Ingredients
  

  • 100 grams noodles preferably soba or ramen noodles
  • 2 tablespoons olive oil for sautéing
  • 4 cloves garlic minced
  • 1 cup mixed vegetables such as bell peppers, broccoli, and carrots
  • 2 tablespoons soy sauce low sodium
  • 1 teaspoon sesame oil for flavor
  • 1 tablespoon green onions chopped for garnish

Instructions
 

  • Cook the noodles according to package instructions and set aside.
  • In a large pan, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant, about 30 seconds.
  • Add the mixed vegetables and stir-fry for 5-7 minutes until they are tender but still crisp.
  • Toss in the cooked noodles, soy sauce, and sesame oil. Mix well to combine all the ingredients.
  • Serve hot, garnished with chopped green onions.

    I don’t get it, the sauce is too salty for me. I think you could use less soy sauce. Just my opinion.

      I totally agree! The soy sauce can really overwhelm the dish. I usually do half the amount and it tastes way better.
