Mexican Quinoa Skillet

August 30, 2023

If you’re craving a hearty, healthy, and flavor-packed dinner that comes together fast, look no further than the Mexican Quinoa Skillet. This one-pan wonder delivers everything you love about Tex-Mex cuisine, bold spices, colorful veggies, and satisfying texture, with the bonus of being both wholesome and easy to make.

At the heart of this dish is quinoa, a protein-rich seed that cooks up fluffy and nutty. It absorbs all the flavors of the spices and broth, making each bite more delicious than the last. Add in black beans, corn, diced tomatoes, bell peppers, and onion, and you’ve got a full meal in a single skillet, no extra pots, no hassle.

The flavor base is simple but effective. A mix of garlic, chili powder, cumin, smoked paprika, and a pinch of oregano brings that familiar warmth and depth you expect from Mexican-inspired dishes. Everything simmers together until the quinoa is tender and the mixture is thick and fragrant. A handful of fresh cilantro, a squeeze of lime, or a sprinkle of cheese at the end adds a final pop.

This recipe is incredibly flexible. You can spice it up with jalapeños, top it with avocado or sour cream, or even turn it into taco or burrito filling. Leftovers store beautifully and reheat well, making it a smart meal prep option for busy weeks.

Vegetarian, gluten-free, and loaded with fiber and plant-based protein, the Mexican Quinoa Skillet is a great way to enjoy comfort food that doesn’t weigh you down. Whether you’re feeding a family, meal prepping, or just want something quick and delicious, this dish checks all the boxes.

Serve it straight from the skillet for easy cleanup and enjoy a dinner that’s as nourishing as it is satisfying.

I thought 2 cups broth for 1 cup quinoa would be too much, but it absorbed fine. I used homemade broth and it tasted amazing.

    1. User avatar mallie.schiller2008 says:

      5 stars
I’m glad you trusted the 2 cups—honestly quinoa can surprise you like that. Homemade broth makes it next-level. 🌶️

  2. 4 stars
I made this exactly once and it turned out good, but I think I needed more salt than the recipe said. Next time I’ll also toast the spices first for extra flavor.

  3. User avatar chase.champlin70 says:

    3 stars
I followed the recipe, but it was kinda bland for me. Next time I’m gonna add more salt and maybe a squeeze of lime. Also my pepper was way hotter than expected 😅

    1. User avatar Trin Tragula says:

      5 stars
Totally get that—quinoa can be a little meh if the seasoning’s light. Lime sounds like a great fix too. I also add a pinch more cumin and chili powder right at the end.

    2. User avatar Humma Kavula says:

      4 stars
Bland? Hmm. Did you measure the salt/pepper “to taste” and then actually taste after step 4? I find it needs salt more than you’d think.

  4. 5 stars
Honestly, I made this and my family acted like it’s gourmet. Even my picky eater went for seconds. I used frozen corn too—no problem.

  5. 2 stars
I don’t know about this, I made it but it didn’t taste like much. Needs more spices.

    1. User avatar boyce.johnson1967 says:

      2 stars
This recipe lacks flavor. I can’t believe it’s supposed to be Mexican; I would say it’s more bland than anything else. Sorry, not my favorite.

    2. User avatar francis.pfeffer says:

      5 stars
I totally agree! I added more cumin and a splash of lime juice, and it was way better!

  6. User avatar calista.emard74 says:

    4 stars
I didn’t have vegetable broth so I used chicken broth. Don’t judge—turns out it was still good. Next time I’ll stick to the recipe, but it was solid.

  7. 3 stars
I dunno, it just didn’t taste as good as I imagined. Maybe too much garlic?

    1. 4 stars
Maybe you just don’t like garlic as much as you think? I love it in this dish! 🌶️

  8. User avatar ardath.keeling13 says:

    5 stars
Made this tonight and it was surprisingly tasty—like a quick taco bowl vibe. The jalapeño gives it a nice kick without overpowering.

  9. 5 stars
I made this for dinner and my kids actually ate it! Miracle!!

  10. User avatar jae.douglas1959 says:

    4 stars
Pretty good! I think 15 minutes simmer might be a little short depending on the quinoa brand, mine needed 2-3 extra minutes. Still, the skillet flavors are awesome.

  11. 5 stars
This turned out really flavorful—jalapeño gave it a nice kick without overwhelming the quinoa. I added extra cilantro and it tasted super fresh.

  12. User avatar kasie.daniel says:

    3 stars
Wait—15 minutes for quinoa with 2 cups broth? I’ve never had it absorb that fast. Mine took longer, but I think that’s just my stovetop. Still tasty.

    1. User avatar terminatorXYZ says:

      5 stars
I’ve had luck with ~15 min when I rinse well and keep the lid on tight. If the boil is too low, it’ll drag—so your stovetop explanation makes sense.

    2. User avatar ashton.abernathy says:

      4 stars
I was skeptical too, but I tried it: mine absorbed fast and came out fluffy. Maybe your burner runs cooler or the pot wasn’t fully covered?

  13. User avatar brianne.jakubowski says:

    4 stars
Mmmm….healthy and tasty! 🌱 Will make again!

  14. User avatar scottie.okuneva19 says:

    2 stars
Eh… quinoa always tastes like “healthy” to me. I also forgot to rinse it and it came out a bit bitter. Probably my fault though.

    1. User avatar bruce.hills10 says:

      5 stars
Quinoa can definitely get bitter if it isn’t rinsed—saponins do that. Honestly though, your instinct is right: a quick rinse (or even a second rinse) usually fixes it. Also, bitterness can linger if it cooked too long or the heat was too high. Next time I’d simmer closer to 15 and taste it before adding to the skillet.

  15. User avatar keven.walter says:

    4 stars
So easy to make! I added some chicken and it turned out really good!

    1. User avatar luke.hermiston49 says:

      5 stars
Chicken sounds great with this! I might try adding cheese next time too.

  16. User avatar cyrus.yundt81 says:

    2 stars
Not bad but I’m skeptical of the ratios. 1 cup quinoa to 2 cups broth felt wet at first, then dried out too fast. Still edible though.

  17. User avatar Frodo Baggins says:

    5 stars
This was super delicious! The flavors were spot on. Can’t wait to make it again!

  18. User avatar rochelle.morar89 says:

    5 stars
Idk what quinoa is but this is tastyyy!!! 😍

  19. User avatar claude.labadie says:

    4 stars
Not gonna lie, I was skeptical about quinoa in a skillet, but it worked. The cumin + chili powder combo is spot on. Would make again for meal prep.

    1. 4 stars
Quinoa in a skillet… I always thought it had to be boiled with like a ton of water. But if it says 15 minutes simmer, then 5 more in the pan, I guess it works. I might cut the jalapeño though—mine was too spicy last time 😂

    2. User avatar minta.hirthe9 says:

      5 stars
Totally feel you—quinoa in a skillet sounded weird to me too, but this combo is legit. Cumin + chili powder really does the heavy lifting. Great for meal prep for sure.

  20. User avatar tobie.watsica says:

    5 stars
This was delicious! I love the flavor of the spices. Will make again!

  21. User avatar CTRLplusW says:

    3 stars
I accidentally doubled the jalapeño because I misread the recipe 🤦‍♂️. It was HOT, but kinda addictive. Add less if you’re not into spice.

    1. 4 stars
Oh nooo 😅 but honestly that sounds like the best kind of mistake—addictive is exactly what I want. Next time I’ll try half a jalapeño and see where I land.

    2. User avatar victorina.corwin1987 says:

      3 stars
I can’t handle “HOT” anymore 😂 I’d just do canned mild green chiles next time. The jalapeño in quinoa skillet sounds risky.

  22. 4 stars
Pretty healthy, but I’m skeptical about quinoa in a Mexican skillet. Turned out way better than I expected. Garlic + cumin combo is legit.

  23. User avatar guy.renner27 says:

    4 stars
I didn’t have jalapeno so I used serrano—way spicier than expected lol. Flavor was great though. Next time I’ll scale the heat down.

  24. User avatar Yooden Vranx says:

    4 stars
Not bad, but I’d add more liquid next time or it’ll dry out. Also, I used canned fire-roasted corn and that helped a lot.

  25. User avatar jame.kuhn says:

    2 stars
I don’t get the hype. Quinoa is kinda dry unless you drown it in sauce, and this still felt dry even after 5 more minutes in the skillet. Might work with more broth.

    1. User avatar charles.schuster1959 says:

      4 stars
Hmm, I get that. My quinoa gets dry sometimes too—when I make this, I add a splash more broth and let it simmer covered the whole time instead of just 15+5.

  26. User avatar mauro.bashirian says:

    4 stars
Whoever wrote this clearly loves jalapeños—mine was HOT 😅. I like spicy food, so I’m happy, but I’d warn people to seed it well. Great texture with the quinoa.

    1. User avatar Hasimir Fenring says:

      5 stars
Haha same here 😅 I didn’t seed mine either and it definitely had a kick. Still super tasty though—love that quinoa texture.

  27. User avatar Spider Guardian says:

    5 stars
Made this tonight and it was a big hit. The quinoa texture came out perfect and the spice balance was spot on. I added extra cilantro and it tasted super fresh.

  28. User avatar tonya.connelly says:

    3 stars
I followed it pretty exactly, but it came out kind of bland until I salted at the end. Also, my quinoa was a little mushy, not sure why.

    1. User avatar sylvester.wintheiser68 says:

      4 stars
Mine’s always pretty flavorful once I season during the skillet step—not just at the end. Also, did you salt the cooking broth/quinoa at all? Rinsing quinoa is good, but it still needs salt.

  29. User avatar candyce.wehner44 says:

    3 stars
Followed the instructions but it turned out mushy. Maybe I cooked it too long?

  30. 1 star
Why you gotta put beans in everything? Beans don’t belong in food!!!

  31. User avatar monroe.kuvalis2008 says:

    4 stars
Honestly, super easy for a weeknight meal. I used canned corn and it still worked great. Would totally make again—maybe with a squeeze of lime next time.

  32. User avatar orville.satterfield1996 says:

    3 stars
I like quinoa, but this felt a little bland for me even with the spices. I ended up adding more chili powder and salt and then it was better. Not bad though!

    1. 5 stars
I’m glad you adjusted it! This recipe seems like it leaves the salt/heat up to the cook. Next time try adding smoked paprika too—makes it taste more “Mexican” to me.

    2. 4 stars
Totally get it—quinoa can be super neutral. I usually add a splash of lime juice or a bit more cumin right at the end and it perks up a lot.

  33. User avatar les.kreiger34 says:

    2 stars
I’m confused about the 15 minutes quinoa part. Mine came out crunchy, like it needed more liquid. I had to add broth and keep simmering.

  34. 3 stars
It was okay, but kinda bland. I added some hot sauce and it was better.

  35. 5 stars
This recipe is honestly comfort food. The flavors mixed together really nicely in the skillet, and it smelled amazing while cooking.

  36. User avatar ellis.ratke56 says:

    5 stars
This dish is amazing! So flavorful and healthy. My family loved it!

  37. User avatar dallas.kuhn1986 says:

    5 stars
Wow, who knew quinoa could taste like this? Absolutely brilliant dish!

  38. User avatar kassandra.zemlak52 says:

    1 star
Too much work for a dinner. I just wanted something simple! Not again.

  39. 5 stars
This is the BEST quinoa dish I have ever made! So flavorful and healthy! 😍

  40. User avatar omar.nicolas says:

    4 stars
I didn’t have cilantro, so I used parsley. It wasn’t the same, but it was fine. 10/10 would still make again.

    1. User avatar King Vegeta says:

      3 stars
Huh, parsley instead of cilantro… I feel like it changes the whole “Mexican” vibe, but if you liked it then fair. Did you add extra lime or anything to make up for the difference?

    2. User avatar mamie.kertzmann2019 says:

      5 stars
Nice—parsley is a totally workable swap if you’re missing cilantro. I’ve done the same thing and it still tastes fresh. Glad it turned out 10/10!

  41. User avatar Zaphod Beeblebrox says:

    3 stars
I think this is okay, but I don’t think jalapenos are necessary. Gave me indigestion! 🤢

  42. 5 stars
Wow, you really outdid yourself! My family loved it! Will make again for sure.

  43. User avatar frankie.brakus67 says:

    5 stars
This is such a satisfying skillet! The cumin/chili combo tastes way more “Mexican” than I expected, and the quinoa stays fluffy. I added a squeeze of lime at the end—highly recommend.

  44. User avatar hipolito.streich61 says:

    5 stars
This was surprisingly flavorful—jalapeño + cumin combo really pops. I added extra lime and it tasted restaurant-level. Would make again!

    1. User avatar ileen.rath says:

      3 stars
I’m not sure about the jalapeño though—mine was super spicy even though I seeded it. Next time I’ll use less and maybe add more broth? Still tasted good, just a kick.

    2. 5 stars
Yes!! The cumin + jalapeño combo is the whole vibe. I did the same with extra lime and it totally brightened it up. Definitely making this again.

  45. User avatar Falmer Shadowmaster says:

    4 stars
Pretty solid! I followed it closely, but my quinoa took closer to 20 minutes to get tender. Still turned out flavorful and the skillet step helped everything come together.

    1. User avatar asa.roberts95 says:

      5 stars
Thanks! 20 minutes makes sense—quinoa can be pretty stubborn depending on the brand. Glad the skillet step pulled it all together.

    2. User avatar adele.moen63 says:

      4 stars
Good to know. Mine usually takes longer too, and I always mess up quinoa by undercooking it 😅 Still sounds tasty though—do you think chicken broth would work the same?

  46. 5 stars
Best vegan recipe ever! Even my meat-eating friends loved it. Thank you!

  47. User avatar vanna.kuhn26 says:

    3 stars
WHY don’t you put meat in this? It feels like it’s missing something. Not for me.

    1. User avatar rod.romaguera82 says:

      4 stars
I see what you mean, but there are plenty of protein sources in the beans! Give it a chance, it’s still tasty!

    2. User avatar Cammar Pilru says:

      2 stars
Meat just makes everything better. This is just a veggie dish, not for me either!

  48. 4 stars
Pretty good and super easy, but I thought 15 minutes for the quinoa was a little short? Mine was slightly crunchy, so I gave it another 3-4 minutes on the stove and it fixed it.

  49. User avatar Cory Conroy says:

    1 star
Didn’t like it at all. The quinoa was weird to me. I prefer rice.

  50. User avatar winston.abernathy94 says:

    4 stars
Yummy! But can you use chicken broth instead of vegetable?

    1. User avatar elin.kuhn63 says:

      2 stars
But why would you use chicken broth? It’s a veggie recipe! Just stick to what’s in the recipe.

    2. 5 stars
I think chicken broth would be great! It will add some rich flavor. Can’t wait to try it that way.

  51. User avatar isabell.bernier58 says:

    2 stars
I followed it exactly and it came out… kinda bland? I know “salt to taste” is vague, but I still felt like it needed more chili powder or maybe smoked paprika. Otherwise the texture was nice.

  52. User avatar elizbeth.stehr57 says:

    5 stars
Quinoa is kinda weird to cook right, but this time it turned out fluffy. I’m giving it 5 stars even though I burned my onions a little.

    1. User avatar Jonas Leannon says:

      5 stars
Glad it turned out fluffy! 😄 Quinoa can be so finicky—rinsing and letting it simmer covered really makes a difference.

  53. User avatar magaly.hane89 says:

    4 stars
Honestly, I was skeptical about quinoa, but this turned out bomb! 😊

  54. User avatar connie.hickle says:

    5 stars
Love how this is hearty but still pretty light. The cumin/chili combo really makes it taste like something from a taco place. I added a squeeze of lime at the end and it popped.

    1. User avatar Mr. Leonel Hudson says:

      5 stars
Totally agree—this combo has that taco-shop vibe. Lime at the end is the move 🔥

  55. User avatar ned.bernhard71 says:

    4 stars
Solid recipe, but 15 min for quinoa seems a bit quick—mine needed closer to 18. Still turned out great and the skillet method is nice.

  56. 4 stars
My jalapeño was too spicy… like omg. Next time I’ll seed it better. But yeah, good idea!

  57. User avatar deetta.kemmer says:

    4 stars
Solid weeknight meal. I used 1/2 jalapeno because I’m not brave, but it still had great flavor. Next time I’ll add a little smoked paprika too.

  58. 5 stars
This was so good! I loved the flavors. Will definitely make again!

    1. 5 stars
This is my new favorite dish! I added some avocado on top and it was amazing. Thanks for sharing!

    2. User avatar Meredith Brekke V says:

      3 stars
Looks good but quinoa is kinda bland, right? Maybe add more spices or something next time?

  59. User avatar leoma.leannon says:

    2 stars
Wasn’t that great, too spicy for my kids. I think I will just stick to plain quinoa next time.

  60. User avatar chana.mcglynn says:

    3 stars
I followed it pretty much exactly, but I think I should’ve rinsed the quinoa longer. Mine tasted a bit bitter. Still good though!

  61. User avatar samuel.medhurst77 says:

    2 stars
I’m not sure about this recipe. It seemed too bland for my taste. Maybe add some cheese?

    1. User avatar shawnta.prosacco45 says:

      5 stars
I think cheese would be a great addition! It can really boost the flavor. I usually top mine with queso fresco. Yum!

  62. 3 stars
Too many veggies for my taste, plus I forgot the corn. But still edible.

    1. User avatar coy.crooks says:

      4 stars
I get it, not everyone likes a veggie overload. But you could always add more quinoa or beans to balance it out! Just a thought.

  63. 4 stars
So easy to make! I threw in some chicken and it turned out great. Perfect for a quick meal.

  64. 1 star
I don’t like quinoa. This dish just didn’t do it for me. Sorry!

  65. User avatar Saruman the White says:

    2 stars
This recipe is missing something. Maybe more seasoning? Not bad, but could be better.

    1. User avatar Ford Prefect says:

      3 stars
I thought it was fine as is! Not everything needs to be super flavorful. Sometimes simple is best.

    2. User avatar Illa Howell says:

      4 stars
I agree! This needs a lil more spice. Maybe some cayenne or an extra jalapeno? It’s good, but it could really pop!

  66. User avatar corrin.stark says:

    4 stars
Never made quinoa before, but this was really easy! I added more beans and it worked great.

    1. User avatar earnestine.paucek23 says:

      5 stars
I’m so glad you found it easy! Quinoa can be a bit tricky if you’ve never made it before. Adding more beans sounds delicious! How did it turn out?

    2. 2 stars
Never tried it with beans but isn’t quinoa kinda bland? I’m not convinced, sounds like a bunch of veggies mixed in with grain if ya ask me.

  67. User avatar martine.blick says:

    4 stars
The jalapeno amount is sneaky 😅 It had some real kick. I loved it, but if you’re spice-averse, definitely seed it well or use less.

    1. User avatar CTRLplusW says:

      5 stars
Right?! The jalapeno in this totally sneaks up on you 😅 I seeded mine and it was still pleasantly spicy. Love that kick with the quinoa.

  68. User avatar Ms. Belia Hyatt says:

    5 stars
    yum!

  69. User avatar janett.gaylord says:

    2 stars
Why cook with quinoa? it’s just fancy bird seed.

  70. User avatar Bobby Flatley PhD says:

    3 stars
Not bad, but it felt a little bland to me. Also my quinoa took longer than 15 minutes, so the timing in step 2 is a bit optimistic. Still ate it all though.
