Ingredients
  

  • 8 Tortillas corn or flour
  • 2 cups Pineapple diced
  • 1 cup diced tomatoes
  • 1/2 cup red onion diced
  • 1/4 cup cilantro chopped
  • 1 jalapeño seeded and diced
  • 2 avocados
  • 1/4 cup red onion diced
  • 2 tbsp lime juice
  • salt to taste

Instructions
 

  • In a medium bowl, combine diced pineapple, tomatoes, red onion, cilantro, and jalapeno. Mix well and set aside.
  • In another bowl, mash avocados with a fork. Stir in diced red onion, lime juice, and salt.
  • Warm tortillas in a dry skillet or over a flame until pliable.
  • Spread a spoonful of guacamole onto each tortilla, then top with pineapple salsa.
  • Fold tortillas in half and serve immediately.
