Pork and Zucchini Fritters

March 25, 2024

Pork and Zucchini Fritters bring together tender meat and fresh veggies in a crispy, golden package that’s perfect for any meal of the day. Whether you’re looking for a quick lunch, an easy dinner, or a crowd-pleasing appetizer, these savory fritters hit all the right notes, satisfying, flavorful, and just a little indulgent.

The magic of fritters lies in their versatility, and this combo of pork and zucchini is a delicious way to turn everyday ingredients into something crave-worthy. Ground pork adds richness and depth, while shredded zucchini brings moisture and a touch of sweetness that balances out the meat. With a few pantry staples like eggs, flour, and seasoning, you can create a batter that fries up beautifully crispy on the outside while staying tender and juicy inside.

Zucchini is a smart addition not only for its flavor but also for its ability to keep fritters moist. Be sure to salt and drain it well before mixing – this step helps remove excess water and prevents sogginess. When combined with savory pork, herbs like parsley or dill, and perhaps a dash of garlic or chili flakes, the result is a well-rounded flavor profile that feels both comforting and fresh.

These fritters shine with a dipping sauce on the side. A garlicky yogurt dip, spicy mayo, or even a squeeze of lemon can elevate the dish even further. And they’re great for meal prep,  cook a batch, let them cool, and store them in the fridge or freezer for a quick reheat whenever hunger strikes.

Pork and zucchini fritters are also a creative way to use up leftover vegetables or stretch a pound of meat to feed a family. You can shape them into small rounds for party platters or go bigger for a hearty sandwich filler. However you serve them, they’re bound to disappear fast.

Not gonna lie, I didn’t have all the ingredients. Used chicken instead of pork. Still good!

Not sure what went wrong, but mine fell apart while frying. Maybe my zucchini had too much water? I’m not sure I will try it again.

Pork fritters? Yes please! I always trust the recipes with parmesan, they can’t go wrong. Yum!

Eh, not my favorite. The texture was off and I think there was too much zucchini. I’ll stick to plain pork.

2 zucchini? For 500g of pork?? That’s too much veggies if you ask me. 🤔

This is just like my grandma used to make, except she cooked them in lard instead of olive oil. Nostalgia!

Not sure about the zucchini… it makes them too soggy for my taste. Maybe just stick to meat?

I totally disagree! The zucchini adds a nice moisture and flavor. Just don’t overcook them!

I followed the recipe but they turned out dry. Maybe less bread crumbs next time?

Dry? That’s weird. I made them last week and they were juicy for me. Maybe your pan was too hot or something?

I had the same issue! I think cutting down the breadcrumbs does help, or maybe try adding a bit more zucchini for moisture? Just a thought!

Honestly, I agree. Zucchini can be too much sometimes. Maybe less zucchini, more pork? 🤔

    2. 4 stars
I think zucchini is great! It’s all about how you season it. My kids loved it when I added some cheese. Maybe you could try that next time?

Good idea, but my mixture was a little wet since I didn’t squeeze the zucchini enough. Next time I’ll wring it out tighter. Still tasted great though.

I don’t like zucchini much, but these fritters changed my mind! Who knew they could be so good?
