Molletes with Chicharrón

October 2, 2023

The Popularity of Molletes with Chicharrón

A Crowd-Favorite Mexican Dish

Molletes with Chicharrón, a mouthwatering Mexican delicacy, has gained immense popularity both locally and internationally. This delectable dish is often enjoyed as a breakfast or brunch option, but it can also make for a satisfying snack or light dinner. Its growing popularity can be attributed to its rich flavors, ease of preparation, and versatile nature.

A Traditional Staple with a Twist

Originating from Mexican cuisine, Molletes have been a long-standing favorite among locals. The traditional base involves using bolillo bread – a type of Mexican bread known for its crispy exterior and soft, fluffy interior. This dish takes a flavorful twist by incorporating the beloved combination of chicharrón (fried pork rinds), refried beans, and cheese into the mix.

The Health Aspect of Molletes with Chicharrón

A Balanced Culinary Option

While Molletes with Chicharrón may not be considered the healthiest dish due to its inclusion of fried pork rinds, it can still be enjoyed as part of a balanced diet. By making mindful ingredient choices and portion control, you can create a healthier version of this classic recipe. Opting for baked or air-fried chicharrón, using whole grain bread, and incorporating fresh, nutritious toppings can enhance its nutritional value.

A Nutritious Combination

Molletes with Chicharrón can provide essential nutrients when prepared conscientiously. Bolillo bread offers carbohydrates for energy, while refried beans contribute a good amount of protein and fiber. Additionally, the chicharrón serves as a source of protein, and the cheese adds a touch of calcium and flavor to the dish. By balancing the ingredients and choosing leaner variations, this dish can be enjoyed as an occasional treat within a well-rounded diet.

Can you use any kind of bread? I can’t find bolillo anywhere.

  2. 3 stars
Molletes? I thought it was called chizarrones? I get confused with these Latin foods.

  3. User avatar len.gusikowski says:

    3 stars
Pretty tasty, but 400°F feels a bit high for bread that’s already soft. Mine browned fast, so I’d try 375°F or check at 8 minutes next time.

  4. User avatar buddy.schiller30 says:

    4 stars
I think more jalapeños should be added. Not spicy enough!

  5. 4 stars
Chicharrón is just fried pork meat, right? I ain’t picky anyway, still good!

  6. User avatar bethel.durgan27 says:

    3 stars
I tried it but the cheese didn’t melt like in the picture. Not sure what went wrong.

  7. User avatar yetta.prosacco says:

    4 stars
My beans were thick so I warmed them first and it was perfect. Also, I chopped the cilantro and forgot the jalapeños… still delicious though.

  8. User avatar marco.romaguera48 says:

    2 stars
I tried this recipe but it turned out too greasy. Did I do something wrong?

  9. 3 stars
Tastes good, but I forgot the cheese and now it’s plain. 😩

    1. 5 stars
You should definitely try it again with the cheese! It really makes a difference. 😊

    2. User avatar Maybelle Olson says:

      3 stars
Cheese or no cheese, I think it’s still a good recipe! Maybe add some hot sauce next time? 🤔

  10. User avatar elmer.bergnaum1964 says:

    4 stars
Refried beans on bread sounds weird to me, like breakfast nachos. But I tried it anyway and it’s actually kinda addicting.

  11. 2 stars
Just okay. Didn’t wow me, honestly. Lots of better dishes out there.

  12. User avatar cole.damore1967 says:

    2 stars
Looks good but i dont like jalapenos, so i skipped it. The beans taste kinda bland to me.

  13. User avatar Super Saiyan Gohan says:

    3 stars
Way too much cheese for my liking. It overpowered the beans and the chicharrón. Still tasty though, just not balanced for me.

  14. User avatar royal.franecki87 says:

    2 stars
So basically beans, pork, cheese on bread. Sounds fine, but cilantro where? The recipe says chopped cilantro if desired but not in ingredients. Also my jalapeños were too spicy—my bad.

    1. User avatar basementDweller says:

      5 stars
Haha yeah, this is basically a melty, cheesy bean-and-chicharrón situation 😄 As for the cilantro—totally get you. The instructions mention it, but it’s not listed. I usually add a handful anyway; it makes the whole thing fresher. And jalapeños too spicy happens—next time use fewer slices or remove the seeds.

  15. User avatar thaddeus.terry22 says:

    2 stars
I don’t know about putting chicharrón on beans, sounds a bit weird to me.

  16. User avatar Dr. Terri Donnelly says:

    5 stars
Mmmm, this reminds me of home! My abuela used to make these all the time. Perfect!

  17. User avatar scottie.schaden25 says:

    5 stars
These were dangerously good—crispy edges, melty cheese, and the chicharrón flavor really pops. I added extra jalapeños and it was perfect.

  18. 2 stars
Wait… 400°F for 10 min only? Mine didn’t melt at all until I cooked longer like 20 minutes. Maybe my oven runs cold? Tasted great though.

    1. 5 stars
Yeah, 10 min can be *very* oven-dependent. If your oven runs cool, the cheese might not melt/bubble yet—usually I go closer to 15–20. Glad it tasted great anyway!

  19. User avatar kiana.schamberger1961 says:

    5 stars
Yum! Made it for breakfast and everyone loved it! Perfect comfort food.

  20. User avatar val.padberg says:

    5 stars
Simple and comforting. I made them for lunch and they disappeared fast. Next time I’ll add more jalapeños because I like the heat.

  21. User avatar basementDweller says:

    4 stars
Molletes?? What a fancy name. I just called this beans on bread. 😂

  22. User avatar Humma Kavula says:

    5 stars
Delicious! Though I used different bread since I didn’t have bolillo. Still turned out great!

  23. User avatar shanel.greenholt56 says:

    3 stars
I forgot to preheat 😬 but they still came out okay—cheese melted eventually. Might try again properly next time.

    1. User avatar smartestRedditor says:

      5 stars
Haha same—I’m always chasing that “cheese melted” moment. Next time preheating should help the top get extra bubbly though!

  24. User avatar wellRespected says:

    4 stars
Made them for a quick snack and they were gone immediately. The 10 minutes at 400°F was perfect—cheese got all bubbly without drying out the bread.

  25. User avatar Mrs. Mckinley Boyle says:

    5 stars
I substituted the chicharrón for bacon and it was delicious!!!

  26. 1 star
This looks like a lot of work for a snack. Anyone else feel it’s not worth the effort?

  27. User avatar denny.lockman1993 says:

    5 stars
This recipe is so easy! I made it last night and my family loved it! 🌟

    1. User avatar billie.hegmann21 says:

      2 stars
I don’t know, that seems kinda basic. Can you really mess it up? 🤔

    2. 5 stars
Wow, that sounds delicious! I’m gonna try it for my kids this weekend! Thanks for sharing! 😊

  28. 5 stars
Yum, cheap and easy! I love it!

    1. User avatar derrick.emmerich says:

      5 stars
Totally agree! Molletes are the best, especially with chicharrón. So satisfying and affordable!

  29. User avatar steve_maga says:

    5 stars
Super easy and fast. 10 minutes at 400°F nailed it for me. I used Monterey Jack and the melt was so creamy.

  30. User avatar jeri.cummerata20 says:

    2 stars
Eh, it was just alright. I thought it would be way better. Maybe I should’ve added more jalapeños. 😒

  31. 2 stars
Can someone please tell me if I can use regular bread instead? Never heard of bolillo rolls before.

  32. User avatar damon.gleichner says:

    5 stars
Wow! This is a new go-to. Salty, cheesy, crispy—exactly what I want from comfort food. I added sliced pickled jalapeños and it was 🔥.

    1. User avatar mercedes.nitzsche16 says:

      5 stars
Yesss—salty, cheesy, crispy is exactly the vibe 😄 Pickled jalapeños sound like the perfect upgrade!

  33. User avatar donnell.farrell says:

    3 stars
The flavor is great but mine came out a bit dry on the edges. Maybe my chicharrón was too lean or I baked a couple minutes too long.

    1. User avatar leda.bruen25 says:

      3 stars
Mine got dry too 😕 I think my chicharrón was probably too “crispy” already. Also I may have baked it like 15 min (oops). Still tasted good though, just not melty on the sides.

    2. User avatar michell.murphy says:

      5 stars
That makes sense—leaner chicharrón can turn a little drier, and a minute or two can make the edges go crisp. Next time I’d check at ~8 minutes and pull them as soon as the cheese is bubbly. You can also cover loosely with foil for the first half if you tend to bake longer.

  34. User avatar carmelina.mayer says:

    2 stars
Never heard of molletes before but this looks good. Is it similar to nachos?

    1. User avatar Dominic Vernius says:

      3 stars
Nah, nachos are way crunchier. Molletes are like open sandwiches! Still looks tasty tho.

    2. 5 stars
They’re a bit different but both are delicious! Molletes have beans and cheese on bread, while nachos are usually chips with toppings. Give it a try!

  35. 2 stars
Okay so I used cheddar and it tasted kind of funky… maybe because I should’ve used Monterey Jack? Also cilantro isn’t necessary, right?

  36. User avatar alexander.stracke says:

    3 stars
Not sure about baking them—wouldn’t it be better in a toaster oven? Also, chicharrón gets oily in my experience, so I was worried. It turned out okay though.

    1. User avatar stewart.conroy23 says:

      3 stars
I think baking is fine… but 10 min feels kinda short for melty cheese? Mine always comes out like it not done unless I do like 15-20. Also toaster oven makes it more crispy for me. For the chicharrón, use less oil ones i guess lol.

    2. 5 stars
Honestly, a toaster oven could work great—same temp range (around 400°F) and just keep an eye on the cheese so it doesn’t over-brown. I agree chicharrón can get oily, but baking it with cheese/beans usually helps it stay crisp-ish on top.

  37. User avatar Frostbite Spider says:

    3 stars
Not gonna lie, I didn’t have bolillo so I used sub sandwich rolls and it wasn’t the same. Still, the flavor is solid. Would make again with proper bread.

  38. User avatar darnell.wisoky21 says:

    4 stars
So easy and quick to make! My kids loved it, especially with jalapeños. Thanks a lot!

  39. User avatar Daedric Prince says:

    2 stars
The ingredient amounts are weird to me—like 1 cup chicharrón for only two rolls? I ended up with too much for me, so I’d measure by thickness instead of cups.

    1. User avatar lindsay.hartmann18 says:

      4 stars
I actually had the opposite problem 😅 I used a bigger cup and it was kinda… too much. So yeah measuring by thickness/coverage makes more sense than cups.

    2. User avatar Valentin Leffler says:

      5 stars
I get you—1 cup chicharrón for just 2 rolls sounds a little light/tacky. I usually add until it looks nicely layered, not measured by volume.

  40. 3 stars
I tried this and it was okay, but not great. I think I overcooked the cheese a bit, it got too hard.

    1. User avatar Lumberjack says:

      4 stars
Yeah, overcooked cheese can ruin it. Maybe next time try a lower heat or take it out sooner?

  41. User avatar rosie.toy87 says:

    5 stars
These came out sooo good. Crispy edges, melty cheese, and the chicharrón flavor is legit. I added extra jalapeños and it was perfect.

    1. User avatar yuette.wuckert2010 says:

      4 stars
Okay but I think 10 minutes is a little too short? Mine needed like 15-20 to really brown. And I used cheddar only and it was still good though. Not mad 😅

    2. User avatar merle.huels1984 says:

      5 stars
Yes!! Crispy edges + melty cheese is the dream combo. I also love how the chicharrón flavor comes through—making these again for sure. 🌮

  42. User avatar Chi Shenlong says:

    3 stars
The cheese was way too much for me, next time I will cut it in half.

  43. User avatar rufus.langosh says:

    4 stars
Not gonna lie, I’m skeptical about putting chicharrón on bread like nachos. But I tried it and it actually worked. Still, I’d cut the cheese a bit if you don’t like it too rich.

  44. User avatar alphonse.zboncak1969 says:

    5 stars
Wow, this is amazing! The chicharrón adds a great crunch. Will definitely make again!

  45. 3 stars
Not bad, but chicharrón is too crunchy for me. I prefer softer toppings.

    1. 4 stars
I totally get what you mean! I like my toppings a bit softer too. Maybe try it with a different topping next time?

  46. User avatar glen.williamson2007 says:

    5 stars
These are AMAZING! I never knew molletes could taste this good! The chicharrón adds such a nice crunch.

    1. 2 stars
I dunno… it sounds good, but isn’t chicharrón kinda greasy? Seems like it would make the molletes soggy. Not sure about this one.

    2. User avatar florentino.oconnell15 says:

      5 stars
I totally agree! The chicharrón gives it a whole new level. So crunchy and delish!

  47. 1 star
Um, is refried beans really necessary? Seems like too much work for not much payoff.

  48. 5 stars
This is like a meal from heaven! I added some avocado too, mmm!!!

  49. User avatar coleman.nitzsche says:

    5 stars
Love this recipe! Made it for my kids and they licked their plates clean! Will definitely make again. 😊

  50. User avatar vernon.jakubowski1950 says:

    4 stars
Perfect for a quick snack! I’m not even a fan of chicharrón but wow this changed my mind.

  51. User avatar tissues_with_issues says:

    5 stars
These molletes are amazing! The chicharrón adds such a great flavor.

  52. User avatar Miss Luana Botsford says:

    2 stars
Honestly, I think this is just loaded toast with extra steps. The flavor is good, but it’s not exactly revolutionary.

    1. User avatar sharlene.harvey71 says:

      4 stars
I get what you mean, but “not revolutionary” doesn’t bother me—molletes are basically comfort food and this one’s stacked with flavor. The beans + melted cheese + chicharrón combo is the point. Also the jalapeños/cilantro at the end helps a lot.

  53. User avatar terrence.glover2018 says:

    4 stars
Simple and delicious, but where’s the avocado? Needs guac!

    1. 5 stars
I agree, guacamole would be a perfect addition! It just elevates everything!

    2. User avatar Miss Fortune says:

      3 stars
Guac is nice, but this recipe is still super tasty without it! Just try it!

  54. User avatar talitha.runolfsson63 says:

    4 stars
I didn’t have bolillo so I used sub rolls and it still worked. 10 minutes was spot on for melting—just keep an eye on browning.

    1. 3 stars
Huh, I’m not sure about “melting” time 😅 My oven runs hot—10 min turned mine into a crunchy situation. I think it depends on the bread thickness. Still tasty though!

    2. User avatar MAGA2024.Trumpster says:

      5 stars
Nice! I’m glad the sub rolls worked—mine usually get a little browner, so 10 minutes sounds like a good benchmark. I’ll keep an eye on the cheese so it doesn’t overdo.

  55. 5 stars
These molletes are dangerously easy. The beans + chicharrón combo is unreal, and the cheese gets perfectly melty. I added jalapeños and it hit every time.

    1. User avatar fonda.bauch74 says:

      5 stars
Yes!! I did almost the same thing and it was gone in like 5 minutes 😅 The melty cheese + chicharrón is a cheat code. Jalapeños are a must.

  56. User avatar Miss Fortune says:

    3 stars
I was skeptical about baking instead of warming everything on the stove, but the cheese got nicely bubbly. Only thing: my rolls dried out a bit at 10 min, so I’d watch them closer.

    1. User avatar smartestRedditor says:

      5 stars
Totally get the skepticism—oven vs stove sounds risky. But yeah, when the cheese goes bubbly it’s hard to beat. Good call on the timing too; my rolls sometimes dry out fast at 10 min, especially if the oven runs hot. I usually start checking at like 8 minutes and pull them the moment the cheese looks melted.

  57. 5 stars
These molletes were dangerously good. The cheese gets perfectly melty and the chicharrón adds that salty crunch. I swapped in pepper jack and it was even better.

  58. User avatar deirdre.abbott says:

    4 stars
Wow. Super salty (in a good way) and messy 😅. I’d recommend napkins. Would eat again.

    1. 3 stars
Messy is right… I feel like I used too much cheese though? Mine were kinda greasy and the jalapeños overpowered everything. Next time I’ll cut the chicharrón amount and maybe toast them a bit longer.

    2. User avatar malia.keebler says:

      5 stars
Haha same 😄 The chicharrón really brings the salt. Napkins are a must with these—mine got messy too but totally worth it. Also the cheese comes out perfectly melty.

  59. 4 stars
I tried this but forgot the jalapeños… made a big difference! Need to try again with them.

  60. 5 stars
These molletes look dangerously easy—love the combo of melty cheese + crunchy chicharrón. I’ll probably add extra jalapeños because “optional” is never optional for me.

    1. User avatar benton.terry says:

      5 stars
Dangerously easy indeed 😄 The melty cheese with chicharrón is such a perfect combo. I’ll be keeping jalapeños in the “not optional” category too.

    2. 3 stars
I tried something like this but my cheese didn’t really melt—maybe I used the wrong kind? Also do you bake it longer than 10 mins if the chicharrón gets soggy?

  61. User avatar jean.crooks says:

    4 stars
I love molletes, but this felt a little heavy. Not bad, just filling—probably because of the amount of cheese + chicharrón. Maybe serve with something fresh like salsa or pico.

  62. User avatar Darnell Jacobi says:

    3 stars
Pretty good but I think 1 cup of beans is too much for two rolls—ended up spilling. Also I used queso Oaxaca and it melted weirdly, but still tasty.

    1. 5 stars
Totally agree about the beans—1 cup feels like a lot for only 2 rolls. I’ve started doing closer to 1/2 cup and it stays cleaner. Nice note on the queso Oaxaca too!

    2. User avatar Carlotta Tendant says:

      4 stars
Hmm I used the full 1 cup and it didn’t spill for me, but I also spread it thinner like frosting. Maybe your beans were thicker/refried drier?

  63. User avatar marylou.schuster says:

    4 stars
I used Monterey Jack and it turned out great. The cook time was spot on for me—cheese was bubbly by 10 minutes. Will make again.

  64. User avatar leonel.hettinger says:

    5 stars
So good. Crunchy chicharrón on top with melty cheese—chef’s kiss. I might add a little salsa next time for extra moisture.

  65. User avatar robbie.bradtke58 says:

    2 stars
My cheese didn’t melt as much as I expected. I think I shredded it too thick or my oven runs cool. Still tasted good, just looked less melty.

    1. 5 stars
Yep, that happens. I usually keep the cheese pretty thin/shaved, and I bake it a couple minutes longer until it’s actually bubbly. Also make sure the oven is fully preheated—if it runs cool, 10 minutes won’t be enough.

  66. User avatar kristel.nienow58 says:

    4 stars
Good idea, but mine got a little too crunchy on the bottom. Next time I’ll start checking at like 7 minutes or use a lower rack.

  67. 2 stars
I dunno. I thought the idea sounded good, but my cheese just ended up burning and the bread was hard. Not great.

  68. User avatar salina.cole says:

    3 stars
I didn’t have bolillo so I used burger buns—kinda sad tbh. Flavor was there but the texture was off. If you can get the right bread, follow the recipe.

  69. 5 stars
These were amazing! I made them for my family and they vanished in minutes. Will definitely make again!

  70. 3 stars
Too much cheese for my taste. I prefer more beans than cheese. But I guess it varies from person to person.

  71. User avatar tyesha.ebert15 says:

    3 stars
Lol I totally burned the first batch. 10 minutes turned into 14 because I got distracted. The second batch was perfect—lesson learned.

  72. User avatar jasmin.bogisich67 says:

    5 stars
This is a classic! Always reminds me of my grandma’s kitchen. Love how simple it is!

    1. 5 stars
I totally agree! My grandma made the best molletes too. This recipe brings back such good memories!

    2. User avatar evangelina.schmeler89 says:

      3 stars
Sounds easy but not sure about the chicharrón part. Can I use bacon instead?

  73. User avatar toccara.kautzer65 says:

    2 stars
Not gonna lie, my chicharrón got a little tough. I think I should’ve used it as a topping after baking instead of fully in the oven. Still, flavor was decent.

    1. User avatar Dr. Miquel Mohr says:

      5 stars
Yeah, that makes sense—chicharrón can go chewy if it bakes too long. Next time try only melting the cheese (or bake just 5–7 min) and add the chicharrón right at the end so it stays crisp. Glad the flavor still came through!

  74. User avatar neoma.mcglynn49 says:

    4 stars
I was skeptical about mixing refried beans + chicharrón, but wow. It tastes like a crunchy, cheesy comfort food.

  75. User avatar rico.schuppe says:

    5 stars
Simple and delish! Used leftover beans. 10 minutes is perfect.

  76. 4 stars
Pretty tasty and easy—used canned refried beans and pre-shredded cheese, still worked. Would love a little more seasoning though (maybe garlic powder or cumin).

  77. 5 stars
5/5 would eat again. Maybe add a drizzle of crema? Idk just a thought.

    1. User avatar kandice.shields77 says:

      3 stars
Maybe crema is too much. I feel like the beans already have a lot going on. Also jalapeños are optional—mine got spicy anyway and I didn’t even add extra 😅

    2. 5 stars
5/5 for real! The texture with the chicharrón + melty cheese is perfect. A drizzle of crema would totally level it up 🔥

  78. User avatar Al Kaseltzer says:

    4 stars
I was skeptical about putting chicharrón in the oven, but it stays crispy-ish on top. Next time I’ll broil for like 1 minute to really crisp it.

  79. User avatar perla.hudson51 says:

    4 stars
I don’t really know what bolillo is in my country, so I used sub rolls and it still worked. Tastes very street-food-ish.
