Ingredients
  

  • 8 ounces pasta such as penne or rotini
  • 1 pound ground beef lean
  • 1 packet taco seasoning
  • 1 cup salsa mild or medium, according to taste
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream for serving
  • 1 tablespoon olive oil for cooking

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Add the taco seasoning and salsa to the skillet with the beef, stirring to combine. Let simmer for 5 minutes.
  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Sprinkle with shredded cheese and cover until the cheese melts, about 2 minutes.
  • Serve hot with a dollop of sour cream on top and enjoy!
