + smoked paprika combo. The no-stir part is key, I think. Towel rest step was legit!
I thought seafood was just a fancy word for fish! There was too much stuff in it for me.
I followed the instructions to the letter, but mine turned out mushy. What did I do wrong?
Good but not great. I used canned tomatoes instead of fresh and could tell the difference. Will try with fresh next time.
This recipe is way too complicated. Who has time for all that? I’m sticking to my microwave meals.
I’ve never made paella before, but this recipe was easy to follow. The saffron gives it great flavor! Will definitely make again.
I’m glad to hear you enjoyed it! Paella is one of my favorite dishes. What seafood did you use?
Never made it either, but I heard saffron can be super expensive! Was it worth the cost for the flavor?
It was okay, but I used brown rice instead. Not the same. 🤷♂️
I’ve never cooked seafood before, but this was surprisingly easy! I’m proud of myself!
That’s awesome! Seafood is really fun to cook, and paella is such a great choice for beginners! Keep it up!
I didn’t have saffron, so I skipped it. The flavor was still good, but I think it needs that extra kick. Might try again with saffron.
Saffron really adds that signature flavor! You should definitely try it next time.
I dunno, it might still taste good without it. Just add more spices maybe?
Super easy and I had most ingredients already. Also, the lemon on top is a must—brightens everything. 10/10 for weeknight vibes.
Totally agree on the lemon—makes it feel restaurant-level. I usually squeeze a little right before serving and it’s chef’s kiss.
Wow! I followed it exactly and the timing worked out. The saffron gave this golden aroma that made everyone hover over the stove.
Why does it have to be short-grain rice? I used long-grain and it was fine! 🤷♂️
Hmm…I was hoping for more flavor. I used vegetable broth instead of chicken broth, which might be why? Won’t be making it again.
This recipe is legit! The flavors are really well balanced, and I felt like a chef! 🍽️
This was amazing! I’ve never made paella before and it turned out great. 5 stars!
I substituted the rice with quinoa, and it was awesome! Healthy version! 🥗
Quinoa? Really? That’s not paella! Stick to the rice! 🤨
Absolutely delicious! I followed the recipe exactly and it turned out fantastic! My family loved it. 🦐❤️
Yum, so good! I added extra shrimp just because it looked a little empty. 10/10 would recommend!
This paella was so delicious! I didn’t have saffron, but it still turned out great!
Seafood paella? In my house we call it “throw everything in a skillet.” 😅 Also, I forgot to cover with the towel and it was not the same. Still ate it all though.
Easy to follow but not much flavor for me. Added some hot sauce and it was better! Maybe more spices next time.
I get what you mean! I added more spices too, like cayenne and it really brought it to life! Totally worth it.
Not sure about the Arborio/Bomba swap—Arborio is more for risotto vibes. I think Bomba would’ve been better. Still edible, just not true paella texture.
LOL this was actually pretty fun to make! I felt like a chef. 🍽️
Why do you put peas in paella? That’s not traditional! You should stick to the basics.
So good! Only thing I added was some chili flakes for spice. Will make again for sure!
Pretty solid instructions. I used bomba rice and it turned out great, but I had to cook a few extra minutes because my broth evaporated faster than expected.
Nice! Bomba rice is perfect for paella—glad it worked. Extra minutes makes total sense if the broth evaporated quicker.
This paella was absolutely delicious! The saffron gave it such a unique flavor and the seafood was cooked perfectly. Will make again!
I don’t know what went wrong, my rice was mushy 😔. Probably will stick to pasta.
I followed it exactly and the mussels didn’t open… which was scary. Maybe my mussels were old? Flavor was good, but I lost some confidence.
Oh no—yeah, mussels not opening is always a little scary. Old mussels are definitely a common culprit, but also make sure you discard any that were already open (before cooking). Did you check that the shell was tightly closed when you started?
Flavor good but no open mussels?? That’s why paella scares me 😂 I’d still say try again with fresher mussels. Some brands also need a few more minutes—20-25 might be a bit short depending on how big they are.
Seafood paella? More like seafood ughh! I don’t like fish stuff. 😖
This paella recipe is absolutely perfect! The saffron gave it such a lovely color and flavor. My family loved it. Definitely a 5-star dish!
I’m so glad you enjoyed it! Saffron really does bring a special touch to paella. 🍽️
Where’s the chorizo?? A real paella should have that for flavor! Can’t believe I followed this recipe.
Just OK. I feel like I’m missing something. Maybe some hot sauce?
I think hot sauce could really elevate this dish! A little kick goes a long way. 🌶️
I dunno, maybe it’s just how you made it? I added some cayenne and it was delish!
Followed the recipe mostly, but I used regular paprika and it was still good. Mussels were the best part. Would make again for sure.
Made it without the calamari, still tasty! And the peas were a nice touch! 😉
Made it exactly as written, and the no-stirring rule really matters. Rice came out nicely tender—not mushy. Big thumbs up.
Wait—Arborio for paella? I get it’s short-grain, but isn’t that more risotto-style? Mine didn’t make that classic texture I was hoping for.
Nah it still works. I used Arborio once and it turned out fine—just don’t over-stir and make sure you let it do the socarrat part at the end. Maybe your broth ratio was off? Also 20-25 min can be short depending on the pan.
I think you’re right to question it—Arborio is super risotto-y and can get a bit creamy. I’ve had better luck with Bomba (or Calasparra) for true paella texture, with less “sticky” sauce.
This is not real paella! Where’s the chorizo? Real Spaniards don’t put shrimp and mussels like this.
This turned out way better than I expected! The saffron + smoked paprika combo is such a vibe. I also loved the 5-minute towel rest—made the rice perfectly tender.
Not bad at all, but I’m calling it: the mussels were the star. I got some shells that didn’t open though, so I tossed those like the sensible adult I am 😅
Way too much garlic for my taste. Next time I’ll use half the amount. Still edible, though.
I think garlic really adds flavor! But to each their own, just adjust next time! 🙌
Way too much garlic? Nah, you must’ve just got a strong batch 😂. It’s seafood, it needs flavor!
I followed the recipe but my rice turned out mushy. Not sure what went wrong.
This was way too salty for me. I think my broth was already seasoned. Next time I’ll use low-sodium and taste the broth first.
I’ve had this happen too. I used regular chicken broth once and it was way too much. Low-sodium is the move, and tasting while cooking saves the whole dish.
Totally agree—seafood broth can be salty already. I always taste the broth before adding it. This is such a solid call for next time.
This is pretty close, but paella should be more “soccarat” and the recipe doesn’t mention getting that crust. Wider pan + higher heat at the end would help.
Couldn’t get the mussels to open, so I tossed a couple. Kinda disappointing. Flavor was decent, but the seafood timing felt finicky.
Seafood! Yum! Me and my family loved it! 👏
Glad to hear you loved it! Paella is best with family! 😊
Wow. 🌊🍋
You call this paella? Where’s the chorizo? That’s real paella!!
Pretty solid, but I had to add a splash more broth near the end. My rice was stubborn and needed a little extra time. Still delicious though.
Maybe your heat was too high? If it’s boiling hard the rice can cook uneven. I usually keep it more of a steady simmer and it absorbs better.
Totally agree—paella is definitely not always “set it and forget it.” I’ve also needed a splash of broth near the end when the rice is being stubborn. Glad it still worked out!
Saffron is expensive and I used less than the recipe called for… still decent, but I can tell it needs more of that signature taste.
I love that it rests with a towel—that part actually helped the rice settle. Served with lemon and it brightened everything.
Yum!! The seafood was perfect! 😍 Next time, I wanna add lobster!
Lobster sounds like a great idea! It’ll add even more flavor! 🦞
Yum!
I messed it up and burned the rice. Oops! But I still ate it. Not bad for a beginner.
Tried making this but it was kinda bland, maybe I used too little seasoning? Not sure.
Ok so I used frozen shrimp and they got a bit rubbery. Next time I’m buying fresh or cutting cook time shorter. Recipe otherwise pretty straightforward.
The instructions are clear, but I wish it said when to cover (during cooking vs after). Also I added a touch more broth and it fixed it.
OMG, my family loved this! Even my picky sister ate it all! Will make again.
Pretty solid recipe, but I think 20-25 minutes might be short depending on your pan and how hot it really gets. Next time I’ll check the rice earlier and add a splash of broth if it’s still firm.
Good flavor overall, but my shrimp got a bit rubbery since I may have overcooked. Next time I’ll add them a little later.
That’s helpful—shrimp timing is *everything* in paella. Adding them later (or just until they curl) usually keeps them juicy. Glad the overall flavor worked for you!
Mmm rubbery shrimp is the worst. I always overcook seafood when I follow “cook 20-25” instructions 😂 I’m stealing your trick and tossing shrimp in closer to the end.
Okay but where’s the seasoning salt? I felt like it was missing something. I ended up adding a little extra salt and black pepper and it fixed it.
Wait… seasoning salt would mess with the balance, though. The smoked paprika already brings the “savory” vibe. Did you use enough broth salt?
Totally get what you mean—this recipe leans on paprika + saffron, so seasoning salt isn’t really “built in.” I usually add a pinch more salt up front too.
I’m not sure about the broth amount—3 cups felt a little tight for my pan size. I ended up adding a splash halfway through so it wouldn’t dry out.
Not bad, but mine was a little soupy after 25 minutes. I think I should’ve simmered longer or used a wider pan. Also the mussels opened fast for me so I was worried about overcooking, but it ended up fine.
Yeah, I’ve had that same “soupy at 25” moment. My guess is either the pan wasn’t wide enough (less evaporation) or the simmer was a touch too gentle. Once I went wider and didn’t rush the boil, it tightened up nicely.
Seafood paella timing is so weird—if mussels open early I freak out too. But you did the right thing letting it rest. Next time maybe keep the heat at a true gentle boil and avoid lifting the lid.
Saffron is expensive and I only had a pinch left… still tasted good, but I think I got the heat a bit wrong. Some rice was a tad chewy.
It was good but I think I might stick with frozen fried rice next time. Less work!
I get it! But making paella is so worth it! Frozen fried rice just can’t compare to the fresh seafood and flavors!
Looks tasty, but 3 cups broth for 1 cup rice feels a little light? I’m skeptical it’ll fully cook without more liquid, unless your stove is super consistent.
3 cups broth for 1 cup rice sounds about right to me for short-grain. If it seems dry, next time add a splash of hot broth mid-cook instead of dumping more at the start.
I totally get your skepticism, but paella recipes often use a similar ratio—short-grain rice plus a covered rest can help it finish. I’ve found simmering gently (not a rolling boil) matters a lot.
Pretty good! My rice took closer to 30 minutes though, and I used regular paprika (no smoke). Still tasty and the seafood was nice and tender.
Meh. I tried it and it felt more like seafood rice than true paella. Could be my expectations, but I won’t pretend it’s the best I’ve had.
Yeah, I get what you mean. It sounds delicious, but without real socarrat it can end up more like “seafood rice” than proper paella.
I can’t believe how easy this was to make! I’m not a great cook, but this turned out great. Thanks for the recipe!
I love that it says “without stirring.” My family always stirs risotto-style and they were shocked this worked better. Will cook again.
Made this for friends and it smelled incredible. The saffron really does something—my paella pan never looked more “authentic” lol. Great timing on the rest too.
Looks tasty!
The mussels were the star. Mine opened quickly once I lowered the heat—timing felt right. I skipped peas because I didn’t have them and it was still awesome.
Seafood? Yuck! Bet this would taste better with chicken!
You can’t be serious! Chicken has no flavor like seafood does. This recipe sounds divine! 🍤
Mine burned a tiny bit on the bottom after 25 minutes because I kept it too hot. Would recommend checking earlier if your stove runs strong.
Honestly, I don’t get the hype around paella. It was just OK. Maybe I did something wrong?
I think paella is really an acquired taste. Did you try making it with different seafood? Maybe that would help!
Nah, it’s just rice and seafood. You’re not missing much! I prefer pizza. 🍕
Good recipe but I feel like 3 cups broth for 1 cup rice is too much? Mine stayed wet and never really got that socarrat.
I agree—3 cups for 1 cup rice sounds high for paella. I’ve always aimed more like 2:1-ish (or just enough to simmer, then stop adding). If it stays wet, you won’t get the socarrat.
Wow, this turned out way better than my usual “rice with seafood” attempts. The saffron really makes it smell fancy. I’ll definitely do the no-stir rule next time—kept the texture perfect. 5/5 vibes.
Paella pan or shallow skillet—yeah, but I used a regular pot and it didn’t work as well. Still tasty though, just not that classic texture.
Ooh that makes sense—paella really wants a wide pan so the rice can cook more evenly and get that socarrat. But hey, if it was still tasty, that’s the win.
I actually think a regular pot can work… you just have to stir way more? Like so it doesn’t burn. Maybe next time add a little extra broth and keep it moving?
My mom makes a better paella! This one was okay. The rice got a bit mushy.
Good flavor, but my rice took longer than 25 minutes. I had to add a splash more broth to get it tender. Still tasted great though!
Glad you liked the flavor! Yeah, paella timing can vary a lot with the exact rice and how wide/shallow your pan is. A splash more broth makes sense—next time you might just start checking a few minutes early.
Pretty good overall. I didn’t have saffron so I used a pinch of turmeric—still tasted nice, but not the same depth. Next time I’ll splurge on real saffron.
Fantastic recipe! Easy to follow and tastes like a vacation in my mouth! Can’t believe I made this at home, recommend to all wannabe chefs!
Not bad, but mine came out kinda soupy even after 25 minutes. I think my pan was too deep. Also I forgot to cover with the towel at first lol.
This turned out fantastic—lots of flavor and the rice stayed nice and firm. I used seafood broth and it made a big difference. The no-stirring step was key!
This paella was delicious! I used fresh seafood and got rave reviews from my family. Definitely a keeper!
I’m so glad to hear you enjoyed it! Fresh seafood really makes a difference, doesn’t it?
Rave reviews? Are you sure they weren’t just being nice? My family wouldn’t appreciate that much flavor.
Paella should be done in a proper paella pan, and I didn’t have one. Still worked in my wide skillet, but the socarrat wasn’t happening. Oh well.
Not gonna lie, this is basically rice with seafood. Where’s the real “socarrat” crust? Mine didn’t form at all.
I don’t know how to rice, but I tried. The mussels were too much for me. I am a simple cook, so maybe I’ll Stick with fried chicken next time.
1 cup rice and 3 cups broth seems off to me… unless your burner is super weak. I’ll try it but I doubt it.
Totally fair skepticism—3 cups broth for 1 cup rice is on the “looser” side. But paella also reduces a lot while simmering, and you’re not stirring, so the rice still pulls plenty of liquid. If your burner is strong, you can always simmer a little less aggressively.
Paella is overrated! Also, where are the chorizos? You can’t call it paella without chorizo.
Made this last night—so fragrant. The saffron really comes through, and the no-stir method gave me that nice crust. Next time I’ll add a pinch more smoked paprika.
This sounds legit—especially the saffron + smoked paprika combo. I’ve made paella before but never used both together. Can’t wait to try it with extra lemon at the end.
I followed it closely, but my mussels didn’t open much. Not sure if they were old or if I should’ve simmered a bit longer after adding them. Flavor was good though!
This was harder than I thought—paella pan size matters a lot. In my smaller skillet it got too thick before the rice fully cooked. Delicious, but not perfect.
This looks like a legit weeknight paella! The saffron + smoked paprika combo is doing the heavy lifting. I’ll probably use mussels in the shells for presentation.
Kinda wanna nitpick: if you’re using Arborio, paella might go a little too creamy? Also 1/4 lb calamari seems low for my family 😅 but saffron + smoked paprika is definitely legit.
Mussels in the shells are such a great call—makes it look restaurant-level. I bet they’ll steam up perfectly with the shrimp + calamari timing too.
I’m skeptical about the amount of broth—3 cups for 1 cup rice feels like it might turn out wet. Mine was a little soupy, but flavor was great.
Totally get the skepticism. I was sure 3 cups broth to 1 cup rice would be too much for paella too, but I think the “paella effect” is that it cooks mostly uncovered and gets absorbed/evaporated fast. The rest time also helps.
Mine came out wet the first time as well. I think I used a deeper pan than called for, so less evaporation. Next time I’ll use a wider paella pan and maybe simmer a touch longer.
My whole family ate it straight from the pan. The lemon on top at the end is a must. Will repeat for sure.
I followed the recipe but my mussels didn’t open, so I had to toss them. Not the recipe’s fault maybe? Flavor was great though.
My family loved it, but what’s the deal with saffron? It’s super expensive for such a tiny amount.
Smoked paprika is doing heavy lifting here. I used regular paprika and it was okay, but it lacked that “paella” smokiness.
Yes!! Smoked paprika is totally the difference-maker. Regular paprika just tastes flatter—doesn’t give that warm “paella” vibe. I always use smoked.
I’m skeptical about using Arborio for paella… but I tried it anyway. Flavor was good, though the texture was a bit softer than I expected. Still tasty!
I get why you were skeptical 😅 Arborio’s more “creamy” than classic paella rice, so softer texture makes sense. But honestly—good flavor is what matters. Next time try Bomba if you want more distinct grains!
Arborio in paella? nahhhh 😂 but if it tasted good, i guess i can’t argue. Maybe just cook it a touch shorter so it doesn’t turn mushy?
I like seafood, but mussels always stress me out. Mine didn’t all open and I tossed a couple. Flavor was fine, anxiety not.
Maybe I did something wrong but my shrimp got a little rubbery. I think 20–25 minutes was too long for my pan. Still tasted good, just not ideal texture.
Oof, that rubbery shrimp is usually an overcook issue. 20–25 min on the heat is a lot for shrimp—next time maybe add it closer to the last 8–10 minutes or keep the simmer gentler.
I had the same thing once. Also make sure the shrimp are really patted dry before cooking—if they’re wet they sort of steam in the pan and get that chewy vibe.
Paella intimidates me, not gonna lie. Mussels can be gross if they don’t open… but I guess that’s part of it? Might try just shrimp first.
Honestly didn’t think I’d like it, but wow. Smoked paprika + lemon at the end = perfect combo. Will make again for sure.
Smoked paprika + seafood is a power move. The lemon at the end sounds like it would cut through the richness just right. Yum.
Same! I was skeptical too, but the smoked paprika really brings it together—plus the lemon makes everything pop. Definitely making this again.
Not gonna lie, I was skeptical about using arborio/bomba interchangeably, but it worked. I kept it gentle boil and it came out creamy without being mushy.
I’m glad it worked for you! That “gentle boil” tip is key—keeps it creamy without turning to mush. Nice.
I love that you don’t stir after adding the seafood. That’s usually where mine turns mushy. Also resting it with a towel is such a good call.
Paella is not easy like this, sorry. Also 3 cups broth for 1 cup rice seems a lot? Mine got kinda soupy before it finished. Still ate it, but wasn’t “wow”.
Solid recipe. I used bomba rice and swapped in smoked paprika powder since I didn’t have threads of saffron (oops). Still tasted great though—just less golden. Resting it for 5 mins helped a lot.
Loved the smoked paprika idea. I didn’t have saffron threads so I subbed a pinch of turmeric (yeah, I know). It wasn’t the same, but it still tasted comforting.
I followed the steps pretty much exactly, but the flavor felt kinda flat. Maybe my broth was bland? And I’m not convinced about 1/4 tsp saffron being enough. Would add more next time.
I’m not usually a paella person, but this was easy. Took a little longer for the liquid to absorb on my stove, though (closer to 30 mins).
Nice! I’m glad it was easy for you—30 minutes for the liquid to absorb sounds very reasonable on a stove.
I tried paella once and it was a disaster, so “easy” is a big claim 😅 What kind of rice did you use? Arborio or Bomba?
Yum!
Right?? That first aroma when the saffron hits is everything. 😋
I’m not sure about the shrimp/mussels timing—my mussels opened fast but the calamari got a little chewy. Next time I’ll add calamari later.
Made this tonight and it came out restaurant-y. The saffron smell is unreal. I used Bomba rice and followed the “don’t stir” rule—huge difference.
Yes!! The “don’t stir” rule is the whole magic—glad you nailed it. Also Bomba is such a solid choice for paella. Making this next week for sure.
Restaurant-y is the dream. My only question: when you say “saffron smell is unreal,” did you bloom the saffron or just crush and toss it in like the recipe? I’ve been unsure about that part.
My grocery store didn’t have saffron so I used turmeric and… it was kinda yellow? Not the same. Otherwise easy enough. 😅
