Ingredients
  

  • 2 1/4 teaspoons active dry yeast make sure it’s fresh
  • 1/4 cup sugar for the dough
  • 3/4 cup warm milk about 110°F
  • 4 cups all-purpose flour divided
  • 1/2 teaspoon salt
  • 2 large eggs room temperature
  • 1/2 cup unsalted butter room temperature
  • 1 cup cream cheese softened
  • 1/4 cup sugar for the filling

Instructions
 

  • Dissolve the yeast and 1/4 cup sugar in warm milk and let stand until foamy, about 5-10 minutes.
  • In a bowl, combine 3 cups of flour and salt. Add the yeast mixture, eggs, and butter. Knead until smooth and elastic.
  • Cover the dough and let it rise in a warm place until doubled, about 1 to 1.5 hours.
  • For the filling, mix cream cheese with 1/4 cup sugar until smooth.
  • Punch down the dough and roll it out. Spread the cheese filling over it, then roll it into a log.
  • Place the roll in a greased baking pan and let it rise again for about 30 minutes.
  • Preheat oven to 350°F (175°C). Bake the babka until golden brown, about 45 minutes.

    I think the yeast part matters a lot. My milk wasn’t warm enough at first, and it never got foamy. Once I warmed it properly, it worked. So yeah—watch that temp!

      Ahh that happens! Cracking on top is usually from either the second rise going a bit too long or the dough being a touch dry/tight after kneading. Next time, try a slightly softer dough (hold back 1-2 tbsp flour) and watch for it to look puffy—not ballooned. Also, don’t over-press the dough when you roll it.

      Maybe your oven runs hot? 350°F but like, my oven be lying 😅 If the babka bakes too fast on top it can crack. I’d check with an oven thermometer and tent with foil if it’s browning early. Still glad it tasted good though!
