If you’re looking for a quick, satisfying meal that delivers big on flavor with minimal cleanup, a sausage and bell pepper skillet is the perfect go-to. This hearty dish brings together juicy sausage, sweet and savory bell peppers, and aromatic onions in a single pan for a meal that’s both delicious and easy to prepare.
Start by slicing your favorite sausage, smoked, spicy Italian, or even a plant-based alternative- into rounds or chunks. In a hot skillet, the sausage is browned until crispy on the edges and full of rich, caramelized flavor. Once the sausage is cooked, it’s set aside while thinly sliced bell peppers and onions are sautéed in the same pan, soaking up all those delicious juices.
The combination of red, yellow, and green bell peppers not only adds color to the dish but also brings a natural sweetness that balances beautifully with the savory sausage. A sprinkle of garlic, dried herbs like oregano or thyme, and a splash of balsamic vinegar or tomato paste can add even more depth and richness to the flavor profile.
Everything is tossed back together in the skillet and cooked for just a few more minutes, allowing the flavors to meld into a perfectly balanced, comforting dish. Serve it on its own, over a bed of rice or pasta, or spoon it into hoagie rolls for an easy sausage sandwich.
This sausage and bell pepper skillet is a true crowd-pleaser that takes under 30 minutes to make. It’s ideal for busy weeknights, meal prepping, or when you want something hearty and delicious without spending hours in the kitchen. With just one pan and a handful of ingredients, you can have a rustic, flavorful meal on the table in no time.

Meh. My kids didn’t like it much. They are picky eaters tho.
I followed the recipe but it turned out way too salty. 🙁 Not doing that again.
YUM! 😋 I added some cayenne for extra heat and it was perfect! Thank you for this!
Cayenne?! That’s a bold move! I usually just stick to the basics. Glad it worked out for you! 🌶️
Great for a quick meal! I used what I had in the fridge and it was still tasty.
Sausage is life! Loved this recipe, simple and fast! Thanks for sharing! 😋
This is basically sausage + peppers, which is always a win in my book. I like that it’s one skillet and doesn’t require a ton of ingredients.
Yes! Sausage + peppers is basically the comfort food holy grail. I love that it’s just one skillet and the ingredient list isn’t crazy long.
I tried something like this but I feel like it needs more like sauce or it’s a little dry? Maybe add some tomato or a splash of vinegar at the end. Still sounds good tho.
Wish I had peppers, used zuchinni instead! Still turned out good!
I added some cheese on top and it was amazing! Highly recommend!
Sounds good but I dunno if cheese goes with sausage.. just sayin.
Cheese? Really? I think that might be too rich for me, but I’m glad you enjoyed it!
This was delicious! My family loved it. Will definitely make again.
I’m so glad you enjoyed it! It’s one of my favorites too!
Could use more seasoning imo. I followed it exactly and it was good, but a little bland for my taste. Next time I’ll add more garlic or some smoked paprika.
Totally get that—mine always needs a little more garlic/pepper too. Smoked paprika is a great idea, I bet it’ll add some depth. Did you measure the salt/pepper pretty exactly, or eyeball at the end?
Best dish ever! I used turkey sausage, and it turned out amazing. Will make again!
I’m not a great cook but this felt easy enough for me. Turned out okay! 4/5
I don’t know, it was too spicy for me! I couldn’t handle the heat. 2 stars.
Meh, it was okay. Seemed a bit bland to me. Might need more spices?
So yeaaahhh, I used chicken instead of sausage. Still tasted good tho!
I dunno, my sausages kinda fell apart. Not sure if I did it right…
I don’t get why people go crazy over sausage. It’s just kinda greasy. I prefer other meats.
I totally get it! Sausage can be really greasy. But I think it’s all about how you cook it! Maybe try it with some seasoning next time? It can really brighten it up!
Sausage isn’t that bad! Just look at all the flavors you can get! You might be missing out on a great taste, just sayin. 😋
This recipe is a lie! Sausages don’t belong with veggies like this. Just wrong!
I wish it had instructions for what to do if the sausage releases a ton of fat. I had to spoon some out so it didn’t swim in grease.
Good point! If the sausage is really fatty, I usually cook it first and then either carefully pour off the excess grease or blot a little with paper towels before adding the peppers. It keeps it from turning into an oily mess.
This happened to me too 😅 I just waited and it burned off… i guess? The fat kinda sizzled forever and my pan was like full of grease. Next time i’m gonna use less oil or choose a less fatty sausage. Wish the recipe said that.
Quick and easy! I added some cheese on top before serving and it was a hit with the kids.
