Lebanese Beef Sambousek

August 9, 2023

Lebanese Beef Sambousek are savory pastries filled with spiced ground beef, wrapped in delicate, flaky dough. These delicious little pockets are a popular appetizer or snack in Lebanese cuisine, often served during festive occasions or as part of a mezze spread. Their crispy, golden exterior and flavorful filling make them an irresistible treat.

The filling for sambousek is typically made from ground beef, which is sautéed with onions, garlic, and a blend of aromatic spices like cinnamon, allspice, and cumin. Some recipes may also include pine nuts or raisins for added texture and a hint of sweetness. The beef is cooked until browned and well-seasoned, then allowed to cool slightly before being stuffed into the dough.

To assemble the sambousek, you can use ready-made phyllo dough or make your own dough from scratch if you’re feeling adventurous. The dough is rolled out into small circles, and a spoonful of the beef filling is placed in the center of each. The dough is then folded over to form a crescent or triangle shape, pinching the edges tightly to seal the filling inside. Some people like to brush the top with a little egg wash for extra shine and color.

These pastries are typically deep-fried until golden and crisp, although they can also be baked for a lighter option. Whether fried or baked, Lebanese Beef Sambousek are best served warm, with a side of yogurt or tahini for dipping.

Sambousek can be made ahead of time and frozen before frying, making them a great option for meal prep or special occasions. Once fried, they are crispy on the outside, while the beef filling remains tender and flavorful on the inside. Perfect for gatherings or as a snack, these savory bites bring the essence of Lebanese cuisine to your table with every delicious bite.

Total Time 55 minutes

Ingredients

  • For the Filling: Filling
  • 1 lb ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice ground
  • Salt and pepper to taste
  • For the dough:
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup unsalted butter melted
  • 1/2 cup warm water
  • 1/4 cup plain yogurt
  • 1 egg lightly beaten

Instructions

  • In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until softened, about 5 minutes.
  • Add the ground beef to the pan and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Add the ground cumin, ground coriander, ground cinnamon, and ground allspice to the pan. Stir well to coat the meat with the spices. Season with salt and pepper to taste.
  • Remove the pan from the heat and let the meat filling cool completely.
  • In a mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.
  • Add the melted butter, warm water, plain yogurt, and lightly beaten egg to the bowl. Stir until a dough forms.
  • Transfer the dough to a floured surface and knead it for about 5 minutes, until smooth and elastic.
  • Divide the dough into 12 equal pieces and roll each piece into a small circle.
  • Place about 1 tablespoon of the cooled meat filling in the center of each dough circle. Fold the dough in half to enclose the filling and press the edges to seal.
  • Repeat with the remaining dough circles and filling.
  • Heat vegetable oil in a deep pan or fryer to about 350°F (180°C).
  • Fry the sambousek in batches for about 3-4 minutes, until golden brown and crispy.
  • Remove the sambousek from the oil and drain on a paper towel to remove excess oil.
  • Serve hot and enjoy!

Wow—simple and delicious. Kids asked for seconds. 350°F worked for me, and frying 3 minutes was perfect. Gonna make these for guests.

  2. User avatar roland.kertzmann0 says:

    4 stars
I’m not a great cook, so I appreciate the clear steps. Folding and sealing was kinda messy, but after frying they held together enough.

  3. User avatar emile.daugherty32 says:

Five stars! Fast, delicious, and smells like a Middle Eastern bakery.

    1. User avatar agustin.leannon says:

      5 stars
Five stars for sure—made these last night and they smelled EXACTLY like a bakery. Crispy outside, juicy inside.

    2. User avatar Barliman Butterbur says:

      5 stars
I followed it pretty much and they came out great! The spice mix is spot on. Only thing: my dough needed a tiny bit more water.

  4. User avatar earnest.schulist2002 says:

These were a hit at my family dinner. Everyone was grabbing them before they even got cold. I’ll make double batch next time.

    1. 5 stars
Haha love that—sounds like they disappear fast! Double batch is always the move 😄

  5. 3 stars
I tried making these for the first time and honestly it’s a lot of steps for something you might eat once and forget. BUT my family didn’t complain, so that’s something.

    1. User avatar Mrs. Miquel Veum says:

      3 stars
Not gonna lie, 12 pieces + frying batches sounds like a whole project. I’d rather just do like, hand pies and bake them—same flavor, less mess. Did you try an oven version?

    2. User avatar maya.farrell1967 says:

      4 stars
Totally get that—there are a lot of steps the first time. But once you’ve done it, it’s almost like an assembly line. And yeah, if your family didn’t complain, that’s basically a win 😄

  6. User avatar Zaphod Beeblebrox says:

    2 stars
Not sure about the dough. 1/2 cup water + yogurt + egg felt like too much liquid. Mine tore when folding, but I salvaged them by patching with extra dough.

  7. User avatar Cammar Pilru says:

    4 stars
I was skeptical about the baking powder + yogurt dough, but it actually worked. Next time I’ll add a tiny pinch more salt to the filling, but overall really good.

  8. User avatar ShanksOnePiece says:

Not gonna lie, I was skeptical about frying 3-4 minutes—felt short. But they came out golden and crispy, so I guess the timing is right. Love the Lebanese vibe.

    1. 5 stars
Same! I thought 3–4 mins would leave them pale, but once they’re golden you know they’re done. That Lebanese vibe hits every time 😄

    2. 4 stars
I mean… 350°F for 3 mins sounds kinda fast, unless the dough is super thin. Still, if they were golden + crispy then your oil temp was probably on point. Nice!

  9. User avatar rayford.bauch64 says:

    5 stars
These are amazing! Perfectly crispy and packed with flavor. Definitely a new favorite in our house! 🌟

  10. User avatar antonietta.kirlin1950 says:

This is the best thing I made all week. Lebanese food hits different. Also the smell while frying?? unreal. 10/10 would do again.

  11. User avatar blake.tremblay1 says:

    4 stars
Love Lebanese food, so I was excited—but the dough felt a bit weird at first. After kneading 5 min it came together though. Frying time took me longer than 3-4 minutes.

  12. User avatar gladis.connelly says:

    2 stars
I don’t know about all these spices, seems excessive. Can I just use salt and pepper?

  13. 4 stars
These are great if you want something crispy, but the frying step is intense lol. I burned my first batch because I forgot to keep the oil at temp.

  14. 5 stars
Made these for my family and they disappeared fast. The filling is super flavorful—cumin + allspice combo is on point. I did need a little extra sealing pressure so they didn’t pop, but otherwise perfect.

    1. 5 stars
Yes! That cumin + allspice combo is the whole vibe. Glad they stayed sealed for you too 👏

  15. User avatar eleonore.carroll95 says:

    5 stars
Yum!!!!!!! My mom used to make something similar, this reminds me of childhood!

    1. User avatar jacques.ohara1956 says:

      5 stars
Aww, that’s so sweet! Food really does bring back memories. My grandma made them too! Can’t wait to try this recipe!

    2. 3 stars
Looks good but sambousek should have more spices! I think there’s not enough flavor in here. Anyone else think so?

  16. User avatar jeremy.satterfield1981 says:

    2 stars
I tried this and they were greasy. I drained on paper towel but still… maybe my oil temp wasn’t 350°F? I’ll try again with a thermometer.

  17. User avatar Frodo Baggins says:

    4 stars
Sambousek is my favorite! Wish I could say they turned out as good as the ones back home.

    1. 4 stars
Maybe it’s the ingredients? I did it straight from my grandma’s recipe and they came out perfect! You gotta give it another try!

  18. User avatar sid.adams40 says:

    3 stars
I followed the recipe but mine came out a little doughy. Maybe I didn’t knead long enough? Should’ve cooked them longer.

  19. User avatar Tom Bombadil says:

    3 stars
Honestly, I’m skeptical about frying time. 3-4 minutes felt too short for my batch and they were pale inside. Next time I’ll add a minute and keep the oil hotter. Could be my fryer though.

  20. User avatar chantal.mraz82 says:

    5 stars
These sambouseks are amazing! Just like my grandma used to make. 😍

  21. User avatar brigid.huels98 says:

    2 stars
I don’t know about the spices, too much cumin for my taste. Not my favorite.

  22. 3 stars
The spices are really fragrant, but I found it a little too heavy on cumin for my taste. Next time I’ll cut cumin in half and add a pinch more cinnamon for balance.

  23. User avatar Chi Shenlong says:

    3 stars
Not gonna lie, 12 pieces for 1 lb beef seems small—mine had less filling per pocket. Still yummy though, and the spices are on point.

  24. User avatar Falmer Archer says:

    5 stars
Delicious!! 🤤 I could eat these every day! Best sambousek ever!

  25. User avatar howard.roob says:

    5 stars
My family says this is “almost restaurant,” so I’m taking that as a win. I also chopped the onion finer and it cooked down nicer.

    1. User avatar erick.ankunding1958 says:

      5 stars
“Almost restaurant” is the best kind of compliment 😄 And nice call on chopping the onion finer—getting that cook-down really helps the filling taste more cohesive.

    2. User avatar rickiestmorty says:

      3 stars
I tried something like this but my dough never got smooth… I think my water wasn’t warm enough? Also, Lebanese sambousek is usually baked or steamed in my memory, not deep fried—still, 350°F seems right though.

  26. User avatar yetta.raynor84 says:

    3 stars
I don’t get why you have to fry them. Can’t you just bake them instead? Seems like a lot of oil.

  27. User avatar lorene.padberg1952 says:

    5 stars
Yum! Made these for a party and they disappeared in minutes! Everyone kept asking for the recipe!

  28. User avatar joella.keeling says:

    5 stars
Wow. easy and taste so good. My family ate like 2 per person lol

  29. 3 stars
I burned the first batch (my oil ran hotter than I thought). The second batch was perfect. 350°F is no joke—watch it!

  30. User avatar Grìma Wormtongue says:

    3 stars
Good recipe but the cooking time seemed off? Mine ended up a bit burnt.

    1. 4 stars
I had the same issue! Maybe my oil was too hot? I just couldn’t get it right. Still, they tasted great despite the burn! 🥵

  31. User avatar yesenia.green1986 says:

    4 stars
dis was good but my dough was too tough to roll… not sure if it was the recipe or me. 🤷‍♂️

    1. User avatar sharolyn.leannon says:

      4 stars
Sounds like you might’ve needed more water while mixing? Dough can be finicky, especially if you’re not used to it. I thought it was a great recipe tho! 🍽️

  32. User avatar kenna.padberg99 says:

    4 stars
Yum! The cinnamon gave a nice twist! My boyfriend loved them too. Thanks!

  33. User avatar rich.landlord says:

    5 stars
Lebanese beef sambousek is basically comfort food. I love that you cool the filling before assembling—keeps everything together. Great step-by-step instructions!

    1. User avatar jerrod.witting says:

      3 stars
I’m not sure about the warm water + yogurt + egg part… feels like it could make the dough too wet? Maybe I’m doing something wrong, but mine usually comes out tougher. Still sounds tasty though.

    2. User avatar reginia.kiehn says:

      5 stars
Yes!! Cooling the filling makes such a difference—I’ve had sambousek explode before when I didn’t. These instructions look spot on, especially the spices combo.

  34. User avatar theron.hills33 says:

    4 stars
Not gonna lie, I was skeptical about baking powder in sambousek dough, but it actually makes sense. Texture was nice—crispy outside, tender inside.

  35. 2 stars
I think the filling needs more seasoning. Salt and pepper “to taste” is fine, but honestly it was a little bland for me. Add more allspice/cinnamon and it’s better.

    1. User avatar cedrick.walsh56 says:

      5 stars
Totally agree—mine always tastes a little muted until I go a bit heavier on the allspice/cinnamon. I usually add a pinch more of each even if I’m already “to taste.”

  36. User avatar tony.nicolas1982 says:

    2 stars
I dunno, spirits up… the dough was hard to work with. Not sure I’ll make again. 🙁

  37. User avatar gabriel.murray1952 says:

    4 stars
I followed the steps exactly and they came out golden, but my dough felt a little tough. Maybe I kneaded too long? Still tasty though—would make again.

  38. User avatar madelene.ferry says:

    4 stars
The spices are the star. Cumin/coriander/cinnamon/allspice combo tastes super authentic. I did forget to drain fat from the beef and my sambousek was slightly greasy, but still yummy.

  39. 4 stars
My dough didn’t come together at first because my water wasn’t warm enough. I added a splash more warm water and it worked. Good guide overall.

  40. User avatar Reg Nullify says:

    5 stars
Made these last night and they were a hit. The spices in the beef smell amazing while cooking—followed the instructions pretty closely and they came out golden and crispy.

  41. User avatar joe_banana says:

    3 stars
Not sure if I messed up but my dough was too sticky. Maybe my yogurt was watery? Still tasted good, just harder to work with.

    1. User avatar bethann.stroman1989 says:

      5 stars
Totally plausible—watery yogurt can definitely make the dough too sticky. If it happens again, try chilling the dough 15–20 min (or adding a little more flour a tablespoon at a time) before rolling.

  42. User avatar burl.baumbach says:

    5 stars
Lebanese food is always the best! Sambousek is the perfect snack for parties!

    1. User avatar buddy.mclaughlin73 says:

      2 stars
I dunno, sambousek is good but have you tried egg rolls? They’re like the same but sooo much better! Just sayin’.

    2. User avatar antonia.mcglynn1995 says:

      5 stars
Absolutely! I love sambousek too! They make every party so much better! Can’t wait to try this recipe!

  43. User avatar ismael.considine2003 says:

    4 stars
Made this for a party and everyone loved it! So tasty and surprisingly easy! 🤤

  44. User avatar rich.landlord says:

    3 stars
I’m not saying it’s bad, but the dough felt weirdly soft even after kneading. Maybe my flour brand is the problem? Fried up okay, just not super crispy.

  45. User avatar sharonda.ernser73 says:

    4 stars
I followed it pretty closely—only swapped butter for ghee and used a little extra garlic. Still delicious. Next time I’ll make them slightly smaller so they fry more evenly.

  46. User avatar lawrence.beatty23 says:

    5 stars
Sambousek is my comfort food and this is legit Lebanese-style vibes. The spices are balanced, not too much cumin, and the yogurt in the dough is genius.

  47. User avatar Hasimir Fenring says:

    4 stars
Samosas??? Or sambousek? What’s the diff? They taste good!

  48. User avatar maura.wiegand2006 says:

    4 stars
Pretty solid recipe! I followed it mostly, but my dough was a bit sticky even after kneading. Next time I’ll add a touch more flour—still tasted great though.

  49. User avatar Effrafax of Wug says:

    5 stars
Tried these tonight and they were AMAZING—crisp outside, flavorful filling, and not too hard once you get into the folding rhythm. I added a little chopped parsley to the beef and it made it pop.

  50. User avatar laurence.konopelski88 says:

    4 stars
I’m skeptical about baking powder in this style of dough? But honestly they still turned out fluffy-ish and not flat, so… okay, you convinced me.

    1. User avatar rebecca.crooks65 says:

      4 stars
I used only yogurt and butter before, no baking powder, and mine were flatter. Maybe the powder helps the dough puff just enough before it seals. Good call trying it.

    2. 5 stars
Same—also thought baking powder would mess with the dough texture. But once they fry up golden they keep that nice puff. Yours sounds spot on.

  51. User avatar lily.mosciski says:

    5 stars
Lebanese beef sambousek is my comfort food, so I was excited to try this. The spice blend tastes authentic, and the size (12) was perfect for snacking. 10/10 would serve at a party.

  52. User avatar marquetta.okon says:

    1 star
This was too complicated. Just buy them from the store, much easier.

  53. User avatar mathew.williamson82 says:

    2 stars
I had trouble with the dough. It wouldn’t come together and just fell apart. Not sure what I did wrong.

  54. 5 stars
Lebanese sambousek is my comfort food, and this is close! I like that the filling gets cooled first—mine didn’t leak. Great instructions.

    1. 3 stars
I tried it but my dough was kinda tough and wouldn’t seal right—maybe my warm water was too hot? Also 12 pieces seems small; I ended up with more like 15. Still tasty though.

    2. User avatar carmine.hansen says:

      5 stars
Yes!! Lebanese sambousek is also my comfort food—this sounds super authentic. I love that you cool the filling first; that’s usually the difference between perfect vs. leaking mess 😄

  55. 4 stars
Kinda skeptical about using yogurt in the dough, but it worked! The dough was tender and not oily. Next time I’ll season the yogurt dough a tiny bit more.

    1. 5 stars
Honestly I was skeptical too—yogurt sounds like it would make the dough tangy or too soft. But if it didn’t get oily, that’s a win. I’d probably add a pinch more salt in the dough like you said.

  56. User avatar quentin.padberg67 says:

    3 stars
350°F feels kinda high for 3-4 minutes… mine browned fast and the inside was slightly less crisp. Maybe my oil temp was off, but I think I’d lower it next time.

  57. User avatar Tom Bombadil says:

    3 stars
I tried these and they came out… kinda greasy. I think my frying temp wasn’t really 350°F. They were crispy, but the oil definitely showed.

  58. User avatar erich.christiansen47 says:

    5 stars
I used ghee instead of butter and somehow it still turned out great. The smell while frying is unreal. Will make again for sure!

  59. User avatar mackenzie.wolf25 says:

    3 stars
I followed the steps exactly and they kinda exploded a bit in the fryer 😅 Maybe my edges weren’t sealed right or the oil wasn’t at a steady 350. Flavor is still delicious.

  60. User avatar Hillman Hunter says:

    3 stars
Not bad but I prefer my mom’s recipe. She adds more spices. This one felt a little bland.

  61. User avatar dannie.schumm2005 says:

These sambousek are delicious! My family loved them. Will definitely make again!

    1. User avatar Questular Rontok says:

I’m glad to hear your family loved them! I made these last week and they disappeared faster than I could serve them! Definitely a new favorite.

  62. User avatar winford.morar2010 says:

Made these for my kids, they loved it! Easy to make too. ❤️

    1. 5 stars
So glad your kids loved it! They really are super easy to make. ❤️ Did you add anything special to the filling?

    2. User avatar lillian.goldner says:

      2 stars
I don’t think these would be that great for kids. Never heard of sambousek before. Are they even healthy?

  63. User avatar indira.kozey58 says:

    4 stars
Could use more instructions for the dough—like how thick to roll the circles. Still, the end result was really yummy. Wife approved 😂

  64. User avatar von.quitzon57 says:

    2 stars
Honestly, I don’t get why everyone loves this. Mine turned out too oily and a bit bland. Maybe I messed up?

  65. User avatar celena.bosco17 says:

    3 stars
Good recipe, but why is there yogurt in dough? Seemed weird to me. 🤔

  66. 3 stars
Way too much cumin for my taste. I know spices are the point, but 1 tsp each of cumin/coriander/cinnamon/allspice felt like a lot. Next time I’ll cut it down.

  67. 2 stars
I don’t really understand the dough measurements—2 cups flour but only 1/2 cup water plus yogurt? It felt dry until I adjusted. Recipe needs clearer dough consistency cues.

  68. 3 stars
They came out kinda dry, I think I put too much flour in the dough. Any tips?

  69. User avatar Casey Casper says:

    3 stars
Followed the recipe step by step but they weren’t as crunchy as I wanted. Still tasted good but could be better.

  70. User avatar coretta.weissnat21 says:

    4 stars
Pretty good! I used a little extra cumin because I like it bold. Next time I’ll make sure the filling is really cool before sealing; mine leaked a bit.

    1. User avatar cindie.mcdermott61 says:

      5 stars
Nice—extra cumin is the way. Cooling the filling really is key; mine did that too once and it was messy haha.
