Herb-Marinated Grilled Shrimp

June 18, 2025

Herb-marinated grilled shrimp is the perfect dish for summer gatherings, offering a delightful combination of tender shrimp and aromatic herbs. The shrimp are marinated in a mixture of fresh herbs, olive oil, garlic, and citrus, allowing the flavors to infuse the seafood. Once grilled, the shrimp take on a smoky char, while retaining their juicy tenderness, making each bite a burst of flavor. This dish is quick to prepare, making it ideal for a weeknight dinner or a weekend barbecue.

The marinade typically includes a variety of fresh herbs such as parsley, cilantro, thyme, or basil, which give the shrimp a fragrant and refreshing taste. The addition of garlic, lemon or lime zest, and a splash of citrus juice adds an extra layer of brightness, balancing the richness of the shrimp. A dash of salt, pepper, and a drizzle of olive oil ties everything together, ensuring each shrimp is well-seasoned and bursting with flavor.

Grilled shrimp are incredibly versatile and can be served in many ways. You can serve them as an appetizer with a zesty dipping sauce, pile them onto skewers for a fun, finger-food experience, or toss them into a salad or pasta for a complete meal. The fresh, vibrant flavors of the herbs make them a perfect pairing with light sides like grilled vegetables, corn on the cob, or a refreshing cucumber salad.

What makes herb-marinated grilled shrimp even more appealing is how easy they are to prepare. With just a short marinating time, you can have flavorful shrimp ready to grill in no time. It’s a great dish to serve to guests, as it requires minimal effort while offering a sophisticated flavor profile. Whether you’re hosting a barbecue or enjoying a quiet dinner at home, herb-marinated grilled shrimp is sure to be a hit.

I totally get it! I love lemon, but too much can overpower the dish. Maybe try just 1 tablespoon next time? 😊

Lemon is part of the recipe tho. If you don’t like lemon, just use less or don’t use it at all! 🤷‍♂️

Grilled shrimp is good but why do all recipes have garlic? It ruins the taste for me..

I actually love the lemon! It really brightens up the dish. But I guess everyone has different tastes. Less lemon could work too!

Try oiling the grill grates before cooking! It helps a lot. Also, make sure the shrimp are dry before marinating.

I dunno, maybe just use a non-stick pan? Grills can be tricky. Good luck!

I tried this but my shrimp turned out rubbery. I think I overcooked them?

    1. 4 stars
Yeah, shrimp can get rubbery if they’re overcooked. Just a minute too long can ruin ’em!

  19. User avatar thea.lemke17 says:

Honestly, I think I prefer shrimp without all these herbs. Just grill them plain.

    1. 3 stars
But the herbs add flavor, right? I think you’re missing out if you skip those. It can really elevate the dish!

  32. 4 stars
These were good, but my grill was hotter than medium-high so I overcooked one batch. Still tasty though—would recommend watching closely because shrimp goes from juicy to rubbery fast.

I followed this recipe but my shrimp turned out rubbery… did I overcook them? 🤔

    1. 4 stars
Yeah, overcooking shrimp can definitely make them rubbery. Just a couple minutes on the grill should do it!

  38. 5 stars
This is the best shrimp recipe I’ve ever tried! The herbs make it so flavorful, and it’s quick to prepare. My family loved it!

  39. User avatar kassie.harber2022 says:

    4 stars
Pretty solid, but 20 minutes might be too long if you’re using very small shrimp. Mine started tasting a bit “lemony” before grilling.

    1. 4 stars
Good call—lemon can get a little intense, especially if the shrimp are smaller or cook fast so the marinade “sours” them a bit. I’ve had that too with citrus-heavy marinades.

  40. User avatar elke.gutmann38 says:

    2 stars
Too much lemon for my taste 😬. I prefer a milder flavor.
