Iraqi Beef Kubba with Mint Yogurt

August 9, 2023

Iraqi Beef Kubba with Mint Yogurt is a comforting and flavorful dish that showcases the rich culinary heritage of Iraq. Kubba, also known as kibbeh in other parts of the Middle East, is a dish made from finely ground meat and bulgur or rice dough, often filled with a spiced meat mixture and shaped into dumplings or patties. In the Iraqi version, beef is commonly used and paired with a refreshing mint yogurt sauce that balances the richness of the kubba.

The outer shell of the kubba is made from ground beef mixed with soaked fine bulgur wheat, seasoned with salt and a hint of cinnamon or allspice. It is kneaded until it becomes dough-like in texture, which helps it hold together during frying or baking. The filling typically consists of sautƩed ground beef cooked with onions, pine nuts, and a generous mix of spices like black pepper, cinnamon, and sometimes sumac or baharat. This creates a warm, savory interior full of texture and spice.

The kubba is formed by flattening a piece of the dough in your hand, adding a spoonful of the meat filling, and then sealing it into a football or oval shape. They are then either deep-fried to a crispy golden brown or baked for a lighter version. The contrast between the crispy outside and the soft, flavorful filling makes every bite satisfying.

What makes this dish truly stand out is the mint yogurt served on the side. It’s made by mixing plain yogurt with chopped fresh mint, garlic, and a touch of salt. The coolness of the yogurt complements the spices in the kubba perfectly and adds a refreshing note that brightens the entire dish.

Iraqi Beef Kubba with Mint Yogurt is ideal for gatherings or as part of a mezze spread. It’s filling, fragrant, and rooted in tradition. Whether you serve it as an appetizer or a main dish with rice and salad, it offers a delicious way to experience the depth and warmth of Iraqi home cooking.

Prep Time 30 minutes
Cook Time 40 minutes
Total Time 1 hour 10 minutes

Ingredients

  • For the kubba:
  • 500 g ground beef
  • 1 cup fine bulgur
  • 1 onion finely chopped
  • 2 Garlic cloves minced
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • vegetable oil for frying
  • mint yogurt
  • 1 cup plain yogurt
  • 1/4 cup mint leaves chopped, fresh
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the ground beef, bulgur, onion, garlic, cumin, cinnamon, salt, and pepper. Mix well until all the ingredients are fully incorporated.
  • Wet your hands and take a golf ball-sized portion of the beef mixture. Form it into an oval shape, then use your finger to create a hollow space in the center. Repeat with the remaining mixture.
  • Heat vegetable oil in a large frying pan over medium heat. Fry the kubbas in batches until golden brown and crispy on the outside, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  • In a small bowl, whisk together the yogurt, mint leaves, lemon juice, salt, and pepper.
  • Serve the beef kubbas with the mint yogurt sauce on the side. Enjoy!

Mint yogurt is a little weird to me—like too fresh with beef—but I know that’s the point. I ended up adding extra lemon and it helped.

  3. 4 stars
The recipe looks simple but forming the oval shapes takes patience. My first batch looked like… weird footballs. Second batch improved a lot.

My family gobbled these up! A bit messy, but totally worth it!

Absolutely loved this recipe! The flavors were so rich and the kubbas turned out perfectly crispy.

  6. User avatar Alec Spinka says:

These were such a comfort food. Crispy outside, juicy inside—exactly what I wanted. The mint yogurt really cuts through the richness.

It was okay, but I think they needed more salt. I also used chicken instead of beef. not sure if it made a diff.

    1. User avatar stan.dicki1955 says:

      4 stars
Using chicken instead of beef? That’s interesting! I think the salt is also key to this recipe. Maybe you can try next time with a bit more? Thanks for sharing your experience!

This is a great recipe! My family loved it!

  9. 3 stars
I didn’t have bulgur, so I used rice. Still tasted okay but not the same. Gonna try it with bulgur next time.

  10. User avatar julius.gorczany56 says:

I tried making the hollow with my finger and it kinda turned into a mess šŸ˜… Still ended up like delicious meat croquettes with mint sauce.

  11. 3 stars
The flavors are legit (cumin + cinnamon is a nice combo). I followed the recipe but my bulgur was still a little chewy, so I think I needed to soak it or mix longer.

    1. User avatar simon.reichel says:

      5 stars
Totally agree about cumin + cinnamon—that combo really makes it taste ā€œreal.ā€ I’ve had bulgur turn out chewy too if it’s not mixed long enough, so your soak/mix idea makes sense.

  12. 4 stars
Iraqi food is best food! But my kubbas were not round like yours. Tasted good tho! šŸ˜‚

    1. User avatar robbyn.ledner says:

Don’t worry about the shape! I’ve had flat kubbas too, and they still taste amazing! šŸ˜‚

My family says this tastes like the ones we get at the Iraqi spot downtown. I’m honestly impressed. I served with salad and it was a whole meal.

  14. User avatar Su Shenlong says:

Worst. lol just kidding—mine stuck to the pan and I cried a bit. Flavor still good though. Maybe more oil?

  15. 5 stars
    Easy. Yummy.

I tried this recipe but it was way too greasy for my liking. Plus, I didn’t have mint so I used parsley instead. Not the same at all.

    1. User avatar Vladimir Harkonnen says:

      3 stars
I don’t understand why everyone puts mint in everything! Parsley works fine. But too greasy? That’s a bummer!

    2. 4 stars
Sorry to hear it was greasy! I always use paper towels to soak up some oil after frying. Maybe try it with the mint next time?

  17. User avatar jed.bergnaum1977 says:

    3 stars
I’m skeptical about frying time because every pan is different. I’d rather say ā€œuntil goldenā€ only. But yeah, the cumin/cinnamon combo smells amazing while cooking.

  18. 4 stars
yum! I can’t believe how easy these were to make. Will definitely make again, but will add more spices next time! šŸ™‚

Yuck! They fell apart in the oil and made a big mess. Never again.

  20. 4 stars
Not gonna lie, I used frozen mint because I didn’t have fresh. It still worked and tasted awesome—so don’t stress about that part.

  21. 4 stars
Good flavor, but my kubba kept cracking when I tried to hollow them. I think I didn’t wet my hands enough (or the mixture was too dry). Still tasty though!

  23. User avatar carlos.wolf says:

  24. User avatar melvin.maggio says:

    5 stars
I added a bit more garlic because I love it! Yum!

  25. 2 stars
meh, too much cinnamon for my taste. I think I will skip it next time.

    1. 4 stars
I actually love cinnamon! It adds such a nice flavor. Have you tried it with more mint yogurt? That might balance it out! šŸ™Œ

  26. 3 stars
Honestly, didn’t like the mint yogurt that much. Just prefer it plain. The beef was good tho.

  27. User avatar Thomasena Breitenberg says:

    5 stars
Wow. I did 3 batches and kept them on paper towel, just like the recipe. They stayed crunchy. Mint yogurt with extra pepper is elite.

  28. 2 stars
My kubba fell apart 😭 not sure if I didn’t mix enough or if the bulgur wasn’t hydrated (even though it was fine). Any tips?

    1. User avatar sheldon.senger says:

      4 stars
Ah no 😭 That usually happens when the filling/hollow doesn’t bind—either the bulgur wasn’t hydrated enough *or* the mix wasn’t kneaded firmly. Next time, try soaking the fine bulgur a bit (even 15–20 min) before mixing, and knead the beef-bulgur mixture well until it feels tighter/sticky.

    2. User avatar dian.russel40 says:

      4 stars
Maybe you made them too thin? I noticed mine split if I don’t really compress the oval and seal the edges after hollowing. Also don’t overheat the oil—golden brown can turn to fragile fast. 4–5 min per side feels right though.

  29. 5 stars
These turned out way better than I expected—crispy outside and juicy inside. The mint yogurt is a game changer. Will make again!

  30. User avatar brent.koch says:

Sounds good, but isn’t kubba supposed to have pine nuts? Or is that just a different recipe?

    2. 5 stars
I’m so glad to hear that! These kubbas are a big hit at gatherings. šŸ˜

  32. User avatar yuk.hodkiewicz says:

    4 stars
I followed the recipe pretty closely, but 4-5 minutes per side felt like it browned faster than it cooked through. Next time I’ll lower the heat and cook longer.

    1. User avatar ilse.wunsch1963 says:

      5 stars
That makes sense—4–5 min/side can brown fast depending on pan heat and thickness. I’ve had better luck lowering to medium-low and cooking a bit longer so the center actually sets.

    2. User avatar Future Trunks says:

      4 stars
Maybe your oil was too hot or your pan conducts heat stronger. If the outside got golden before the bulgur inside softened, you could try covering the pan for a few minutes after browning.

  33. User avatar lashell.cartwright44 says:

    5 stars
These remind me of kubba my aunt used to make, except hers was more labor intensive. The yogurt sauce saved everything—so fresh. 10/10 for flavor balance.

  34. 5 stars

Ugh, it’s just meat balls. Can’t even eat it. Why so much fuss?

  41. 4 stars
I followed the recipe pretty closely. I did end up a little thick on the filling mix, but it still tasted great. Next time I’ll watch the hollowing so they don’t crack.

  42. 5 stars
Wow. I usually mess up fried meat but these were crispy and stayed crispy. Mint yogurt really ties it together. 10/10 would repeat.

Kuba-not? Haha, that’s funny! But hey, cooking can be hit or miss. Don’t give up! Maybe try less oil next time?

    2. 4 stars
I’m sorry to hear that! What went wrong? Maybe it was the frying part. Sometimes it can be tricky if the oil isn’t hot enough.

  47. User avatar Arthur Dent says:

I dunno, I just don’t get the hype. It’s just meatballs? IDK wut the mint yogurt is for, just make ranch instead.

    1. User avatar rickiestmorty says:

      5 stars
I totally get where you’re coming from! But trust me, the mint yogurt really elevates the flavors! It’s not really about ranch, it’s more about freshness. Give it a try! 😊

The bulgur amount is confusing. I used coarse bulgur once and it turned gritty. Fine bulgur works way better—please specify!

  55. User avatar allegra.yundt67 says:

I doubled the garlic and cumin and it was too strong for me. Maybe follow the measurements exactly if you’re sensitive. Otherwise great texture.

    1. User avatar phillip.thompson says:

      5 stars
Good point! I’m super sensitive to garlic too, so I always stick to 2 cloves. Glad you still got great texture though šŸ˜„

  57. 5 stars
Great recipe! My kids loved them. Made them for dinner and they were gone in minutes! 😁

  58. 3 stars
They were okay, but a bit dry for my taste. Maybe need more yogurt or something?

    2. User avatar angella.murray2 says:

      2 stars
I don’t know, doesn’t seem like all those flavors would go together. Mint in yogurt? Kinda weird.

  61. 3 stars
I’m not sure about the hollow center… mine leaked a bit while frying. Still tasted great though. Next time I’ll make the walls thicker.

  62. 2 stars
I found the recipe really confusing, especially the frying part. How do you know when they are golden brown? I’m not sure I did it right.

  63. User avatar gayle.lueilwitz2021 says:

    1. User avatar tanya.mcclure says:

      5 stars
Yes!! I was the same way—bulgur in anything fried can turn out chewy, but here it actually stays nice. Extra cumin is the move šŸ”„

  68. User avatar rocky.gleichner says:

    4 stars
The flavor is legit Iraqi-style, but frying took longer than 4-5 min per side for my pan. Maybe my oil temp was low. Still worth it.

    3 stars
Mint yogurt on beef is kind of weird to me… I tried it anyway and it was actually pretty nice, just needs more salt to pop.

  70. 2 stars
Not what I expected. I thought they would be bigger. Plus I don’t like mint. But some people might love it.

  71. 3 stars
Pretty good, but I think the bulgur should be soaked first. Mine stayed a bit grainy even after cooking. Any tips from folks?

  72. User avatar roosevelt.heathcote37 says:

    3 stars
I only had regular (not fine) bulgur, so the texture was a bit chewy and not as smooth. Still edible, but I can see why fine bulgur matters. Sauce was great!

  75. User avatar christinia.volkman says:

Not sure why people like fried kubba so much… I mean it’s okay, but 5 minutes per side felt long and mine got a bit too dark. Flavor was decent.

    1. User avatar Loonquawl and Phouchg says:

      4 stars
I get it—fried kubba is tasty but it can get away from you fast. I’ve noticed 4-5 mins per side only works if your oil is truly medium and steady. If the pan runs hot, dark happens quick.

  76. User avatar jean.turcotte1983 says:

    3 stars
I tried this but messed up the frying part and burned them. Still tasted alright though! A learning lesson.

  77. 4 stars
My kubba mix was a little dry so I added a splash of water to the bulgur and it came together. Flavor is legit, especially the cinnamon. Yum.

  78. User avatar GrƬma Wormtongue says:

Not bad, but I’m not convinced this is ‘authentic’ Iraqi kubba. Also, hollowing with a finger sounds easier than it is lol.

  80. User avatar jamison.mueller68 says:

Made these for dinner and they were seriously addictive. The hollow in the middle worked great and frying time was spot on—crispy outside, juicy inside. Mint yogurt is a nice cool contrast too.

    1. 5 stars
I keep forgetting to wet my hands—last time they stuck like crazy. But when I do it right, the texture is spot on. Mint yogurt combo is perfect.

    2. 5 stars
Yes! That hollow center really does make them way juicier. I made mine with a little extra cumin and they were gone fast šŸ”„

  81. User avatar ivey.borer23 says:

Mint in yogurt with lemon juice? Sounds fancy but I was skeptical. Turns out it’s actually perfect. Also, 4-5 minutes per side is spot on for my pan.

    1. 5 stars
I was skeptical too—mint + yogurt usually feels like a dessert thing for me, but the lemon makes it taste way fresher. Great call on frying time!

  82. User avatar deon.waters says:

Mint yogurt + beef = genius. I served it with salad and it felt like a whole feast. Next time I’ll fry slightly lower heat so they don’t brown too fast.

      5 stars
Mint yogurt + beef is seriously genius. I tried it with a simple salad too and it *did* feel like a feast. Your tip about lowering the heat is spot on—mine browned way too fast the first time.

  83. 2 stars
I don’t know, sounds kinda weird to me… I mean beef and yogurt? Isn’t that a little odd? šŸ¤”

  84. 4 stars
I followed it mostly, but I used dried mint because that’s what I had. It was still good, just not as fresh. The lemon juice helps a lot.

The ingredient amounts look right, but 1 cup fine bulgur for 500g beef seems like a lot—my mixture was stiff at first. I added a splash of water and it fixed it. Great result after adjustments.

    1. 5 stars
I had the same issue—mine felt super stiff before I let it rest. Adding a splash of water makes total sense. Looks like we’re not alone!

  87. 5 stars
These kubbas were amazing! My family devoured them in no time. The mint yogurt was a perfect pairing.

I tried to make them but they fell apart in the oil. Maybe I did something wrong? Better instructions would help. ⭐⭐

4-5 minutes per side?? That seems optimistic. Mine were pale and greasy until I cooked way longer. Recipe’s still tasty though.

Yeah 4–5 mins per side sounds quick šŸ˜… I’ve had to go longer too—like medium heat and thicker kubbas can take more time before they’re properly browned and not greasy inside.

I’m not a fan of bulgur in beef, but I tried anyway. Surprisingly good! The cumin and cinnamon combo is nice.
