Ingredients
- 2 tablespoons olive oil extra virgin
- 1 onion finely chopped
- 2 cloves garlic minced
- 2 carrots diced
- 2 stalks celery diced
- 1 zucchini diced
- 1 potato diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth low-sodium
- 1 can kidney beans (15 oz), rinsed and drained
- 1 cup pasta such as ditalini, small
- 1 cup spinach chopped
- 2 teaspoons Italian seasoning
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper or to taste
- 1/4 cup parmesan cheese grated, for serving (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the diced carrots, celery, zucchini, and potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the can of diced tomatoes (with their juices) and the vegetable broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and add the rinsed and drained kidney beans. Let the soup simmer for 20 minutes.
- Add the small pasta to the pot and continue to simmer for another 10 minutes, or until the pasta is tender.
- Stir in the chopped spinach and Italian seasoning. Season the soup with salt and black pepper to taste.
- Serve the Minestrone Soup hot, garnished with grated Parmesan cheese if desired.

I tried it but I forgot to rinse the kidney beans… it was kinda funky, ngl. After I corrected it for the next batch (rinsed + drained), it was way better. Also, 1 tsp salt might be too much for low-sodium broth depending.

Solid recipe! I followed it pretty much exactly. Only thing: my pasta kept soaking up liquid, so I had to add a splash more broth when serving. Next time I’ll maybe undercook it a minute.
