Mushroom Tacos are a delicious and hearty vegetarian alternative to traditional meat tacos, offering rich, umami flavors and satisfying textures. The earthy taste of mushrooms pairs perfectly with the classic taco toppings, making them an ideal choice for a quick, flavorful, and meatless meal. Whether you’re vegetarian, looking to try something new, or just craving a light yet filling dinner, these tacos are sure to impress.
The star of Mushroom Tacos is, of course, the mushrooms. Portobello, cremini, or shiitake mushrooms work beautifully in this dish due to their meaty texture and deep, savory flavor. When sautéed with onions, garlic, and a blend of spices such as cumin, chili powder, and smoked paprika, the mushrooms become tender and richly flavorful, mimicking the savory depth of meat.
Once the mushrooms are cooked, they’re ready to be piled into soft tortillas, where they can be topped with your favorite ingredients. Fresh lettuce, diced tomatoes, and sliced avocado add a cool, crisp contrast to the savory mushrooms. A sprinkle of cheese (optional for vegans) and a drizzle of sour cream or a tangy salsa bring creaminess and a bit of zest to every bite. For an extra kick, try adding some pickled jalapeños or a squeeze of lime juice.
Mushroom Tacos are incredibly versatile. You can experiment with different toppings, such as cilantro, shredded cabbage, or crumbled feta, to suit your preferences. You can even add a side of rice, beans, or roasted vegetables to round out the meal. These tacos are quick to prepare, making them perfect for a busy weeknight or a fun taco night with friends and family.
Whether you’re a long-time vegetarian or simply looking to switch up your taco game, Mushroom Tacos offer a flavorful, satisfying alternative that everyone can enjoy. With their rich flavors and satisfying textures, they’re sure to become a favorite in your taco rotation.

I didn’t have cilantro, so I used parsley instead. Still good!
Glad to hear it turned out good! Parsley can be a nice substitute sometimes. 🌿
1 cup onions and 1 cup bell peppers feels like a lot—my mix turned a bit watery. I should’ve cooked longer to evaporate. Still tasty though.
Had to substitute some ingredients. Only had button mushrooms and used spinach too. Still turned out great! 4 stars.
It took me longer than 7 minutes to cook! But it was worth the wait. 😅
Honestly it was kinda bland for me. Like, I followed it exactly and it needed more salt and lime. Also my taco shells got soft too fast.
Totally get that—mine definitely needed extra lime too. I always add more salt right at the end and it wakes up the mushrooms a lot. Sorry about the shells though 😅
idk i think its fine. maybe you cooked the mushrooms too long? also lime juice is kinda optional, salt already in there. soft shells are just from the steam, next time toast them again after filling.
I don’t like mushrooms 🤢 but my sister made these and LOVED them! Guess they’re good if you like fungi. 4 stars.
Absolutely delicious! This recipe is a game changer for taco night. 🌮❤️
So many veggies! I like it but a lil’ too healthy for my taste.
I don’t know, mushrooms are kinda weird… but these were actually good!
These tacos were absolutely delish! I added some avocado for extra creaminess.
Followed the recipe exactly and it was fine. I don’t know… maybe I’m missing something. Also cilantro isn’t my thing, so I skipped it.
I accidentally used lime juice from a bottle… still kinda okay. I’d do fresh next time though. Texture and seasoning were solid.
These were so good! I can’t believe how delicious they turned out! Will make again!
I tried these too and they are amazing! So flavorful! 🥳
These were seriously so good—earthy mushrooms with bright lime is a perfect combo. I added a little chili powder too and it kicked it up.
Made these tonight—so flavorful. The cumin + paprika combo is legit, and the mushrooms got that perfect tender bite. I added a tiny bit of chili powder too and it was even better.
Honestly, I was skeptical about mushroom tacos, but these were surprisingly good! I might try adding some cheese next time.
Best taco recipe yet lol. Easy to follow, my kids loved it. Even the picky eater!
I made these last night and they were ok, but I feel like it needs more flavor, maybe add some hot sauce next time. 3/5.
Easy to follow and the veggies cook down into this great filling. I used regular taco shells and warmed them just a bit too long, but taste was still excellent.
Yes! The veggies really do cook down into that cozy, filling taco situation. I love that you still got great flavor even with the shells over-warmed—mine usually get sad if I blink 😅
I tried something similar but I think I used too much lime, like it tasted kinda sour to me. Also I didn’t dice my peppers small enough, so some bites were crunchy. Still, mushrooms were good!
Tacos were fine but I feel like they needed more flavor. Maybe add more spice next time.
I followed the steps exactly and the flavor was kinda flat. Also my taco shells tore when I tried filling them, so that was annoying.
I don’t know, man. Seemed a bit bland to me. Maybe more spices would help?
My kids loved it! Who knew they would eat mushrooms?!
That’s awesome! It’s always a win when kids eat their veggies. 😄
Yum!
I had to try it because I’m a vegetarian and these were great! Yummy!
Yum! Super easy to make and they turned out delicious. Will be making these again soon!
Amazing! I added some avocados and hot sauce, tasted great! Yum!
Good quick weeknight meal. The veggies cooked down nicely, but mine needed closer to 8-10 minutes for full softness. Still a keeper.
Delicious and nutritious! I added avocado too, highly recommend! 5 stars for sure.
Mushrooms? Yuck! I don’t think I will try these. Not for me.
Taco shells broke apart as soon as I filled them, so unimpressed!
I had the same issue! The taco shells were super fragile. Next time, I might just use tortillas instead.
I made these but used different vegetables. Not sure if they turned out as good as the original.🤔
5-7 minutes for mushrooms felt short for me—mine were still watery. I cooked longer and it worked better.
Whaaat? Who eats mushrooms in tacos. Gross! 1 star
Mushrooms? Eww! I don’t get how people eat those, you should try meat instead!!!
meh—pretty average. Not gonna lie, I expected more “wow” from the seasoning.
The ingredient list is straightforward, but I think you need a sauce—like salsa or crema. Without it, it’s a bit dry.
Not bad, but mine came out a little bland even with the salt. I think I needed more lime or maybe some chili powder. Still ate them all though 😅
Totally hear you—mushrooms can be surprisingly mild. I usually bump the lime juice to like 1.5 Tbsp and add a pinch of chili powder (or even cayenne) at the end for a little pop.
Bland?! Mine is always good but I don’t measure—maybe I just use more salt and cumin. Also, did you sauté long enough? If they’re not browning, it’ll taste kinda meh. 😅
Not gonna lie, I expected more flavor. It was okay, but it kinda tasted like “spiced sautéed vegetables” without much zing. More lime or chili would help.
I followed the recipe but my tacos fell apart. 😩 How do I keep them from breaking?
