Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 zucchini sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 can diced tomatoes 14 ounces
  • 1 cup green lentils rinsed
  • 2 cups vegetable broth
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the carrots, zucchinis, and bell peppers to the pot. Cook for another 5 minutes, until the vegetables start to soften.
  • Stir in the diced tomatoes, lentils, vegetable broth, and dried herbs. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 1 hour, or until the lentils are tender.

    Followed the steps exactly. Came out tasty, but mine was a bit watery after simmering. Next time I’ll simmer uncovered or use less broth. Otherwise solid!
