When you need a breakfast that’s hearty, satisfying, and packed with flavor, the Pork and Mushroom Breakfast Skillet is the perfect choice. This one-pan dish combines tender pork, earthy mushrooms, and perfectly cooked eggs, creating a savory meal that will keep you energized all morning long.
The base of this skillet starts with succulent pork – whether it’s sausage, ground pork, or leftover roast, the meat adds a rich, savory flavor that anchors the dish. As the pork cooks, it releases its juices, creating a flavorful base for the mushrooms to absorb. The mushrooms, cooked until golden and tender, add an earthy depth to the dish, complementing the pork beautifully. A touch of garlic and onions enhances the flavors even further, infusing the entire skillet with a savory aroma.
What makes this dish truly special is the addition of eggs. Once the pork and mushrooms are cooked, eggs are cracked right into the skillet, allowing them to cook to your preferred level of doneness. The creamy yolks add a richness that balances out the savory pork and mushrooms, making each bite indulgent and satisfying.
You can customize this skillet with your favorite vegetables – bell peppers, spinach, or even tomatoes – for added color and nutrition. A sprinkle of cheese, like cheddar or feta, can be added just before serving, adding an extra layer of flavor and creaminess.
Pork and Mushroom Breakfast Skillet is not only delicious but also a great way to get a protein-packed meal first thing in the morning. It’s perfect for a weekend brunch or as a filling breakfast to start your day on the right note. Whether you enjoy it with toast, a side of avocado, or on its own, this skillet is sure to become a favorite in your breakfast rotation.

This skillet is such a perfect lazy breakfast. The mushrooms + thyme combo smells amazing, and the egg wells are honestly genius. I’ll be making this again for sure!
I tried something like this, but my eggs kinda ran out of the “wells” lol. Still tasted good though. Any tips for keeping them contained?
Yesss—lazy but still feels fancy. I love how the thyme really brings it together, and those egg wells are such a smart idea. Definitely making this again soon!
Eggs cooked to perfection. 10/10 would eat it every day.
Good, but I think I might combine it with some toast next time. More filling that way.
Simple and tasty, my husband enjoyed it! But why the thyme? I think it’s not necessary.
Made it today and it turned out great. Mushrooms + pork is such an underrated combo. Next time I’ll chop the onion a bit smaller so it softens faster.
I followed the recipe but forgot the thyme. It was still good, but I think it needs more seasoning.
Wow. Super simple and filling—5 stars. I used dried parsley because I didn’t have fresh and it was fine.
I’m not a cook but this seemed easy enough. Gonna try it! Wish me luck!
This was delicious! My family loved it, especially the eggs!
So glad to hear that! The eggs really do make it special. What did your family think of the mushrooms?
Why are we putting eggs in a skillet? Can’t we just scramble them? 😤
Super easy and quick to make! The eggs made it so creamy. Will definitely make again! 🤤
This is like breakfast for champs! Will make again for sure.
Love this! My kids eat it all, even the mushrooms! 😁
Quick question. Do I have to cover the skillet? What if I leave it open?
This breakfast skillet is super tasty! The combination of pork and eggs is perfect.👍
I’m skeptical about using only dried thyme with pork and mushrooms—feels like it could taste flat. But I guess the salt/pepper helps. Anyone try fresh thyme?
So many steps for breakfast! I like quick meals. Maybe I’ll try this on a weekend.
Yum! Made this for brunch with friends, was a hit! 👌
Pork and mushrooms? Idk, not for me. Not a fan of this combo.
I totally get that! Pork and mushrooms can be a weird combo for some. Maybe try it without the mushrooms?
This is a must-try! Pork and mushrooms are delicious together. You should give it a chance, you might be surprised!
I tried this but it didn’t taste like I thought it would. Maybe too much pork?
Why are there eggs in this? Are they really necessary? Just seems weird. 🤨
I. DON’T. LIKE. MUSHROOMS. No offense, but this just isn’t for me.
This breakfast skillet is a game changer! My family loved it and I can’t wait to make it again!
Why do you even put pork in breakfast? Seems weird… I’m skeptical.
Honestly, I didn’t have mushrooms, so I used bell peppers and it turned out fine, lol.
I tried it exactly as written and my eggs came out super runny—like not cooked at all. Maybe my skillet was too hot or I didn’t cover it tight enough. Kinda annoying.
I substituted turkey for the pork and it was still super delicious! Healthy swap!
I dunno, I thought it would be more flavorful. It was kinda bland.
I added a pinch of chili flakes because I can’t help myself, and it turned out really tasty. The mushrooms + garlic smell alone was worth it.
I followed it pretty closely but my mushrooms released a ton of water and the pork got soggy. I should’ve cooked them longer uncovered I guess. Flavor was okay.
Maybe don’t cover it so fast. But also I’ve found my pork gets soggy if the heat is too low—try medium-high and let the skillet get nice and hot first. Also mushrooms be like sponge lol.
Ugh, that sounds frustrating—yeah mushrooms can dump a ton of water. Next time I’d definitely cook them a bit longer uncovered (or crank the heat) until the liquid cooks off before adding the pork back. Glad the flavor was still okay!
Delicious! I added some cheese on top, OMG! So good!
I don’t eat pork but I used turkey instead, and it turned out great!
This is too complicated for a morning dish. I just want scrambled eggs and toast!
Why go through all that trouble? Scrambled eggs are way easier. This recipe seems fancy for breakfast.
I get it, mornings can be busy! But this dish is worth it if you have a little extra time. So yummy!
It was okay, but I think I like my eggs scrambled. I tried this recipe and found it too greasy.
Eggs are the best part!! The recipe is good but like, who even eats mushrooms? Weird.
Made this and added some cheese on top. It’s a game changer!
Not bad, but I think 1/2 tsp salt might be a little much depending on the pork. Also, I used dried thyme and it felt kinda flat until I added more pepper.
Yeah I get what you mean—ground pork can vary a lot. If it’s already pretty salty, 1/2 tsp might tip it over. I’ve had better luck tasting after the pork browns and adjusting then. And dried thyme can be underwhelming unless you use a bit more or bloom it with the onions/garlic.
Super easy and quick! Perfect for a busy morning. I will make it again!
This sounds amazing! Can’t wait to try it for breakfast. Thanks for sharing!
It was ok, but I felt like it needed something. Maybe some cheese or hot sauce next time?
I can’t cook to save my life, but this was simple enough that I nailed it! Thanks for the confidence boost!
This is a game changer for breakfast! So tasty and filling. My family loved it!
I made this and my kids liked it, but what do you do if someone doesn’t like onions? 😅
Yum! A 5-star breakfast for sure!
This is the best breakfast ever! So tasty and easy to make. 5 stars!
Why not use bacon instead of pork? Everyone loves bacon! 😂
I don’t like pork so i used turkey instead. Came out pretty good, just a bit dry, I guess?
Turkey instead of pork? That’s interesting! I guess it could work, but I wonder if the seasoning was enough to keep it moist. Maybe try adding a bit of broth next time?
I followed this recipe, but my eggs turned out all smushy. Maybe I cooked them too long? 🤔
Kinda weird how it says 2 green onions but then also “parsley chopped, fresh” at the end. Still, it looks good—might be my new breakfast thing.
Yeah, I get what you mean—those greens are just garnish. The “2 green onions” is for slicing on top, and the “parsley chopped, fresh” is an extra finishing touch. Kinda like a combo situation.
Didn’t have thyme so I used basil, still good I guess. But not great!
This is such a solid breakfast skillet—savory, filling, and the egg wells are a great idea. Mine took the full 7 minutes for the yolks to set, but it was perfect.
It’s good but why no cheese? Everything is better with cheese! 🧀
Never thought of using pork for breakfast! Game changer! 🥳
Absolutely! Pork makes everything better. Tried it yesterday, and it was delish! 😋
This sounds like the perfect lazy-morning skillet—savory, filling, and the eggs make it feel special. I might add a little splash of soy sauce, but I love the simplicity.
I’m not sure about putting eggs right on top like that—mine stuck to the pan a little even with a good skillet. Still ate it all, but next time I’ll try adding a splash of water or lowering the heat.
Eggs + pork + mushrooms… honestly, sounds like breakfast from a diner I wish existed near me.
Ehhh, not my thing. Maybe I’m just not a pork person. 😕
Great recipe! I added some hot sauce on top and it was lit! 🔥
Yum. easy.
I didn’t have mushrooms, so I used spinach instead. Still yum!
Ground pork for breakfast is a weird choice. Could’ve done turkey or sausage and called it a day. Not bad, just not my vibe.
I get what you mean about the turkey/sausage option, but ground pork + mushrooms is actually a great combo. It’s savory without being too heavy for breakfast.
weird? maybe lol. but i tried somethin like this and it came out pretty good. next time i’ll throw in a lil hot sauce. 😅
