Grilled Chicken and Eggplant Donburi

August 9, 2023

A warm, satisfying bowl of Grilled Chicken and Eggplant Donburi is the perfect meal when you’re craving something hearty yet light. Donburi, a traditional Japanese dish, is all about simplicity and balance, and this variation combines tender grilled chicken, smoky eggplant, and flavorful rice to create a bowl that’s both comforting and nourishing.

At the heart of this dish is the grilled chicken, which is marinated in a savory mix of soy sauce, ginger, and garlic. The grill imparts a slight smoky char, while the marinade adds depth and umami, infusing each bite with rich flavor. The chicken is sliced into bite-sized pieces and served over a bed of fluffy white rice, forming the base of this donburi.

Eggplant, often overlooked, is the perfect companion to the chicken. Its tender, slightly creamy texture, combined with the subtle smokiness from grilling, complements the savory meat beautifully. The eggplant absorbs the flavors of the marinade and adds a delightful contrast in texture to the grilled chicken.

Topped with a light drizzle of soy-based sauce or a sprinkle of sesame seeds, Grilled Chicken and Eggplant Donburi is a simple yet balanced meal. For added color and freshness, you can garnish it with chopped green onions, a handful of spinach, or even a soft-boiled egg, which adds richness and enhances the overall flavor of the dish.

This donburi is versatile and can easily be adapted to your taste. You can swap the grilled chicken for tofu for a plant-based version or use other vegetables like zucchini or bell peppers instead of eggplant. It’s a perfect meal for busy weeknights or lazy weekends, as it comes together quickly and is both filling and comforting.

Whether you’re a fan of traditional Japanese rice bowls or just looking for a satisfying meal that combines simple ingredients in a flavorful way, Grilled Chicken and Eggplant Donburi is a must-try. It’s a meal that brings comfort and balance in every bite.

Why no cooking time for the rice? Had to guess, which made it a bit chaotic. Overall, ok.

HATED it! Eggplant is gross and i think the honey is too much. Never cook this again.

Really liked the flavor! Just don’t overcook the chicken like I did, it can get dry.

This was ok, but I think there was way too much soy sauce. Made it a bit salty for me.

    1. User avatar jesse.hansen says:

      4 stars
I totally agree! Soy sauce can really overpower the dish if there’s too much. Maybe try using less next time? That might help!

    2. User avatar cristina.hartmann says:

      5 stars
Nah, I think the soy sauce is fine. Just wash it down with water! It’s supposed to be savory. Love this dish!

Easy and quick! But I accidentally used balsamic instead of mirin! Wasn’t bad but not the same.

But isn’t soy sauce flavorful enough? I mean, it adds a bit of saltiness and taste!

  12. 5 stars
    Easy and quick! 😋

Weirdly good. I added some chili flakes and it actually tasted like something from a restaurant. The honey in soy sauce is genius.

This was super tasty—sweet-salty glaze really makes the chicken pop. I grilled a bit longer to get nice char on the eggplant and it was perfect over hot rice.

I didn’t have mirin, so I used vinegar instead. It turned out okay, but I feel like it missing something.

  26. User avatar chandra.prohaska says:

    2 stars
Sounds confusing! Why do you grill the eggplant? Isn’t it usually fried?

    1. User avatar robby.prohaska1987 says:

I think grilling gives the eggplant a nice smoky flavor! It’s different but delicious. Give it a try!

    2. User avatar rowena.feeney says:

Nah, grilling chicken and eggplant together seems weird to me. Like wouldn’t the chicken grease make the eggplant taste funny? Mine came out kinda bland anyway.

  39. 2 stars
Not too impressed. The eggplant turned out mushy and the soy sauce was too salty for my taste.

  40. 2 stars
Too many steps for a simple dish! I gave up after the sauce. ⭐⭐
