Good catch! Chicken can definitely dry out if it goes even a minute or two past the 7-minute rangeâthicker pieces usually need longer, but thin ones cook fast. Iâve started pulling them as soon as theyâre no longer pink and the outside is golden.

That makes senseâif the pan isnât hot enough, the chicken steams instead of browns. I usually preheat the skillet a good 2â3 minutes before the butter goes in.
