Maybe your oven is running cooler. I usually turn it up to like 400F and bake the same time, but watch it so it doesn’t burn. Also make sure rhubarb is dry-ish and not too juicy—could make it gummy. Toothpick mostly clean is kinda suspicious though, so I’d do longer time.
