Roasted Carrots

November 12, 2024

Roasted carrots are a simple yet delicious side dish that brings out the natural sweetness of the carrots while adding a caramelized, slightly crispy exterior. With just a few ingredients, this dish transforms humble carrots into a flavorful, colorful addition to any meal, making it a great choice for weeknight dinners, holiday feasts, or gatherings with family and friends.

To make roasted carrots, start by peeling and trimming the carrots, cutting them into even-sized pieces to ensure they cook evenly. They can be roasted whole, sliced, or cut into sticks, depending on your preference. Toss the carrots with olive oil, salt, and pepper to coat them evenly, which helps in achieving that golden, crispy exterior.

For added flavor, you can sprinkle in herbs like thyme, rosemary, or parsley, or even drizzle with a bit of honey or balsamic vinegar to enhance the natural sweetness of the carrots. A touch of garlic powder or fresh minced garlic can be added for an extra layer of flavor. Some recipes also include a squeeze of lemon juice after roasting to brighten up the dish.

Roast the carrots in a preheated oven at around 400°F (200°C) for 20 to 30 minutes, depending on the size and thickness of the pieces. Toss the carrots halfway through the cooking time to ensure they are evenly roasted. When done, the carrots should be tender on the inside with a slightly crispy, caramelized edge that offers a satisfying contrast in texture.

Roasted carrots are a versatile side dish that pairs beautifully with roasted meats like chicken, beef, or lamb, as well as with salads, quinoa, or rice. They are also a great addition to a vegetarian or vegan meal, offering both flavor and nutrients.

For drinks, roasted carrots pair well with a crisp white wine like Sauvignon Blanc, a medium-bodied red like Pinot Noir, or a light, refreshing sparkling water.

Whether served for a special occasion or as a simple side for dinner, roasted carrots are a flavorful and healthy choice that’s sure to please.

Not gonna lie, I was skeptical about just garlic powder, but it still tastes great. Would add a pinch of paprika though.

Honey on carrots? That sounds weird. Carrots are sweet enough already.

Carrots??? Who even roasts carrots? But I guess I could try now…

Pretty good overall. I like the garlic powder + thyme combo, but next time I’ll cut the carrots a bit thicker so they don’t dry out as much near the edges.

I don’t know, I think carrots are boring. Can’t believe people get excited over them.

I didn’t have thyme, so I used basil instead. Still turned out awesome!

Followed the recipe but mine came out mushy… did I roast them too long? Not sure I did it right.

    1. 4 stars
Maybe you roasted them too long or cut them too small. Try checking them a bit earlier next time!

I did not like this at all. The carrots ended up too mushy for my taste. Not worth it.

These are the best roasted carrots I’ve ever had! So sweet and flavorful. Will definitely make again!

Tasty but mine were a little soft, not much “caramelized.” Next time I’ll cut them thicker or roast 5-10 mins more.

Totally feel you—425°F for 30 mins can be hit or miss depending on thickness and your oven. Cutting thicker + a few extra minutes usually fixes the “caramelized” part.

  17. 5 stars
These turned out super sweet and caramel-y! I added a tiny pinch of smoked paprika too and it was perfect. Will make again for sure.
