Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ginger ground
  • 1/4 tsp nutmeg ground
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 eggs large,
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin
  • 1/4 cup milk

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  • In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract and canned pumpkin.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Line a muffin tin with cupcake liners. Fill each liner about 3/4 full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool completely before frosting.
  • Frost with cream cheese frosting and enjoy!

    350°F is kinda low? I baked mine at 375 like my usual cupcakes and they came out more golden and less pale. Maybe your oven runs cool? 😅

      Yes, baking powder can definitely expire! If it’s been sitting in your pantry for a while, it might not work as well. You can test it by adding a bit to warm water and see if it bubbles. If it doesn’t, it’s time to toss it!
