Ingredients
  

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp thyme dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Lemon sliced
  • 1/4 cup black olives pitted and sliced
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup feta cheese crumbled
  • parsley chopped, for garnish, fresh

Instructions
 

  • Preheat grill to medium heat.
  • In a small bowl, combine olive oil, minced garlic, dried oregano, dried basil, dried thyme, salt, and black pepper.
  • Brush the marinade mixture on both sides of the salmon fillets.
  • Place the lemon slices on top of the salmon fillets.
  • Grill the salmon for about 6-8 minutes per side, or until cooked through.
  • Meanwhile, in a small bowl, combine the black olives, sun-dried tomatoes, and crumbled feta cheese.
  • Remove the salmon from the grill and top with the olive, tomato, and feta mixture.
  • Garnish with fresh parsley and serve.
  • Enjoy!

    6-8 minutes per side seems like a lot? My fillets were thin and they overcooked. Also, 1/4 cup feta felt like not enough—unless you really love lighter cheese.

    Pretty good, but I think 6-8 minutes per side depends a lot on thickness. Mine was thinner so I’d start checking earlier. Topping is legit though—salty, tangy, and bright.
