Fried Chicken and Vegetable Omelette

June 7, 2024

Why choose between savory fried chicken and a veggie-packed omelette when you can have both in one dish? The Fried Chicken and Vegetable Omelette is a hearty, flavorful breakfast (or brunch) that combines crispy, golden chicken with fluffy eggs and colorful sautéed vegetables. It’s a comforting way to start the day or even serve as a satisfying dinner.

The star of the show is the fried chicken, tender pieces of seasoned chicken breast or thigh, coated in a light, crispy batter and pan-fried until golden brown. You can use leftovers from dinner, or make it fresh for this recipe. Either way, it adds a rich, savory crunch that contrasts beautifully with the soft eggs and veggies.

For the omelette base, a mixture of whisked eggs is lightly seasoned and poured into a hot skillet. As the eggs begin to set, in go the sautéed vegetables: bell peppers, onions, spinach, or mushrooms, whatever you have on hand works well here. The veggies bring balance and freshness, cutting through the richness of the chicken.

Once the eggs are cooked to perfection, just set but still creamy, the crispy fried chicken is layered on top or gently folded into the center. A sprinkle of cheese, such as cheddar or mozzarella, can be added for extra comfort. Fold it over, let it finish for a minute or two, and you’re done.

The result is an omelette that’s bold, filling, and a bit indulgent, a meal that feels like a weekend treat but is easy enough to make on a weekday. Pair it with toast, fresh fruit, or even a light salad if you’re going the brunch route.

Whether you’re looking to use up leftover fried chicken or just craving something cozy and different, this omelette delivers on all fronts.

An omelette ain’t gotta be so complicated, right? Just eggs, cheese, and maybe some ham is fine for me.

Um, what’s the deal with the olive oil? I thought you needed butter for omelettes? Anyway, mine turned out ok. Not my fav.

Omelette without cheese is like a car without wheels. I mean, what’s the point? 😒

5/5—easy and filling. Also I accidentally used yellow pepper instead of red and it was still good. Don’t hate.

Eh, it was alright. I think I put too much salt. Next time I won’t be so heavy-handed.

I made it for my kids and they loved it! But they don’t like peppers so I just left them out.

Glad your kids liked it! Omitting the peppers was a smart move. My kids are picky too!

Simple & easy! Can I use frozen chicken instead?

  13. User avatar Lumberjack says:

Too much chicken for my taste—maybe cut it down a bit or mix it into the eggs instead of piling it on. Flavor was good though.

    1. User avatar rosario.lang46 says:

      5 stars
Totally get that—4 chicken breasts is a lot. I usually cut it down or stir some of it into the eggs instead of stacking it on top. Glad the flavor still worked for you though!

  14. User avatar tanja.hickle14 says:

Yummy! Didn’t have onion so I skipped it and still turned out great. Also, my kids ate it all up!

  15. User avatar roy.lebsack98 says:

Why do you use chicken? Isn’t that too much? Should have just added more veggies, like mushrooms or somethin’!

  16. 3 stars
5 stars for the easy instructions, but I thought it was too greasy.

I tried making this, but my chicken was raw in the center. Be careful with frying! Also, why are there no spices or herbs? Seems bland to me.

This was so delicious! A perfect way to use leftover chicken. My kids loved it!

Why fry chicken in an omelette? It’s weird. Stick to the basics, people!

  21. 5 stars
So good! I added some cheese and it was the best breakfast EVER!

    1. User avatar alphonso.spinka56 says:

I don’t think cheese belongs in an omelet. Eggs should be the star, right?

    2. User avatar kathleen.runolfsdottir2013 says:

      5 stars
Cheese sounds delish! I’ll try that next time for sure.

  22. User avatar dario.volkman says:

The peppers were too crunchy for me. Prefer my veggies soft.

    1. User avatar demetra.keebler says:

      4 stars
I actually love the crunch! You can always cook them longer if you prefer them soft. Maybe try it that way next time!

    2. User avatar Margot Fenring says:

      3 stars
Soft veggies are good too, but isn’t that part of the omelette charm? Add some water while cooking for softer ones.

This recipe seems too fancy for me. I don’t cook with olive oil usually… can I use butter?

    1. User avatar rocco.grady1951 says:

      5 stars
Butter would work just fine! Just be careful not to burn it. I think it’ll give the omelette a nice flavor too.

    2. User avatar ernestine.lebsack18 says:

      3 stars
Olive oil is better for frying, tho. Butter can burn easier, you know? Just be cautious!

  24. User avatar arlie.rutherford2000 says:

I tried this recipe but it didn’t turn out great. The chicken was dry and the omelette fell apart. 🙁

  25. 2 stars
The cooking time is hilarious, way too fast! I messed up the omelette.

  26. User avatar corrinne.mitchell49 says:

I tried this recipe but my omelette ended up all over the place… shoulda watched a video first. 😩

    1. 3 stars
You probably just flipped it too soon! Just let it cook longer, and it’ll be fine. 😅

    2. User avatar Ilban Richese says:

      4 stars
Don’t worry! Omelettes can be tricky. Maybe next time try cooking it on medium-low heat and let it set more before flipping.

  27. User avatar tatiana.armstrong says:

    4 stars
Could you use bacon instead of chicken? I think that would be better.

  28. User avatar Colin the Security Robot says:

Omelette? More like a chicken mess! LOL.

  29. User avatar sherry.larkin says:

    4 stars
Not gonna lie, the flipping step scared me 😅 but I just folded it instead of doing a full flip. Turned out tasty and the eggs were perfectly set.

  30. User avatar liza.bins83 says:

    3 stars
Not what I expected. The eggs were too runny for my taste.

  31. 5 stars
This recipe is fantastic! The chicken is so juicy and the veggies add a nice crunch.

  32. 1 star
This was a disaster! The eggs didn’t cook right at all.

  33. 2 stars
Why add so many peppers? It was too much for me. Also, eggs should be scrambled, not just laid over! 😒

  34. User avatar sylvester.thompson says:

    5 stars
This is the best omelette I’ve ever made! The chicken gives it such a nice flavor. Thanks for sharing!

I didn’t cook the chicken long enough and it was kinda pink. Eww. 🙁

    1. User avatar Broderick Monahan says:

I think you just need to cook the chicken longer next time! It’s so important for safety. Don’t give up! 😊

    2. User avatar glen.langosh44 says:

      3 stars
Eww pink chicken? Yikes! That’s nasty! You really shouldn’t eat it if it’s pink. Just a tip, cook it till it’s white all the way!

  38. 4 stars
My kids loved this! Easy recipe and not a lot of mess. Will make again.
