Mozzarella Arancini

September 18, 2025

Golden, crispy, and irresistibly cheesy, mozzarella arancini are a bite-sized Italian treasure that embody comfort and indulgence in every mouthful. Originating from Sicily, these delightful rice balls have long been a staple of Italian street food and family gatherings, offering both texture and flavor that feel like a warm embrace. At their heart lies creamy mozzarella, which melts into a gooey center once the arancini are fried, creating that signature cheese pull that makes them impossible to resist.

The base of arancini is risotto, traditionally made with Arborio rice, which is known for its starchy nature and ability to achieve that luscious, creamy consistency. When cooled, risotto becomes pliable and easy to shape, making it the perfect vessel for enclosing small cubes of mozzarella. The contrast between the firm outer shell and the tender, molten middle is what transforms these rice balls from simple to extraordinary.

Every bite of mozzarella arancini is a layered experience. First comes the crunch of the golden breadcrumb crust, followed by the rich, savory rice flavored with herbs, Parmesan, or even a touch of saffron. Then, at the very center, the mozzarella reveals itself, stretching and melting with every bite. This interplay of textures and flavors is what makes arancini more than just a snack; they’re an event on their own.

Beyond their irresistible taste, mozzarella arancini are incredibly versatile. They can be served as an appetizer, paired with a simple marinara dipping sauce, or arranged on a platter for gatherings and parties. They are equally at home in casual family dinners as they are in elegant spreads, offering a nostalgic nod to Italian tradition while fitting seamlessly into modern menus.

What makes arancini even more special is their cultural story. In Sicily, they are often enjoyed during festivals and celebrations, symbolizing both abundance and community. Each golden ball carries with it centuries of culinary history, representing the ingenuity of making the most of leftover risotto and transforming it into something exceptional.

Whether enjoyed fresh out of the fryer or as part of a shared meal with friends, mozzarella arancini are a reminder that some of the best food experiences come in small, perfectly crafted bites. They’re proof that comfort, tradition, and indulgence can all live in a single dish.

Totally agree! They’re a hit at my gatherings too. 🥳

  4. 1 star
Lol, I burned my first batch. Frying is harder than it looks!

    1. 5 stars
Don’t worry, it happens to the best of us! Just take your time and don’t rush it next time. 😊

    2. User avatar natisha.williamson25 says:

Burnt? I thought that was supposed to be crispy! Maybe you just need a better timer, lol.

  5. 3 stars
Um, I don’t know. Isn’t frying a bit unhealthy? Maybe bake them instead?

    1. User avatar rogelio.rowe59 says:

      4 stars
Frying can be unhealthy but it makes the arancini crispy and delicious! You could try baking, but it won’t be the same, trust me!

  6. 4 stars
I can’t find risotto rice, can I use regular rice? Does that work? 🤔

  7. User avatar terminatorXYZ says:

    2 stars
Um, isn’t it just fried rice? What’s so special about that? 🤔

    1. User avatar Random Dent says:

      5 stars
It’s way more than just fried rice! The gooey mozzarella inside and the crispy coat is totally different. Give it a try! 😋

Absolutely loved this recipe! The mozzarella in the middle was such a gooey surprise.

Mozerella Arancine? Sounds kinda fancy! Can I use any rice? I only have basmati.

Waste of time! I tried it and they fell apart in the oil! 😡

    1. User avatar Romani and Cremia says:

Sounds like you didn’t make them right! I always have great results with this recipe. 🤷‍♂️

    2. User avatar ruthann.tremblay32 says:

      4 stars
I’m sorry to hear that! It can be tricky sometimes. Did you maybe use too much oil or keep them in too long? 🙁

  11. User avatar ahmed.lind18 says:

    5 stars
My first batch came out pale because I didn’t heat the oil enough. Once I got the temp right, wow—crunch city. Follow the 180°C and don’t crowd them!

    1. 5 stars
Yes! The oil temp is everything. I also learned the hard way—when it’s not hot enough they soak up oil and get soggy. Crunch city is real 🔥

    2. User avatar terminatorXYZ says:

      2 stars
180°C?? I just kinda fry till it looks brown lol. Mine stayed pale too but I thought it was the mozzarella. Maybe I didn’t wait for the oil temp— oops.

  12. 3 stars
It was good, but mine turned out a bit too oily. Did I do something wrong?

  13. 5 stars
Super easy to make. My kids loved them! Will make again for sure.

  14. 5 stars
These look dangerously good 😅 The mozzarella center is exactly what I want—crispy outside, melty inside. I might add a tiny pinch of garlic powder just for extra flavor.

    1. User avatar tiffanie.walker96 says:

      5 stars
Right?! That crispy outside + melty mozzarella center combo is exactly it 😄 The garlic powder idea sounds like a great tweak—just a tiny pinch so it doesn’t overpower the cheese.

  15. 1 star
I cant believe people spend so much time on these. Just buy them from the store! Better taste.

    4 stars
So delish! Made it with some extra spices, turned out great.

    1. 3 stars
But like, how did you make them extra spicy? I thought the mozzarella would just make it creamy?

    2. User avatar johnie.wiegand55 says:

      5 stars
That’s awesome! Extra spices sound like a fun twist. I’ll have to try that next time!

  19. User avatar brett.cassin98 says:

    I don’t know… I’m not a fan of frying stuff. Too greasy!

  20. User avatar robena.doyle50 says:

    2 stars
180°C in a pan is scary lol—also “500 ml oil” depends on your pot size. Still, could work if you’ve got the patience. Recipe is decent but I’d like more details for beginners.

  21. 2 stars
Okay, but like… are these really worth the effort? I just want to order takeout.

    1. User avatar bruna.marks40 says:

      5 stars
Totally worth it! These are way better than takeout. You’ve gotta try making them! 🙌

  22. User avatar courtney.moore69 says:

    5 stars
These are the best! Crispy on the outside and cheesy on the inside. Definitely a winner at my parties.

    1. 3 stars
They look good but isn’t frying unhealthy? I prefer baked versions.

    2. User avatar marcellus.quigley75 says:

      5 stars
I made these for my friends and they loved them too! Thanks for the great recipe!

  23. User avatar jeanmarie.bartoletti20 says:

Mmm, cheesy goodness! My kids loved them. Lots of cheese in every bite, and they’re fun to make!

  24. User avatar Hotblack Desiato says:

    5 stars
Made these last night—so crispy outside, melty cheese inside. The cooling step really helped the balls hold together.

  25. 5 stars
OMG these are the best!!! 🧀 I added some garlic powder and they were fab! Can’t wait to make again!

  26. User avatar gilbert.kihn says:

    1 star
I just put too much oil in the fryer and make smoke. My house smell like fried food now.

  27. User avatar easter.johns says:

    5 stars
OMG this is like Italian street food at home 😍. The egg + breadcrumbs combo is clutch. I served with marinara and everyone went back for seconds.

  28. User avatar maryetta.schamberger85 says:

    5 stars
These are just like the ones I had in Italy! Authentic taste for sure.

  29. User avatar shayna.upton33 says:

    4 stars
I used leftover risotto and it worked perfectly! Will make again.

  30. User avatar burl.heller1968 says:

    2 stars
Okay but why egg *and* breadcrumbs? Wouldn’t just breadcrumbs work? Mine turned out kind of bready instead of crispy.

  31. User avatar sheryl.reynolds says:

    5 stars
I can’t believe how easy this was! Perfect for my party. Thank you!

    1. User avatar liberal.hero says:

I’m so glad you found it easy! It really is a crowd-pleaser. Did you add any dipping sauce?

  32. User avatar jc.smitham81 says:

    3 stars
Isn’t arancini supposed to have meat? Seems weird without it.

  33. User avatar Margot Fenring says:

    4 stars
Delicious, but I think there is too much cheese. Not everyone loves mozzarella like I do. 😅

  34. User avatar Mr. Robbi Swift says:

    4 stars
4-5 minutes is a lie for my fryer lol. I had to do closer to 7 minutes. But they were still tasty.

    1. User avatar clement.turner1985 says:

      4 stars
Huh, I followed it and mine were done in like 4 minutes. Maybe your fryer runs cold? Still… the flavor was great. 😅

    2. User avatar rickiestmorty says:

      5 stars
Totally agree—mine took longer too. 4-5 min sounds optimistic unless your oil is spot-on hot the whole time.

  35. User avatar bernardo.brakus48 says:

    2 stars
Eh, they were fine. Nothing special really. Just rice balls with cheese.

  36. User avatar Falmer Spellsword says:

    3 stars
Not bad, but 200g risotto rice with only a dash of salt feels underseasoned. I had to salt more and add pepper like crazy to make it pop.

  37. User avatar kristy.effertz85 says:

    3 stars
Mine turned out kinda bland until I added extra salt and pepper at the end. Maybe I under-seasoned the rice. Would recommend tasting as you go.

  38. User avatar sol.bechtelar says:

    4 stars
Delish! I added some herbs for extra flavor. 🌿

  39. User avatar mel.buckridge2007 says:

    5 stars
Yummmm. Just made it. Best snack ever. 10/10 will make again.

  40. User avatar teddy.fritsch says:

    5 stars
These turned out dangerously good—crispy shell and gooey mozzarella in the middle. I used Carnaroli and it held together way better. Will make again for sure!

    1. 5 stars
Ahh yes! “Crispy shell + melty middle” is exactly what arancini are about 😍 I also find Carnaroli helps a lot with holding shape—great call.

    2. 4 stars
I tried this once but my cheese leaked out. Maybe I overcooked the rice? Yours sounds like the perfect texture though—do you let the balls cool before frying?

  41. User avatar sonja.rath24 says:

    3 stars
I didn’t have Arborio so I used regular risotto rice… didn’t get the same texture. Flavor was decent but less cohesive.

  42. User avatar brigida.dickens53 says:

    5 stars
Tried this last night. My kids loved it! Definitely a winner! 😍

  43. 2 stars
I don’t know what went wrong, but mine turned out soggy. I followed the recipe!

    5 stars
This looks amazing! Can’t wait to try it this weekend.

      5 stars
Thank you! You’re gonna love how cheesy they are! 😍

  45. User avatar Frost Atronach says:

    2 stars
The cooking time seemed off. They burnt before they got golden brown. Sad.

  46. User avatar Mrs. Lucien Johnston says:

    4 stars
Not gonna lie, 4-5 minutes feels a little short for me, but I get the goal is golden brown not dried out. I’ll probably keep an eye on them and do smaller batches so they don’t cool the oil too much.

  47. User avatar arthur.jacobi37 says:

    1 star
Sounds complicated. Why do we need so many steps for something that’s just rice and cheese? 🤔

  48. User avatar sherice.stamm says:

    2 stars
I don’t get why people fry these—seems like a lot of work for rice and cheese. Also 500 ml oil sounds small; I had to add more to keep everything submerged.

  49. User avatar mckenzie.conroy says:

    4 stars
    Easy and tasty!

  50. User avatar sunday.feil says:

    5 stars
These were dangerously good. The mozzarella stayed melty and the outside actually got crunchy like I hoped. Next time I’ll salt the breadcrumbs too for extra punch.

  51. User avatar Genghis Khan says:

    4 stars
I followed it but my risotto rice seemed more chewy than al dente. Still tasted good, just not as crisp. Maybe my package directions differ.

  52. 5 stars
So good! I added some herbs and garlic to the rice for extra flavor. Highly recommend!!

    1. User avatar hosea.stark99 says:

      5 stars
I tried that too! The herbs really make a difference, yum! 🌿

  53. 4 stars
Honestly, this is the kind of snack I’d bring to a party and pretend I didn’t make them. Great texture contrast!

  54. User avatar noble.sawayn says:

    5 stars
Loved this! Perfect with marinara sauce for dipping. Yum! 🍅

  55. User avatar Galaxia Woonbeam says:

    4 stars
I love anything fried, so… yes. The parmesan in the mix should give that salty bite. Also parchment paper for draining works better than paper towels sometimes.

  56. User avatar abel.mante53 says:

    3 stars
I tried this recipe but it was a bit tricky. My balls fell apart while frying. Any tips?

  57. User avatar Piter De Vries says:

    2 stars
I don’t get the point of cooling the rice. I skipped that step and now the balls were falling apart. Also 180°C felt too hot in my pan—burned before the inside cooked.

  58. User avatar laurinda.paucek says:

    2 stars
I tried making these, but the risotto turned mushy. I think it’s just not for me. 😕

  59. User avatar Gangplank says:

    3 stars
I followed the recipe but they turned out too greasy. Maybe I used too much oil?

  60. User avatar tish.rippin44 says:

    3 stars
I don’t see how frying them is necessary. Can’t you just bake instead? Seems healthier that way!

    1. User avatar ingrid.littel56 says:

      5 stars
Baking would change the whole texture! Frying gives that crispy outside, which is deelish. Trust me!

    2. User avatar Barliman Butterbur says:

      4 stars
I guess you could bake them, but why would you ruin a classic? Frying is the way to go for flavor!
