Greek Omelette with Sausage

September 14, 2023

The Greek Omelette with Sausage is a delicious, savory dish that combines the rich flavors of traditional Greek ingredients with the satisfying heartiness of sausage. This omelette is a perfect choice for breakfast or brunch, offering a balance of protein, vegetables, and bold Mediterranean flavors. The combination of savory sausage, fresh vegetables, and tangy feta cheese makes each bite packed with flavor and texture.

To make a Greek Omelette with Sausage, start by cooking your sausage of choice, whether it’s spicy lamb sausage or a milder pork sausage, until it’s browned and cooked through. The sausage adds a rich, savory depth to the omelette. Next, whisk together eggs and pour them into a hot pan, cooking until just set. As the eggs cook, layer in chopped vegetables like bell peppers, onions, tomatoes, and olives. These ingredients bring a burst of freshness and Mediterranean flair to the dish.

The piÚce de résistance of a Greek Omelette is the addition of crumbled feta cheese, which imparts a salty, creamy taste that pairs perfectly with the savory sausage and vegetables. Fresh herbs, like oregano or parsley, can be sprinkled on top for extra flavor. The omelette is then folded over, allowing the cheese to melt and the flavors to meld together, creating a mouthwatering breakfast that is both satisfying and filling.

This dish is not only packed with flavors, but it’s also highly customizable. You can add ingredients like spinach or zucchini to make it even more vegetable-forward, or swap out the sausage for a different protein, like chicken or turkey sausage, depending on your preferences.

The Greek Omelette with Sausage is a wholesome and nutritious breakfast that offers a perfect balance of flavors, ideal for those looking for a satisfying, protein-packed start to their day.

Greek omelette? With sausage? I mean it’s tasty I’m sure but it doesn’t feel very Greek to me. Also 4 sausages seems like a lot unless you’re feeding a crowd.

  2. 4 stars
Pretty good, but I think 2-3 minutes after adding eggs was a bit short for my pan. I had to cook longer to get the set texture. Sausage + pepper + tomato combo is great though.

Making this again! I didn’t follow the recipe properly tho, used whatever I had. Still came out delicious.

    1. 4 stars
That’s awesome! I love when recipes can be flexible. What did you use instead of the feta?

  4. 3 stars
I’m skeptical about feta on top at the end—sometimes it just melts weirdly. But one minute at the end should help. Also, does it need to be non-stick? Mine always sticks if I rush.

Totally get the “feta melts weird” worry. The last-minute step is exactly to keep it creamy and not totally disappear—just 1 minute is enough. And yes, non-stick helps a lot if you tend to rush; feta/eggs can grab if the pan isn’t slick. Maybe let the eggs set a minute longer instead of cranking heat.

This was surprisingly good—savory, fast, and the feta really ties it together. I used spicy sausage and it kicked up the flavor a notch.

I didn’t have sausages so I used bacon instead. It turned out pretty good, but I think it needs a bit more seasoning.

So easy lol. The feta at the end saved everything. Next time I’m adding spinach too.

This omelette was so good! I added some spinach too, and wow! 5 stars!

    1. 5 stars
Sounds delicious! I love adding spinach to mine too, it gives it a nice flavor.

Wait, spinach? I thought it was a Greek omelette. You sure that goes together? đŸ€”

  9. User avatar barbar.wolff says:

I was skeptical about putting tomatoes in an omelette, but wow—it actually works. Softened veggies were nice and the whole thing tasted fresh.

  10. 4 stars
Can you use any type of sausage? I’m not sure what to buy. 4 stars cause I’m confused.

  11. 3 stars
Not bad, but the sausage step feels a little vague—how browned is browned? I ended up overcooking mine because my pan runs hot.

  12. User avatar coleen.daugherty8 says:

Made this for brunch and it was seriously satisfying. The feta at the end makes it taste super “Greek” without needing extra steps. I’d definitely add some oregano next time!

Great recipe! Made it twice already. 😍

I forgot the tomatoes and it still turned out yummy. Who knew? 😉

I think it needs more seasoning. Like, it was kinda bland. 3 stars.

This feels like a copy-paste omelette. Greek food needs olives and lemon or something 😅 But the sausage helped, so not totally bad.

  17. User avatar jenice.carroll says:

    3 stars
Idk man I feel like 2-3 minutes for eggs set is too short. I had to keep cooking until it was firmer. Recipe’s fine, just adjust.

  18. User avatar lucas.little says:

Quick and easy to make, I just don’t think I’ll make it again. Not really my thing.

Why do people keep putting tomatoes in everything? đŸ€·â€â™‚ïž

  20. 2 stars
Greek-ish, sure, but this honestly tastes like any cheesy egg skillet to me. I’m not convinced it’s worth the feta price. 😅

  21. User avatar Hotblack Desiato's bodyguard says:

This sounds ridiculously filling—in a good way. The sausage + feta combo is such a great flavor match. I’d probably add some oregano too, but I’d follow the steps otherwise.

Not sure about using “tomatoes chopped” but not mentioning how watery they are. If they release a lot of juice, the eggs might get loose. Maybe squeeze them or cook them down first?

  23. 5 stars
My dog loved the leftover sausages! 😂

    1. 2 stars
But wait, is it safe to feed dogs sausages? They might not be good for all dogs.

    2. 5 stars
Dogs can be picky eaters, but it sounds like yours has great taste! 😂

I followed the steps exactly and it came out rubbery—maybe I overcooked the eggs. Also, I couldn’t get the tomatoes to cook in just 2-3 minutes with my pan.

I dunno, this doesn’t look like a real Greek omelette to me. Where’s the olive? And is it even supposed to have sausage?

  31. User avatar herman.barrows says:

This was surprisingly good—savory sausage + sweet pepper + salty feta is a great combo. I cooked it a couple extra minutes because my eggs were still runny, but it set up nicely.

I’m so glad you loved it! The feta really takes it to the next level! 😋

  34. 3 stars
Not gonna lie, mine came out kinda dry. Maybe I overcooked it while waiting for the eggs to set. Also I used less feta because i ran out, so seasoning was off.
