Craving the bold flavors of a burrito bowl but want to keep things meatless? Look no further than this jackfruit carnitas burrito bowl. It’s smoky, savory, and surprisingly hearty, giving you all the satisfaction of your favorite Mexican-inspired meal without a single bite of meat.
Young green jackfruit is a fantastic plant-based substitute for shredded meat thanks to its unique texture and neutral flavor. When simmered with spices like cumin, smoked paprika, garlic, and a splash of orange juice, it transforms into something rich and deeply flavorful. The result is a tender, juicy filling that mimics the taste and texture of slow-cooked carnitas.
Building a great burrito bowl is all about layering textures and flavors. Start with a bed of fluffy cilantro-lime rice or cauliflower rice if you’re going low-carb. Add a generous scoop of black beans for protein, then top with your jackfruit carnitas, sautéed peppers and onions, and maybe some grilled corn or cherry tomatoes for a pop of color and sweetness.
To finish it off, no bowl is complete without the toppings. Think creamy avocado slices, tangy pickled red onions, a drizzle of chipotle sauce or vegan sour cream, and plenty of fresh cilantro. A lime wedge on the side adds that final citrusy kick to brighten every bite.
This dish is perfect for meal prep, as the jackfruit mixture keeps well in the fridge and reheats beautifully. It’s also completely customizable. Add shredded lettuce, spicy salsa, or even a handful of crushed tortilla chips for crunch.
The jackfruit carnitas burrito bowl proves that plant-based meals can still feel indulgent and satisfying. Whether you’re fully vegan or just trying to eat more veggies, this bowl hits all the right notes. It’s colorful, nutritious, and packed with flavor in every bite. Serve it up for lunch, dinner, or your next dinner party and watch it disappear.

Ingredients
- 2 cans jackfruit young, in brine, drained and rinsed
- 1 onion sliced
- 3 cloves garlic minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup brown rice cooked
- 1 cup black beans drained and rinsed
- 1 avocado sliced
- 1/2 cup cherry tomatoes halved
- 1/4 cup cilantro chopped
- 1 lime cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic and sauté for 3-4 minutes, until the onion is translucent.
- Add the drained and rinsed jackfruit to the skillet and use a fork to shred it into smaller pieces.
- Add the cumin, smoked paprika, dried oregano, chili powder, salt, and pepper to the skillet. Stir well to coat the jackfruit in the spices. Cook for 5-7 minutes, until the jackfruit starts to brown.
- In a separate small saucepan, heat the black beans over medium heat until warmed through.
- To assemble the burrito bowls, divide the cooked rice, black beans, and jackfruit carnitas among 4 bowls. Top with sliced avocado, cherry tomatoes, chopped cilantro, and a squeeze of fresh lime juice.
- Serve immediately and enjoy!
1 tsp cumin seems low? Also jackfruit in brine can be salty—salt and pepper to taste saved me. Not bad though.
I get what you mean—1 tsp cumin is pretty modest. I usually go a bit heavier, but your jackfruit tip is spot on. Those brined cans can be sneaky salty.
So delicious and healthy! The spices are just right. My family loved it, I’m so glad I found this recipe!
This is the best recipe I’ve ever tried! The jackfruit really pulled off the carnitas flavor. So good!
This was soooo good! I can’t believe jackfruit could taste like this. Definitely making it again!
I don’t get the hype. It tastes like seasoned beans and fruit. Burrito bowl should have meat. Sorry, just my opinion.
Pretty decent but I found it a bit bland. Maybe I should’ve added more spices?
I totally get you! Spices make all the difference. Try adding some chili flakes next time, it’ll kick it up a notch!
Bland? Not sure what you mean. It’s jackfruit! Should be all about the toppings, right? Just my opinion.
I dunno about jackfruit. I tried it and it felt too mushy. Maybe it’s just not for me.
Yum! Just what I needed for a healthy meal, thank you!
This looks amazing! Can’t wait to try it for dinner tonight. 😀
Jackfruit? Really? I dunno about that.. how can it taste like meat? 🤔
Burrito bowls without cheese? 🤨 I know it’s probably intentional, but I felt like it was missing something. Still good, just not “wow.”
4 bowls felt like too much for my family. We ate it like leftovers next day and it stayed good, but the avocado got sad.
Ooh yeah, 4 bowls can definitely feel like a lot depending on the appetite 😅 Glad it still tasted good as leftovers though!
I do like 2 bowls for me and my partner and save the rest for lunch—jackfruit holds up well. The avocado always looks a lil sad after the fridge, not your fault.
Wow, this looks delish! Can’t wait to try it.
Looks good, but is jackfruit really tasty tho? I mean how can fruit taste like meat?!
I can’t believe it’s made with jackfruit! That’s so cool. I’m trying this this weekend for sure!
I think this is just a weird way to eat jackfruit. How can fruit be meat? But it was alright, I guess.
Best recipe ever! I add extra lime and some hot sauce for a kick. YUM!
Average. I felt like it needed more flavor or something.
Instructions kinda confusing. Should’ve said how much water for the rice. 🤷♂️
Just add 2 cups of water for the rice. I figured it out by googling. 🤷♀️
Yeah, I was confused about the water too! It’s like a major detail that they just skipped. 😕
My kidz didn’t like it, not sure if I’d make again. too mushy for them. 2 stars.
Maybe try adding some different spices or cooking it less? My kids love it when it’s a bit crispy! 4 stars for the idea.
Yea mushy stuff ain’t for kids. Maybe it was the jackfruit? Never tried it, but heard it can be weird. 2 stars is fair.
Loved how the jackfruit browned—mine got a little crispy at the edges. The smoked paprika really makes it taste “carnitas-ish.” Will make again for sure.
I followed it mostly and it came out bland. I think my spices were old? Idk. Maybe add more chili powder or lime earlier.
Filling! I added some beans and it was really good! 👍
Took forever to make and still came out kinda bland. I think I did it wrong???
Quick question: is the jackfruit supposed to be really wet when you add it? Mine splattered a lot, but it still turned out decent. I’m giving it 3/5 because it was mess but tasty.
Jackfruit? Never thought I’d eat it, but this recipe has changed my mind. Yum!
Good recipe but what is jackfruit??? Is it even healthy or what??
Never heard of it before! Is it really good? Sounds weird to me. Why not just use chicken or something? 🤔
Jackfruit is a type of fruit that can be used as a meat substitute, especially popular in vegan cooking! It’s packed with nutrients and low in fat. Super healthy! 🌱
really good but i added more spices, it needed a kick! still, it’s a solid recipe.
It’s okay, but I’m not convinced jackfruit is all that. Doesn’t really satisfy me like real meat does.
So good! I was skeptical about jackfruit but the spices really make it taste like “carnitas.” I added a splash of lime juice while cooking and it was even better.
My onion took longer than 3-4 min because my pan runs hot/cold idk. But once it was translucent, everything smelled amazing. Great bowl.
Jackfruit? Who eats that? I used chicken instead and it was popular. Just saying.
Jackfruit? Sounds weird. But if you say it works, then maybe it ain’t so bad. 🤷♂️
I get that chicken is popular, but you should really try jackfruit sometime! It’s surprisingly good.
Yum!!
It tasted good, but mine came out a little dry—maybe I cooked the jackfruit too long. Still tasty with the avocado and lime though.
Glad it still tasted good! Yeah, jackfruit can go from perfect to dry fast—next time I’d try shredding it and only cooking until it’s browned, like 5 minutes instead of the full 7.
I dont like jackfruit. This recipe was a waste of time for me. 1 star.
Well, not everyone likes jackfruit! But maybe try to give it another shot with a different ingredient? Would give it 3 stars for effort.
Amazing! My vegan friends loved it! Will make again and again.
Not bad, but it needed more salt for my taste. Also I added a pinch of sugar for balance and that helped a lot.
This burrito bowl was amazing! The jackfruit really tastes like pulled pork. Will make again!
IDK why people love jackfruit so much. It’s not a meat replacement. It was okay, but I’d rather have real carnitas.
My onion took longer than 3-4 minutes to go translucent (maybe my pan was too hot/low). Still good though—cilantro + lime saved it.
I don’t know… it tastes more like taco-seasoned jackfruit than carnitas. Also I forgot to rinse the jackfruit once and it was way too salty. Learn from me 😅
My onion burned a tiny bit (oops) but I scraped it off and kept going. Turned out okay—would do again with lower heat.
Haha that’s happened to me too—burnt onion smells like trouble. Love that you scraped it off and kept going. Lower heat next time makes sense.
Followed the recipe but it didn’t turn out like the picture. Maybe I did it wrong? 🤷♂️
Don’t worry! Sometimes it takes a few tries to get it right. Keep practicing and you’ll nail it! 😊
Maybe you used the wrong kind of jackfruit? It can be tricky if you’re not used to it. 🤔
I dont like jackfruit, will this really taste good???
