Ingredients
  

  • 1 cup rhubarb chopped
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg beaten
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, oil, beaten egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the chopped rhubarb.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

      Maybe your oven is running cooler. I usually turn it up to like 400F and bake the same time, but watch it so it doesn’t burn. Also make sure rhubarb is dry-ish and not too juicy—could make it gummy. Toothpick mostly clean is kinda suspicious though, so I’d do longer time.

      That sounds super frustrating 😕 With muffins, a gummy center is usually either underbaked (batter still set in the middle) or the batter was overmixed. I’d try baking 3–5 minutes longer and check a couple muffins at the 20-minute mark—ovens vary a lot. Also, mix just until the flour disappears; rhubarb can add extra moisture too.

    Meh. They tasted like plain muffins with a random fruit bite. Also, “toothpick comes out clean” is hard when rhubarb’s in the center, lol.

      Ugh yeah I get what you mean. Rhubarb can be kinda juicy in the middle, so “toothpick clean” feels unreliable. I usually bake 5-10 min longer and check a spot slightly off-center, or watch for a springy top instead of pure clean toothpick.

      That makes total sense—over-mixing after adding wet ingredients can definitely dry them out. Next time, I’d do exactly what you said: mix just until no flour streaks, and maybe fold the rhubarb gently so you don’t knock out too much moisture. Glad the flavor still came through!

    375°F is too low for me—mine took forever and the centers weren’t done at 25 minutes. Ended up baking closer to 35. Good taste, but timing off.

      Totally hear you—ovens vary a lot. I’ve also found rhubarb muffins usually need closer to ~30–35 min, especially if the pieces are chunky. Your “25 mins too short” checks out.
