Lamb Ragu

October 8, 2025

Rich, hearty, and deeply flavorful, lamb ragu is a comforting Italian-inspired dish that turns a humble cut of meat into something truly luxurious. Slow-cooked until tender and melt-in-your-mouth, the lamb develops a depth of flavor that’s both rustic and elegant. The base of the ragu starts with aromatic onions, garlic, and carrots sautéed until sweet and golden, creating a flavorful foundation. Tomato paste, crushed tomatoes, and a splash of red wine are added to build a rich, robust sauce that slowly simmers and concentrates, infusing the tender lamb with complex layers of flavor.

The key to a perfect lamb ragu is time. As it cooks low and slow, the meat breaks down, becoming soft and luscious while the sauce thickens into a velvety consistency. Herbs like rosemary, thyme, and bay leaf add earthy warmth, while a hint of chili flakes brings gentle heat. A final touch of butter or grated Parmesan stirred in at the end gives the sauce a silky finish and a touch of richness that makes every bite satisfying.

Lamb ragu is traditionally served over fresh pappardelle or tagliatelle, where the wide ribbons of pasta hold onto the sauce beautifully. It’s also delicious spooned over creamy polenta or served with crusty bread like Irish soda bread, to soak up every last drop. A sprinkle of fresh parsley or mint on top adds brightness, balancing the richness of the dish.

This is the kind of meal meant for slow Sunday dinners, cozy nights in, or gatherings with friends, food that’s cooked with patience and meant to be shared. With its tender, flavorful meat and deeply savory sauce, lamb ragu is a dish that feels both comforting and sophisticated. It’s a perfect example of how simple ingredients and time-honored techniques can come together to create something truly memorable.

This is NOT an Italian recipe! Real ragu doesn’t have canned tomatoes, you should use fresh ones.

  2. 4 stars
Sounds fancy, but I kept it simple. Just threw everything in a slow cooker, worked great!

  3. User avatar kacy.welch says:

    4 stars
Yuuum! I didn’t have lamb so I used beef, still turned out delicious. Thanks for the recipe!

  4. 5 stars
This ragu was amazing! The lamb was so tender, and the flavors are just perfect. Will definitely make it again!

  5. User avatar Frost Giant says:

Too much thyme I think. I mean, I like it but not in big doses. I might add less next time.

    1. 4 stars
I think you might be onto something! Thyme can really take over a dish if you’re not careful. Less is more sometimes!

  6. User avatar ezequiel.johnston14 says:

    5 stars
My husband loved it! He said it’s the best ragu he has ever tasted. Easy to follow too!

  7. User avatar scotty.wyman says:

I dunno, it came out a bit too greasy for me. Maybe I used too much oil? Not sure if I’ll try again.

Good but took way longer than 2 hours. Maybe my stove is low, any tips?

Absolutely loved this recipe! The lamb was so tender and flavorful, will definitely make it again!

  10. User avatar Falmer Archer says:

Not bad, but the flavor felt a little flat to me. Next time I’ll increase the herbs or add a bay leaf. Also, I under-salted at first—oops.

Yum! Just what I was looking for. Perfect for a cozy night in!

Ragu is not pasta sauce, but this was still good! Maybe add some parmesan on top next time.

Easy and delicious! Perfect with pasta. My kids loved it, too!

This is exactly the kind of cozy ragu I love. Browning the lamb first makes a huge difference—my kitchen smelled amazing for hours.

    1. User avatar bart.larson87 says:

      5 stars
Yes! Browning the lamb is the make-or-break step. The smell for hours is so real 😍

  15. User avatar patrick.cartwright says:

I substituted beef for lamb and it worked! Not exactly authentic, but hey, still delicious.

  16. User avatar jean.smitham says:

Used chicken instead of lamb cuz that’s all I had. It worked okay but felt a bit off.

    1. User avatar elton.macgyver72 says:

      2 stars
Chicken? Really? That sounds like a fail. I don’t think that’s how ragu is supposed to be made. Better off sticking to lamb next time.

    2. 4 stars
I’ve done that with chicken before too! It tastes different, but it’s still tasty. Just needs more seasoning, you know?

  17. 4 stars
Simple and delicious! My whole family enjoyed it. Even my picky kid liked the pasta.

  18. 1 star
too many steps! I just wanted something quick. I don’t have time for all that chopping and waiting.

  19. 2 stars
Where’s the spices? I could hardly taste anything other than the meat!

Lamb?! Nah, I prefer chicken. My husband loved it, though, he says it’s better than any restaurant.

This sounds absolutely comforting. Browning the lamb first makes a huge difference—will try it with tagliatelle.

  23. 4 stars
I’m a little skeptical about only 2 hours; lamb shoulder can be stubborn. I’d probably check at 1.5 hours and go longer if needed.

  24. User avatar robbie.ledner73 says:

    5 stars
Yum! Even my kids loved it! I serve with spaghetti and they gobbled it up.

  25. User avatar nicolle.moore says:

I dunno, I think it could be better if you add some red wine. Can’t go wrong with wine, right?

  26. 2 stars
I don’t know why everyone is raving about this. Mine turned out kinda bland, maybe I forgot salt or what. 🤷‍♂️

    1. User avatar terminatorXYZ says:

      3 stars
Bland? Really? I’ve made this twice and it was bursting with flavor! Maybe check the recipe again? 🤔

    2. User avatar anderson.langworth says:

      4 stars
I think you might just need to adjust the flavors! Adding a bit more salt can really help. I made it last week and it was delicious! 🍝

  27. User avatar Tom Bombadil says:

    5 stars
This lamb ragu was simply to die for! I made it for my family and they couldn’t stop eating. Definitely making it again!

    1. User avatar darwin.mcdermott says:

      5 stars
So glad to hear that! It’s always a hit with family, isn’t it? What did you serve it with?

  28. 1 star
I burnt the garlic & it ruined the dish. 😭 Gonna try again with less heat.

    1. User avatar mark.leffler2 says:

      3 stars
Why was the heat so high? You need to cook it low and slow for the best flavor. Garlic should be golden, not black! 😬

    2. User avatar joana.senger1 says:

      4 stars
Burnt garlic can ruin a dish for sure! I’ve done that before too. Just keep an eye on it next time and it’ll be perfect! Good luck! 😊

    Ragu is life. 10/10

  30. User avatar Ford Prefect says:

    2 stars
Lamb isn’t for everyone. It came out too greasy for my taste. Not sure I’d make it again.

  31. User avatar leida.mccullough says:

    3 stars
I used turkey broth once instead of beef and it tasted… kinda flat. Beef broth really matters here. Lesson learned.

    1. User avatar jeanmarie.little12 says:

      5 stars
Totally agree—beef broth has that deeper body. Turkey broth can be lighter/more watery, so the ragu ends up tasting “almost there” instead of rich.

    2. User avatar greg.zulauf34 says:

      3 stars
Honestly i dont think broth should matter that much… but if it tasted flat then yeah, beef gives more flavor. Next time maybe add more salt or a little tomato paste to boost it?

  32. 3 stars
Honestly, I thought lamb ragu would be more complicated. This was easy but too long to cook! Ugh!

  33. 4 stars
I’m skeptical of the oregano/thyme combo for lamb ragu—feels too “pizza seasoning” to me—but it actually turned out balanced. Weirdly good!

  34. 1 star
Lamb is too greasy for my taste. Anyone else feel that way? 🤢

  35. User avatar Trina Forest says:

    4 stars
I was skeptical about using beef broth, but it actually worked. I served it over polenta and my family went back for seconds.

  36. User avatar Piter De Vries says:

    3 stars
Did ya really need beef broth? I used chicken instead, and it tasted funny. Still edible, but won’t do that next time.

    1. 4 stars
Hmm, chicken broth usually doesn’t work as well for beef recipes. It’s kinda like switching shampoo and expecting the same results! Stick with the beef broth next time.

    2. User avatar Frost Giant says:

      2 stars
Idk, I think chicken could be fine too. Meat is meat, right? Might just taste a bit diff but who cares. 😄

  37. User avatar johnie.macejkovic1958 says:

    4 stars
Pretty solid basic ragu. I added a pinch of chili flakes and a splash of red wine because… well, why not. Still very close to your method.

    1. User avatar irvin.donnelly9 says:

      5 stars
Love the chili flakes idea—little heat never hurts. Red wine too makes sense for extra depth. Glad it stayed close to the method!

  38. User avatar kim.russel2003 says:

    5 stars
This was sooo good! My family loved it and I will definitely make it again!

    1. 3 stars
Really? I thought it looked a bit too complicated with all that cooking time. Is it worth it?

    2. 5 stars
I’m glad you liked it! It’s a family favorite over here too. Trying it again with some fresh herbs next time!

  39. User avatar fred.bashirian says:

    5 stars
Wow, this was amazing! The lamb was so tender and flavorful. Will definitely make again!

  40. 4 stars
I was a bit skeptical about using canned tomatoes… But it surprisingly turned out great! Good flavor overall.

  41. User avatar Falmer Shaman says:

    3 stars
Eh, it was OK. Kinda took a long time and I was hungry by the time it was ready. Next time, I’m ordering takeout.

    1. User avatar Captain Ginyu says:

      5 stars
But it’s sooo worth the wait! The flavors are amazing after slow cooking. You should try it again, maybe when you’re not as hungry.

    2. User avatar angelica.mitchell says:

      4 stars
I get what you mean! Waiting too long when you’re hungry is the worst. Maybe it’s easier to cook something quicker next time?

  42. 4 stars
Solid recipe, but I added a splash of red wine at step 3 because… why not? Also simmering closer to 2.5 hours made the meat super tender.

  43. User avatar freeda.lowe says:

    3 stars
I dont have beef broth so I used chicken. Turned out fine, but kinda bland—needed more salt for sure.

  44. User avatar vergie.bogan says:

    2 stars
Too much thyme. It was okay… but coud be better. Needs adjustment!

    1. User avatar Siona Atreides says:

      3 stars
Too much thyme? I think lamb needs strong flavors! But I get it, taste is subjective.

    2. 5 stars
I loved it! The thyme gives it a nice flavor. Maybe you just added too much? Give it another shot!

  45. 3 stars
Mine needed more time—2 hours wasn’t enough for my lamb chunks (maybe they were bigger). Once I extended to closer to 2.5 hours, it finally got tender.

    1. User avatar Su Shenlong says:

      5 stars
Totally agree—2 hours can be tight depending on chunk size. I usually go by tenderness, not the clock. 2.5 hours sounds spot on.

    2. 4 stars
Maybe your lamb was tougher (or the heat was too low/high). But yeah, I’ve learned to just keep simmering until it flakes. My chunks were bigger once and I needed an extra hour.

  46. 3 stars
I don’t like lamb usually, but this recipe was alright. I swapped lamb for beef, and it turned out fine.

    1. User avatar Genghis Khan says:

      4 stars
That’s great to hear! Beef can actually be a good substitute for lamb. I might try that next time too!

    2. User avatar tanner.kulas says:

      2 stars
But isn’t that like totally changing the recipe? I don’t know, seems weird to me. Lamb is the thing!

  47. 5 stars
I doubled the garlic (oops) and it was still great. My partner said it tasted like restaurant quality. So yeah, 10/10.

  48. User avatar angie.damore says:

    2 stars
I think I did something wrong. Mine turned out too salty. Followed the salt measurement to a T!

    1. User avatar ArabianNights says:

      4 stars
Maybe try using less salt next time? It can happen, don’t worry!

  49. User avatar alisia.beahan says:

    5 stars
Lamb is not my fav meat, but this recipe made me a believer! I might even try it with chicken next time. 🤷‍♂️

    1. User avatar aubrey.hessel2006 says:

      2 stars
Hmm, I’m not sure. Lamb is just too strong for me. Chicken? That seems way too easy. 🤔

    2. 5 stars
Glad to hear you enjoyed it! Lamb can be a game changer. Chicken should be good too, but don’t forget to adjust cooking times.

  50. User avatar junie.ernser38 says:

    2 stars
This ragu was too oily for my liking. I ended up not finishing it. 😕

    1. 4 stars
I disagree! I thought it was perfect. Maybe you used too much oil?

    2. User avatar adrian.little says:

      3 stars
Yeah, I found it oily too! I just added more tomatoes to balance it out. 🤷‍♀️

  51. User avatar carson.beer says:

    4 stars
Yummy! I served it with some garlic bread and it was perfect. Thanks!

    1. User avatar jackie.sipes says:

      5 stars
That sounds so good! Garlic bread is a perfect match for ragu. I’m making it this weekend!

  52. User avatar terminatorXYZ says:

    3 stars
what is lamb? Never heard of it, sounds fancy though. I might try but with chicken instead lol.

  53. User avatar rossie.oconnell says:

    5 stars
I added a splash of red wine and it was fantastic! Really brought out the flavors. Highly recommend!

    1. User avatar Niranye says:

      4 stars
I never thought of adding wine! I usually stick to just broth. Gonna try it next time.

  54. User avatar Donovan Jaskolski says:

    2 stars
Not sure what went wrong, but mine came out pretty bland. I think I might’ve messed up the seasonings? But I’ll try again.

  55. User avatar rodrick.oreilly98 says:

    5 stars
Five stars. Easy. Tastes like grandma made it.

  56. User avatar Shayna Cummerata IV says:

    4 stars
I skipped the thyme ’cause I didn’t have it, but still turned out nice! #ImprovCooking

    1. User avatar reggie.gaylord54 says:

      5 stars
Sounds great! I love improvising in the kitchen too. Gonna try this next time! 😊

  57. 4 stars
This was easy and forgiving. Also, browning the lamb before simmering makes a big difference. Simple but tasty.

    1. User avatar GOPster says:

      4 stars
Easy for sure, but I feel like 2 hours was a bit short for my lamb. I ended up simmering longer and it was way more tender. Still tasty though!

    2. User avatar larae.oberbrunner86 says:

      5 stars
Totally agree—browning the lamb really boosts the flavor. I did the same and it came out rich and not at all fussy.

  58. User avatar Prostetnic Vogon Kwaltz says:

    5 stars
    One word: delicious.

  59. User avatar Rob McKenna says:

    4 stars
I’m skeptical about oregano + thyme with lamb. It sounded weird, but it actually worked. My whole kitchen smelled like comfort.

    1. User avatar larry.bogisich27 says:

      5 stars
Okay, I was also side-eyeing the oregano + thyme combo with lamb… but your “comfort” description convinced me 😂 I’m trying this next week!

    2. 3 stars
Not gonna lie, oregano + thyme on lamb sounds like pizza herbs… but if it smelled good then maybe I’m wrong? I’ll still probably add more garlic though.

  60. User avatar johnathon.renner40 says:

    4 stars
I followed the recipe but added some red wine for depth. Turned out pretty good, but my husband said it needed more salt.

  61. 4 stars
Good base recipe, but I think 2 hours is a little optimistic depending on your lamb chunk size. Mine took closer to 2.5 hours.

  62. User avatar dee.towne82 says:

    3 stars
Honestly, it’s missing something for me—like a little sweetness or acidity. Tomatoes alone felt flat. Maybe I needed longer simmering.

    1. User avatar cedrick.jacobi says:

      3 stars
Huh, I dunno. I made this and it was fine, but I simmered way longer like 3 hours and it got way richer. Maybe you should just let it go longer not add stuff.

    2. User avatar jolyn.ebert says:

      4 stars
I get what you mean. Tomatoes can taste kinda flat on their own. Next time I’d add a small splash of vinegar or a pinch of sugar when you simmer—just a little, then taste.

  63. User avatar columbus.douglas says:

    2 stars
I don’t know… lamb shoulder can be kinda gamey. I think you need to manage the heat better and not overcook it or it gets weird.

  64. User avatar boyd.oconnell says:

    5 stars
This was AMAZING! The lamb was so tender and flavorful, it melted in my mouth. Definitely a keeper!

  65. User avatar silas.cruickshank2012 says:

    4 stars
The flavor is great, but I’d add a splash of red wine next time. Also, I forgot the salt at first—still tasty though.

  66. User avatar ramiro.abernathy1964 says:

    4 stars
Pretty straightforward, but I think 2 hours might be short for some lamb cuts. I ended up cooking closer to 2.5 and it turned out way more tender.

  67. 5 stars
Made this with ground lamb I had instead of shoulder—still tasted amazing. The herbs really came through. Will definitely do again.

    1. User avatar Ladawn Rippin says:

      3 stars
Wait, ground lamb instead of shoulder? Wouldn’t it get all dry after 2 hours? But hey, if you liked it, I guess it worked. 😂 What pasta did you serve it with?

    2. User avatar Dwarven Centurion says:

      5 stars
That’s awesome! Ground lamb can definitely change the texture, but if it still tasted amazing, I’m sold. 😊 The herbs really do shine in this one.

  68. User avatar gene.effertz10 says:

    4 stars
Nice recipe, but can I use chicken instead? I don’t have lamb on hand.

  69. User avatar cockroach says:

    1 star
Lamb and pasta together? What a weird combo! Didn’t taste that great to be honest.

  70. User avatar Dwarven Centurion says:

    1 star
What the heck is ragu? Why not just call it lamb stew? So confusing. 😩

  71. User avatar Patton Down DeHatches says:

    4 stars
I followed it pretty closely, and it was good, but my sauce ended up a bit thin. Next time I’ll simmer uncovered longer to thicken it.

    1. User avatar florencio.dickens says:

      5 stars
Yes! Uncovered simmering is the trick. I usually cook it a bit longer too—like 30–45 min extra—and it thickens right up without needing anything fancy.

    2. User avatar Samwise Gamgee says:

      4 stars
Mine did the same thing once. I think covering too tight makes it watery? Next time try using less broth or just simmer less covered. Also make sure it really comes to a low simmer, not a boil.

  72. User avatar Shaddam Corrino IV says:

    3 stars
I followed it but my sauce didn’t thicken much. Tasted good though. Next time I’ll simmer uncovered for longer or add a little tomato paste.

  73. User avatar Shaddam Corrino IV says:

    3 stars
I don’t know… it wasn’t bad, but the sauce was too thick for my taste. Maybe more broth next time?

    1. 4 stars
I thought the sauce was just right! But maybe you like it more soupy? Try adding some more broth next time!

    2. User avatar jeffry.connelly21 says:

      3 stars
Thick sauce is the best! It clings to the pasta better. Just mix in some water if it’s too much for you.

  74. User avatar esteban.thompson says:

    3 stars
Could be just me, but 1 cup beef broth seemed low. I had to add a bit more liquid midway so it wouldn’t reduce too hard.

  75. User avatar bethanie.shanahan9 says:

    2 stars
Took way too long to cook! I thought it would be faster, but the 2 hours was a lot of waiting. Not worth it.

    1. User avatar elden.prohaska says:

      4 stars
I get that, 2 hours is a lot! But the flavor is what makes it worth it in the end. Maybe prep some sides to keep you busy while waiting?

  76. User avatar Falmer Archer says:

    4 stars
Looks great, but why beef broth? Could I swap with chicken broth or even water? Either way I bet it’ll be tasty.

  77. User avatar rupert.stracke41 says:

    3 stars
Okay but why is there only 1 cup broth? My pot looked dry so I ended up adding more liquid. Still turned out good though!

Good question—1 cup might be the “start” amount depending on your pot and how much liquid cooks off. The tomatoes also break down and add body, so you’re not crazy for topping it up. Glad it turned out well!

This came out super rich and cozy. Browning the lamb was key—my sauce actually smelled like a trattoria. Used fresh thyme too and it was awesome.

The herb combo is perfect. Oregano + thyme is such an easy win. Also polenta sounds so right with this.

Yes!! Oregano + thyme really does hit the sweet spot. Polenta with lamb ragu is such a cozy combo.

Beef broth with lamb seems weird to me, not gonna lie. I used chicken broth instead and it was fine, but I still think lamb stock would be better.

  81. 2 stars
Could be me, but I think I browned the lamb too long and it got slightly chewy. Sauce was great though.

  82. 2 stars
uhh 500g lamb shoulder, ok… but how thick is the chunks? sorry my brain wants exact sizes lol

Not gonna lie, my onions burned a little while browning the lamb. Sauce was saved, but it lost some sweetness. Otherwise solid recipe.

Ahh yeah, onions can go from “browned” to “burned” super fast once the lamb’s in there. I’ve found lowering the heat and adding the onions a minute or two before the garlic helps keep that sweetness. Glad the sauce was still saved though!

Man, burned onions ruins everything 😅 Why not just use onion powder? Also 2 hours seems short for lamb shoulder—mine needs like 3-4 or it’s chewy. But hey if your sauce held up, maybe it’s fine.

No offense, but the ingredient list feels a little bare—like where’s the bay leaf or parmesan? It’s tasty, just missing that “restaurant” oomph.

    1. User avatar Draugr Deathlord says:

      4 stars
No worries! I get what you mean—bay leaf and parm can totally give that “restaurant” depth. I didn’t include them, but adding 1 bay leaf while it simmers and finishing with grated parmesan would be an easy upgrade.

Bay leaf? I never use it and still turns out good lol. Parmesan is nice but it’s already rich with the lamb and tomatoes. Maybe just cook it longer until it really thickens, then you won’t miss anything.

Could use more liquid—mine reduced too much and got thick fast. Might be my pot or heat level, but I’d add a splash more broth next time.

    1. 5 stars
Yeah I agree—mine thickened way too fast too. I ended up adding an extra splash of broth halfway and it fixed it. Might just be different pots/heat, but adding a little more up front is smart.

Not sure I’d say “more liquid” is the fix. If you simmer on low and keep it covered, it shouldn’t get thick that quickly. Maybe your lamb was cooking uncovered or your heat was too high? I’ve never needed extra broth with this amount.

This turned out so tender! I browned the lamb a bit longer than the recipe says and it made a big difference. The herbs with the tomatoes are perfect.

Huh, I did it exactly like the recipe and mine was kinda chewy… maybe I didn’t brown enough? Next time I’ll try your longer-brown method. Also oregano + tomatoes never fails.

    2. 5 stars
Yes!! Browning the lamb longer is the key—I always do that too. Glad the herbs/tomatoes combo hit for you.

2 hours felt a little short for my chunks—maybe my lamb was bigger? I simmered closer to 2.5 hours and then it was great.

I followed it pretty much exactly, and the 2 hours worked well for tender lamb. Sauce thickness was perfect for spooning over pasta.

I made something like this and it came out kinda bland 😕. I think it needed more salt and maybe a pinch of chili flakes.

Made this for family night and it was insanely good—tender lamb and the sauce actually tastes “slow-cooked.” Definitely adding it to my rotation.

Wait… 2 hours and it tastes slow-cooked? I’m skeptical 😅 but I do like lamb shoulder, so I’ll give it a shot. Maybe I’ll let it go a bit longer just in case.

This is exactly the kind of comforting ragu I love—lamb + slow-cooked vibes is such a win. I’m definitely trying it next family night!

  91. 3 stars
Not gonna lie, 2 hours felt kinda short to me. Lamb usually needs more patience. I cooked mine 3 hours and it was worth it.

Very easy instructions. However, “cover and cook” didn’t say whether the lid should be slightly ajar. Mine stayed too thick, but flavor was still decent.

2 hours?? Seems fast. Ragu usually needs like 3+ hours. Idk i tried and it was okay but not like restaurant.

Tried it pretty much as written and it was solid. I added a splash of red wine because I’m that person, and it bumped up the depth a lot.

This came out so rich and cozy. The lamb browning step makes a huge difference—my sauce tasted “slow-cooked” even though I was stressing the whole time 😂

Not gonna lie, lamb ragu is my comfort food. This recipe nailed the balance of oregano and thyme. Next time I’ll double it!

Mine turned out kind of greasy. I browned the lamb but maybe my heat was too high. Still edible, just not as refined.

  99. 4 stars
2 hours?? that seems short for lamb… but okay it was tender. I think my chunks were smaller so maybe that helped. Not bad!

Pretty straightforward. I browned the lamb a bit longer and the flavor was deeper. Next time I’ll maybe add a pinch of chili flakes for fun.
