Quick-Simmered Skillet Swiss Steak

April 12, 2024

Swiss steak is one of those timeless comfort foods that brings big flavor with minimal effort. This quick-simmered skillet version speeds up the traditional method without sacrificing tenderness or taste. It’s the kind of meal that feels like it’s been slow-cooked all day, even though it’s on the table in under an hour.

At its core, Swiss steak is about transforming a budget-friendly cut of beef into something tender and full of flavor. Typically made with round steak or another lean cut, the meat is lightly coated in flour, then browned in a skillet to lock in flavor. From there, it’s simmered in a tomato-based sauce with onions, garlic, and a few pantry spices until fork-tender.

This quick version keeps everything simple. After browning the steak, you’ll deglaze the pan with crushed tomatoes or tomato sauce, add a splash of broth for depth, and let the mixture simmer gently until the meat becomes tender and the flavors meld. A bit of Worcestershire sauce or balsamic vinegar can add a subtle tang that balances the richness.

Serve it over mashed potatoes, rice, or egg noodles to soak up the flavorful sauce, and pair it with a simple green vegetable like steamed broccoli or sautéed green beans. It’s a great meal for chilly evenings or whenever you’re craving a homestyle dish that doesn’t take all day.

Swiss steak is also a great make-ahead option. Like many braised dishes, the flavor improves as it sits, so feel free to prepare it in advance and reheat when you’re ready to serve. It also freezes well, making it a smart addition to your meal prep rotation.

Whether you’re cooking for your family or just want a cozy meal with minimal fuss, this quick-simmered skillet Swiss steak hits all the right notes. It’s hearty, comforting, and satisfying, the kind of dinner that feels like a hug on a plate.

Made it last night! Family loved it! Will make again! 👍

Not bad, but I was expecting more “steak” vibe and less tomato. I’d maybe add a splash of beef broth or a pinch more thyme. Still, easy weeknight meal.

    1. User avatar yvone.kozey22 says:

      4 stars
I actually like it less tomato, but I get what you mean. Next time I’d maybe use 1 can tomatoes + 1/2 can sauce, and bump the thyme. Easy and flavorful regardless!

    2. User avatar alfred.lemke78 says:

      4 stars
Totally agree on the “steak” vibe—this definitely reads more like a tomato-y beef skillet than classic swiss steak. I added a splash of beef broth next time and it helped a lot. 5/5 weeknight fix though.

  3. 4 stars
Quick and easy, but it felt like it needed more seasoning. Maybe add some chili flakes for kick?

  4. 3 stars
It was okay, but mine came out a little bland. I think I under-salted the flour or maybe the diced tomatoes were low flavor. Still, the texture was good.

  5. User avatar Roslyn Kozey says:

Yum!! So juicy and tender. Best recipe I’ve tried in a while! 🥩❤️

Wow, only 6 ingredients? I thought Swiss steak had cheese or somethin’!

    1. 4 stars
Yeah, I thought it had cheese too! But I guess this is a different take. Looks good anyway!

  8. 4 stars
I wasn’t sure about the Worcestershire sauce, but it actually added nice flavor! A keeper!

  9. User avatar beatrice.weissnat says:

Made it last night and it came out good, but I’d tweak the seasoning—mine felt a little flat until I added extra pepper and a tiny pinch of sugar. Also, the flour dredge made a nice sauce thickness.

  10. User avatar oPandariaNo says:

Made this for company and they loved it! Will definitely share this recipe!

I don’t know about the flour part. Could it be skipped? My steak turned out kinda soggy.

Why only 1 hour? Swiss steak usually takes forever. And cutting beef into serving pieces… mine came out like cubes. Idk, maybe I’m doing it wrong but I was not impressed.

I don’t know about this recipe. It sounds kinda bland without seasoning.

  23. User avatar ArabianNights says:

    3 stars
Not sure why my meat was tough. Did I cook it too long? 🤔

  24. 4 stars
My grandma made Swiss steak way different! But I’ll give this a shot.

  25. User avatar melinda.mraz69 says:

Quick and easy! My kids loved it. Definitely gonna make it again. Yum! 4 stars!

  26. User avatar ronni.dach2005 says:

    2 stars
It seems way too simple for Swiss steak. I doubt it’ll be that good.

  27. User avatar The Allitnils says:

    3 stars
Why would anyone put Worcestershire sauce in a steak dish? That stuff is weird. I left it out and it was still okay, but not great.

    1. 4 stars
No way, sauce is saucy! My grandma used to say that it makes the beef juicier. Plus, it ain’t weird, just adds flavor. You should give it another shot!

    2. User avatar bobbie.dubuque62 says:

      5 stars
I actually love Worcestershire sauce in my steak dishes! It gives a depth of flavor that’s hard to beat. You might want to try it next time!

  28. 5 stars
I can’t believe how simple this was. Even my kids loved it!

  29. 2 stars
I tried it with venison round and it was tough 😅. I think my simmer wasn’t hot enough. The veggie base tastes great though—would work better for something more forgiving.

  30. 5 stars
Cooking is fun! I added mushrooms too. Yum! 10/10 for me.

    1. User avatar reinaldo.rosenbaum says:

      5 stars
Mushrooms sound like a great addition! I might try that next time too. Glad you enjoyed it! Keep having fun in the kitchen! 😊

  31. User avatar Moses Blick I says:

    4 stars
I’m not usually a “skillet steak” person, but this was easy. Dredging the beef with flour helped thicken the sauce. Next time I’ll slice the onion a bit thinner so it cooks faster.

    1. User avatar samara.wiegand51 says:

      5 stars
Totally agree—flouring the beef makes a big difference. I’ve done this before with round steak and it really helps the gravy cling. Good call on the onion thickness too.

  32. 2 stars
I don’t get why you brown it first then simmer an hour—feels like extra steps. Also, 1 hour seems long for 2 lb beef round steak unless it’s really tough. I might try 45 min next time.

  33. User avatar rickey.barton says:

    2 stars
I don’t get why people like this recipe. My steak was tough and greasy. Maybe I did something wrong? 🤔

  34. 2 stars
Why would you use green pepper? Red is way better. This recipe needs a redo.

    1. User avatar sammie.beier says:

      4 stars
I think green pepper adds a nice crunch and flavor, but I get it if you prefer red. Everyone has their taste!

  35. User avatar norberto.damore94 says:

    3 stars
I tried making this but forgot the Worcestershire sauce. It was kinda bland. Gotta give it another shot!

  36. User avatar candice.mohr31 says:

    3 stars
Easy to follow! Just a bit too much tomato for my taste. Next time, I’ll cut back.

  37. User avatar isela.hilpert1991 says:

    3 stars
Quick and easy, but I wish it had more spice options. Just felt kinda bland.

  38. User avatar cathy.hudson says:

    2 stars
I substituted chicken for beef cause I’m a vegetarian. It was okay.

  39. 3 stars
Pretty solid flavors, but mine turned out kinda bland until I added extra pepper and a pinch of sugar. Also, I had to cook longer than 1 hour for the beef round to get tender.

  40. 2 stars
Ugh, so much chopping! I need an easier recipe next time. 😩

  41. User avatar jake.haley65 says:

    5 stars
This recipe made the meat so tender! I could hardly believe it! 5 stars!

  42. User avatar mose.mohr1990 says:

I love Swiss steak but this recipe sucks. I don’t recommend it.

    1. User avatar zane.kuhic67 says:

      4 stars
I’m sorry you didn’t like it! Maybe try adjusting the spices or cooking time? It’s a classic for a reason!

  43. 2 stars
I followed the recipe, but the meat came out tough. Maybe I didn’t simmer long enough? 🤷‍♂️

  44. User avatar milton.keeling says:

    5 stars
Yum! I love it! My friends were impressed and it was super easy to make. I’m gonna make it again next week for sure.

  45. User avatar scotty.kovacek says:

  46. User avatar phillip.waters says:

Yummy! I added some mushrooms and it was fantastic!

  47. User avatar hyon.hettinger61 says:

    2 stars
I don’t know, it didn’t turn out like I expected. The beef was too tough.

    1. User avatar renee.spinka2021 says:

      3 stars
Hmm, seems like you might be doing it wrong. The recipe says simmer for an hour, that’s how you get it soft, right?

    2. User avatar Deep Thought says:

      4 stars
Sorry to hear that! Maybe try cooking it a bit longer next time? It could help the beef get more tender.

  48. User avatar wilford.flatley says:

    4 stars
This looks tasty! quick simmered my butt though 😂 but I’ll try it.

  49. User avatar israel.gerlach50 says:

    4 stars
It’s good but I added some chili powder for a kick. Really brought it up a notch!

    1. 5 stars
Chili powder? That sounds interesting! I’m definitely going to try that next time. 🌶️

  50. User avatar vincenzo.carter43 says:

    4 stars
I just threw in extra veggies and it worked great! Gonna make this again but with chicken.

  51. User avatar lashandra.funk says:

    5 stars
Never made steak before, but this was easy to follow! I was really proud of myself, haha. 5!

  52. User avatar Danielle Shields says:

    4 stars
Good flavor, but my beef stayed a little tough even after the full hour. I think my skillet runs hot? Next time I’ll simmer closer to 90 minutes or slice thinner.

  53. User avatar cristine.kassulke46 says:

    3 stars
Why is there tomato sauce AND diced tomatoes? Seems kinda redundant.

  54. User avatar I. Ron Stomach says:

    4 stars
Not bad! My family likes it. I did half the tomato sauce and used fire-roasted tomatoes because I had them. Whole thing tasted like comfort food.

    1. User avatar leo.bashirian1999 says:

      5 stars
Glad it worked for your family! Fire-roasted tomatoes are such a good swap—extra depth of flavor. Half the sauce sounds like it would make it a bit less saucy but still comforting.

    2. User avatar huey.grant48 says:

      4 stars
Comfort food is the best compliment 😄 I always struggle with Swiss steak going tough—did half the tomato sauce change the tenderness at all for you?

  55. 5 stars
So good! Even my picky eater boyfriend loved it! Will be making again!

    1. 5 stars
That’s awesome to hear! My kids are picky too, so I’m def gonna try this! Thanks for sharing!

    2. 3 stars
Sounds good but I don’t know… can it really please a picky eater? My boyfriend just eats pizza all the time.

  56. User avatar thanh.bergnaum2011 says:

    3 stars
Pretty good, but a bit too much oregano for my taste. Next time I’ll cut it down.

  57. 5 stars
Yum! Parsley makes everything better! 🌿

  58. User avatar nick.gutkowski says:

    3 stars
The cook time seems long! Is it really necessary to simmer for an hour? 🤔

  59. 4 stars
Swiss steak in a skillet is such a great idea. Browning the meat first made a difference. Next time I might slice the onion thinner so it gets even softer by the time the simmer starts.

    1. 5 stars
Yes! Browning the round steak is the key—once it’s got that color, the whole skillet flavor pops. I also like doing thinner onion slices, they melt into the sauce nicely.

    2. 4 stars
Great tip on the onion thickness. I’ve been guilty of cutting them thick and wondering why the onions don’t disappear by the time it’s done. Next batch I’ll go thinner.

  60. User avatar elisha.torp1964 says:

    1 star
Um, can you use chicken instead of beef? Asking for a friend. 😂

  61. User avatar Kris Muller says:

    2 stars
This is just another meat stew, nothing special. 😒

    1. User avatar Blue Dartwing says:

      5 stars
I disagree! This recipe looks hearty and packed with flavor. Perfect comfort food for chilly evenings! 🍽️

  62. User avatar marcene.turner says:

    3 stars
I think you might need more spices to make it pop. It was just ok.

  63. User avatar jonell.pfeffer says:

    2 stars
Kinda skeptical about the Worcestershire sauce. What’s that, anyway? Lol.

  64. User avatar Flame Atronach says:

    5 stars
This steak was super easy to make! My family devoured it. Will make again!

    1. 3 stars
Looks easy, but are you sure it was that great? My steak always comes out tough. What’s your secret?

    2. User avatar Clyde Dare says:

      5 stars
Glad to hear it! This is actually a favorite in my house too. What sides did you serve with it?

  65. User avatar Hotblack Desiato's bodyguard says:

Great recipe! I served it with mashed potatoes, and my family loved it. Thanks for sharing!

  66. User avatar ignacia.grant says:

The instructions were all over the place, kind of confusing. Only gave it 3 stars.

  67. User avatar jame.ledner says:

Made this tonight—so comforting. The browning step really helps, and the sauce tastes like it simmered way longer than an hour. I used regular diced tomatoes and it still came out great.

  68. User avatar loyce.white87 says:

    2 stars
Meat was still kinda chewy at the hour mark, shoulda cooked it longer!

  69. User avatar tiny.mertz1970 says:

    5 stars
Five stars for how straightforward it is. 1 hour simmer is the sweet spot. Don’t skip browning—the smell alone convinced me.

  70. User avatar jacquelynn.corkery2014 says:

    5 stars
Made this for dinner and it turned out really tender—love the flavors from the Worcestershire + thyme. I did add a splash more water when it started to get a bit thick, but otherwise followed it.

    1. 4 stars
I’m glad it worked for you. I tried something similar before and it got too thick for me too, so I usually keep extra water/broth nearby. Did you notice if it helped the flavor or just texture?

    2. User avatar greta.hamill says:

      5 stars
Yes! The Worcestershire + thyme combo is *chef’s kiss*. I made this last week and mine was just as tender—great call on adding a little water if it thickens up.

  71. User avatar peggy.kassulke61 says:

    5 stars
Made this tonight and wow—tender beef in just an hour simmer. The Worcestershire really gives it depth. I added a splash of beef broth since my sauce looked a little thick, but otherwise followed it.

  72. User avatar oPandariaNo says:

    2 stars
Not really my thing. I think Swiss steak should be grilled, not simmered. Disappointed.

  73. 5 stars
This was amazing! The beef was so tender, and the flavors were on point. Definitely a keeper!

    1. User avatar emmett.heidenreich74 says:

      5 stars
I’m glad you loved it! I made this last week, and it was a hit at my family dinner too! 👍

    2. User avatar romona.hermiston1962 says:

      3 stars
Really? I tried it and it turned out too chewy for me. Maybe I cooked it too long? 🤔

  74. User avatar Dominic Vernius says:

    2 stars
Took forever to cook. I thought it was supposed to be quick-simmered! Needs a new name.

  75. 2 stars
I don’t know what the big deal is. My beef was tough as nails. 2/5.

    1. User avatar kandra.hettinger says:

      3 stars
Maybe you didn’t cook it long enough? This recipe usually turns out great for me. 🤷‍♂️

  76. User avatar cyrus.rowe57 says:

    1 star
Too much tomato for my taste. Not a fan. 😒

  77. 4 stars
I was skeptical about 1 hour only, since beef round can be tough, but it actually worked. I cut the steak smaller and browned it well. Would cook again, especially with crusty bread.

  78. User avatar Eccentrica Gallumbits says:

    2 stars
1 hour? With round steak? That seems optimistic. I tried it and the meat was still chewy, so I had to keep cooking way longer. Maybe my pan wasn’t hot enough, but the recipe didn’t save me.

    1. 4 stars
I agree—round steak often needs more than an hour. If it wasn’t tender, you probably needed a lower simmer or longer braise. Did you cover it the whole time?

  79. User avatar Arthur Dent says:

    3 stars
I followed it and it was okay… kinda watery? Maybe my diced tomatoes were extra juicy. The flavor was still alright though. Also my bell pepper stayed a little crunchy after simmering, not a dealbreaker.

  80. User avatar geoWizard says:

    5 stars
This was delish! My family loved it, will make again!

  81. User avatar Su Shenlong says:

    5 stars
This is seriously comforting. The Worcestershire with the diced tomatoes makes it taste way richer than I expected for a “quick-simmered” skillet meal. Mine needed closer to 1 hr 15 mins for the steak to get truly tender, but it was worth it.

  82. User avatar Alfonso Moen says:

    3 stars
Why the flour? It made the sauce a little too pasty for me. I’d rather use cornstarch slurry at the end. Also, cutting the beef into tiny pieces matters a lot.

  83. User avatar antony.willms52 says:

    4 stars
I followed it exactly, but I somehow forgot the worcestershire… and it still tasted okay?? 😂 Will make again with it for sure. Also, the flour dredge makes a nice coating.

  84. 3 stars
Not bad, but too many herbs for me. The basil/oregano combo overpowered the beef a bit. Next time I’ll cut those down and maybe add a bay leaf instead.
