Ingredients
  

  • 1.5 lb chicken thighs boneless, skinless, cut into 1-inch pieces
  • 1 red bell pepper large, cut into 1-inch pieces
  • 1 red onion large, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp parsley chopped fresh
  • 2 tsp garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine olive oil, lemon juice, chopped parsley, minced garlic, cumin, paprika, salt, and black pepper. Add chicken pieces and marinate for 15-20 minutes.
  • Preheat grill to medium-high heat.
  • Thread marinated chicken, red bell pepper, and red onion onto skewers.
  • Grill kebabs for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are charred.
  • In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, minced garlic, salt, and pepper. Stir until well combined.
