    Not sure I’m doing this right. 40 minutes + 35–40 seems like way too long for a 3-4 lb bird—mine was already browned, and the inside was still kinda pink. Could be my oven though.

    Really good, but I think 375°F is a bit low for a 4-lb chicken. Mine was taking forever. Also, I accidentally forgot the salt at first (oops) so I had to fix it with extra soy while roasting—still tasty.

      375 feels too low to me too. My 4-lb chicken would’ve been rubbery at that temp 😂 I crank it closer to 425 and get better browning, then lower it if it’s cooking too fast.

      Maybe your oven runs hot? Mine always browns quick with maple. I also think 3-4 lb chicken can vary a lot—40+35 is sometimes not enough. Cover it sooner, and check thighs with a thermometer, not just color 😅
