      Ugh, that sounds frustrating. With that amount of ice water “as needed,” it can easily stay dry if the butter is too cold or you’re not mixing enough just to hydrate the flour. I usually stop adding water once the dough feels like it will clump when you press it—then I wrap it and chill 20–30 min before rolling. Also, patching is totally normal for tarts; just press the seams together and it’ll bake up fine.

      That makes sense—too much water can make the dough relax and shrink in the pan. Chilling helps a lot too; next time I’d also try pressing the dough firmly into the corners.
