Pistachio Cream Recipe – Easy & Delicious

May 6, 2025

This rich and creamy homemade pistachio cream can be used as a delicious spread or a filling for desserts.

Tips for Perfect Pistachio Cream

If you want your pistachio cream to turn out smooth and flavorful, there are a few tips to keep in mind. Using raw, unsalted, and shelled pistachios gives you better control over the final taste and color. For a creamier texture, soak the pistachios in warm water for about 30 minutes before blending. A high-powered blender or food processor is essential if you want that ultra-smooth, silky consistency. Adding a small pinch of salt can enhance the natural pistachio flavor, while the choice of sweetener is up to you-maple syrup, honey, or even a sugar-free alternative like erythritol all work great.

How to Use Pistachio Cream

Homemade pistachio cream is incredibly versatile and can elevate both sweet and savory dishes. One of the simplest uses is as a spread on toast, pancakes, or waffles. It’s also a fantastic filling for baked goods like croissants, donuts, layer cakes, or sandwich cookies. If you enjoy yogurt or oatmeal in the morning, a spoonful of pistachio cream adds richness and flavor. For dessert, use it as a topping for vanilla ice cream or as a creamy layer in parfaits and crepes. The possibilities are endless. This pistachio spread goes wonderfully with toast or scones, and pairs beautifully with a spoonful of our Strawberry Jam for a colorful breakfast.

How to Store Pistachio Cream

To keep your pistachio cream fresh and delicious, store it in an airtight glass jar in the refrigerator. It will last for about 7 to 10 days. For longer storage, you can freeze it in small portions using silicone molds or ice cube trays. When you’re ready to use it, simply let it thaw at room temperature. This method ensures you always have a delicious spread on hand without any waste. For more about the nutritional benefits of pistachios, visit Healthline’s guide to pistachio benefits.

Recipe Variations

This recipe is highly adaptable to different dietary preferences. For a vegan version, substitute dairy milk with almond or coconut milk. If you’re following a low-carb or keto diet, use a natural sweetener like erythritol or monk fruit instead of sugar. For a richer and creamier texture, add a spoonful of mascarpone cheese or thick Greek yogurt. And for a dessert twist, stir in some melted white chocolate to turn your pistachio cream into a luscious ganache. For a luxurious dessert twist, combine it with Homemade Irish Cream or drizzle over ice cream topped with Homemade Baileys.

Frequently Asked Questions

Can I use roasted pistachios instead of raw ones?

Yes, you can use roasted pistachios, but keep in mind they will give the cream a darker color and a deeper, nuttier flavor. Raw pistachios are recommended for a milder taste and a greener hue.

Is it possible to make pistachio cream without any added sugar?

Absolutely. Pistachios have a naturally sweet flavor, so sugar isn’t strictly necessary. You can also use natural sugar substitutes like stevia or erythritol if you prefer a sugar-free option.

Why is my pistachio cream grainy instead of smooth?

This usually means the pistachios weren’t blended long enough or that your blender isn’t powerful enough. Soaking the pistachios and using a high-speed blender can help achieve a creamier consistency.

How long does homemade pistachio cream last?

When stored properly in an airtight container in the fridge, it can last for up to 10 days. For longer storage, freezing in small portions is a great option.

Servings 1 people
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 100 grams pistachios shelled and unsalted
  • 50 grams sugar powdered
  • 50 ml milk full cream
  • 30 grams white chocolate melted
  • 1 tablespoon vegetable oil

Instructions

  • Blanch the pistachios by boiling them for 2-3 minutes, then draining and peeling off the skins.
  • Grind the peeled pistachios into a fine paste using a food processor.
  • In a saucepan, heat the milk and sugar until the sugar is fully dissolved.
  • Add the pistachio paste to the milk mixture and stir well.
  • Mix in the melted white chocolate and vegetable oil until smooth and creamy.
  • Allow the cream to cool before transferring it to a jar for storage.

Notes

This pistachio cream is best when made with raw, unsalted pistachios for a naturally vibrant color and smooth texture. If your pistachios have skins, you can blanch and peel them for an even brighter green result. For a thinner consistency, feel free to add a splash of milk (dairy or plant-based). Store in a sealed jar in the fridge for up to 10 days, or freeze in small portions for longer shelf life. This cream makes a delicious filling for pastries, spread for toast, or a decadent topping for desserts.

My grandma made something like this but she used almonds. Ever try that? You think it will be the same?

Using almonds could give it a different flavor but it might still be creamy and nice! Worth a try!

Pistachio cream? Wow, sounds fancy! I’m gonna try this for sure.

This is good but WHO can afford pistachios these days? They cost like 20 bucks a pound! Wish it was cheaper.

Very simple to follow! I love pistachios. Will make again for sure!

I found the recipe a bit confusing. Do I really need to blanch the pistachios? Seems like a lot of work for a cream…

  11. User avatar Eddie the Computer says:

    1 star
I dunno, sounded fancy but kinda just tasted like sugar to me. Not a fan. 👎

    1. User avatar anderson.casper84 says:

      4 stars
I totally get that! Sometimes things just don’t live up to the hype. Maybe try adding some salt next time for balance?

  12. User avatar oPandariaNo says:

    3 stars
I love pistachios, but this is way too sweet for me. I’d cut sugar by like 20-30 grams and it would be perfect.

  13. 5 stars
So creamy and rich! I just ate it straight out of the jar. 😋

  14. User avatar Farengar says:

    3 stars
It was okay, but I think I added too much sugar. Next time I’ll adjust the sweetness.

  15. User avatar brandon.streich says:

    2 stars
Why do we need to blanch the pistachios? Isn’t it easier just to grind them directly?!

  16. User avatar alphonso.oconnell69 says:

    4 stars
Yum! This pistachio cream is just heavenly! I’m using it as a spread on toast and it’s so good. Thanks for sharing!

  17. 2 stars
Not my favorite. I think the white chocolate overpowers the pistachio flavor. 😕

  18. User avatar carmon.bauch says:

    5 stars
I tried this and it tastes dangerously good. The texture came out really creamy—next time I’ll probably add a pinch of salt to make it pop.

  19. User avatar bryan.mitchell says:

    3 stars
I followed the steps pretty closely, but mine came out a little grainy. I think my pistachios weren’t ground long enough. Next time I’ll process longer and maybe add a tiny splash more milk.

  20. User avatar Cave Bear says:

    2 stars
Meh… I expected greener flavor. It tastes more like sweet nut spread than pistachio ice-cream vibe. Might be the brand of pistachios.

  21. User avatar Draugr Scourge says:

    5 stars
Super easy recipe. I used a good blender instead of food processor and it still turned into a paste. My kids loved it on toast.

  22. User avatar meta.schulist42 says:

    3 stars
Not bad, but peeling the pistachios was a pain. Also blanching for 2-3 minutes didn’t fully loosen the skins for me—had to do a second batch. Flavor was great once I got there.

  23. 4 stars
I might be doing something wrong, but 50 ml milk felt too little for 100g pistachios. I had to add a splash more milk to blend smoothly.

    1. 4 stars
I think you’re right to question it—100g pistachios is pretty thick, so 50 ml milk can be barely enough depending on how powerful your blender/processor is.

  24. User avatar brock.dicki says:

    5 stars
This turned out dangerously good. The texture is super smooth and the white chocolate makes it taste like a fancy spread. I chilled mine longer and it got even thicker—10/10.

  25. User avatar geoWizard says:

    3 stars
Mine seized when I added the white chocolate—could’ve been the heat too high. I lowered the temp after and it came back, whew.

    1. User avatar Gaius Helen Mohiam says:

      5 stars
Oh wow—yeah, white chocolate can get weird fast. If the heat’s even a little high it can seize or split. Glad lowering the temp helped!

    2. User avatar lura.macejkovic15 says:

      3 stars
Mine never does that… maybe your milk was too hot or the chocolate wasn’t warm enough? Also I think powdered sugar dissolves faster than regular sugar, so maybe try full fat and keep it like barely simmering.

  26. 5 stars
This came out way smoother than I expected. The white chocolate + pistachio combo is such a good flavor. I chilled it overnight and it tasted like something from a fancy gelateria.

  27. User avatar Daron Runte says:

    5 stars
Absolutely delicious! I made this for dessert and it was a big hit with everyone. Will definitely make it again! 😍

    1. User avatar myrtie.walsh33 says:

      3 stars
I tried making it too but it didn’t turn out right. Is it supposed to be thick like pudding? Mine was too runny… 😕

    2. 5 stars
So glad to hear that! Pistachio cream is such a treat! 🎉

  28. User avatar Pizpot Gargravarr says:

    1 star
Did not work for me. The texture was all wrong, not creamy at all, very disappointed.

  29. 4 stars
The melted white chocolate part made it taste kinda like dessert spread, not pure pistachio. If you’re expecting a more “green pistachio paste” flavor, this is more creamy-sweet.

    1. User avatar Sherlyn Doyle says:

      4 stars
Yeah I get what you mean. The white chocolate definitely pulls it toward that creamy dessert-spread vibe instead of that straight “green pistachio paste” punch. I made it and it was sweet-smoother than I expected.

    2. User avatar erline.waelchi63 says:

      3 stars
Huh, I disagree a bit 😅 The pistachio still tastes pistachio to me—maybe your white chocolate was sweeter? Also I don’t peel as much skin, maybe that changes the color/flavor.

  30. User avatar Mel Wolff says:

    3 stars
Mine turned grainy even though I blended it fine. Maybe I didn’t melt the white chocolate enough or my food processor is weak? Still edible.

    1. User avatar San Shenlong says:

      3 stars
Huh, mine was smooth, so maybe your food processor is just too weak? If the white chocolate was a bit seized or cooled while mixing, it can turn grainy too. Next time melt the chocolate a little more and stir like crazy—also don’t skip letting it cool in the jar.

    2. User avatar Lorie Conn says:

      4 stars
That grainy texture usually happens when the pistachios don’t get ground quite fine enough, or the mixture didn’t stay warm long enough to fully integrate. I’d try grinding longer (scrape down the bowl halfway) and make sure the white chocolate is truly smooth—melting it gently and adding it off-heat helps.

  31. 4 stars
I followed it pretty closely, but I think 50 ml milk is a bit much/too little depending on how oily your pistachios are. Mine needed an extra few minutes on the stove to thicken. Still delicious though!

  32. User avatar tanner.conroy79 says:

    3 stars
Too sweet for my taste. Next time I’ll cut the powdered sugar in half. Texture was still good, so not a fail.

    1. User avatar Tena Ko'sah says:

      3 stars
Huh, I think it’s supposed to be sweet? Maybe my milk was different, but when I tried similar, I had to add a pinch of salt or a tiny bit of lemon to balance. Half the sugar might still work though.

    2. User avatar The Allitnils says:

      5 stars
Totally get it—white chocolate plus powdered sugar can turn sweet fast. Cutting the powdered sugar in half sounds like a great tweak. Glad the texture stayed good!

  33. 4 stars
My food processor is small so it took forever to get a paste. Still, after cooling it thickened nicely. I’d do it again, but maybe with a pinch of salt next time.

  34. User avatar Cucco Keeper says:

    2 stars
Pistachios are good, but how is this a cream? It feels more like a paste to me. 😕

    1. 4 stars
I get what you mean! It does seem thicker than typical creams. Maybe add more milk next time?

  35. 3 stars
I tried making this, but my paste was too thick! What did I do wrong? Might need some tips!

  36. 4 stars
So sweet! I added a bit of salt and loved it. Not sure if that’s how it should be though… lol.

  37. User avatar renae.ledner1972 says:

    4 stars
I followed the steps pretty closely, but mine is a bit too thick after cooling. Next time I’ll warm it slightly to get the right consistency before jarring.

  38. 5 stars
This pistachio cream is amazing! Just like the ones I had in Italy! 5 stars!

    1. User avatar toya.gutmann1995 says:

      5 stars
Wow, you’ve been to Italy? That’s awesome! I’ll definitely try this recipe now, sounds delicious!

  39. User avatar laurence.hansen says:

    5 stars
    Soo good!! 😍 Mmm pistachios!

    1. 5 stars
Absolutely! I love the creaminess of this recipe. Can’t wait to try it! 🥳

  40. User avatar cristal.larkin55 says:

    2 stars
Meh… mine separated a bit after cooling. Maybe I didn’t stir enough when adding the oil. Taste is good though, just not as silky as I hoped.

    1. User avatar Robyn King says:

      5 stars
Maybe your pistachios weren’t ground fine enough? I usually run the processor longer so it turns really smooth. And chilling overnight helps mine thicken up and get silkier.

    2. User avatar yvette.rempel says:

      4 stars
I get that—mine has done the same when I pour the oil in too fast. Next time, try drizzling the oil slowly while you keep stirring (or blend a few seconds after adding). Also make sure the white chocolate isn’t too hot or it can mess with the texture.

  41. User avatar zoraida.greenfelder2002 says:

    3 stars
This is super easy, but 100g pistachios for that sweetness ratio felt low. I ended up adding more sugar powder and it was better for me.

  42. User avatar marjory.bode55 says:

    5 stars
This pistachio cream is AMAZING! Tastes like heaven spread on toast. Definitely going to make this again!

    1. User avatar Jamal Kling says:

      3 stars
Heaven? Really? I mean, it’s good but heaven? Seems a bit much. What if I don’t have white chocolate?

    2. User avatar Frost Troll says:

      5 stars
I’m so glad you loved it! Pistachio on toast is the best way to enjoy it. Can’t wait to try this myself!

  43. User avatar lester.bahringer61 says:

    4 stars
White chocolate in a pistachio cream feels a little weird to me, but I guess it makes it sweeter. I did like it though.

  44. User avatar Daphnes Nohansen Hyrule says:

    2 stars
Um… blanching and peeling pistachios sounds like a lot for “cream.” I’d rather buy pistachio paste 😅 Still, the flavor was pleasant.

  45. User avatar frederick.bednar8 says:

    3 stars
Does it really need 100g pistachios for that much sugar? Mine ended up sweeter than I wanted. Also, melting the white chocolate while heating milk felt a bit risky—keep it low heat.

  46. User avatar kyle.schmidt says:

    4 stars
Honestly… I don’t trust blanching then grinding. Feels like overkill. But my version worked, so I guess I’m wrong 😅

  47. User avatar cassaundra.konopelski30 says:

    4 stars
I used almond milk instead of full cream and it worked well! Creative!

  48. User avatar elbert.cremin99 says:

    1 star
Not great. The white chocolate overpowered the pistachio flavor. Disappointed.

  49. User avatar tiffany.effertz53 says:

    3 stars
Not bad but blanching and peeling is a pain. Like, why not just roast? I think I’m lazy lol. Flavor is still nice.

  50. User avatar merrill.mcglynn says:

    5 stars
This pistachio cream is AMAZING! So smooth and tasty, it goes perfectly on toast!

  51. User avatar Orange Dartwing says:

    3 stars
I tried this but it turned out too sweet for my taste. Maybe less sugar next time?

  52. User avatar elizbeth.mcglynn23 says:

    2 stars
Is it necessary to peel the pistachios? Seems like a lot of work for something I could buy.

  53. User avatar grasshopper says:

    5 stars
Super easy recipe. The texture is creamy and spreads well on toast. Also smells amazing while heating.

  54. User avatar Pizpot Gargravarr says:

    3 stars
Easy recipe, but i think 50 ml milk is too little—mine got thick fast and I had to keep adding drops of milk to blend. Tasted good once fixed.

  55. 3 stars
Mixing steps were confusing to me. Like, do you cool after step 5 or already after everything? I kinda rushed and it separated a little, but I whisked it again and it came back.

  56. 3 stars
I think the white chocolate makes it too rich but still tasty overall.

    1. User avatar Rosanna Mohr V says:

      5 stars
I actually love the richness! White chocolate gives it a unique flavor.

  57. 2 stars
I’m skeptical about the sugar amount—50 grams powdered for 100 grams nuts feels like it’ll be too sweet. Maybe powdered sugar behaves differently than regular, but mine was definitely sweeter than my usual pistachio creams.

    1. User avatar tequila.willms says:

      4 stars
I get your skepticism. 50g powdered sugar for 100g pistachios is pretty sweet—powdered sugar dissolves fast, but that doesn’t magically reduce sweetness.

  58. User avatar harlan.harvey1974 says:

    4 stars
It tastes great but the instructions are a little vague—do you cook the pistachio paste too? I just heated it until warm and it came out fine.

  59. User avatar tobie.klocko says:

    5 stars
So good! I made it for crepes and it was gone in like 10 minutes. My kids keep asking for more.

    1. User avatar gale.wiegand says:

      5 stars
Love this! Pistachio cream on crepes sounds dangerous—in a good way. Glad your kids approved 😂

    2. User avatar hiram.schaden50 says:

      4 stars
Wait, you peeled the pistachios after blanching? I usually skip that step but maybe that’s why mine tastes a little bitter. Still gonna try—10 minutes gone is impressive lol.

  60. 4 stars
Yum! My kids loved it, now they’re begging for more! Can I make this with other nuts?

  61. User avatar georgetta.lemke1994 says:

    2 stars
I’m skeptical about the white chocolate—felt like it overpowered the pistachio. Also 2-3 minutes boiling for blanching maybe wasn’t enough for me, skins didn’t come off easily.

  62. User avatar kaitlin.braun41 says:

    5 stars
Yum! Never thought of making my own cream. What else can you use this on?

  63. 4 stars
I’m skeptical about the blanching time—2-3 min feels too short to peel easily, but it worked for me after a quick extra minute. Adjust as needed.

  64. 4 stars
The blanch + peeling part is a bit annoying, not gonna lie. But the flavor is noticeably better than store-bought pistachio creams.

  65. User avatar julienne.windler45 says:

    2 stars
This recipe is too hard for me. Can’t even find some ingredients.

  66. User avatar Thanh Romaguera says:

    5 stars
    Yum!!!

  67. User avatar chas.reilly54 says:

    5 stars
This turned out super smooth and honestly tastes like fancy store-bought pistachio cream. Love the white chocolate addition—makes it richer.

  68. User avatar caren.grant84 says:

    2 stars
I used soy milk by accident and it separated a little. Also I forgot to cool fully before jarring… still ate it, but it didn’t look as creamy.

  69. User avatar jerrica.rosenbaum5 says:

    3 stars
The vegetable oil part is weird to me. I skipped it and it was fine—maybe not as silky but still good. Anyone else?

  70. User avatar charity.hermann says:

    5 stars
I followed it exactly and it set up nicely after cooling. The peeling step is annoying but worth it. Very good on toast.

    1. 5 stars
I love hearing that it sets up after cooling—mine always comes out a bit runny if I don’t wait long enough. Toast sounds perfect for this.

    2. User avatar suspiciousCommentator says:

      3 stars
Peeling pistachios is the worst part, I agree 😅 I might skip it next time… but I’m not sure if it’ll still be smooth. Did you blend with the milk warm or let it cool first?

  71. User avatar amos.abbott2019 says:

    5 stars
White chocolate + pistachio is my weakness. I used semisweet white chocolate (oops) but it still worked. Super creamy on toast.

  72. User avatar Frodo Baggins says:

    5 stars
This turned out super smooth and actually tastes like the store-bought stuff! I was worried the white chocolate would seize, but it didn’t. Great texture.

    1. User avatar olin.bruen says:

      5 stars
Omg I love this—smooth *and* tastes like store-bought is exactly what I want. Did you use pistachios right away after blanching or did you dry them first?

  73. User avatar mathWizard says:

    4 stars
Pretty good, but my paste was gritty until I blended longer. Also I used almond milk once and it wasn’t as rich. Still worth it.

  74. User avatar hassan.crist says:

    5 stars
This turned out super creamy—like actual pistachio spread! I used a little extra milk since my paste was thick, but the white chocolate made it taste rich. Big fan.

    1. User avatar Mathilde Rodriguez says:

      5 stars
Yes! “Pistachio spread” is exactly the vibe. The extra milk tip makes total sense if the paste was thicker—glad it turned out rich for you too.

    2. User avatar Dremora Lord says:

      3 stars
I tried this once and mine was more like pesto than spread 😅 Maybe I didn’t peel enough? Also, is 30g white chocolate really necessary or can I swap it for more milk?

  75. User avatar Feyd-Rautha Rabban says:

    2 stars
1 tablespoon oil feels like too much to me—mine tasted a lil oily. Maybe I should’ve used less white chocolate too?

    1. User avatar chad.ondricka2017 says:

      3 stars
Maybe… but I think it’s the white chocolate. White chocolate can get greasy if it’s melted too hot. Next time melt it gently (like microwave in short bursts) and let it cool a bit first. Then add the oil slowly.

    2. User avatar ellie.donnelly says:

      4 stars
I get you—1 tbsp oil can be a bit much depending on the pistachios and how long you blend. I usually start with 1/2 tbsp and add more only if it feels too thick. Also, if your white chocolate was extra warm when you added it, it can make the texture feel heavier.

  76. 2 stars
Why vegetable oil though? I think butter would’ve been nicer. Also I used almond milk and it separated—so yeah, follow the recipe.

    1. User avatar trinidad.dubuque87 says:

      2 stars
Yeah mine split too with almond milk… I think the dairy fat matters here. But hey, pistachio cream is still kinda good even broken, lol—just blend longer next time.

    2. User avatar donnie.price says:

      4 stars
I get your point—butter would taste amazing. Vegetable oil helps with that smoother, creamier texture though, especially once it cools.

  77. User avatar octavia.schuppe says:

    4 stars
I tried once and the paste looked like sand. I guess I didn’t grind long enough. When I blended longer it came out better. So yeah, patience helps.

  78. User avatar dorsey.runolfsdottir88 says:

Came together fast and smelled amazing while heating. Cooling is key; mine thickened nicely after a couple hours.

Mine didn’t turn super thick though, more like a sauce. I wonder if I under-peel the pistachios or if the milk/sugar ratio is off? Tasted good, just not creamy enough. Next time I’ll wait longer to cool.

Yes!! I did exactly this and it came together way faster than expected. The pistachio smell is unreal while it’s warming. Mine also thickened after cooling—totally agree cooling matters.

I followed steps exactly and it set a bit too thick after cooling—tastes great though. Next time I’ll try a tiny bit more milk.

Not bad at all. The blanching/peeling part is kinda annoying though. Mine didn’t get perfectly smooth, more like a slightly grainy cream, but it still tasted great on toast.

Not bad, but 2-3 minutes blanching seems random—my pistachios didn’t peel easily. Still tasty though, just took more work.

3 minutes boiling peeled pistachios? Mine turned mushy and I got watery cream. Maybe my pistachios were different? Disappointed.

I’m not a fan of blanching—too much work. I skipped peeling the skins and honestly it was still fine, just a bit darker.

Not gonna lie, blanching and peeling pistachios sounds like a whole workout. But the flavor is worth it. Mine tasted rich and nutty, almost like store-bought.

This turned out sooo smooth! I had to scrape the sides a couple times, but the flavor is legit pistachio, not just “green sugar.” Will make again.

Mine was a bit grainy even after processing. Maybe I needed to grind longer or the pistachios weren’t fresh. Still tasty though!
